When you are craving bacon and eggs, make this quick, easy egg sandwich.
This is both filling and healthy! I like to buy egg whites from Trader Joe's, it's great to have on hand.

Hi Gina,
ReplyDeleteThis awsome sandwich would be my favorite lunch or breakfast!! Very nice pockets! Although it's very late here (12.30 AM) I'm hungry watching this photo!
Have a great weekend my friend!
Looks great, Gina. The green pepper adds a nice bit of color.
ReplyDeleteThis looks wonderful. I could do this with veggie bacon I think. What a great site.
ReplyDeleteOh my gosh that looks so good Gina. Thanks for sharing this. I hope you have a nice Sunday too.
ReplyDeleteIf it ain't crispy pork hindparts with a thick crust of rind on top... then it ain't real bacon.
ReplyDeletelol, unfortunately real bacon stays on your hindparts!
ReplyDeleteRegular bacon is only 1 point per piece too.
ReplyDeleteJust checked that. Three crisp slices of regular pork bacon is 4 pts. One slice of Canadian bacon is 1 pt. Good to know, I love Canadian bacon.
ReplyDeleteGina, this will definetly go to my favorites! Thank you for such good food ideas.
ReplyDelete@Peacu You're welcome!
ReplyDeleteWait.. I used the Oscar Mayer Canadian Bacon and it's three slices for 60 calories which is about 1-2 pts (I forgot exactly since I haven't cooked it in a while). I'm wondering if that is what you're using and how you got to 1 point per slice.
ReplyDeleteThanks!
PS: your site rocks!! I <3 U!
No, it was turkey bacon strips, not Canadian bacon.
ReplyDeleteGina, any idea how to prevent egg whites from making everything liquidy and dripping when I try to put it in a tortilla/sandwich?? This always happens no matter what brand of egg white cartons I use (Trader Joe's included)!
ReplyDeleteMake sure you shake it well before cooking and maybe cooking them longer will prevent them from becoming too liquidy.
ReplyDeleteHi Gina, do you know if this would freeze well?Maybe replacing the pita bread with a tortilla...for a kind of breakfast burrito? I would like to make a healthy breakfast that I can freeze for the week, but I'm not sure how scrambled eggs or egg whites would freeze (or bacon for that matter). Maybe I could replace the bacon for ham?
ReplyDeleteBreakfast burritos freeze well (eggs, bacon or sausage, cheese, salsa is the way my dad used to make them). I freeze pitas separately, but not sure how it would work stuffed and stored.
ReplyDeleteCould you please add calorie information?
ReplyDeleteFor one more point+ add a laughing cow cheese wedge ;)
ReplyDeletei cant seem to get turkey vacon crisp. its just chewy and not very good. any suggestions?
ReplyDeleteTo get your turkey bacon crispy, place them on a folded paper towel in the microwave for 2-3 minutes. They'll be nice and crispy!
