Wilted Baby Spinach with Garlic and Oil

Ingredients:
- 4 tsp olive oil
- 4 garlic cloves, peeled
- 2 lb fresh baby spinach, washed and drained
- salt and fresh ground pepper
Add the spinach to the skillet and toss with oil to coat. When spinach is just wilted, shut of stove and season with salt and pepper. Season immediately.


















Oh wow that looks really good. I think I'll make this and the pork chops for hubby tomorrow.
ReplyDeleteGina, I found this quite bitter - I'm wondering if I did something wrong or if that's how it's supposed to be? I'm used to having wilted spinach on pizza or with a yummy (fattening) dressing...maybe it's an acquired taste? By the way, I absolutely LOVE your recipes!!!

Did you use baby spinach? I find the larger leaves have more of a bitter taste.
ReplyDeleteI did use baby spinach but I wonder if I didn't brown the garlic too much - maybe it was slightly burnt? I'll tryu it again - it's a great way to use up spinach that's just past it's prime! Thanks!
ReplyDeleteIf you overcook the garlic it would be better. I always toss it and start over when that happens.
