I love combining spiralized zucchini with pasta, it’s a great way to lighten a pasta dish, and you’re still getting real pasta which I often crave when I am eating zoodles alone.

This recipe is a dish I often whip up in the summer and it’s great because it takes less than 20 minutes to make. For those on gluten-free diets, use brown rice pasta instead. I love this simple weeknight meatless dish, if you wish to add protein, this would be great with shrimp or chicken!

Ingredients

  • 2 7 oz zucchini, spiralized or julienne
  • 4 cloves garlic, chopped
  • 2 shallots, diced
  • 3 medium tomatoes, diced (or 2 cups grape, halved)
  • 4 teaspoons extra virgin olive oil
  • Kosher salt and black pepper, to taste
  • pinch crushed red pepper flakes, to taste
  • 8 ounces angel hair pasta, wheat or gluten-free
  • 2 tablespoons chopped fresh parsley or basil
  • 1/4 cup low-sodium vegetable or chicken broth

Instructions

  • In a large pot of salted boiling water, cook pasta according to instructions.
  • While pasta is cooking, in a large saute pan, heat pan on medium-high flame, add oil when pan is hot.
  • Add garlic and shallots to the pan and saute about 1 minute, until soft.
  • Add zucchini and season with salt and pepper. Cook about 1 1/2 minutes, add tomatoes, crushed red pepper flakes, parsley, chicken broth and adjust salt and pepper. Stir and cook for 1 more minute.
  • Remove from heat.
  • Drain pasta when done reserving some of the water and and toss the pasta well with zucchini and tomatoes. Add pasta water if needed and serve with grated Parmesan (optional).

  2. This is absolutely delicious!! I made this last night for me and my boyfriend. He liked it so much it is now in our supper rotation! I doubled the recipe and used asparagus along with the zucchini and tomatoes. Today for lunch, I reheated along with leftover chicken breast and still a hit! Thank you Gina!

  8. This is one of my favorite recipes! For my ww friends on purple if you use jovial brown rice pasta it’s a 0 point food. I ended up with a total of 2 points per serving after putting all of the ingredients into the app!!! (Parmesan adds more points)

  10. We used whole wheat pasta to further reduce the (WW purple) points. This was OK the first day, but when it had time to rest overnight in the fridge, it was even better. My daughter didn’t like the two textures — spiralized zucchini and pasta — but by the second day, you couldn’t tell the difference. Sauce flavors also had some time to blend. We’ll try it again!

  11. I really enjoyed this! I will definitely make it again. It was lite yet filling. I did add some chicken to my dish and folded it into the veggies once cooked to absorb some of the liquid. It would be great either way. 

  12. Oh yummy & easy! I wanted to use up a little bit of wine so added that. Used big cherry tomatoes from the garden.  Def a keeper!

  14. This was seriously so good.  Such simple ingredients and full of flavor.  My family loves it!  Make sure you add fresh Parmesan cheese to your serving.  It takes it to the next level!

  15. This is a great recipe bursting with flavor and amazingly the prep and cooking times are both so fast! The ingredients are items you probably always have readily at hand so this is a lovely choice if you have unexpected guests as it can be served with garlic bread and a salad and you have a complete meal in minutes! We love to add some fresh basil from our kitchen herb growing box.

  16. I made this last night because it looks so delicious! I also added a pound of cooked shrimp to the recipe at the end. It was so great! My husband and I both enjoyed it tremendously!

    1. I haven’t tried this particular recipe but I always substitute vegetable broth because my husband is allergic to chicken. I don’t see why you couldn’t do the same here.

  17. I had high hopes for this one, but as other commenters stated- it’s bland. Really bland. I even used normal chicken broth. The biggest issue I have is the final product looked nothing like the photo. It was zucchini heavy which isn’t a bad thing, just not what I was expecting from your photo. I did give it 3 stars for how easy it was and after a few tweaks, I’ll make a rendition of this for those “meatless” nights. I’ll still try your other recipes though!

    This is the only recipe of yours that I have ever found lacking in flavor.  I am always so impressed with your seasonings.  This one needed some diced pancetta and fresh basil to spice it up which made it yummy.  Thank you for consistently (otherwise) providing me with great meal plans.

    1. I thought this was perfect as is, no adjustments, but I think the freshness of ingredients is important–we had garlic, tomatoes, and zucchini from the garden and the flavor was just explosive! So simple but super tasty. Didn’t even miss the olive oil I’d typically add to this kind of dish.

  19. Amazing dish. We’ve just finished dinner and it was so delicious! We’ve added a bit shredded chicken breast (leftovers from last evening) and it gave a bit more body. We’ve cooked with the zucchinis and the cherry tomatoes from our garden, So fresh and light! We’ll definitely cook it again!

  21. This was delicious! I normally do not like pasta dishes and I’m not a fan of cooked tomatoes, but this was awesome. I used half the amount of garlic and shallots. I may have also added about 2 tablespoons of cream cheese during the cooking and a poached egg on top when it was all done. Definitely will make again. Thank you!

It was so flavorful and beautiful to look at.     Loved this!  So easy to prepare and bursting with flavor!  I added chicken breast that I prepared on the George Foreman grill. This will definitely be in my regular rotation!

  25. Far exceeded my expectations! I added a lot of crushed red pepper, added kalamata olives and subbed better than bouillon and pasta water for the chicken broth. So amazing! The servings were so substantial, my husband couldn’t even finish his. Highly recommend!

  27. Gina, I recently had a Cauliflower Fritti appetizer from All Purpose Pizza (DC.) It was roasted cauliflower, Sicilian hot sauce, mint, caper yogurt, topped w bread crumbs. If you could recreate a similar recipe I would really appreciate it. It kind of tasted like a Cauliflower buffalo wing but with an Italian twist, really liked it. 

  28. I love this recipe! I use the chicken (bone) broth and really like the flavor it adds it really compliments the fresh zucchini and tomatoes and with a little brown rice pasta and a sprinkle of parm it’s kind of  addicting. I make it quite often.  Thank You!

  31. Wanted to share another "twist" on this that we've come to love (we've had this 4 times since my last comment!)

    We've been serving this with chicken we marinade and then grill. We chop the raw chicken into small chunks sized for skewering, and marinade them for at least 8 hours (it usually ends up being for 24 hours around here). Skewer 'em up (don't forget to soak your skewers if you're using wood!) & throw them on the grill until cooked. We then serve the chicken on top of a pile of the pasta. It's a fantastic combination!

    This is the marinade we use for 1lb of chicken:
    3 T. Lemon Juice
    1 T. Olive Oil
    2 Cloved Garlic, minced (or 1t. jarred minced garlic)
    1/2 t. Black Pepper
    1/4 t. Ground Cumin
    1/8 t. Cayenne

Your blog has truly helped change how my family eats, as well as to help shrink our waistlines! I can't believe I used to eat a lean cuisine for dinner each night for years!! Never again.   33. I made this last night and my husband and I both LOVED it! Food texture seems to be important to me, and I really like zucchini and carrots as a side dish cut julienne-style. Plus, I needed to use up some of my tomatoes and zucchini from our garden. Using zucchini cut like this and combining it with pasta is a GREAT idea. The zucchini was still a little crunchy which I love. I will definitely make this again. Thanks AGAIN, Gina, for helping me on my WW journey and my new goal of trying to be healthier!

    I just put all this in the weight watchers recipe builder and its telling me its only 4 + pts per serving… not sure how you got 7

      Its saying its 8 pts for the whole 8oz of pasta. 4 pts for all 4tsp of the olive oil. The rest of the items are zero pts. It saying its 20 pts for the whole dish 20/4 is 5pts. Perhaps I am doing it wrong, but that is what it says.

  35. This was amazing! I made this for my family and they loved it. The sweet of the tomato with the spicy red peppers was a perfect combo. I ribboned the zucchini and it was a big too long for my taste, but chopped up easily with a fork. Overall, it was a great summer dish, thanks so much!

  37. So I literally just rinsed my dish and put it in the dishwasher after having this tonight.

    I did make a bit of a change – today, I'd cooked up chicken in the crockpot so I could shred it. So for this recipe, I used half as much zucchini, and replaced it with some shredded chicken.

    After sauteing the shallot & garlic in half the olive oil, I tossed in the chicken and left it in the pan just long enough to get warm. Set that aside, put the rest of the oil in the pain and in went the zucchini. Once I'd added the tomatoes, broth, parsley & red pepper flakes, I put the chicken/garlic/shallot mixture back in.

    Oh…my…goodness.

    This is shooting straight up to the top of our "favorites" list here at home. AMAZING!!

  38. I have made this dish twice and I love it. The first time I made it I followed the recipe exactly and was not disappointed. The second time I made it I added some large chunked jumbo shrimp.   40. I made my meal plan from your blog today, for the first time, and this was the first dish I tried. I used cherry tomatoes and added a little white wine. It was SO good. I've made something similar in the past and used lots of olive oil and butter… so I'm SO happy to find this one with much lower calorie content. Two thumbs up for using chicken broth instead!     Ok, so I made this last night and it was so yummy and "refreshing" if that could be the right word. My husband's one complaint about eating healthy like this is that he misses meat! SO…a side of sausage for him to add to his bowl and it was perfection in our house!!! Thank you for making eating enjoyable again!

  44. Another gluten free option… prepare with spaghetti sauce instead of rice pasta. That's what I plan to use. We have been using spaghetti squash in place of pasta since diagnosed with gluten intolerance. Results in less points, too!

  45. I picked a zucchini out of my garden today! (no tomatoes yet). Going to pick up a tomato at the store! This will be lunch for me today! YAY! Great way to highlight one of my own grown vegetables.

    Used LOTS of zucchini and summer squash, 4 roma tomatoes, garlic, salt and red pepper to taste, scallops, all served over angel hair.

    The recipe says to serve with grated parmesan cheese. How much per serving or total and is this amount included in points+? Thank you. Your website makes me want to lose weight just by looking at it. It is very well set-up!

  58. If I am making this for a big group of people how much do I measure myself? 1 cup, 1.5 cups, etc. Because I am making this dish for about 15 people, therefore I don't know how to measure my serving.

    This was awesome…I accidently messed up and dumped the whole box of pasta in, then was in another world when I mixed it together (I had told myself that I would only use half the pasta), but had I not messed up it'd have been the best meatless pasta I've tried!! Thank you Gina!!

    God question, I probably picked up from another recipe and forgot to change that. The serving size is 1/4th of the recipe so it's divided equally by 4. A little over a cup approx.

  61. Served this last night with some grilled grouper – it was delicious and a hearty portion! I didn't have fresh tomatoes so added about 3/4 can of fire roasted tomatoes and also added a few spears of asparagus. I came up with about 6pp – will definitely make it again!

  62. This is a good one!! Since I always have to come up with new recipes, it's hard for me to make repeats of older ones. Tip- Don't overcook the pasta and it should be great!

  68. The serving size is basically dividing this equally in 4 bowls. I figure out the points for the whole recipe, then divide by servings. If there is a better way, let me know.

  70. I make this ALOT with fresh baby spinach leaves or with fresh steamed asparagus and the family LOVES it. I hadn’t thought to use zucchini but I am so gonna try this! It’s budget friendly. I also use whole-grain pasta, mostly penne (the kids enjoy the different shapes) so I vary it. Looking forward to this recipe!!!
