A simple side dish of asparagus, roasted in the oven until tender-crisp. This is super easy and can be served with just about from poultry, to steak or pork. You can garnish with shaved Parmesan cheese or lemon if desired.

- 1 bunch fresh asparagus
- olive oil spray
- kosher salt
- fresh pepper
Preheat oven to 400°. Wash and trim hard ends off asparagus. Place in a single layer in roasting pan.
Spray with olive oil and season with salt and pepper.
Roast in oven approximately 10 minutes.
This recipe is a great, simple way to enjoy asparagus. To kick it up a little, I added fresh minced garlic to the asparagus before roasting.

ReplyDeleteI was inspired and added my own twist to this recipe! Dipped asparagus is egg and then rolled in breadcrumbs, sprinkled some grated parmasean cheese and sprayed with butter. Put in the oven on 375 for about 13 minutes. DELICIOUS!!
ReplyDeleteI substituted the olive oil spray with melted unsalted butter and wrapped 3 at a time in bacon...awesome and delish!!!
