Chicken Taco Chili is one of my favorite chili recipes! It’s so good served in a bowl with multi-grain chips, topped with reduced fat cheddar cheese or avocados. This makes a lot and it is even better the next day for lunch. If you prefer the pressure cooker, you may enjoy my Instant Pot Chicken Taco Chili version instead. A great freezer-friendly meal!

The reason this recipe has been so popular on my website for all these years, it’s easy prep, just dump it all in the slow cooker and come home to the most delicious meal the whole family will love! It also freezes well and the kids love it! Plus it makes a lot, so eat some for dinner tonight and freeze the rest for another night!

How To Freeze

Allow chili to come to room temperature and store in an airtight container or individual containers for up to 4 days in the refrigerator or up to 3 months in the freezer.

And since so many are asking, although I have and love my Instant Pot, I still love my slow cooker! I have the 6 Quart Hamilton Beach Set ‘n Forget Programmable Slow Cooker (affil link). I love it because you can adjust the time you want it to cook, and it automatically turns to warm when it’s done. It also has a probe for meat that automatically shuts off when done. I hated my old crock pot, it burnt everything and my food had a weird taste. This slow cooker is so great, I actually own several!

Ingredients

  • 1 small onion, chopped
  • 15.5 oz can black beans, drained
  • 15.5 oz can kidney beans, drained
  • 8 ounce can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 cans diced tomatoes w/chilies, 10 ounces each
  • 4 oz can chopped green chili peppers, chopped
  • 1 packet reduced sodium taco seasoning or homemade, see below
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 24 oz 3 boneless skinless chicken breasts
  • 1/4 cup chopped fresh cilantro

To make your own taco seasoning, omit the packet, cumin and chili powder above and use below instead:

Instructions

  • Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder and taco seasoning in a slow cooker and mix well.
  • Nestle the chicken in to completely cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours.
  • Half hour before serving, remove chicken and shred.
  • Return chicken to slow cooker and stir in.
  • Top with fresh cilantro and your favorite toppings!

  2. This is the best! This has been a family favorite for years! Easy, tasty & a crowd pleaser. Great with rice or serve with corn bread. OR by itself as a hearty bowl of chili.

  3. I have been making this chili since 2013 and I still can’t wait for cooler weather to make it. It is so easy to modify the spice level. If making for just myself I will use regular rotel and the Trader Joe’s taco seasoning packet which gives it some kick, but if making for others I will use mild rotel and the taco seasoning with the recipe. I also either use a bell pepper, roasted hatch peppers, or a poblano pepper instead of the can peppers.

  4. I might have made only half the recipe if I’d thought about it – it’s a TON of food for 2 people! I’ll need to freeze some for sure, but Future Me will be glad of it in the bitter cold month ahead when I remember I DON’T HAVE TO LEAVE THE HOUSE TO HAVE A GREAT DINNER! I love it.   10. This had great flavor! I cooked my chicken breast in the air fryer ahead of time and then threw it all together in crockpot and let it heat up for about an hour. I didn’t need rice or a carb with it

    1. I often make a double batch and freeze half. When I’m ready to make again, I pull it out of the freezer and drop it back into the crockpot set to “keep warm” and let it sit in there all day. By dinner it’s ready. I’ve even bumped up the temp about 30 minutes before it’s time to sit down to high and it will good to go! Rice is easy to freeze and with a tablespoon or 2 of water and 90 second intervals in the microwave, it’s ready

    2. I freeze this in 2 serving portions. No containers? Cool well and place in Freezer zip-Lock bags and freeze single layer on a tray or jelly roll pan until frozen – then stack’em.

    1. Yes the spice level isn’t hot especially is you just do diced tomatoes without the chilies. Also I add sour cream and it can really tone down any extra spicey-ness 👍🏻

  17. So Delicious and healthy! I was dubious about cooking boneless skinless chicken breasts for 8 hours in a slow cooker. I should have trusted my instincts. For my taste, the chicken was beyond recognition, dry, and lacking texture. Discarded the chicken, and cooked bone-in skin on breasts separately to 145 degrees (continues to cook out of the oven), and shredded. Added to the bean/tomato mixture. Served with yogurt, lime, cilantro. Avocado option as well. So good! Thank you!

  26. If you’re short for time, boil the chicken in seasoned water for 30 minutes while the rest of the ingredients are cooking in the crock pot. I boiled the chicken with olive oil, salt, pepper, onion powder, garlic powder, paprika and chili powder. I then shredded the chicken and returned to the crock pot for 2 hours.

    This was extremely good. I was looking for a recipe where I can make tacos and chicken and I came across this one. I did have to add a few ingredients of my own and it came out extremely delicious. I will be cooking this way more often now. It’s also extremely easy to make.

    So I want to make this to serve for superbowl sunday – I am planning on making double or maybe even triple. When I click on the 2x and 3x the recipe the amount of beans do not change.

  30. I’ve made this so many times now, and it’s always so good. I usually leave the cilantro out since I don’t keep it on hand. I also make it in my instapot. 8 minutes on soup mode, 10 minutes natural release. It comes out perfect. You can’t beat a zero point WW meal!

  33. Fantastic recipe! Only one thing, it takes WAY longer than 5 minutes to prep unless I’m super slow. The only way this is 5 minutes is if all produce, cans opened etc etc has been done. Excellent recipe though! Actually I love all of your recipes, thank you for sharing.

    1. Yes, I make this a lot and always add more liquid. More tomatoes, either diced fire roasted or more tomato sauce. The chicken does soak up a lot of sauce.

  34. I have been making this recipe for years! It’s one of my kids favorites (actually, I’m not sure there has been a recipe that I’ve used of yours yet that my kids haven’t loved)! I’m planning on making this for my son’s cross country banquet, but I need to make a very large amount. Would I be able to make this in a stock pot on the stove?     This recipe is pulled out of my loose-leaf notebook as soon as we have a cold (cool or even chilly) day in Alabama! It’s so easy to keep most of the ingredients in the pantry, the cans of beans, tomatoes and tomato sauce.  I prefer to cook the chicken separately, shred and add the final hour of cooking.  It’s even better the second or third day after all the flavors blend while refrigerated. Whether served over chips with toppings or over cooked rice, it is a huge favorite in our family,

  42. We’ve been making this for years. It is one of our favorite recipes. I make a couple changes  – instead of tomato sauce I add a jar of salsa and then don’t add the extra spices beyond the packet.
    A couple weeks ago I decided to add a can of crushed pineapple and pineapple salsa. It’s a refreshing new twist on our old favorite.  We also add baby spinach at the end sometimes to pump up the nutrition .

    1. I can’t help you with stove top cooking, but I can share a conversion chart I found online that converts crockpot time to a Dutch oven. All times are for cooking at 325 degrees and it generally takes only a third of the time in the oven than it does in a crockpot. So for this recipe, it would take 2 hours in the oven rather than 6 hours at HIGH or 9 hours at LOW. If the timing isn’t convenient, make it on a weekend and serve it a couple of times through the week.
      This recipe is so versatile. It can be eaten with tortilla chips, in a taco shell, in a bowl over brown rice or cornbread [my husband’s favorite], piled in a baked sweet potato [my favorite]. Lots of options.

    Loved this recipe! I substituted white kidney beans for black beans because I didn’t have any in house. I omitted the corn because my boyfriend doesn’t like it in chili.  I cooked it for 8 hours on low. Once I shredded the chicken and mixed it all in it thickened up. I was getting worried it was going to be soupy. It was perfect.

    Hi-love this recipe-just imported it in MFP (changed the chicken to 32 oz instead of 24 cause that’s what I am using) and the protein is lower, carbs and calories are highter (I assumed cals would be as I added more chicken). Thoughts of why the protein and carbs are off? TIA!!

  59. This recipe is straightforward and do-able. It’s worth making with dried beans. They must, of course, first be soaked.

  60. Made this today and I can’t believe this is the first time!  Really tasty, versatile, and super easy. I did 4 hours on low and I think next time I will bump it to 3 1/2, take out the chicken and let it cook to 4.  Shorter time frames in my crockpot are typical for me, especially with chicken, no matter the size. Happy to have leftovers too, as well as some to freeze.  Very economical.

    Left out the can of green chilli peppers as couldn’t find any here in New Zealand, added fresh green capsicum instead , although probably didn’t need it.

    This morning I put all the ingredients in the crock pot before we went to church.
    When we came home at noon, it seemed very watery–too juicy, but by 6 p.m. after I chopped up the chicken breasts, it was perfect consistency and delicious! I will definitely make this recipe again.

  63. Just made this for dinner tonight, and it was delicious! I had seen some other reviews mentioning that 3 to 4 hours on low was sufficient to cook the chicken, which worked perfectly for me. After that timeframe, I removed the chicken and kept the slow cooker going with the beans and vegetables in it for a few more hours. I halved the recipe (approximating) and ended up with around six light servings which I can use in tacos, tostadas, or on rice. 

  64. The commenters that say this recipe is bland have something wrong with their taste buds! Absolutely loved this recipe and it made a ton! It does have a kick but all the kids gobbled it up. I will definitely make this again. 

  65. This recipe looks so good I’m going to make it tonight! My only question Inhave is the 🔵point value. All of the ingredients are 0 pt foods, so you would think the meal is a 0pt recipe. But when you use the WW calculator inputting the nutrition information given on this recipe it comes out to 5 pts 🔵.  Can someone explain this?

The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.

      The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, now you know why.

  67. Excited to try this for dinner but plugged this recipe end and it wasn’t 0 Blue points for me. 15.5 oz of kidney beans was 11 points, and the reduced sodium taco seasoning was 5 points making this recipe 2 points per serving based on 10 servings.

    Made this exactly and cooked it on high for 4 hrs. and it was perfection. Chicken breast was so easy to shred. This recipe is a keeper. I’m pretty sure I love this more than a traditional ground beef chili. I love that we have leftovers. 🙂

    I do not have an instapot or slow cooker. I saw a comment about the dutch oven. I do have a heavy Le Creuset. The recommendation is add everything, cover, and simmer 1.5 hours?

    1. To cook it on the stove, simply double the cook time over low heat and add a little more water. 🙂

Hi Gina, I need some clarification.   If making on the stovetop -are you saying double the slow cooker time?  That doesn’t make sense.  You also say “add a little more water” but there is no water in the recipe. Can you clarify?   Sorry but I’m making this for a big family party this Saturday and need to make it on the stovetop because I have to double the recipe. 

  70. Love this recipe! Easy to make, tastes DELICIOUS and makes for great leftovers, if you and your loved ones don’t eat it all up the first time! I am not a fan of onions so that is the only item I omitted and it still wonderful. I only wish there was a way to adjust (increse) for 15 servings, for large family gatherings.

  73. I made this recipe exactly as written with one really important change! Only cooked in the slow cooker for 3 1/2 to 4 hours!!! My chicken breasts always get so dry when I cook according to the 8 hours on the directions so today at the 3 1/2 hour mark, I made sure they were done with a meat thermometer and oh my gosh!! It was SO good! We added shredded mexican cheese, lite sour cream and avocado! Also I used a hand blender to shred the chicken quickly and easily!

    1. Also agree on 3.5-4 hours (ON LOW). I checked mine at 4 hours with an instant read thermometer and they were already 180! Worth a check at 3.5 hours to ensure you aren’t drying out your chicken. This is our dinner tonight! Thanks Gina! 🙂

  76. I’m not one for negative comments and I’m always looking for healthy, low calorie recipes, but this recipe was just too bland for me and the family.  I tried adding extra seasoning, cheese and sour cream but it still didn’t improve the flavor or consistency.  

    1. This has been a fan favorite forever, so I am curious if you changed anything. Used all the taco seasoning?

    2. I make this all the time and gave a co worker the recipe after she tasted mine one day; hers came out really bland. She used grocery store brand spices that she had. I use spices from our local Savory Spice shop (and because I make this frequently mine are pretty fresh). I made her a packet of the spices and she tried it again; this was the difference

  77. I used a thermal cooker and made the taco seasoning from scratch as my grocer was out of it.  Ate on a bed of vegetable, super satisfying!  Subbed chick peas for corn and used fresh puréed tomato’s instead of sauce..

  87. I love this chili! Do you know why you would get 5 blue points when you put in the calculator but 0 why you put in the recipe builder?

    1. This happens because the calculator can’t distinguish your 0sp foods just from the nutritional info. The chili is comprised of only 0sp foods, but they still have calories, sat fat, protein, sugar, etc, so your calculator will give you a different result. No worries, though, it is correct to track is as 0sp. Using your recipe builder will always give you more accurate info for homemade meals. (:

      1. I put this in the WW recipe builder, but I get 4 points. I’m on the green plan. Am I missing something or doing something wrong when using the recipe builder? By the way, the recipe is delicious! It’s still great at 4 points, but 0 would be even better! 🙂

  102. I made this tonight exactly as the recipe states. I added half a bell pepper because we had it and I didn’t want it to go to waste. The recipe made exactly 10 Cup sized servings. My kids loved it! This will definitely go in the regular rotation of dinners. We may try to serve with rice or tortillas tomorrow night for something different. The calories were very close too, mine came out to 211 per cup.

      Same here, but it was a good base. I ended up adding a packet of ranch dressing mix, 8 ounces of water with a chicken bouillon cubes and about a teaspoon each of paprika, onion powder and garlic powder. That did the trick.

    1. You have to use the recipe builder, not the calculator. The calculator doesn’t recognize the zero point foods.

  108. Ever since my daughter introduced us to this great recipe, we practically live on it. I thought the tomatoes with green chili were over-priced at the grocery store, so I bought regular diced tomatoes and a couple of small cans of Jalapinos and used them for the tomatoes with green chili. I’ve continued doing that with every batch I make. I always make a double batch (it does all fit in the crock pot) and I freeze just the amount the two of us use in plastic bags–makes for a lot of good meals in practically no time for any nights I don’t feel like thinking about food or cooking. This recipe is definitely a keeper!

    I am in the process of buying a slow cooker but I hesitate with an Instant Pot.
    I know the IP would have the slow cooker option as well as many others (pressure cooker…) but I really wanted the slow cooker to make dishes such as this one (chilli, pulled pork and so on) ans I’ve read that it’s not as good as a real slow cooker for the this kind of recipes.
    What is your opinion on that subject? I would really appreciate your input ! (and your reader’s as well!)

    1. I’ve used my Instant Pot once for slow cooking; the heat all comes from the bottom, so I don’t think it works nearly as well as a regular slow cooker. Go ahead and buy the slow cooker.

    2. I still prefer my slow cooker over the Instant pot for crockpot recipes. My slow cooker has a ceramic insert that gets hot and stays hot. I used my Instant Pot once as a slow cooker, and it took much longer to get hot on the high setting, than my old (at least 6 years old) slow cooker.

  112. This recipe is delicious! I made this for a chili cook off at work and I won the Golden Spoon! Just a couple of notes: I don’t use a seasoning packet and I double the seasoning mix as listed, but I don’t double the salt. Also, I use one can kidney beans and one can of Bush’s black chili beans. I’m not sure what’s in the the chili beans but they add an additional layer of flavor. This is truly a “keeper”!

    Great recipe but I will tweak it for our tastes next time. I used chicken thighs as I prefer dark meat. I also rinsed the beans to lower the sodium.

    I haven’t made this recipe yet, but I am questioning. the nutrition facts. It is stated there 0 mg. potassium, when, in fact, there is loads of potassium in beans, tomato sauce, corn, diced tomatoes AND there is NO fat. I think this needs to be revised.

    I just made this for the first time tonight! I used my Instant Pot Duo Plus 9 in 1 & read other comments about someone experiencing a “Burn Notice” so I decided to thaw my chicken breasts first, then I set them on the metal rack it came with, poured a half cup of chicken broth over the chicken which poured underneath, which was my intention for improving the risk of the burn notice. I then put onions, then beans, etc making sure the tomato ingredients were closer to the top also preventing the risk of the burn notice and I did NOT STIR…I did 30 minutes on the “Bean/Chili” button with a natural release. I waited (forever) for the pin to drop on it’s own and that took 40 minutes….but let me tell you…delicious tender chicken falling off the tongs!!! Thank you Gina! I greatly appreciate that you have this set up for us busy folks…I’m so grateful for you…Don’t stop doing this PLEASE <3 Lol, we need you!

    I cooked this last night for 12 minutes on high pressure in the Instant Pot and used a quick release. I’ve tried 25min., 17min., and 15min, and the chicken breast was always dry. At 12 minutes the breast was perfectly cooked.

  139. I just made this yesterday using a dutch oven since I don’t currently have a slow cooker and it turned out perfectly! I put everything into the dutch oven and let it simmer on the stove for about 10 minutes to warm up, then put it in the oven at 375 degrees for two hours. I shredded the chicken after 1.5 hours and put it back in with the rest of the chili for the remaining 30 minutes, as the original recipe says to do. I added about 1/2 cup water. This recipe is delicious and I’ll definitely be making it again!

  141. Made it without a slow cooker, in a big pot on the stove. Onions first with a tsp or less of olive oil, and then throw in a clove of chopped garlic. Add tomato based ingredients and spices. I added some chopped white sweet potatoes at this stage. Then let it simmer for a bit, and add the corn and a jalapeno sliced lengthwise for heat. After about 25-30 mins, I added the beans, and then finally some pre-cooked shredded chicken I had. I removed the jalapeno before serving. SO GOOOOOOD! Topped with fat free greek yogurt, scallions, cilantro and a shaving of cheddar cheese. The jalapeno added the right amount of heat for me. Definitely will make again!

I did use 2.25-2.5 lbs. of chicken, and it was cooked on low after about 6 hours so I shredded it and turned the crockpot to warm. I also added some chopped sweet peppers and instant tapioca for thickening purposes. It is a deliciously different chili!

    I have made this recipe over and over. It is one of my absolute favorites. Travels well for tailgates and pot lucks in Crock pot. I always make sure my pantry is stocked with the items needed. You probably won’t have any leftovers but it’s great for Taco Salads the next day.

    1. Are you using mild chilies or diced jalapenos? Chilies shouldn’t be spicy at all. Same with standard chili powder.

And it couldn’t be easier to make. I make a batch every few weeks and freeze the leftovers in single serve portions for super easy lunches throughout the week. If I’m low on points for the day, it’s delicious by itself, but I also love eating it with tortilla chips, reduced fat cheese, and a dollop of Greek yogurt or light sour cream.     1. I have made this yummy recipe many times and have used frozen chicken breasts on several occasions.  I start my crockpot on high for about 4 hours then on low another 4 hours.  It comes out just fine.  Probably not supposed to use frozen chicken but it has worked for me!  

    2. Just wanted to say you shouldn’t put frozen chicken in the crockpot! Yes, it works as far as cooking the chicken, but since the crockpot uses low heat, it won’t reliably cook the chicken to the proper temperature quickly enough, which can result in bacteria. A lot of people will say they’ve used frozen chicken in the crockpot many times and never got sick or anything, but personally I feel it’s not worth the risk!

      1. Whether frozen or thawed, and regardless of cooking method (grilled, sautéed, baked, slow cooker, etc.), as long as the chicken gets to 165F it is safe to eat. IMO, every kitchen should have a good instant read thermometer for food safety and so many more reasons (perfectly cooked steaks comes to mind), For this recipe, verify the breast temps right before shredding and cook longer if they are not at 165F. Even on low, the slow cookers get way above that temp.

      1. You can do 8 minutes on High Pressure and NPR if you are in a hurry but I like doing the Chili setting which is 30 minutes and NPR. Chicken is better that way and flavors come together more.

Since I only cook for me I’ll make a big batch and freeze each portion in quart-sized freezer bags laid flat and stacked up in the freezer. Then after work when I get home and I’m tired, I can just pop it in the microwave to heat up. Sometimes I’ll heat up some rice with it… super yummy! Love that it’s now 0 Freestyle points too – talk about a lifesaver when I’ve used all my points for the day by lunchtime! 🙂

  175. Has anyone frozen the leftovers? How long could I keep it frozen for? I cook for only myself and can only eat it a few times in a row before I am ready for something new. Lol.

    1. I always make batches of soup and freeze them to take for lunches. They always turn out fine. I made this recipe yesterday, so I haven’t eaten a frozen serving of this yet.

    2. It freezes very well. The black beans are sometimes a tiny bit on the mushy side after reheating, but that happens if you store it in the fridge too, and it wasn’t an issue for me or my family. I’ve only frozen it for about a month at the most, because it always gets eaten by then, but I imagine you could store it for up to 3 months or so in the freezer. 

    3. I found some hidden in my freezer from at least a year ago and ate it (because I love it!) and it was fine!

  177. another great Skinnytaste recipe! my family loves this chili-we serve it over rice. easy and delicious. we tweak the seasonings to our preference and often use Trader Joe’s taco seasoning, but not the whole packet bc it can be too much once you add the chili powder.  Love it!

I am wondering, however, if anyone can suggest how to make this a little “soupier.” The flavor was delicious, but for us a little thick.  I did rinse the beans. Would it be possible to just add without rinsing? If I did, would the flavor be altered?

  181. Love this recipe! The first time I made it, I followed the recipe to the letter. It was very good, but not spicy enough for us. Second time, I substituted the tomato sauce with El Pato sauce (spicy!). Game changer! It really upped the flavor ante for us!

    Please keep posting the weekly meal plans, Gina. 4 of us have been meal prepping/sharing for a month, using your plans. Between that and increasing my activity, I’ve lost 10 pounds to date. So yes, your plans help! Everyone in my group has lost weight, and we all feel so much better.

Made this with fresh corn I needed to use up, and added a bit of cornstarch/water at the 30 min before serving time, when i shredded the chicken, to thicken slightly for my husband’s preference. Topped with cheese, sour cream, and cilantro. It’s a super easy and delicious recipe that will feed a lot! Will definitely make again and will use fresh corn again, since it kept a nice texture. 3 to 4 small ears provided 10+ 0z.

  190. I have made this many times, and it is wonderful and easy!   It’s just me and hubby now, and we can get three meals from this one pot. We usually do a taco night, and stuffed peppers too (on the grill, topped with cheese). Yum!  I think I will spice it hot with some ? in adobo.  A little goes a long way. 

     I can’t remeber how long I cooked it in the IP last time, but 20 minutes seems so long. Other chicken dishes are only 7 max 10, for thawed boneless breasts.  I’ll try ten minutes next time, and see if the chicken is done. Can always add more time. 

     I’ve shared this recipe with friends and co workers.   They all love it!   Thank you.

  202. Made this last night and it was wonderful! So very easy to assemble. I found by cutting the chicken breasts into 3″ pieces and then removing the chicken after it was cooked made it easier for me. The chicken in my crockpot was completely cooked after 5 1/2 hours on low. I’m going to add a few things in the future … green, yellow and red bell peppers, cilantro and will increase the amount of onion. Great recipe!

  204. Super easy and delicous. I had a friend put the crock pot on mid-morning as I was at work and the chicken was super tender and moist at 6:30 when I got home, It’s a whole lot of chicken for the chili and we loved it. We got a total of 5 meals for large men – all at zero points.

    I do like my chili a little spicier, so I would probably add some chili powder, red pepper, or something to up the spice, but that’s only personal preference. This made a great meal, with lots of leftovers, as is.

    I’m from UK, can you advise what the can of chopped chilli peppers come in, eg are these pickled or just in water. Could I use fresh green chillies chopped instead?

    1. I used a small can of chopped chilies from the Mexican aisle of our grocery. They were packed in water. I’m absolutely positive you could easily use fresh peppers instead.

  207. I’m addicted to this chili.  I make it at my boyfriends some weekends but want to make it at home some weeknight, I do not have a crock pot.  Any suggestions for making it on a stove top? Has anyone tried?

  208. Tried this in the instant pot by pressing the chili button and doing a natural release as advised above. The chicken was still raw. 

      1. It came to pressure and the chicken was not frozen. Maybe the breasts were too big? I threw it back in on manual 10 mins and it finished cooking.

  210. This is delicious…everyone always loves this meal. its super diverse and I have served it for company on a cold dreary day! I serve it plain or over rice (any kind, not just white), I have made soft tacos and burritos out of it, next I am going to add some left over homemade chicken broth to the left overs and make Mexican Chicken Soup or Tortilla chicken soup if I put tortillas and avocado! BTW my picky eaters even eat the beans and go back for more!
    Next snow storm I get stuck sleeping over at work I am bringing these ingredients in for us to eat a nice home cooked meal together before working our night shift after a long day of trying to rest! Hazard of working nights as a nurse but everyone would love to wake up to this!

    1. They are mild cooked chilies, not spicy but very flavorful. Not in a bring. Chopped jalapeno will work, seeded if you don’t want it spicy.

    Since all the ingredients are zero point ingredients, it obviously makes the meal zero points. My friend used the WW calculator and entered the nutritional details and the meal comes to 5 points. I’m a bit concerned and confused as I just started WW. Should I be looking at the meal as a whole or each ingredients that is zero points?
    By the way… it tastes absolutely fabulous!

  225. I’ve loved this recipe since I first found it on your old blog about 7 or 8 years ago. In the new WW Freestyle plan, this is 0 points! Ahhh! Sooo excited!! Of course, you have to make it with the spice combination that you listed instead of the taco seasoning packet in order to avoid the additional sugars in the taco seasoning. Using the taco seasoning (at least the ones I had in my pantry) made the recipe 1 pt. But still, what the what!?? I’ve got a pot of this going right now for my super-filling 0 pt dinner!

  227. I made a variation of this on the stovetop and it was great. I actually planned on using my slow cooker but ended up dropping the insert and breaking it 🙁
    I sauteed the onion and cubed & browned the chicken. From there I proceeded to add everything else, brought it to a boil, then I just let it simmer for about 30 minutes. Really good with tortilla chips.

It was a little bland, so I added a bit more chill powder and a little salt.  But, It turns out delicious. I would make this again.

    Thanks for the recipe! It is delicious! I made it in my Tupperware Pressure Cooker in just 20 minutes!

    1. Was just about to ask the same thing! I’ve done large chicken breasts in the Instant Pot for salsa chicken and recipe was 13 minutes. Probably could have gone down to 11 minutes. Only thing I’m curious about is the beans, corn, onion etc going that long in the instant pot on pressure setting.

    2. I’m interested in doing it in the IP also. I think there will be enough liquid for it to come to pressure, but unsure how long to do set it for.

    3. I just made this tonight in my Instant Pot. I put it on soup for 30 minutes and some of the chicken was a little underdone (it was frozen when I started). I turned it back on for another 5 minutes and it was perfect. Used the kitchen aid mixer to shred the chicken, stirred it up and it was done. It was really good and the kids and husband liked it, too.

      1. I made this in my Instapot – and put it on stew which is 35 minutes, shredded the chicken then put it back in and let it sit on low for 30 min or so and was perfect!

      I made this in the IP tonight. Doubled the recipe, threw all the ingredients plus 1 cup water in there (chicken was frozen), 20 mins high pressure, natural release. Came out perfect!

  241. We made this last night and it smells delicious. We left it in uncovered tupperware to cool and then forgot it overnight on the counter. No AC on all night, but not a warm night (less than 15C/60F) but it was out for about 7 hours.
    My gut says to throw it out. Any opinions?
    I’m so disappointed, it smelled so good. But it’s super easy to make so I will definitely make it again. Just wasn’t planning on making it twice in one week! 🙂

    1. 2 hours is too long is a very good rule, especially with chicken. Personally, you could not pay me to eat it after sitting out all night!

    2. I think you would be fine. Apparently you shouldn’t put warm chicken in the fridge as it speeds up bacteria growth, so I really think you would be fine.

      Mine yielded 6 cups, so only 2/3 c per serving because the points are based on 10 servings.

    3. You can always put it in the recipe builder and calculate the points based on the size of servings you want to use. We do that a lot. 

  243. This recipe was wonderful and easy – which do not normally go together. The only change I made was to press the taco seasoning directly into the chicken breasts right before I put them in. It was just fantastic. It seems that you – Gina – must put lots of time and effort to get your recipes just right, because they are all so good. Kudos to you!

I’ve made this and it’s great.  Just did it in the insta pot yesterday.  Par cooked the thighs on the grill for ten minutes.  Then used the chili setting, chicken fell apart easily.  Stuffed peppers yesterday, today leftovers, and tomorrow a burrito at work. No seasonomg packet used, just followed the directions. Used organic canned corn.   Delicious! Thank you, thank you.

  247. I made this again today but did a couple little things differently.
    If you have time brown the onion in a tiny bit of olive oil,
    add the seasonings and cook 30 seconds, then add tomato
    sauce and cook just a minute or so. Add that to the remaining
    ingredients in the crock pot, then nestle in your chicken
    I also used an extra can of black beans and half a can of hot
    tomatoes and chili in addition to the 2 cans of them, but those
    were medium. Did not use corn, not a big corn fan, except for
    corn chowder or the occasional ear. It came out so freaken good.
    This recipe is great because you can play with it without
    altering the points to much or at all.

  268. Here are some tips I discovered along the way. They MAY help some readers. For tomatoes. Rotel brand is very good. . It come in 3 styles. Original is much hottet in my opinion. Mild is VERY bland & not worth it IMO. Rotel with Lime and Cilantro is medium but not too hot . PLUS you CAN’T taste the cilantro….so NO problem if you do not like cilantro. We use that one.
    For a more soup like version we tried adding in 1 cup of Salsa (Newman’s Own….medium…… read the label VERY CAREFULLY the fruit ones do not work w/this) and /or an extra can of diced tomatoes . PLUS we used red chilli beans that came in sauce. That gave more liquid and did not dilute the flavors of this great recipe.

  277. I never comment on recipes, but felt I had to on this one because it is so good! I doubled the recipe and spiced it up a bit by using 1 can of tomatoes with hot chilies and 3 cans of tomatoes with green chilies, as well as using Mexican hot chili powder and regular chili powder. It was perfect and even the picky eaters in the group loved it! I am on weight watchers and felt very satisfied with a serving. Will definitely make this again. Thank you!

  278. I made this a couple days ago and continuing to eat for leftovers (impatiently waiting for mealtime!) — I’m obsessed!! I made a couple small modifications — one is that I made a taco seasoning mix that was about 1.5 times as much as recommended and glad I did because I like food super flavor dense, plus added crushed red pepper. I usually add more spice / seasoning than all recipes recommend. Two is I added about 2 tbsp of a cornstarch paste right before the end as it was a bit too liquid-like and I just like a slightly thicker sauce. So so so good. Topped with chopped cilantro, jack cheese, fresh avocado, green onions, a dollop of fage yogurt, and tapatio. Can’t wait to make again. Thanks for such a delish and EASY recipe! Best slow cooker recipe I’ve made thus far. 

    1. Her instructions say only to drain them. I think it’s just to get the excess liquid out, and it’s fine to not rinse them.

    I combined everything in a 4 quart pot, and simmered 90 minutes on the stove top. Definitely not enough liquid…, so, after stirring the shredded chicken back in, I added 1-1 1/2 cups FF, low-sodium chicken broth. For extra nutrition, also added 2 small diced sweet potatoes…, absolutely delicious! YUM! I’ll definitely make this chili again:)

  282. I am out of red beans. May I substitute them with an additional can of black beans? Or can I use garbanzo beans rather than the kidney beans? Also, I’m out of tomato sauce. Can I use marina sauce?

    1. Sure on the beans, any should work fine. The marinara should be OK too, but may change the taste a little!

  286. This is a family favorite- I’m making it in the Instant Pot tonight for the first time. I see you’ve mentioned using the Chili setting, but I wonder about timing- how long do you recommend?

    1. I just made this in my IP, was wondering the same thing. I did 9 minutes on the “chili” setting (i don’t fully understand those settings and it seems I’m always adjusting the time to follow a recipe, rather than use those) anyway, my chicken was perfect to shred. It was delicious, a little spicy for my kids but sour cream always helps that!

    2. I did 7 minutes on Manual, NPR for 9 minutes, then Quick Release. It turned out great! A little soupier than I was expecting but amazing flavor.

  294. The nutritional info in the cookbook is a bit different and when you put it in the WW calculator the SP value is 6 . I realize this is not a big deal but just wondering which is more accurate. Wondering because I may want to have 2 cups for a meal and want to have the correct point value.

The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.

      The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, that is why.

  296. I cut the chilli powder & cumin down to 2 tsp, and it was still WAY to spicy hot for me. To keep from wasting a whole lot of food, I put greek yogurt on top of my serving and followed it with bread, but still. Way too spicy hot – like burn your lips off hot. Just a warning for others. Love the recipe but will have to figure something out to make it more palatable.

    1. That’s weird because while cumin and chili powder have spicy taste, they are not HOT spicy. Maybe you used the wrong chili powder? Chipotle chili powder can be hot spicy. 

    2. Hi Sherry, I just made this and instead of using 2 cans of tomatoes with chilies, I put two cans of tomatoes, but one with the chilies and the other without chilies. I can take the heat, but the younger family members can’t.

  297. New to slow cooking. The recipe calls for frozen corn. I thought you’re not supposed to add frozen item to the slow cooker as it prevents the temp from rising quickly enough to get the food out of the “danger” zone. So do you add the corn frozen or should it be thawed first

Your recipe said a tablespoon of each but I thought that might be to much with the seasoning packet.       How many times does this have to be repeated. Read the recipe and follow instructions. Store bought taco seasoning add cumin and chili powder. Homemade taco seasoning omit the cumin and chili powder.

  303. How spicy is this with all the green chilies in it? My daughter is just staying to like traditional mild chili, but doesn’t like anything “spicy”- sounds delicious to me though! Winding how early it would be to omit the coiled and use plain diced tomatoes…

      1. Dianna, the green chilis are generally mild, just a bit zesty. Just make sure your can says mild green chilis, there is a hot version. You might want to buy the mild version of the tomatoes with diced chilies too, I find the regular ones like original rotel can be a bit spicy for children who are sensitive to spice.

  308. Just tried this recipe today and it was a huge hit! I added 1 cup of chicken broth to make it a little more soupy, and substituted canned diced jalapeños, pinto beans, and Mexican spiced tomato sauce for chiles, kidney beans, and normal tomato sauce. Would highly recommend making this recipe! It was so easy and tastes awesome with sour cream and crushed tortilla chips on top!

  314. Love this recipe!!!!!! I always end up with a lot of leftovers I want to freeze leftovers this time I never froze something I made. I have the Playtex glass containers is that okay to freeze? Also how long is it good in freezer and do I just left it defrost in fridge and then warm like I do normally with left overs?

    1. Not sure if that is safe? You can freeze this for 3 months. Defrost in fridge then warm in a pot or microwave.

The Corck Pot Chicken Taco Chili was a huge hit at a wedding shower I gave last week.  In fact, the guests seemed to prefer the taco chili to the catered food I served.  The exception being the shrimp cocktail which was all gone.  But, who can compete with shrimp cocktail, right?  Really enjoyed the taco chili and will make it again.  Thanks.

    This was AMAZING! I didn’t have tomatoes with chilis or chopped green chilis, so I subbed 1 can chili style, 1 can w/roasted garlic, and 1/2C of salsa verde de habanero. Oh, and I have a bean lover in my house, so I doubled the beans. Served it as a hearty soup, topped it with a Mexican blend cheese, and scooped it with multigrain tortilla chips. My only complaint is that it didn’t make more!!!! Thank you, Gina!

  331. My mother and I started weight watchers this month and I came across this recipe on Facebook. I thought it would be a great recipe to try. Something different than we wouldn’t normally make.     1. No, tomato sauce is a thinner puree/paste. I think puree/paste could become sauce if you add a little liquid to it. Sauce should pour easily, easier than catchup.

    1. You can buy lower sodium versions of the tomato sauce,  canned beans and taco seasoning. Also you can use fresh tomatoes and/or buy the packaged dried beans–I doubt there’s much sodium in those.

    Added a celery stalk and a small red bell pepper (the size of a tangerine) and an additional 8 oz can of tomato sauce to make up for the additional produce.  Instead of kidney and black beans I used 2 cans of pinto beans and I used one can of fire roasted diced tomatoes and 1 can of tomatoes with green chili.  SUPER yummy and super easy!  Great weeknight meal!  Fix it and forget it!!

    1. I know this is late but I made this in my instant pot tonight. I used a half cup of chicken broth to make sure there was enough liquid to come to pressure, but I don’t think even that was necessary. I cooked for 17 minutes under high pressure and did 10 minutes natural pressure release. Perfection.

  359. This is one of my favourite recipes. Often, I'll turn it into 5 or 6 wraps with cheese and throw them into the freezer. When I want to eat one, I can just stick it into the George Foreman and cook until it is thoroughly heated, or I can put it in the fridge for a few hours to defrost. It's so good and so easy!

      Maybe try 1/2 cup of low fat reduced sodium chicken broth or chicken stock (1 cup of you’re really avoiding thickness) or to avoid the extra calories, sodium, points use water instead of chicken broth or stock. I make a casserole similar to this & depending on who is coming for dinner I’ll use tomato soup even! I believe it’s suppose to be thick as you mentioned because it is to be spread over things such as brown rice, wheat pasta, over sodium free corn tortillas, or as taco or burrito filling. If you’re really looking for flavor while adding more liquid you can use salsa (you select whether you want mild or spicy) & again depending upon nutritional goals & personal preference you could also add some taco sauce (flavored to taste not to be used to thin it out & based upon your heat tolerance/preference) The beauty of recipes like this is you can continue to build upon them as your base & you’re only limited by your imagination.
      You can even make with other meats depending upon what is on sale in your area or what you already have in your fridge/freezer or you can also omit the meat completely & increase the protein value  with more beans for those who are vegetarian (I’m sorry I cannot suggest ideas for those who are vegan, someone else possibly can & post their suggestions.
      What I love about this particular recipe is it’s more of a base recipe making it super versatile! You can add things to it dependent upon your nutritional needs & preferred textures. I can use it as a base for a meal served over Brown or whole long grain rice or tortillas.
       If it’s a busy summer day (or a cold winter day with all of them crowded within) & my son has all his teenage friends over but they’re too busy running in & out(or glued to a game console ????) to actually sit & eat I can grab a bag of reduced sodium Fritos open them too it with this add some taco sauce shake the bag very well & then give them the option of a dallop of sour cream & a plastic fork or spork & viola (!) they have a filling lunch or dinner that is portable for while they’re on the go with walking tacos.
      This is definitely a great recipe I’m very thankful to the poster ❤ Also if on a restricted diet please do not take my suggestionsn without doing your homework by recalculating fat, sodium, & double checking your points!!

    Hello. I started to make this last night and got everything in the bowl ready to go in the crockpot, but then I chickened out because I didn't think there was enough liquid in it will you please confirm I do not need to add any water to this ? I don't want this to be a burnt mess when I come home from work . I have a similar recipe to this and it calls for adding 2 to 4 cups of water, so want to make sure I am not missing something.   378. Ahh I just made this in my Instant Pot and it turned out great. I even just tossed the still sorta frozen/raw chicken breasts in there as is. I used the Bean/Chili function and set it for 20 minutes. I did a quick release to pop the chicken out and shred it, put the shredded chicken back in, put the lid on and left it on warm while I cooked a pot of rice. From start to finish, this probably took 1.5 hours, with only about 15 minutes of prep time. My kinda meal. I'd love to see more of these types of recipes updated for the Instant Pot!

    I don't have 6 hours to cook so I parboiled the chicken about 10 minutes before putting in crockpot on high. Hoping it will be done in 4 hours and chicken won't be tough. Anyone else try this before with success? I've always had the full cooking time and it's been amazing–hoping for similar results.

  387. I made half this recipe on the stove the other night. I cut the chicken breasts in half and made sure they were in the middle of the sauce. After simmering for an hour I was able to shred the chicken easily. We really enjoyed it.

    I just made this yesterday and it is delicious. I served it in taco stand and stuff shells, put a little low fat cheese on top and some greek yogurt – baked it for a few minutes filled so that the cheese melted on top of the greek yogurt.   389. this is without question my favorite recipe ever! It has so much flavor, and is the easiest meal you will even make. If you can open a can, and cop[ an onion…you are set! I add a can of Pinto beans also for visual interest, and additional protein. the spices support the extra beans, and I like things well-seasoned. If being indulgent, I top with cheddar, sour cream and tortilla strips (like for salads). When being more disciplined, I add a little sour cream and pile it high with shredded lettuce (like for tacos) for the crunch. My Grandson rolls it in a flour tortilla. So versatile…freezes great!

  406. I made this last night, portioned it out today, marked, and froze for later. I HIGHLY recommend! I had a portion and it was so yummy! I omitted the corn on accident, and it was still delicious. I made 13 half cup portions then added 1/2 cup brown rice. Each portion came out to 6 PP each!! Very filling and super yummy!

  409. I made this for my family last night. It was DELICIOUS. I only had one can of rotel, so I subbed a can of fire roasted tomatoes for the second one. I had forgotten to include the 8 oz of tomato sauce, so after it was done cooking and I shredded the chicken, I stirred in a 6 oz can of tomato paste. It made the sauce so thick and rich and delicious! Thank you for such a fabulous, healthy recipe!

  415. I just made this and it was good! I used bone-in chicken thighs. When they were falling off the bone I took off the skin and shredded the meat. I omitted the kidney beans since we aren't big fans of them and thus also omitted the 8 ounces of tomato sauce so there wouldn't be too much liquid. We added shredded cheese. I was surprised that this was fine for 8 hours on low…in fact it could have gone longer. I guess because there is so much sauce it helps the chicken cook slower. Thanks!

  422. HI Gina! Thanks for the AWESOME recipe! I've tried lots of crock pot chili recipes and this one is the best so far! I didn't have black beans at home, so I used a can of pinto beans. Came out fine. Next time, I'll try black beans. =]
    I reduced the cumin and chili powder from one tablespoon to one generous teaspoon. Also, I try to use low-sodium or no salt added products when I can. For this I was able to use no salt added beans and a packet of reduced sodium taco seasoning. (found at target)
    Instead of sour cream, we used plain greek yogurt. its a great healthy substitute. We didn't eat over rice, just with some tortilla chips! mmm!
    Tip for others: I used frozen chicken and it came out great! I just made sure that the meat was covered by the chili to make sure it all cooked.

I did overcook it on high for 2 extra hours, so I slow cooked for 12 hours instead of 10. Do you expect an issue with that? I shredded the chicken up & put it back in the slow cooker. Now I have it in the fridge. It did look a little soupy – presuming this should thicken in the fridge especially now that it has settled? I love all of your recipes. I was excited to see this one because it looked super easy & super healthy!

  446. This chili is wonderful. It is our "go to" meal to start our diets. Just a tip here. I cut the chicken up into inch or so pieces in the beginning and cook that way. It cuts out the shredding and is very tender that way. Nothing else I would do to this recipe. Makes you want to go out into the cold winter day just to come in and smell the aroma!

  448. I make something very similar to this but I use canned chili beans instead of kidney beans and I add a chopped green bell pepper. Sometimes I add a packet of ranch seasonings. I start with the chicken on the bottom, then seasoning and layer everything else.

    I just wanna say that I LOVE your recipes and they really helped me on my weight-loss journey. However, I notice a lot of your recipes use cilantro… and sadly, I'm one of those people that thinks it tastes strongly of soap. I've tried looking up substitutions but, being in Japan, coming across special herbs is difficult and when you do find them, very expensive.

    I was wondering what you'd suggest as a substitution for the cilantro in your recipes?

  481. This chili was absolutely amazing! I did leave out the chili peppers as it had enough kick to it. I also cut the recipe in half since there is only two of us, and we still had alot left over! My husband had seconds and then put a layer on a side of bread! Perfect fill me up meal and nice that it's only 5 points. I would definitely make again!

  487. I didn't have ro-tel or tomato sauce, so I used 28oz can of diced tomatoes, and a couple of chipotle peppers and adobo sauce from the can. I didn't have just straight frozen corn, so I used a bag of mixed veg. I also used frozen boneless chicken thighs from trader joes, since that's what I had in the freezer. Hope the subs work out, it definitely smells delicious, just a couple more hours to go!

I used 16 oz of black beans (not canned, we cooked our own), doubled everything else and when I ran it through a nutrition calculator and calculated calories based off of a 10 oz serving size, I got that it's 445 calories! And that was without rice, cheese or anything of the other optional items.

That being said – WOW. I was flipping through ST to find a chicken crockpot recipe that would help me trim down the number of cans in my pantry. I'm so thanksful I gave this chili a try. It's still very liquidy. Is that normal? How soon until it thickens? And I guess I used too much chicken (4 small breats) because it's pretty much chicken with some beans and corn. Next time I will only 3.

    This recipe is fabulous. I made my second batch for some co workers and it was a hit. I doubled the recipe. For the diced tomatoes, I used 3 types from Rotel; mild, regular, and hot. I also used an Anaheim pepper in place of the chili peppers. Co workers are raving that I need to keep making this for the upcoming winter. The best part is you can serve the serving size in a bowl and use lime flavored tortilla chips are your spoon. Thanks again.

He has 2 servings and I have 1. I would have liked to have frozen the leftovers, but we ended up eating a serving each day.
    I had found 2 chicken breast that were huge equaling out to 24 oz and they cooked beautifully. The meat just fell apart.

So I love that there is no pre-cooking of any ingredients. It took about 5 minutes to throw this together and it was AMAZING! We had it for dinner, it is the first chili my son has ever eatten completely and asked for seconds! My husband devoured it, he never would have guessed it was a healthy recipe. It doesn't need the rice, it is pretty good all by itself. I brought it to work and have eaten it for 3 days for lunch, so has one other co-worker.   564. I was looking for a way to make 2 chicken leg 1/4s stretch for 6 people. Loved this! The versatility is my favorite part…..you really can't do anything wrong! More or less spice, beans, or corn would still be good. Any cut of chicken, or turkey, even pork or chuck roast would work. Depending on your texture preference, you can use fresh or canned tomatoes, diced/puree/sauce/even veg juice. I made it on the stove because I didn't find the recipe in time to use tonight & we had it with rice, cheese, and chips. I was looking forward to throwing it over a salad tomorrow, when I saw the comment from the girl who doesn't like black beans. I bet this is delicious with a scrambled egg, wrapped in a warm tortilla for breakfast!

    It's hot as can be in Florida, but I made this today anyway. Absolutely wonderful! I didn't have any tomatoes with chilies, but I had Tuttorosso diced tomatoes, so I used those and two jalapenos. Also, I made it with chicken thighs — very, very good. I can't wait to make this again over the winter!

  566. I have made this probably 20x since I found your recipe on Pintrest. It is DELISH! I usually only use the black beans but I have made it with both. You can NOT go wrong with this recipe! It is the BEST and EASIEST to make and go on about your day. I have just made a batch using 8 small boneless, skinless chicken thighs and it came out just as it always does- YUMMY! I'm taking this batch to my cousin who just had a baby. Since she is not able to breastfeed we were not so concerned with the amount of spice, however, if you do take this to a new mom please make sure to check with her on her preferred spice level!   568. Made this today! It was a big hit with my kids (well 2 of the 3….my Asperger's son just doesn't like anything new). My husband said it looked unappetizing, but he said it tasted great! I put this in to my Calorie Count recipe analyzer, and it gave it an A for health, which is great since it rarely gives my recipes A. So, it is super healthy and very tasty. I halved the recipe, which worked great, and used only the kidney beans. I think if I halved it again, I'd try using just pintos.

I have to agree with some others though that I'm pretty sure I would not be able to get 10 1-1/4c servings out of this. I had 1-1/4c (measured w/ WW spoons), my DH had about 1-1/2c, and my preschoolers had about 1/4c, each. I took another 1-1/4c for lunch today and there might be another 2-3c left. I made it exactly according to the recipe. I'm not complaining, b/c it's plenty for us, just don't see how the given ingredients would yield 12.5c total?! Thanks again for all of your healthy and interesting creations!

    3rd recipe I have made and it was again 5 stars. I had to tweak with what I had. I used a can of mexicorn instead of frozen and used small white beans instead of kidney and I used one can stewed tomatos and one can zesty chopped tomatos with chilies. WOW, we loved it. It can feed an army. My husband and I had it for dinner two nights in a row (big bowls) and then I gave the rest to my my sister n law who fed 4. Super good and filling. Crock pot chicken is the best. Gina can you make up a pulled BBQ Chicken recipe??

    I made this for the Super Bowl. People ate it with rice and cheese or tostitos. I personally had it with tostitos and they added the perfect amount of salt. Everyone seemed to love it!

    It does make a lot so you need a big crock pot!

  615. Absolutely delicious. If you closed your eyes you would think you are having a beef chili..perhaps its due to the spices added and the shredded chicken.I only used 1/2 box of corn. As a side note after it was done(6 hours on high) I put about 1/2 cup of lo fat cheese on my portion(right in the crockpot). I put the lid back on..came back in a few minutes and the steam melted the cheese nicely.I also added about 6 Pepperoncini peppers from a jar(cut in tiny pieces minus the seeds) and threw them in the pot right from the start.An easy tasty meal..!!! Highly recommend!

    Hey Gina, thanks so much for a wonderful recipe. I cooked it on high for 5.5 hours, and boy was that chicken TENDER! Easiest shredding of chicken with the forks that I have ever experienced. I also completely forgot about the cilantro (it's still sitting in the fridge) so we will add that tomorrow when we eat leftovers. My fiance loved it too. Excited for leftovers tomorrow! As far as spices go the ingredients are the same as my usual chili BUT…your measurements on the chili powder and cumin are what made all the difference between yours and mine. I always felt that mine was missing something…now I know. Mine was missing the intensity that your recipe has. I was using about one third of the chili powder and cumin.       Here is a taco seasoning recipe you could use (contains salt): 1 tbsp chili powder, 1/2 tsp garlic powder, 1/2 tsp paprika, 1/2 tsp cumin, 1 tsp kosher salt

      Or this salt-free one: 1 tsp chili powder, 1 tsp ground cumin, 1 tsp garlic powder, 1 tsp onion powder, 1/4 – 1/2 tsp crushed red pepper

    Don't know if I did something wrong…may have been because of the flour, but I got 10 servings if I cut the portion size down to 1 cup instead of 1.25 cups. It was still enough to fill me up!!!

  696. I made this today and wow…my husband loved it too. I only used two chicken breasts and they were frozen. I think that was plenty. I got 6 servings out of it. I added about 1/2 cup of salsa verde instead of chili peppers and only 1 cup of fresh corn from the cob (leftover). I served it with low fat cheese and light sour cream and some low point tortilla chips. Thanks, it hit the spot!

  702. I made this tonight and let me just say- winner winner chicken dinner!!! Substituted pinto beans cuz I didn't want to hear any whining from the kids. Also, as I was throwing everything in the crock pot, I realized I had zero taco seasoning so I used a Texas Chili packet instead- it didn't matter cuz it just tasted yummy yummy yummy. I used chicken breast tenders and cooked on high for 3 hours- perfecto.

    I put the chili on top of broken up tostada shells (that's what I had in the cupboard), topped with sour cream and cheese and served with a green salad. All three kids gave it 2 thumbs up – we can't wait to eat the leftovers tomorrow!

Although we mixed it up a bit instead of the chili peppers I used jalapeno peppers, and instead of the diced tomatoes w/chilies (bc i couldn't find them) I used the Tex Mex style tomatoes!     I don't think it would make a difference cooking on high, but haven't tried yet.

    Yes, this makes a lot, but it freezes great so you can freeze the leftovers.

Had to drop some off at my parents and it was still too much leftovers for the two of us. We used canned corn instead of frozen. I would recommend putting in a little of jalapeno (just a little) for an extra kick. Very easy.

    Hubby & I do chili cookoffs every year so we didn't know what to expect but WOW! We both thought this was absolutely delicious. LOVE IT! It will be my cookoff recipe next year – hope you don't mind.
    I added a little dry ranch mix to it 'cause I could 🙂 Love how easy the chicken shredded. It literaly took under 10 minutes to throw everything in the crockpot! I am trying out the Chicken and White Bean Enchiladas tonight and cannot wait. Your website has me so excited to be doing weight watchers again with a new outlook. Thank you so much.

Two of the guys had two helpings, I had a smaller 2nd helping, and have enough for two lunches this week… It was a hit!

    I'm sorry if this question is dumb but I just dont get how this can be 10 servings? If each serving is 1 1.4 cups I only got 4-5 servings of this. Did I do something wrong?
    Also the recipe asks for 24oz chicken well I weighed 3 chicken breasts and it came to 14 oz ( i realize they come in different sizes) but even with adding an additional breast to get 4 breats I barely had room in the crockpot and when I shredded the meat at the end, I couldnt even add all of the shredded meat and as it was way to much for the other ingrediants and I didnt even use 24oz as stated on the recipe?
    Am I totally doing something wrong or has anyone else encountered these issues on this recipe?

  825. @Nathan, I figure out the points for each ingredient that goes in, then add that together. Then I figure it how many servings it makes and divide it by that number.

  827. Skipped the taco seasoning and went with real chili peppers (to include 1 habarero, 2 jalapenos and 4 other chili peppers)… less sodium. SOOOOO good!!!!

  828. Not sure, I would let it cook 6 hours on high to make sure everything cooks. You really shouldn't cut it shorter than that.

  830. @ilonka – A crock pot is a slow cooker that you put all your ingredients in, you plug it in and your food slowly, safely cooks all day while you are out.

    I found your blog recently through Tastespotting and I must say, everything looks delicious. I made this recipe last week and had it for dinner all week. It was absolutely amazing and I couldn't wait to have dinner each night. I have already passed on this recipe to a few others and can't wait to make it again.

  846. I made this yesterday and it didn’t turn out right. When preparing it, I layed the chicken on top like you said and when I came home… after it had cooked for 10 hours on low, the chicken was cooked on the bottom and still raw on the top. I ended up having to cook on my stovetop on high heat for close to an hour to get the chicken close to being shreddable. Even still when it was finished the chicken was tough. I’m not sure what went wrong.

  847. G, I am away so I wasn’t able to answer your questions, hope everything came out ok, it’s pretty hard to mess up. Just put it in the crock pot and cover it, come home from work and it’s done. Simple!

    I need to get myself a crock pot! I’ve heard of many delicious dishes that can come out of a crock pot, but have never really seen it.
    But now, the proof is here and it looks delicious!

    1. You could probably do it on the stove. Just let it cook slowly on a day when you are home doing other things.

      You can also cook this in a dutch oven. You can also alter it any way you want, very versatile recipe and taste awesome! You don't even need the rice! Taste great without it and very filling! BUT, I don't want to discourage you from getting a crockpot as there are millions of great recipes to cook in one, even Cake!
