I have been making this Pork Chops with Dijon Herb Sauce recipe for years from an old Food and Wine cookbook, and I believe it’s one of the best ways to prepare pork chops. My husband is not the biggest fan of pork chops, but he loves them prepared this way. Dijon Mustard Sauce for Pork

The combination of sauteed onions with Dijon mustard and fresh herbs is magical. This easy mustard sauce quickly transforms basic pork chops into a delicious dish with minimal ingredients. You can use any fresh herbs, but I always use chives and parsley since I have them in my garden.

How long do you cook pork chops?

How long you cook pork chops depends on how thick they are. For this recipe, I used one-inch bone-in pork chops and cooked them for about seven minutes on each side on the stove. If your chops are thinner or thicker or don’t have a bone in them, then you’ll need to adjust your cooking time accordingly. The best way to know if the pork chops are done is to use a meat thermometer. When it reaches 160 degrees, the pork is ready.

These pork chops pair so well with many different sides. Below are some of my favorite side-dish ideas.

How to Store, Freeze, and Reheat Pork Chops

These pork chops will last three to four days in the refrigerator. You can also freeze them in containers with the sauce poured on top. The pork can be frozen for up to three months. When you’re ready to eat them, thaw the chops overnight in the fridge and reheat in the microwave.

Variations:

  • Pork: Sub the bone-in pork chops for thick boneless chops. You can also grill or bake your pork if you prefer.
  • Mustard: Use whole-grain mustard.
  • Onion: Substitute onion for shallot or red onion.
  • Herbs: Use any herbs you have on hand, like tarragon, rosemary, or thyme.
  • Broth: Swap chicken broth for beef or vegetable broth.
  • Sauce: Add mushrooms, fresh garlic, capers, white wine, or lemon juice to the sauce. Serve the Dijon mustard sauce on chicken or beef.

Ingredients

  • 1 tsp butter
  • 4 pork chops, 22 oz with bone, fat removed, 1 inch thick, trim all visible fat
  • 1/2 tsp salt
  • fresh ground pepper
  • 3 tbsp chopped onion
  • 3/4 cup chicken stock or broth
  • 1 tbsp dijon mustard
  • 2 tbsp chopped, fresh herbs like parsley, chives

Instructions

  • In a large skillet melt the butter over moderately low heat.
  • Season the pork with salt and pepper.
  • Raise heat to medium and add the chops to the pan and sauté for 7 minutes. Turn and cook until chops are browned and done to medium, about 7-8 minutes longer. Remove the chops and put in a warm spot.
  • Add the onion to the pan and cook, stirring, until soft, about 3 minutes. Add the stock and boil until it reduces to 1/2 cup, about 2 to 3 minutes.
  • Stir in the mustard, herbs, and 1/8 tsp pepper.
  • Put the chops on a platter and pour the sauce over the meat.

Notes

Food and Wine says it is OK if the pork chops are pink in the center. Trichinosis is killed at the relatively low temperature of 150°. I use a thermometer to check the center and usually leave it until it hits 160°. (Don't overcook or they will become dry.)

  1. I didn’t have fresh herbs. I had to use dried. But as I was making this I remembered I had a handful of mushrooms left from another recipe. I chopped them up and sauteed them with the onion. It was a wonderful addition to this recipe!

  2. Made this with chicken thighs, since my husband can’t eat pork, beef, lamb. I find chicken thighs or turkey tenderloins are a good substitute. Anyway, it was delicious. The sauce is wonderful.

  9. The first time I made this my husband said the sauce tasted like a million bucks (or something silly like that) and now we call them million-dollar pork chops. I’ve made it several times since and the original recipe is DELICIOUS but I think I’ve finally found the right tweaks for our family. My most recent attempt, I marinated the pork chops in a dijon mustard, honey, garlic, olive oil mix for a few hours. I did everything else per the instructions, except adding a flour slurry after mixing in the mustard and herbs so it was a little thicker. I also added the pork chops back for a few minutes in the sauce to reheat them before serving, which ended up with the sauce sort of glazing onto the pork chops. I’ll do the same thing next time but not brown the pork chops for as long on each side so they don’t overcook when they’re back in the sauce.

    Highly recommend this recipe – everyone I know who has tried it says it’s restaurant quality.

  10. This was one of mine and my husband’s favorite pork chop recipes! It helps that we start with pork from a family farm that is great tasting. I used shallots rather than onion as I had one to use. True to Skinnytaste form, it was simple to make and the dijon sauce was excellent and elegant. Yum! We paired it with the Rainbow Potato Salad and good sweet watermelon.

    Made this for the second time. Had thicker boneless chops. Finished cooking them in the oven at 350 degrees after browning. Finished the sauce while they were finishing. Made with chives once and parsley the second time. Better with chives! Also used shallots instead of onions. Excellent quick dish. Pairs well with many sides.

  13. Very, very tasty and so easy! I used parsley because that’s what I had, but next time I will add some chives.  I had boneless pork chops on the larger side so just cooked them longer and put them in a preheated 200 degree oven to keep warm while making the sauce. Served over rice.

    I’m not usually big on pork chops, but this was a dish that I could make over and over again! My husband said that it’s the best pork dish he has ever had. As a bonus, this was super quick and easy to put together. The flavors in the sauce is divine, and the timing of cooking the pork was spot on for deliciously juicy pork chops. 
    I paired this with the Parmesan Crusted Delicata Squash as suggested in the meal plan. That is now a favorite as well. With a mandolin, it comes together really quickly and my husband said it was better than garlic fries. High praise all the way around for this meal. Thank you!

    This recipe comes out really good and it’s simple to make for a weeknight dinner. I always double the gravy ingredients so that I can use my full can (14.5 oz) of chicken broth and have extra gravy for our sides. This helps if you’re serving with potatoes and veggies on the side so it’s not dry, and keeps leftovers moist for the next day. I also add 1 TBSP of cornstarch to thicken the gravy. I’ve made this with boneless pork chops, and bone-in. It’s a success with whatever pork chops I have available. Definitely recommend!

  23. Excellent!!! I used boneless pork chops that were about 1/2 inch thick, and cooked them three mins each side. Made the sauce, added a salad for a side, and we had supper in under 15 minutes. Gina, thank you for your dedication to this site, and for sharing the recipes. Once again this recipe, in my opinion, was excellent! *I used French’s Honey Dijon Mustard.

  24. Made exactly as written. Unfortunately, these were chewy and incredibly bland. The bone in pork chops I used weren’t overdone, but they were very dry. I often grill pork chops with better success. I think these would be better if they had been marinated before cooking which would infuse flavor and tenderize the pork. I’m usually a huge fan of skinnytaste recipes but these were a huge disappointment.

    I love this very easy recipe. Butter and low heat. I had fresh parsley. I added a squeeze of anchovy paste because I add it to so many things for a little umami. Can’t taste it but it adds so much. Putting this in the rotation!

  29. Made this 3 times using fresh herbs from FL garden. I cut chops from 1/2 pork loin. Definitely keeping this recipe! Oregano, parsley, rosemary and garlic, green onions, Thai and regular Basil. Mushrooms, stone ground mustard. All good.

    This recipe is amazing! I make this boneless pork chops. Tonight I served it with roasted asparagus and parmesan delicata squash but have also served it with Salmorejo and it was just as delicious. Next time I will make it with rice or potatoes, something to sop up all that yummy sauce.

  34. Made this for dinner tonight. Very good. My chops browned a little faster than planned so I turned the heat down, put a lid on it and kept them on low for a bit. I also added a little corn starch to the sauce to thicken it a bit since I made garlic risotto with peas to go with it. The hubs actually said it was excellent. : )

  36. Excellent recipe!  Can also substitute chicken breasts.  I like it with fresh dill.  If you’re watching your sodium, you can leave out the salt, as there is enough of it in the broth.  Or, use a low sodium broth.

  40. Delicious! Added chopped mushrooms with the onions. Seasoned with homegrown thyme. Served with Gina’s Teeny Tiny Potatoes recipe. Swapped thyme for the rosemary. Great combo for 8 freestyle points. It’s a keeper.

  59. Made this last night. It was delicious! I used two pork bone in porterhouses, they usually have those at my grocery store. It was great! They were really moist and the sauce was perfect. Not too much dijon, just enough. I served them with some roasted potatoes. Will make again! I think these would also be good with some chicken thighs.

Doubled the sauce and used half as a marinade and then the other half over the cooked pork chops served on cauliflower purée with roasted greens on the side and it was outstanding!     I love love love everything you post ! I am a relatively new old cook and really enjoy the simplicity yet complex flavors of all your receipts.  I made the pork chops w Dijon herb sause tonight. Probably a dumb question, but am I cooking on too hot of stove top ? I used olive oil instead of butter, but the oil pops all over the stove and makes clean up a bigger process. Perhaps I need to turn down the heat ??

  72. Gina, I’ve probably made 15-20 of your recipes, and this one was my favorite. That’s saying a lot because I didn’t even think I liked mustard! I used boneless pork chops since it’s what was available. I didn’t need to cook the chops the whole time listed, maybe 7 minutes total. This will definitely be going into my rotating. I served it with green beans and roasted butternut squash. A+ from me!

My husband loved it and he is hard to please when it comes to his meals!   80. Just curious, Gina, if you’ve tried brining the pork. I’ve been researching it recently because my pork always comes out dry.  Most brining recipes tell you to use sugar along with the salt, but the calorie-conscious ones say you can skip the sugar and still get great results.  I’m going to try it but wondered if you have & if you noticed a difference.  (Thanks for all you do! My husband and I are losing weight and feeling healthier than we have in years thanks to your recipes.)

  83. My husband does most of the cooking, but he hates pork chops. I was craving them so I decided to try out this recipe. It was delicious and so easy! My husband was very impressed. Next time I will pound out the pork chops a bit more, and I like the idea of adding mushrooms too. I didn’t have any fresh herbs so I added a handful of dried marjoram. Incredible!!

  84. A favorite recipe with a flavorful sauce. I love Edmund Fallot Dijon mustard and like any excuse to use it. Also added clove of garlic to the broth, and chopped rosemary to the onion. I have a wonderful seasoning from a local place that is known for years for this seasoning: called RoastMary. It is from the “Rosemary House” in Mechanicsburg, Pa. Seasoned chops with that. I had boneless pork chops and they tend to be a bit tougher but the flavor was so good. I just seared in a hot cast iron pan for one minute and flipped them and cooked about 4 more minutes.

    Wonderful sauce. Had boneless center cut pork chops that were 5.25 to 5.5 ounces raw after fat removed. Hard to find good sizes of meats. They all seem to be so much larger. Adjust calories to a larger chop. Will make again. Excellent. Thank you.

  97. I have been looking for a really good really easy thick pork chop dish and I have found it. These pork chops really do taste like a 5 star restaurant meal. The only thing I changed was cooking the pan seared chops in the gravy while reducing the sauce and bringing the chops up to 150. Cooking them 7 minutes on one side and 7 minutes on the other did not bring them up to 150. Other than that this recipe is perfect. Thanks for posting 🙂

I know that sometimes the ingredients are simply used to enhance the flavor and you don't actually taste it, I am really hoping that this is the case with this!     1. You could leave the mustard out…and add CUMIN…Portuguese-style (think minimum one level teaspoon…I add almost a level tablespoon as cumin marries SO well with pork!!  I love mustard…but I don’t really see it with pork normally!

    Just tried this meal tonight, halving the meat but keeping everything else quantity wise the same except for using one red onion, wholegrain mustard and more than the quantity of stock as we like a lot of sauce. Loved this!I made this with sliced pork tenderloin…added worchestershire to the sauce and while it was simmering I added 3/4 cup of skim milk with 2 tablespoons of flour to thicken the sauce and served it with whole wheat noodles…my whole family loved it.     Wow! These were the best pork chops ever! I made them over the weekend and the family asked for them again, so I made them tonite. Just a few minor tweeks, 4 chops would never be enough for us, I have an eating machine teenager, so I used a family sized pkg instead. To make up for the difference, I just added a bit more chicken broth, dijon, and a little more chopped onion, and 1 Tbs of flour, to give the sauce just a little more body. Gina, you are a godsend! I feel like with you, I can get to goal weight (this time). Thank you sooo much!!!

I didn't have fresh herbs so I used dried tarragon and parsley – very good. Also, I added mushrooms. We like sauce, so next time I will not cook the sauce down quite as much. First time I have made something in a while that my husband said "amazing"!

    I'm confused about the calorie count, portion size, etc. I'm new to calorie counting, weighing food, etc. so I might be doing something wrong. Your recipe states 4 pork chops (22oz with bone), 1" thick, fat trimmed. I translate this to mean that each raw pork chop would be approx. 5.5oz including the bone weight, after the fat is trimmed. I could only find 1/2" thick chops, and after trimming the fat, the weight was approx 6.5oz. Using the nutritiondata.self.com calculator for pork, fresh, loin, center loin (chops), bone-in, separable lean only, raw, I calculated my chops to be approx 234 calories each. That is big difference from your serving size portion of 166 calories. I calculated my recipe per serving as 263 calories. I didn't expect that much difference, especially since my chops were 1/2" thinner that the recipe called for. What am I doing wrong? Thanks! Scarlett

  148. A keeper! I used shallots and olive oil instead of onions and butter. Could not have been easier to prepare. Served with a side dish of orzo and veges….cooked thin asparagus pieces and halved grape tomatoes right in the pasta water; finished with some toasted garlic and a teaspoon of olive oil prepared in the same pork chop/sauce pan so it picked up some of the flavor. The entire meal was done in less than an hour with only two pots.

  150. I made a ton of these pork chops the other day because I had picked up a bunch of the pork on clearance at a local grocery store. I figured we could eat them for lunch or whatever. Well, they weren't getting eaten fast enough. I came up with a recipe/dish to help use the leftover meat and sauce (of which I also made a ton).

    Here's what I did:

    Diced up (in medium chunks) the meat and put the pieces in the bottom of a 9 X 13 baking dish. I took a very large onion and a bunch of mushrooms and sauteed them in a pan. I took the mushroom mix and the meat and combined them all together and then took the leftover sauce and poured it over the meat mixture. I made homemade mashed potatoes and neatly put it on top and smoothed it out. I baked this at 375 degrees F. for about 30 minutes.

    It's just like shephard's pie, but oh so much better!!

    I think it's such a great idea having catering with WW points! What a great service you are offering people! So happy you are enjoying the recipes you've tried so far, here's a tip with fresh herbs, wash them, roll them in plastic wrap in small portions and freeze them. When you need the herb, remove a portion from the freezer, it thaws quick, and use it as you normally would.

    I run a small catering business & found your website 2 weeks ago, your recipes are awesome!!
    I cook dinners for a family that wants ww meals so the Mom can loose weight but the ww cookbook recipes can be short on flavor, I also need ww meals now that the holidays are over & needed meals that my husband would eat also, you have solved that problem, my husband has loved every recipe I have gotten from you! The comments help also as I cook 3 dinners a week for my customer so they need to taste good reheated so I always look for those comments. This Pork Chop recipe is yummy, using fresh herbs is key, I try and use the same herbs in a few dishes per week so I don't throw too much away, not being summer I have to buy them. I made the oven fried Sweet potatoes with the pork, they were good too, I added some cinnamon instead of paprika, tried cayenne pepper on some butit was a little too spicy so I will stick with the cinn or paprika next time. Also have to tell you the Chicken Francese was amazing will be making that again this week, my picky husband loved it! was confused with flouring before egging the cutlets, (so ingrained the other way)but I followed directions and what a fab dish will definatley serve to my friends.     Mmmmm! We had these for supper tonight and they are SO GOOD and SO EASY!!! I used boneless chops and they tasted wonderfully. My husband was a bit paranoid about eating them because my meat thermometer was only reading 120 (its a dial kind, not digital), but the meat was white and fully cooked. Either way, it was super tasty and we will definitely make this again!

    I know, the flavors work so well together. This has always been my favorite way to make pork chops.

    The pork chops still weren't quite cooked to my family's well done taste, so I added them back into the pan, added a little more stock, and let it simmer. So yummy – love the flavors!

    You could use shallots instead of onions, or leave them in large pieces so he can pick them off.

  197. Gina!!! YUUUUUUMMMM! I used thick boneless chops instead so the cooking time took longer but the end result was so good. That sauce is amazing for so few ingredients. I had a leftover one today for lunch with plenty of sauce…OMG so yummy. Thanks for getting me back into using fresh herbs – it makes all the difference.

  207. Update: I made it last night and IT WAS A HIT!!! I just shortened the time and it worked. My friends came over for Lost night and that's what I served them. I was a little bit nervous because porkchops usually are tricky to cook… they are either undercooked or overcooked. This time, it was perfect! It was moisty and the sauce was delicious. My friend, who is pretty "high maintenance" and will tell you straight up if he doesn't like something, had 2 porkchops!!! I shared this website to my coworker and i told her about the porkchops and she's excited to try it too. THANKS AGAIN FOR SHARING! Yeay!!!

  211. I made this last night for dinner and…. OMG is all I can say. I did add garlic to is as my husband and I love garlic in everything. Even my husband said this was a keeper and he is so picky. When we were eating I was thinking that you could add a dash of fat free half and half to make it a cream sauce and I bet it would be awesome and another twist to this wonderful recipe!

  214. I tried this recipe recently and this was by far the best pork chops I have ever had. The only thing I did differently was add a handful of dried cranberries right after the onions. Definitely an A+.

    1. I replaced all the seasonings and herbs with Original Mrs. Dash and used butter made with EVOO to lower the sodium. It was awesome! I had a small issue with the sauce but this sauce is very simple and easy to fix by just adding a little water swirl and add more water and swirl until you get the right consistency.
