Corn on the Cob with Chile and Lime

Celebrate Cinco De Mayo this week with this easy recipe for tasty corn with a kick. This is my friend Doreen's recipe. She whipped this up at her house one day and when I tried it, I had to have her recipe! It's so quick to make and low in points.

Corn on the Cob with Chile and Lime

Servings: 4 Size: 1 ear Points +: 3 pts • Smart Points: 4
Calories: 90.9 • Fat: 2.1 g • Carb: 18.9 g • Fiber: 2.9 g • Protein: 3.0 g • Sugar: 3.2

  • 4 ears corn with husks
  • 1 lime, cut in wedges
  • 1 tsp butter
  • McCormick Chili with Lime Seasoning


Microwave corn, in their husks, for about 15-20 minutes. (Until cooked)
Remove husks and corn silk. Rub each corn with a little butter. Squeeze lime juice and sprinkle with chili seasoning. Enjoy!

  4. Gina - I am obessed with your recipes!!! This actually reminds me of a recipe from Pakistan that we have all the time - only we don't use butter. Instead we mix salt and cayenne, then dip a lime wedge in the mix and rub it on the corn. It's heavenly!!

  7. sooo good! Similar to Elotes, one of our favorite summer sides. Instead of butter on the corn, you use either Mexican Crema or, bare with me here, mayonnaise. Then you top with chili powder, sprinkle on some cotija cheese and squeeze lime over it. If you're somewhat conservative with the mayo & cheese, it's still very WW friendly. And, I know mayo on corn sounds disgusting, but I've never served this to anyone that didn't like it!
