Easy Cucumber SaladI love cucumbers. I'm a working mom and usually pressed for time on week nights, so when I want to make a quick 0 point side dish, I make this. Goes great with everything.

I grew up with a wonderful version of this. Thinly sliced onions, slices of cucumber and wedges of very ripe tomatoes with apple cider vinegar, salt and pepper.

ReplyDeleteI make a version of this. I add some sweetener to the vinegar and dilute it with a little water and add some fresh chives....Yummmmm The sweetener cuts the tartness of the vinegar.
ReplyDeleteI'm so happy to have found this site! Wonderful recipes! From our summer garden I've made a version using cukes, chopped tomatoes, crushed garlic, green onions, fresh basil and balsamic vinegar. So fresh and so easy!
ReplyDeleteYou wont believe how adding a few sprinkles of celery seed brings this to life. Also, I substitute seasoned rice vinegar for a change now and then.
