Grilled Zucchini and Tomato Salad

Servings: 6 servings Time: 25 minutes Points: 0 ww points

Spring is here and it is getting warmer out. Get your grill out and make this simple grilled zucchini salad. This is a great zero point side dish.
  • 2 medium zucchini
  • 2 tomatoes
  • cooking spray
  • kosher salt
  • freshly ground black pepper
  • a few sprigs fresh parsley
Heat your grill to high flame.

Wash zucchini and trim off the ends. Using a mandolin or vegetable peeler slice the zucchini lengthwise in thin slices. Lightly spray with cooking spray and season with salt and pepper, to taste. Grill the zucchini ribbons on 1 side, until lightly marked and wilted, about 1 to 2 minutes. Remove and put on a platter and let cool slightly.
Cut up tomatoes in large chunks, season with salt and pepper to taste. Arrange on a platter with zucchini and garnish with parsley sprigs.

  6. So when I initially planned to make this with dinner, I figured it was just a good way to use up some tomatoes and zucchini - certainly not that something so simple & basic would be anything special.

    I was so completely wrong.

    I did use my Misto with olive oil instead of cooking spray, but ooooohhhhh mmmmmyyyyyyyy Gina! This was a huge, HUGE hit tonight! So much so that my husband has insisted we have it again on Wednesday. LOL

    Would LOVE to see this recipe be featured again - I think a lot of people miss out on this wonderfully tasty salad because it's such an "old" recipe. This really is the perfect way to use up the zucchini & tomatoes from gardens!

    Also, I know a few people may wrinkle their nose at the idea of just eating raw sprigs of parsley. I chopped mine fine (I don't care for the texture of raw sprigs) and sprinkled it over the salad. It worked wonderfully and it's definitely a taste you won't want to skip in this dish!
