Cooking Tips and Variations

  • This soup will taste as good as the sausage you purchase. So, be sure to find an Italian turkey or chicken sausage that you like.
  • Spicy sausage or Cajun-style Andouille sausage would be great if you want a little more heat.
  • To make this vegetarian, you can swap the sausage for vegetarian sausage and vegetable broth.
  • To freeze, transfer to a freezer-safe container and freeze. Reheat by thawing overnight in the refrigerator then reheat on the stove or microwave.
  • You can swap the potatoes for canned white beans.
  • Try swapping the kale for escarole or Swiss chard.

Ingredients

  • 14 oz Italian chicken or turkey sausage*
  • 8 cups 1/2 bunch kale, stems removed, leaves shredded
  • 1 tsp olive oil
  • 1 onion, chopped
  • 1 medium carrot, sliced
  • 4 cloves garlic, chopped
  • 8 cups reduced-sodium chicken broth
  • 2 cups water
  • 3 medium red potatoes, peeled diced into 1/4 inch pieces
  • 1 pinch dried red pepper flakes
  • 1/4 teaspoon fresh ground pepper
  • kosher salt, to taste

Instructions

  • In a large Dutch oven or pot, cook sausage over medium-low heat until browned, about 10 minutes.
  • Remove from pot, let cool and cut into thin slices.
  • Add oil, onions and carrots; cook on medium until soft, about 5 minutes. Add garlic and cook 1 minute more.
  • Add broth, water, black pepper, sausage, potatoes, red pepper flakes and bring to a boil.
  • Cook, covered for about 10 to 15 minutes. Add kale and cook partially covered until the potatoes are tender, about 5-6 minutes. Adjust salt if needed.

  4. Of the few dozen Skinnytaste recipes I’ve tried, this soup is my favorite. I’ve made it many times because I crave the flavors this soup offers. I add my own “Italian sausage” spice mix to lean ground turkey (usually cheaper than buying prepared Italian turkey sausage) and use Better than Bouillon low-sodium veg broth. Sometimes I forego the potatoes altogether and add double carrots instead because their sweetness, to me, is what makes this soup so damn delicious. The hard part is not eating three servings!

  5. I absolutely love this soup. I’ve made this more times than any other Skinny taste recipe. It’s light and yet still hearty and very flavorful. I always increase the amount of onions and carrots and use roasted veg broth instead of chicken. Yum to the max!

  6. This soup is really good! I used a full pack of turkey sausage and more potatoes than recipe called for. I didn’t think it needed the water.   Very filling! Would be great served with garlic bread. Will definitely make again!

  9. Ahhhhmazing soup! Even my meat and potatoes guy loved it and it was delicious paired with a multigrain roll. Perfect for a cold, 20 degree winter night!

    I did make a few minor changes:
    -sliced sausage prior to cooking in order to sear slices on all sides
    -2x the carrots
    – a few pinches of dried thyme and parsley from my garden + herbs de provence for added flavor

  10. I don’t know if it was because I made my own chicken broth (only second time doing it!), but this was one of the best soups I’ve ever had. I probably added 1-2 cups less chicken broth, and glad I did since it seemed to be a perfect ratio of liquid and chunky ingredients. I do love a good soup! I used chicken and apple sausages instead of turkey. So comforting and just perfect. Can’t wait for lunch tomorrow!

  11. I don’t have sausage but ground fajita flavored chicken. Regular potatoes and some cauliflower can that replace potatoes?

We made some adjustments to the this recipe.  Didn’t add the water at all.   We added a couple of more carrots and more red pepper flakes.  I would suggest cutting the sausage into smaller bits as that’s how I prefer it rather than taking a big bite of a sausage.  Used precooked Aidells precooked Italian chicken sausage which gave it a lot of flavor.  

  13. Super tasty! We used Boars Head Robust Italian Chicken Sausage. Great flavor.

    Some modifications –
    Upped the carrots (2-3)
    Omitted the 2c water
    Added a huge spoon of garlic 
    Used sweet potatoes (2-3) instead of red potatoes
    Omitted the red pepper flakes since couldn’t find ours

    Bought the wrong kind of sausage and had to replace kale with spinach (not as popular in Germany) but this recipe still turned out excellent!!! Very happy!

    I’ve made many of your recipes and they all turned out great  including this one! I did not add the 2 cups of water and upped the spices.
    When I told my daughter what we were having for dinner she rolled her eyes and  said “oh yum….” To her surprise she really liked it and had two helpings !

    I am going to make it again using the IP and andouile sausage. Are there any suggestions for making it in the IP?

  16. I enjoyed this soup, but it’s not my favorite one on here. It’s a 0° day so I thought something warm and hearty sounded good. I used Al Fresco chicken sausage with sun-dried tomato, tomato and basil as the sausage option. I’m the only one in family that likes it spicy so omitted a spicy sausage option. I did not remove casings on sausage and they ballooned a bit while soup was boiling. They look a little like mini hamburgers now!
    Building the recipe from there I did get the Five points on blue like Gina. Not bad for a tasty lunch. I did crave some bacon in it so I might try to sub beans for potatoes (as she suggests) to add some center cut bacon. All in all I will make again. Thanks Gina!

    1. As I’m making this recipe for probably the dozenth time, thought I should chime in with my rave review. I make it as written or with small modifications—it’s a great base to jump off from. I use my own veggie broth (save your veggie scraps in a freezer bag, then simmer them overnight with salt/peppercorns/herbs once the bag is full! 😋), typically 10 cups instead of the 2 cups water as others have mentioned. 
      I have in a pinch used spinach, even (gasp) frozen spinach and while it’s not as great in texture as the kale it’s still a delicious and healthy soup that I make every few weeks and just adore. Thank you! 

  17. Very good!  I used smoked andouille chicken sausage, which I think gave the soup a lot of flavor and a necessary amount of spice.  I also added in some thyme and Italian seasoning. Will make again, for sure 😀

  18. This soup is pretty good! I used regular chicken broth and instead of Plain water I used chicken bouillon dissolved in water. The broth is so flavorful! I couldn’t find kale so I tossed some spinach in right before serving. Definitely a yummy comforting soup with a little kick to it!

  19. Great flavor! I didn’t have high hopes as I was cooking it because it just seemed dull but I was very pleasantly surprised! I don’t reccomend freezing it but it’s not the end of the world if you do!

  21. Wow, I just continue to be blown away by your recipes! I haven’t had a single one let me down! 
    I made this one as directed, with just an extra pinch of red pepper flakes. I also used Aidells brand Italian style chicken sausage.
    The depth of flavor on this was truly delicious. I made it the night before, as I had to work late the next day, so maybe that allowed the flavors to really come together overnight. I look forward to having this again for lunch tomorrow! My husband and I have never been big fans of kale, but it is really delicious here, and my hubby actually said that it was the star of the meal for him. It held some crispness and didn’t disintegrate into the soup like other greens can, and it really was enhanced by the flavors of the soup. This is the second meal of yours that has really turned me around on kale!

  23. Another fabulous recipe from Gina! My husband says I’m incapable of making a recipe as written, so I made just a FEW modifications to up the spice and fat lol. I added in one slice of chopped bacon to the veggies as they were sauteeing, and a rind of parmesan cheese that I had in the fridge. I added bouillon to the broth, as well as a can of tomatoes.

    Like others said, it’s incredibly hard to make a recipe that EVERYONE will like, so I dont really understand all of the negative comments for this recipe -just add more seasonings! Either way, this is a lovely soup as is, or tailored to your personal tastes!

  24. This soup is delicious, healthy and perfect for lunch! I used regular Chicken Broth from Trader Joes, and instead of pepper flakes I did two dashes fo Cayenne Pepper. I also substituted sweet potatoes for the regular potatoes. Like she said, it’s all in the sausage, so make sure to use a high quality, flavor-packed sausage! Definitely sharing this recipe with all my health-conscious friends. 🙂 

  25. Fantastic recipe. Flavorful, easy, satisfying.  I used fresh spicy Italian chicken sausage (casings removed). I also used full sodium chicken broth (from Costco) and left out the water.  Delicious.

  26. I don’t get some of the non-constructive comments on this recipe. If you didn’t like the recipe, move on, or give tips to others what you would have added to make it better. I know Gina works so hard testing and retesting recipes before sharing them. It’s hard creating a recipe to appeal to the masses because we all have different tastes. I know I am an aggressive seasoner, that’s how I enjoy my foods, so I always up the spices in the recipes I cook.
    This is a wonderful soup as is for a lot of people. I know I personally like more spice, so I used hot Italian sausage and upped the red pepper flakes. I also added some “Chicken better than bouillon” to add flavor. It was absolutely delicious. I love how versatile these recipes are and that I can make it my own. Thanks, Gina!

  29. I followed this recipe almost to a T. The only thing I didn’t do was add water. I was worried it wouldn’t make the soup bland as others had mentioned. This soup is extremely flavorful when left with just the chicken broth! So happy with how it came out!!

  33. I’m seeing a lot of comments saying it lacked flavor and salt. I have to disagree and think you can adjust the salt to your liking. If you add some kind of grated parm or pecorino, pepper flake and a squeeze of lemon or splash of balsamic you can add more flavor without added salt. I think we are conditoned to the taste of heavily salted soups from cans that we forget what real food is supposed to taste like. I will definitely be making this again. 

  34. This was delicious! My roommates complained that it was bland and missing salt, but for medical reasons, I can’t add much salt to my cooking. I told them to go ahead and add it to their own bowls though. Next time, I may add more red pepper and cut the sausage smaller. I used two cans of beans instead of the potatoes to lower the carbs, and it worked great.

  35. I wanted to like this because I love almost every Skinnytaste I’ve ever made but the soup was basically tasted like sausage water. I served it to my family but couldn’t eat it myself. I wont be making it again. 

      1. Maybe the broth did.  What brand do you use? That could definitely make all the difference!

    Great!  I used chicken sausage instead of turkey and I also removed it before adding other ingredients (I do not eat meat but my husband does). After the soup was done, he added the meat to his soup. I also used frozen potatoes and kale!  Just needed to adjust seasonings for our taste but it was great. Another winner. 

  38. I actually bought no sodium chicken broth. How much salt should I add? I tend to have a problem adding too much or too little.

  39. My family has loved almost everything I’ve made from here.  But, this soup was not our favorite.  We choked it down and I threw the rest away.  I followed the recipe exactly.  It was lacking flavor and heartiness.

  45. I found this to be very bland even with good turkey hot italian sausage…what am I missing?  I was thinking to cook a little bacon or onions just in the bacon grease would help. Any other ideas?

    1. To the soup while cooking: Add a T or 2 of pesto. Add a bay leaf. Add a parmesan cheese rind. Add an herb bouquet. No water, ONLY use the best stock you can find. Add more potatoes. I add all of this and use a whole bag of baby red and it’s still only 5 points a serving.

      Then for serving (depending on your points allowance): add a t if pesto, crumbled center cut bacon, and a T or 2 of grated ramano. I do all if these and this is one of the best soups I’ve had from this site!

        My husband is picky and usually does not like vegetable soups so I was shocked when he loved this and had seconds. I did follow the directions for the broth except I used 1 Swansons low sodium and 1 regular. I only used 1 cup water and felt it was a little bland so I added a 1/2 tsp of better than bouillon chicken flavor.  It made the best broth I have ever made.  It was flavorful but did not overpower the flavor of the vegetables. I did use 2 carrots which was perfect for us. 

  46. This is a great addition to my soup rotation. My husband LOVES potatoes, so this gives him the taste without feeling heavy. This soup ate very hearty to me for something that is so light. My whole family and friends I had over loved it and my friends asked for the recipe. I put extra red pepper flakes in mine and it had a great kick! This was AWESOME Gina!

  47. This was great! I used pre-cooked chicken chorizo sausage, Swiss chard, and small white beans instead of potatoes. I added some Italian seasoning, too. Looking forward to eating the left overs for lunch!

    This is a great variation of Portugese caldo verde which I make often. We grow kale and it is perfect in the soup. The original recipe uses linguica but this is much healthier.

  49. Can I use spinach as opposed to kale? If so would I still use 8 cups and how different would the calories be?

  50. This soup is great, I subbed cauliflower for potatoes, but my Kale turned grey And unappetizing, I just bought a big bunch and chopped it, does it need to be balanced first?
     

  51. For the sausage, are you referring to pre cooked sausage? I cannot find raw italian chicken or turkey sausage at any of the stores I go to. 

    1. jenny-o has the sweet Italian and spicy Italian raw sausage. I can usually find it at Ralph’s, Vons, Food 4 less and smart and final.

    1. I just made mine in my instapot using the slow cooker function. I just sautéed the veggies and sausage first then added the rest of the ingredients. 

  52. From the first time I made this, it has become our favorite winter soup, served along with jalapeno cornbread. Our preference is to make this with a Cajun-style Andouille sausage. The spice from the sausage is perfect with the kale; I do not add the red pepper flakes since using a spicy sausage. We double up on the vegetables when we make; I also add 1 cup of chopped yellow bell pepper. Delicious, hearty and satisfying!

  55. Delicious, easy and a family favorite! This is our go-to soup in the winter. Since we like spicy sausage, I use a Cajun style Andouille sausage, add extra carrots and onions to bulk it up and leave the peeling on the red potatoes. My husband is more than willing to help prep all of the vegetables. It comes together quickly once the prep work is complete.

  58. I have been down with some sort of bug for the last couple of days. Nothing tasted good, so I survived on toast and scrambled eggs. Last night I had it, and I wanted FOOD, so I made this soup. Not gonna lie, was not a fan of all the chopping since I am still under the weather, but I made it through. SO glad I did and so glad I doubled it!! This tasted so good to me…so much so that I really wanted more, but I was afraid to push it since it was the first solid food I had in a couple of days. Hubby had 2 bowls of this with some crusty multi-grain bread and said it was tasty.

    I am at work today (and still a bit off), but I was super happy to grab a bowl of this to bring with me. GREAT SOUP for when you aren’t feeling well, and any other time too!! Once I feel better, I might try the immersion blender trick with some of the potatoes, but this is definitely a keeper!

  59. This is my go-to fall soup recipe. I like a creamier soup though so I either use the immersion blender on the broth and veggies before adding the kale and sausage slices. It gives it the creamy texture with out added fat of dairy.

      Are you sure you followed the recipe? I just made some and it's rather spicy due to the garlic and hot pepper flakes. The only thing I changed in the recipe was that I used yellow squash, as I was out of carrots. My tongue is still burning a bit, and I love spice!

  68. This is the third time I've made this soup and I took a tip from a previous poster who added a can of diced tomatoes…SUPER YUM! This is the perfect soup for a chilly day and it tastes better on day 2. I use sweet italian chicken sausage by Al Fresco. YUM!

  69. Love this soup. I think this tastes a lot like Olive Garden Tuscan soup. I sometimes leave out the carrots when my produce is low. Still very good omitting carrots. I also sometimes add red pepper flakes for a little kick. This has become a regular in my meal planning. Nothing better on a cold day

  71. Yum! Made this last night at it was amazing! I used roasted red pepper and garlic chicken sausage and added a dash or two of cayenne for a bit of extra spice. My BF absolutely refuses to eat kale so I cooked everything else, took out a bowl for him, then added the kale for me. He said he still enjoyed it, but does anyone have any suggestions for a substitute? The soup doesn't look nearly as appealing without out the kale.

    This was fantastic! I was in the mood for a creamy soup, so I replaced the water with fat free half n' half and was very happy with the result. And somehow I ended up with at least 8 servings. Thanks for all of the great recipes!

  74. I made this last night and it was FANTASTIC! My husband is usually wary of soup for dinner because he assumes he'll be hungry after, but this soup was delicious and satisfying. Best part? It made enough for leftovers to bring to work today AND extra to share with a friend tomorrow for lunch! Great recipe.

    Made this last night for my husband and brother in law, they kept asking what the "green leaf" was, lol! They loved the soup and even had two bowls each! The best compliment I can give you Gina is they told me to make it again for them this fall! If they want it again that is the biggest compliment I receive! I will say they tell me that about almost anything that I make that comes from your website! Keep up the great work, it has helped me accomplish my weight loss goal and maintain for nearly 2 years with a loss of 80 pounds! If it tastes like diet food I don't eat it, I use your recipes at least 5 days a week! It has transformed my cooking philosophy, thank you!

    Made this today and just had a bowl for lunch. I used sweet potato rather than red and I also tossed in some baby bella mushrooms. It totally ROCKS!! Thanks so much for this recipe. I know I'll be adding this to the soups I make all the time!

  78. Wow! This soup is fantastic! I happened to have homemade chicken broth on hand, which made it even better. I added some more carrots but other than that stuck right to the recipe. A new favorite and making me a little sad that warmer weather is headed our way – luckily we still have snow on the ground from a late spring storm so it was a perfect dinner. Thanks so much 🙂

    This is one of the most delicious soups I've ever tried, and is my new favorite! My daughter invited me over to try it last night – lucky me! She used a chicken Italian sausage but didn't change anything else. I just finished a leftover bowl and must say its even better the next day! We are having a soup cookoff at work this week – I think I just found my entry!

  81. Made this soup. It was good, but I did not like the turkey sausage. Maybe it was the kind I used that made the whole dish just taste like sausage. I did love the kale taste. I think I will make this dish again with out any meat next time and maybe add a little bit more potatoes. I bet it would be so delicious!

My 3 year old son devoured it then asked me for the next 4 days if I was making this soup for dinner again and didn't understand that we couldn't eat it every day.     I made this soup last night using the JennieO Hot Italian Turkey Sausage & sweet potatoes instead of white potatoes. Delicious!! And I love that it made enough for me to portion it out and put the extra in my deep freezer for work days when I having nothing healthy to bring for lunch! Supposed to get cold in Michigan this weekend (30's), so this soup is right on time!

    1. I made this soup a month ago and froze the left overs. We just took it out of the freezer and reheated it and it was great! I will be using it for soup exchange this weekend!

      1. I made this but left out the carrots because I hate cooked carrots. Overcooked the potatos though so watch for that!

        The next day it was better than the first! I love zuppa tuscana from the olive garden and this tastes sooo much like it but with a fraction of the calories!

    I was just out for dinner at a portugese restaurant and had their caldo verde soup and this totally reminds me of that. I loved it and cant wait to try this version! I may swap some potatoes for parsnips and puree it to add a bit of richness. What do you think?

    Great recipe Gina! Love your use of potato with kale – that balances out some of the bitterness for me!

    To simplify the cooking even further I would use Aidells Pre-Cooked Sausage – you can find them in almost any grocery store & the different flavors they offer could add some unexpected spice to this dish 🙂

  120. this was great. I only made one change… I added half the potatoes in with the carrots to cook and then BEFORE i put the rest of potatoes and sausage in I used my immersion stick blender to cream it up a bit. Tastes A LOT like zuppa toscano from Olive Garden.

  121. This is so good – I made this because it sounded close to Suppa Toscana from olive garden. This was so much better and no cream added. It definitely did not need any!!!

  122. Just tried this coup today. It was delicious and packed full of good veggies! I didn't have turkey sausage on hand so I used what I had…Italian pork sausage. Increased the points a bit I'm sure but still wonderful.
