Wilted Baby Spinach with Garlic and Oil

I love spinach and this is my favorite way to prepare it. I like to buy my spinach in prewashed bags to save time. Great side dish for fish, chicken and steak.

Wilted Baby Spinach with Garlic and Oil

Servings: 4 servings Time: 6-7 minutes Old Points: 1 pt • Points+: 3 pts

  • 4 tsp olive oil
  • 4 garlic cloves, peeled
  • 2 lb fresh baby spinach, washed and drained
  • salt and fresh ground pepper
    Heat skillet till hot, add olive oil and garlic. Sauté for about 5 minutes.
    Add the spinach to the skillet and toss with oil to coat. When spinach is just wilted, shut of stove and season with salt and pepper. Season immediately.

    2. Gina, I found this quite bitter - I'm wondering if I did something wrong or if that's how it's supposed to be? I'm used to having wilted spinach on pizza or with a yummy (fattening) dressing...maybe it's an acquired taste? By the way, I absolutely LOVE your recipes!!!


    3. Did you use baby spinach? I find the larger leaves have more of a bitter taste.

    4. I did use baby spinach but I wonder if I didn't brown the garlic too much - maybe it was slightly burnt? I'll tryu it again - it's a great way to use up spinach that's just past it's prime! Thanks!

    5. If you overcook the garlic it would be better. I always toss it and start over when that happens.

    6. Do you leave the garlic cloves whole or slice them?
