Meatball and Spaghetti Soup



What can be more kid friendly than a bowl of soup with spaghetti and meatballs! Lean turkey meatballs are cooked in a light tomato broth with cut up spaghetti. This is a one pot meal my whole family loves and leftovers are great for lunch.

This is a recipe from the archives that has been greatly overlooked. I finally got a chance to re-photograph this one, something I wanted to do for a while because it's very popular in my home and I'm sure it will be popular in yours. A delicious quick family-friendly meal for under $10!



Meatball and Spaghetti Soup

Servings: 6 Size: 1/6th (about 1 1/2 cups) Old Points: 4 pts • Points+: 5 pts
Calories: 212.9 • Fat: 3.2 g • Carb: 27.4 g • Fiber: 3.9 g • Protein: 22.1 g • Sugar: 2 g
Sodium: 738.7 mg (without added salt)

Ingredients:

For the soup:
  • 5 cups low sodium, fat-free chicken broth
  • 2 cups water 
  • 2 chopped cloves garlic, divided
  • 4 tbsp chopped fresh parsley, divided
  • 1/2 onion, chopped, divided
  • 3-4 tbsp tomato sauce (I use my quick marinara sauce)
  • pinch crushed red pepper flakes (optional)
  • kosher salt and fresh pepper
  • 6 oz dry cut up spaghetti, I used Ronzoni Smart Taste
For the meatballs:
  • 16 oz 99% lean ground turkey
  • 1 small egg
  • 1/4 cup seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tbsp fresh chopped basil

Directions:
    In a soup pot over medium heat, bring chicken broth, water, 1 clove crushed garlic, 2 tbsp chopped parsley, 1/4 of the chopped onion, tomato sauce, crushed red pepper flakes and fresh black pepper to a boil; simmer about 5 minutes.


    Meanwhile, make the meatballs by combining ground turkey, parmesan cheese, egg, remaining garlic, remaining onion, remaining parsley, breadcrumbs, salt and pepper. Form into little 1 inch meatballs (about 36).

    Drop meatballs into the broth, cook about 3 minutes; add pasta and cook according to package directions. Add fresh basil, adjust salt and pepper to taste and serve with grated parmesan cheese.

    2. This soup is great! Very flavorful. Both my children and my husband enjoyed it...no small feat! Not necessarily the prettiest dish I've ever made, but pretty isn't why I eat!

    7. They cook 3 minutes, PLUS the time it takes to cook the pasta which will vary by cut but yes, they cook quick, they are very small.

    10. Thanks for re-posting this..i would have missed it otherwise. I have a one year old that loves to eat spaghetti and meatballs. Since he cant use utensils yet, it usually ends up being a HUGE mess. This will be easy for me to feed to him and I am sure he will LOVE it. Thanks Again! Allison

    11. Yes, I am doing the old ones now and then because they are hidden since I didn't get much traffic back then. For my little one, I just give her less broth and she eats the rest with her messy hands :)

    15. For those that are worried that the meatballs are not cooking long enough to get done - remember - they will be cooking for the initial 3 minutes PLUS whatever time it takes to cook the pasta. Will be plenty of time!

    16. How do you think this would do in the crockpot? I am think throw everything in, and then add the pasta at the last minute and let that cook on high until done? Anyone try it that way? I know the recipe is quick, but I work late and am always looking for yummy crockpot recipes.

    19. Delicious!! For the leftovers I heated up 2 cups of stock and added another TBS of tomato sauce and mixed it back in since the broth ran loa after we all ate.

    20. If you make it in the crockpot, I would cook it low for 4 hours. Then when you get home, add the pasta and cook it until done.

      1. Hi. Coming in a couple yrs late on this one, so hopefully you'll see my question! :) I'm cooking for a crowd after a dance recital (8 adults; 5 kids who are 8 yrs old and up). I'm thinking of doubling this in crockpot so can eat when get home. Because it is is crockpot, would you add any extra liquid, or follow exactly just cooking on low for 4 hours? Thanks so much!!     26. This sounds really good and easy. If you wanted it thicker, you could use less broth and a little more tomato sauce (although that would obviously alter the nutrition facts but still be a low calorie meal).

    28. I made this last night... My family LOVED it!!!!! It was surprisingly delicious! I thought I would be able to bring leftovers for lunch but my folks went back for seconds and thirds! I added some pecorino romano to the meatball mixture because I had some I needed to get rid of. It added a wonderful flavor. Thanks so much for this recipe!

    31. My husband grew up eating a dish the family called "Spaghetti Soup". It didn't have meatballs -- rather ground beef -- but looked quite a bit like this. I think the turkey meatballs are a super addition and will make this for him tonight. I'm betting on his loving a stroll down memory lane with an improvement!

    36. I made this today and it was super delicious! I substituted only a few things (whole wheat thin spaghetti and no sugar added tomato sauce) and it came out absolutely fantastic. I visit your blog frequently and have enjoyed every recipe I've made of yours!. xx

    37. I made this tonight. I added two stalks of chopped celery and two chopped carrots. I also used Ronzoni Garden Delight spaghetti. It was so good! It passed the Hubby test and son had two huge helpings of it.

    41. I'm not big on following recipes (probably why I don't bake to often, although your pumpkin bread ROCKS!). Instead of meatballs I used chicken sausage (the sundried tomato and basil, 4 pts per sausage), I added mushrooms and asparagus. Have't had it yet, but it looks and smells great!!

    45. For the person concerned about the meatballs only cooking 3 minutes. Remember, they are still cooking when add the pasta and it is cooking for another 11 minutes or so.

    46. I made this today with ground chicken breast (ground it myself in my Ninja). I also used 5 oz of elbow macaroni in place of the spaghetti because that's what I happened to have sitting in the cupboard waiting to be used up.

      I didn't see basil on the ingredient list, so it didn't make it on my shopping list. :( Even without the basil, it is a fantastic soup! Definitely don't skimp and go with fresh herbs over dried if you can. I forgot how amazing fresh parsley smells while you chop it!

      I found the soup to have the perfect ratio of broth to "other stuff." I like lots of "other stuff" in my soups. :)

      I will definitely make this again!

    56. Made this for dinner last night, turned out great! Future hubby said it was amazing. Only changes I made were, I used wheat spaghetti noddles instead and added a little more tomato sauce. I was also surprised how quick the meat balls cooked!

    57. I made this tonight for my husband and I. He usually turns his nose to anything that replaces beef, but he loved it just as much as I did!! I think I cooked it to long because there wasn't much broth, but it was still so good!! I will definitely be making this one again!

    58. Made this last night. It was great! I need thought to chop my onion smaller. DH has to have his onions "hidden". Other than that it was great!! (He still ate 2 portions & I think he wanted thirds but held off...) My son (age 2) gobbled it up too and it wasn't as messy since it didn't have all the spaghetti sauce! (we just gave him noodles and the meatballs w/o the broth)

      I used Wheat Spaghetti noodles as well.

      I was skeptical about this recipe at first but it was amazing!

    67. I made this recipe among many others of skinny taste recipes. They are easy to follow and I live WW point calculations. This recipe was a hit with my 8 yr old nephew and my 60 something yr old dad! Everyone was happy and it was a nice twist on spaghetti n meatballs/ albondigas. Keep em coming!

    72. My husband and I just ate this for lunch and LOVED it! Yet another completely fabulous recipe from Skinnytaste. It was so easy and the flavors were great. When I put the stats into my WW calculator though it said it was 6p+, not 5. I'm wondering if there was a mis-calculation or if that is excluding the numbers for veggies?     73. Fantastic! My picky toddler (normally exists on air and water) even had a few sips. Next time I will dice the onion smaller; big pieces were popping out of the meatballs when I tried to roll them. Small changes I made: used dry whole wheat breadcrumbs (couldn't find seasoned) and 3 ounces of Catelli Smart spaghettini. I don't know if it's just me but whenever I use pasta in soop, it always takes over and makes it stew (hence the reduced amount of pasta). Will make again, thank you!

    79. Hmmm I'm not sure why people are saying this isn't a "pretty" dish. I think it looks lovely! This soup is absolutely delicious! My 19 year old daughter has never liked onions (I love them) so I would always exclude them from anthing I made. Tonight I waited for her to finish her soup before I told her there was onion in it!     90. This was so good! I used Lean Ground Turkey, added an extra cup of broth, extra red pepper flakes (gave it a nice kick) and used egg beater instead of a real egg. It turned out great!

    97. This reminds me of albondigas, a Mexican soup my grandmother used to make. It has cilantro in the meatballs and zucchini in the broth. Sooo good!

    99. This is a GREAT recipe...it's my daughter's favorite thing that I make. I find that we end up with some meatballs and mostly pasta left (it sucks up all of the broth) so I will typically save that in a container. In the next day or so I just make a few more cups of broth (using chicken broth, tomato sauce, basil and/or italian spices, and a bit of minced garlic), add the remaining meatballs and pasta to it, heat it all for a few minutes, and it's a whole second round.

    101. I made this today, and my husband and I just had it for dinner. It was sooo good!!! I added frozen chopped spinach to it, and cooked the pasta separately, because I find cooking it in the soup causes the soup to be too starchy. (Barilla sells boxed cut spaghetti) Thanks again for such a great recipe!!! :)
