Eggs with Scallions and Tomatoes





Huevos Pericos are a typical Colombian breakfast typically eaten with arepa and hot cup of cocoa. The smell of sauteed scallions and tomatoes really brings me back whenever I make this for breakfast.

This is typically made with whole eggs, but I did a combination of eggs and egg whites to lighten this up. Brew yourself a nice cup of cocoa and enjoy!

Servings: 2 Size: 1/2 Old Points: 3 pts Points+: 4 pts
Calories: 155.0 • Fat: 7.7 g Protein: 13.9 g Carb: 8.5 g Fiber: 2.3 g
 
  • 2 large eggs
  • 3 large egg whites
  • 4 diced scallions
  • 1 large diced tomato
  • 1 tsp olive oil
  • salt and pepper

Heat olive oil in a frying pan on a medium-low flame and add scallions and tomatoes.
Mix eggs in a bowl and season with salt and pepper. Add the eggs to the frying pan and stir as they cook 2-3 minutes.

  6. I cooked this for my hubby and myself this morning. I am getting tired of my Egg Beaters and turkey bacon routine. This hit the spot! My hubby loved it!

  7. I learned to make this from my mother in law. I add more tomatoes and a little onion powder so it has more tomato and onion flavor. Also using egg beaters works well instead of whole eggs and less WW points! DELICIOUS BREAKFAST FOOD

  9. Thanks for the idea. Added some sliced jalapeno, a teeny bit of cilantro and wrapped in a warm tortilla! Just right for a rainy morning.

  12. I'm oficially in love with your site Gina! This is a typical breakfeast in my country (Venezuela). Arepa is actually from here but Colombians are next to us so they added to their menu :D . I'm so glad to see this in here lightened up! Thanks! :D

  13. HI Gina, just found your website and I'm already in love. Going to try several of your recipes.. Same as Raquel, I'm Venezuelan, and this kind of eggs are indeed typical from Venezuela, and Arepas are Venezuelan, just that Colombians imported them and made them part of their cuisine, and seem more known internationally?. I bet happened the same with Perico ;) I guess it might be the most classical breakfast in Venezuela, along side with Arepas con queso blanco, and Empanadas (made also with corn fluor). Thank you for your recipes and website! :D
