My late Dad loved to cook, and soup was one of his many specialties. This soup was always a favorite, and now I love making it for my family, it brings back the memories of our childhood and the love we felt from him.

Both my parents loved to cook and no doubt that has rubbed off on my brother and I. My Dad’s style of cooking was very different from my Mom’s since he was born in Prague, Czech and she was born in Colombia. As you can imagine, the meals we group up with were pretty eclectic, but one of the simplest recipes my Dad made was this soup.

As a kid, we had a cup of homemade soup almost every night before dinner. I wasn’t always happy about this, because believe it or not, I was pretty picky. But on the night’s we had this soup, I never complained.

When my father lost his vision he was no longer able to cook. Thankfully I learned some of the dishes he once cooked. This one is EASY, only 5 ingredients. In less than twenty minutes you’ll have yourself a warm, delicious bowl of soup that is so light you can serve this as a first course for dinner or with a half sandwich for lunch.

There is no cream added, the silky texture is simply from pureeing it.  Dad used water and chicken bouillon which I often do (I use Better Than Bouillon) but here I used chicken broth instead; use whatever works for you. Sometimes I add some diced carrots, or even celery – there are no rules here.

Serving Size: 1 1/2 cups

Ingredients

  • 1 tbsp butter
  • 1 tbsp unbleached flour, gluten-free is fine too
  • 1 medium head cauliflower, chopped
  • 1/2 cup chopped onions
  • 4 cups less sodium chicken broth, vegetarians can use vegetable broth
  • salt and pepper to taste

Instructions

  • In a medium saucepan, make a roux by melting the butter on low heat.
  • Add the flour and stir about 2 minutes.
  • Add the chicken broth, onions and cauliflower and set heat to medium.
  • Bring to a boil, then cover and simmer over medium-low heat until vegetables are tender (about 20 minutes.)
  • Puree with an immersion blender until smooth. Season with salt and pepper.

  1. This recipe is awesome! This soup is so delicious and so easy to make. Has a lovely texture, thick and creamy. I wouldn’t have thought it would be so thick, but it was! Definitely a new favourite!

  2. I’ve been making this soup for a few years now and it’s my go to for a delicious simple cauliflower soup. The whole family loves it 🙂 I add a squeeze of lime juice and some sunflower seeds when serving and it adds a nice extra flavour and crunch!

  3. I make this all year round. It is so easy to make. Add a little leftover ground turkey for a protein boost or pair with a hearty whole grain bread. Makes a wonderful lunch or dinner.

  8. This soup was quite tasty. I would not skip salt/pepper. I doubled the recipe. The only issue I had was that it was thinner than I expected. I used 2 heads of cauliflower. Perhaps, they were smaller than what the recipe needed? I added 1 bag of riced cauliflower, but wish I had a 2nd bag to add. Perhaps, it will thicken in the refrigerator.

    I had the items on hand, so gave it a try. I used almond flour, in place of unbleached flour. Soup was deliciously easy!
    Tip: Top with hot oil instead of cheese, it’s delicious.

  10. This soup was awesome! I added carrots and celery and gave topping options of cheese and crumbled bacon for my son and hubby. I didn’t tell them it was cauliflower until after they were eating it, so they’d try it without prejudice (claim they’re not cauliflower fans). Not only did they like it, they both went back for seconds! It was a home run and I’m very excited to make it again tomorrow night with purple cauliflower to make it even more awesome!   16. Like others, I’ve made this quite a few times. Sometimes I use homemade broth, sometimes store-bought no-salt, chicken or vegetable. It turns out well every time. I’ve variously thrown in a couple of garlic cloves, a splash of cream, shredded carrot, a bit of leftover mashed potato and broccoli, upped the onion, topped with a little sharp cheddar — our chives will be up soon, and I’ll try those to top. Thank you for this versatile recipe!

  18. I tweaked a bit ..i roasted the cauliflower and added a head of roasted garlic. I had mushroom broth on hand. Simple, delicious and will definitely make again!

  19. I’ve made this soup about 5 times. It is SO easy and absolutely delicious AND filling! I’m on Weight Watchers and it’s only 2 points but even if I wasn’t I’d recommend this simple recipe 🙂

  25. Love this healthy soup and make it regularly. I saute the onions and a large clove of garlic before adding flour. Serve with sprinkling of shredded parmesan cheese. Delicious!

  27. This is the best soup.  I cheat and use 2- 12 ounce bags of frozen florets and it comes out perfect.  Makes 4-5 servings for easy lunch meal prep. Now that it’s finally cold out it’s back in my weekly rotation. Love it!

    Incredibly bland!

    This soup is pureed at the end so I used my Vitamix instead of a pot. I used all of the ingredients in the required measurements.

    I used a very flavourful homemade chicken stock and fresh Frozen riced cauliflower (fresh cauliflower riced by me and then Frozen).

    Cooking it in a pot and then pureeing it is no different than pureeing it in the Vitamix as it’s cooking.

    I don’t even know what to add to make the soup palatable to eat.

    I hate wasting food so I froze it and maybe sometime down the line I can figure out a use for it in a sauce or something. But it certainly isn’t edible as a soup.

    1. Maybe try making it as the recipe suggests. Cooking it in the vitamix is not the same, especially for the roux. I made it as instructed and it turned out very tasty.

    Great soup!

    Don’t have an immersion blender.

    Did have frozen riced cauliflower as well as
    frozen diced onions.

    This cut the prep time in half.

    Soup turned out very well; there were no leftovers.

    I made this soup and it was delicious. I had to substitute canned chicken soup and add water because I did not have chicken stock but it turned out wonderful. I made a lot so will freeze it for another time. I chose this recipe because I could make it all on the stove rather than some of the other recipes I saw that required roasting the cauliflower. 

  31. This is SOOOO good that I made it 2 days in a row to freeze some! Tastes like a cream soup without the cream! I used Better than Bouillon sauteed veg to make the broth. My neighbor asked if I used chicken broth, he loved it too. I added pepper but no need to add salt with the bouillon I used according to directions back of label. This is going to be made a lot in the future, thank you so much!

    This has to be one of the easiest and best cauliflower soups we have ever had. We’re vegetarian so we used vegetable broth.

  34. Very good and easy!  Either my cauliflower was too small or maybe I added too much broth, so I added some cooked rice to thicken it up.

    I’m struggling on WW to keep within my points so I went hunting for recipes. With so many positive reviews and hoping for the best I decided to try this recipe. WOW soooo good!!! Chicken broth is in shortage were I’m living so water and bouillon it was for me and it was as good as the reviews below stated. Thank you for sharing this wonderful recipe!

  42. I made this tonight and liked it! I used a whole yellow onion because I hate to use part of a vegetable knowing the other part will likely go to waste in my fridge. Also added 1 Tbsp of minced garlic from a jar – will probably use 2 Tbsp next time. Used Better than Bouillon No Chicken base for the broth and 1.5 tsp salt. I didn’t measure the freshly ground pepper but maybe 1/2 tsp. Added dried chives on top.

    1. I LOVE this soup! I’m preaching it to all my friends. I don’t have onion handy so I just subbed with 1/8tsp for half the recipe. Used tapioca flour too. And it turned out delicious.

      Question, can we use frozen riced cauliflower for this? I’m having trouble finding full cauliflower believe it or not. I’m thinking to reduce the water in half and continue with the recipe as written.

      Any thoughts? Thank you again!

    I made this wonderfully flavorful soup last night. I steamed the cauliflower. I sauteed the chopped onion and 2 cloves of chopped garlic in the butter and then added the flour and cooked it for a minute or so before adding 4 cups of leftover potato water and 4 teaspoons of Better than Bouillon (chicken) and the steamed cauliflower. I used my immersible blender which made the soup as smooth as silk. We did top our bowls of soup with some freshly shredded sharp cheddar cheese. My husband and I loved this soup.

    1. We all loved it! I used olive oil instead of butter. I’ve also added broccolini so my cream of cauliflower was green 🙂
      I used flavorful salts too! If you like your food a little bit spicy in your own bowl, add some sriracha!

    I used regular chicken broth (not low salt) and 2/2 teaspoon of regular salt, and it was perfect!

  53. Love this soup. Curious to know if anyone has frozen leftovers.  Or would you not want to freeze any remaining servings? 

    1. I’ve frozen it several times with no issues. Sometimes it’s a little more runny, but the taste is still perfect.

  56. My immersion blender is in storage, so just poured the boiled cauliflower + broth into a regular blender in batches and it turned out great!

  57. Sometimes simplicity is best. This soup has few ingredients, can be vegan!!!, is easy to make, and is so tasty! 

    I follow the recipe and just added extra seasonings. For the broth, I used 3 tsp vegetable broth (better than bouillon), and 1 tsp roasted garlic base (same brand). I added garlic, paprika, umami, salt, and pepper. For serving I added vegan cheese and sprouts.

    Another winner. As a loyal reader and follower of your recipes I’m surprised I had not tried this one. Made as per recipe but did have to increase the salt to bring out the flavours. A little shredded cheese for the kids and this goes on the rotation.

    Not as good as the cheeseburger soup but definitely a delicious and very fast easy soup now that the weather is starting to get cooler. Thank you Gina

  62. I made this with 2 10oz bags of frozen riced cauliflower because it was what I had on hand. The only thing I added was 1 tbsp of chopped garlic. 5 minutes on high pressure in the instant pot. Delicious! Thank you!

  63. I made this tonight with two 12oz bags of frozen cauliflower florets. Everything else was as written. It turned out so good!  Even my inlaws were impressed. I set up a little soup bar with cheese, cooked ham, onions, and jalapeños to be added as desired. It was a big hit with no leftovers!  I should’ve made more. 

  64. Easy recipe. The only change I made was cooking the onions in the butter before adding the flour.. I am not sure if this makes a big difference in taste .

      1. I made this tonight and it was very good! I’m trying to replace more of my carbs with cauliflower to cut back calories, and this was VERY similar to potato soup like my mom makes. I sprinkled a bit of cheese and dried parsley on top, red pepper flakes and ham or bacon would have been delicious! Enjoyed on the side of some grilled shrimp. So light yet satisfying!

    I added 2/3 c lite coconut milk, turmeric, ginger, curry spices. Added  lots of lemon and lime in my cup. 

    1. This is great soup.  My picky son asks for it.  It’s filling and tasty by itself but could also be used as a base for many different creamy soups.

      Thanks to the commenter about the salt.  They were right.  If the soup tastes bland you need more salt.  Depending on what you like you’d need more or less.  My family likes 1 .5 teaspoons in the batch.  You should add in 1/2 teaspoon increments until the salt level is good for you.

  72. I just made this soup for lunch. It’s awesome, creamy and tasty. I threw in some croutons when I served it which I like better than crackers in soup. I could eat seconds and thirds!!  Thanks Gina for your wonderful recipes.

  74. This was delicious as made. Salt and pepper after immersion as mentioned. Super easy to make. Too funny with all the comments about what people have changed or added – then it’s not the recipe. 

  75. Made this and loved it. Used water to which I added two scant teaspoons of vegetable flavor Better Than Bouillon . A few shakes of turmeric and some mushroom mini pierogi for soup, and voila!. My adult daughter who doesn’t like cauliflower at first said she didn’t think she’d like it, but then ended up having two helpings of this soup for her dinner.

  76. I made this soup today. I was very excited about trying it because my son loves cauliflower and both my husband and daughter are not fond of it. Based on the overwhelming positive reviews, I thought that I would be able to get my husband and daughter to like cauliflower this way. Honestly, I am not picky at all, but I have to admit that the soup was bland and had no kick to it. I even added onions, garlic, paprika and celery to it, based on reviews, but that wasn’t enough. I chopped up fresh onions and dill to add to the soup to boost the flavour. That did work, but I shouldn’t have to do this. Unfortunately, I won’t be making this again but I am definitely willing to try out some of your other recipes as they often tend to be quite successful.

    1. If you added all of those extra flavors and still found it to be bland, perhaps you need more salt. The salt really draws out the flavors. We didn’t add anything beyond the recipe, and didn’t find it to be bland at all. It’s a new fav of ours, the kids especially love it

  77. This has become a favorite of mine. I can’t ever wait for the weather to cool down enough to make this! I love it as is, but my meat eating family members require cubed ham and shredded cheddar cheese in order to enjoy. Either way, it’s a winning recipe!

    1. I’ll bet this would be great as a chilled soup too! 
      Also, I was thinking rather than adding celery stalks, to maintain the creamy, white appearance I’d add celery root. 
      Sometimes the best recipes are those with the fewest (but freshest) ingredients!

  79. Beyond!!! I put hot sauce and teaspoon plain Greek yogurt (tastes like sour cream) and a couple tortilla chips- like a spicy creamy tortilla soup without the calories!!!

  80. I’m not a fan of cauliflower, but I love this soup. To add more beans in my diet, I add a 1/2 can of cannellini beans before I purée it and it doesn’t change the points. I also have made it using broccoli. For that recipe, I use onion, celery, carrots, and broccoli.  After I purée the mixture with the beans, I add a small can of corn for sweetness.

Also loved your asparagus soup which I made this year in the spring when we had too many asparagus spears in the garden. My favorite way of eating asparagus.   82. Very easy to make and so delicious. I added all the ingredients except the butter and flour and cooked in my Instant Pot on High pressure for 3 mins. Melted the butter in the microwave, added flour stirring until smooth, then added it to the cooked cauliflower and onion mixture and used an Immersion Blender until creamy smooth. Packed it in my lunch today and LOVED it!

  84. Do you think I can use the Instant Pot following the same directions, making the roux on Saute, then adding the cauliflower, onions, and broth, then Pressure Cook for 5 minutes, then using the immersion blender?

  85. I stumbled across your site last night and was excited to find this recipe as I had two heads of cauliflower in the fridge. I doubled the recipe for extra soup and halved the butter, but still came out wonderfully. Also didn’t have any chicken broth so I subbed with vegetable bouillon. Reminds me of a cream soup that I used to get with fried chicken in South Korea when I was a kid.  Such a beautiful yet simple dish. Thank you.

    It should be called Dad’s “Dreamy” Creamy Cauliflower Soup. Soooo good. I love this soup so much. I’ve made it three times. Two heads of cauliflower makes about 2 1/2 quarts. Freezes very well. I prefer creamy soups over brothy ones, and this one fits the bill with all the comfort and none of the guilt.

  94. This simple soup is DELICIOUS I used what I had on hand.. No added salt veggie broth, carrots, clerey, a little red bell pepper, onion and of course cauliflower.( wanted to clean out fridge). Followed instructions and it came out nice and thick and smooth thanks to an immersion blender. Will totally make this again.

  98. I absolutely LOVED this recipe. I love how creamy it is, it tastes like a high fat/calorie soup without eating a high fat calorie soup. It was SO butter tasting and good!

    I made a couple of changes, I don’t have an immersion blender so I used our normal blender. The cauliflower blended so well you couldn’t see the individual grains anymore.

    A dash of paprika, cayenne pepper, and a tablespoon of sesame oil (I LOVE THAT STUFF) upped the calories a little bit, but added to the flavor profile which was already so good. I used salted chicken broth too, because I’m a salt monster. What a wonderful recipe, I’m sorry about the loss of your father, and thank you to him for this recipe and to you for sharing it with the world.

  99. I’m a huge lover of this recipe and make it in big batches to last me through the week. I try to have a low calorie intake and when I make it, it turns out to be about 50 calories for a HUGE portion. I was wondering if you had any recommendations for other spices to put in it? I’m not an experienced cook and don’t know the flavor profile of a lot of different spices. Do you know – or have an idea – of other spices that would be good in it? Paprika? Cumin? Etc?

      I roast  my  cauliflower first to add some extra flavor then I add a little bit of white pepper as well as paprika and a dash of crushed red pepper. Comes out great!

    Just made this for the 1st time yesterday and all I can say is WOW! This soup is wonderful! I like cauliflower, not my favorite vegetable tho, but I will definitely make this again. The texture is smooth and silky but thick enough to be very satisfying and I love the fact that no cream or half & half is needed to make it. I used all vegetable broth and added about 2 tsp of Better Than Bouillion chicken to it to give it a little more flavor and it was fabulous. Don’t have an immersion blender so I puréed it in my blender—worked like a charm. I sprinkled a little Parmesan cheese on top for flavor but is equally good without.

    I LOVE this recipe!!!Just made a big batch today as its cold and rainy here in San Diego!!!I leave out the butter and flour and it still comes out creamy. Added half a serrano chili and boy, did THAT spice things up. Maybe a tad too much but its still delicious!!!Going to be sure to have this on hand after my knee surgery since I will be down for a couple months. So great its no points without the flour and butter.

    1. I just made it with frozen cauliflower. Only difference was that I simmered it a while longer after blending to get rid of some of the extra liquid. Still as good as with fresh.

Also, I used frozen cauliflower and it worked great! Doing the same thing with the broccoli.  Oh, and I put a little shredded cheese on top and about one tablespoon of refried bacon bits to each bowl. ???

I carmalized the onions before making the rou and kept some of the cauliflower chunks whole because we are not the biggest fans of completely puréed soups. To add a little color we put a bit of dill as a garnish- so freakin good. A new favorite in our house.

    Yes, a fine recipe, I was interested by the creation of the roux first, usually it is introduced after the vegetables are cooked, as a thickening agent. The addition of leeks, and home made chicken stock, made this a delightful soup, as was the remaining half sliced roasted cauliflower with parmigiana added as a topping, crusty warm baguette also optional. – killer

    On another note, since this recipe popped up on your site I took it as a sign to make it even though I didn’t have high expectations as cooked cauliflower is ok but not my favorite.  This is really good as written!  After tasting it though, and having just made the broccoli soup, I added a cubed potato and some parmesan cheese and it’s awesome!! I’m blown away at how good it tastes!  Now I know what I’m going to do with all of that frozen broccoli and cauliflower from last years garden!! Another hit!!

  231. First please let me say i am so very sorry on your loss. I lost my dad this past July and it has been so difficult. Huge hugs and much support to you. Like your dad my dad was an amazing cook he loved it as well and so many many memories of different things he made. I know it sounds funny but one of the things that really hits me is that there will be no more of certain dishes he made that i have fond memories of no more of his amazing pork loins crusted, no more hollandaise sauce on eggs benedict.     Gina, I am so sorry for your loss.  Recreating memories of cooking together really help.  At Christmas my granddaughter asked if she could make a mince pie, because her dad, our son, remembers his grandfather and me always making mince pie for the holiday and she wanted to learn to carry on the tradition.  It brought back so many memories.

  298. I make this soup all the time. We had a shrimp boil yesterday and had leftover shrimp, sausage, and an ear of corn. I wanted to make a shrimp bisque but I had to make it dairy free and was out of almond milk. I made the soup but added Old Bay seasoning to it. Then I added the leftover shrimp, sausage, and corn. It made a great dairy-free bisque.

The thought of only five ingredients appealed to me and I was delighted to find that it tasted so much better than five ingredients worth!     Love your recipes, but this one needed more flavor. I added worchestershire sauce, and garlic salt and that helped. Likely wrecked the calore count, but a heaping cup of grated cheese made it really good.

  308. I have this book (both of them actually) and truthfully nver read the blurbs at the top of the page, Made this last night for the in-laws and it was a hit. Was telling co-workers about it, which is what led me here today to share the line. Anyway, I just read this blog post and saw Gina said sometimes she adds carrots, and It made me think that if after you made the original version of the cauliflower soup (but sub veggie broth instead of chicken) and the added some chopped up broccoli and nutritional yeast, you might get a vegan/low fat version of broccoli cheese soup. I’ve only done just the original recipe–but this soup is so good, I wouldn’t mind figuring out a few variations of it, so we could have it more often.
    Oh! I also like to garnish this one with Smoked Paprika and lemon infused olive oil–puts this simple recipe over the top when entertaining.

  309. I was skeptical as I usually don’t do well following recipes! I am glad to report that it worked perfectly on this one! This is the BOMB!!! I made a double batch and froze some!
    So glad I did as it is delicious!

    I used some from the frozen stash but added some (cooked) ground chicken breast to it to add protein!

    Absolutely delicious!

    Very simple and delicious. I generally tend to use this recipe, at least close enough, or favor a creamy leek and potato soup. There is a very high fiber content for such a low calorie count, making it great for digestion if experiencing stomach issues or blotting.

Not sure if anyone else got the same results, but I put this in my recipe builder  on the WW app and it is 3SP not 2…I think because whenever you use blender, you have to add that as information on the recipe details and it changes the value of the fruit or vegetable. Not sure if that makes a difference for most but for those like me who are sticklers for every point, it can make a difference.

      1. I returned my latest Cuisinart Immersion Blender (1/17). They have added a safety feature where you need to press a button on top of the handle to activate the blender. Each time you stop, you need to activate the button on top again. You can not pulse without going through these steps each time. Very disappointed.

I add 1/2 courgette (Zucchini) to the recipe as I find it makes it a bit creamier. I’ve also experimented adding tarragon and a small bit of leftover cauliflower cheese. Absolutely divine. We will be eating it regularly this fall. I will also be buying an immersion blender just for this recipe. I transferred two batches of cooked cauliflower and onions into my blender, and it worked just fine. However, an immersion blender would definitely make things easier. I needed something to go with your Quinoa Stuffed Peppers from the cookbook and had some extra cauliflower laying around (left from your cauliflower fried rice!) so I whipped this up while my peppers were baking. The whole time I was thinking I would probably need to add some almond milk or greek yogurt at the end…nope! My fiance LOVED it and said I can make it anytime. With a little green onion, shredded cheese, & bacon bits it tastes like baked potato soup!     Made this today for lunch. Was a little bit skeptical before I made it, but have to say it was absolutely delicious. I did add a shake of garlic granules but other than that followed the recipe. One thing I would like to ask, is this freezable once made as I would like to make a batch and freeze down for lunches. I cannot see why not as there is no cream in the ingredients. It has now become my firm favourite of mine!!!

BTW…thought I would also throw out there that frozen cauliflower florets also work – tried them when cauliflower was $5 a head – and it makes a fast soup even faster. And it freezes well too!     This was so easy, although I must confess to being a recipe tweaker. I just tried cauliflower in the last year (I'm 50 BTW) and found out, surprisingly, its good!

    I had a couple chicken Italian sausages in my freezer, so I browned them, and cut them up, and added a bit of sriracha since I like my food a bit on the spicy side. It was delicious! Please keep adding more awesome recipes! Your site is one of the few where I'd eat pretty much anything here.

    Can you please ask your father about a soup I had in Prague last year? It had leeks and cabbage in it, cooked in a milk broth until it kind of just all dissolved into a thick broth. Yet there were some chunks of cabbage in it that I could recognize. It was so delicious and I'd love to make on these cold winter nights.

  349. This is how I always make my cauliflower( or broccoli soup, or potato soup). Only mine has ALOT more added butter & flour! Plus usually a little milk to thin it down. I was looking for a way to slim down my recipe, and this is it! It has all the flavor, if not more, and nowhere near the calories. It may not be quite as rich/thick, but it is wonderful none the less. I did add diced celery & sliced carrots, and as I don't have an immersion blender, I had to use my blender.   358. Yum I love cauliflower soup. I made it last night but made a few changes (as I am on a special diet and I like a little spice). I used 2 TBSP of EVOO, 1 Large onion finely chopped, 1 1/2 TSP of Hot Madas Curry Power and 1/8 TSP of regular curry powder and I used 48 oz of 99% Fat Free Chicken Broth. I sauteed the Onion and Garlic in the EVOO until translucent. I then added the Hot Curry Powder and cooked it for a minute. I then added the flour and cooked for another 1 or so. Then added the chicken broth, bringing it almost to a boil, then adding the cauliflower. At the end I added salt and pepper as needed and the 1/8 TSP of regular curry powder. It was absolutely delish. Thanks for sharing your recipe.

  367. Probably a lame question, but on a scale of 1 to 10, with 10 being 'a lot', how much like cauliflower does this soup taste?

    I ask because it looks lovely, but I'm terrified of cooked cauliflower. Love it raw, but cooked is another beast.

    1. Just a suggestion but make a 1/2 batch and find out if you like it. No reason to be terrified of food as it sounds. Food is always kind of an individual experimental experience. Joy is in finding something that you thought you didn't like but actually do just in a different format.

    2. Doesn't taste a lot like cauliflower at all 🙂 My husband hates cauliflower in ALL forms (cooked or not) and even he liked it 🙂

    OK I have to say I didn't want to have to count any Points Plus on WW so the 2nd time I made it I left out the flour and butter and no one could tell the difference. So just Cauliflower, a box of chicken broth and a large onion cooked until soft and pureed w/ my immersion blender. It still tastes buttery and creamy. Add salt and pepper to taste.
    Sometimes I do a few add ins: A handful (not too many) of frozen peans after I puree the soup. A bit of curry powder just to change it up. I've served it at an elegant dinner in pretty little bowls and people rave.

  379. I absolutely love this recipe and have gotten my daughters addicted to it, too. I have, however, made one change that makes for a quicker and just as tasty end product with no fat. I skip the roux altogether and when blending, I add instant potato flakes–1/4 to 1/3 cup, depending on the size of the cauliflower. Thanks for the yummy recipe!

  380. I made this once with purple cauliflower thinking I was so clever. The soup tasted fine but the color was so unappetizing. You had to eat it without looking at it! Note to self: use white cauliflower and don't be a smarty-pants!!!

    I am so happy you posted this. I am also Czech and I LOVE this soup. We always added ground cumin -> that's a must in my opinion. And sometimes we didn't even blend the cauliflower, just left small pieces there. And a few sliced carrots add a nice touch of color, as you mentioned. Dobrou chuť ! 🙂

  393. Thanks for this wonderful recipe. It was soooo delicious! In order to get 6 servings instead of 4, I added 6 cups of chicken broth instead of 4 cups. As well I added one finely chopped garlic clove and cooked it along with the onion in the butter at the beginning of the recipe. After cooking the garlic and onion, due to the increased liquid content, I added 1 1/2 tablespoons of flour to the roux. One last item that I added for extra flavour during the 20 minute cooking time was a bay leaf, that was removed before I pureed the soup. Thanks Gina for this fantastic recipe. I love all your recipes!!

  403. It's near 90 degrees in the NYC area and I just had to make this soup. I've had a head of cauliflower sitting in the fridge for days and couldn't stand to make "cauliflower poppers" anymore!     I have been making this soup once a week since i found this recipe a few weeks ago, I leave out the salt but add a can of corn at the very end , just as I blend it. Everyone thinks it's a rich corn chowder, I believe I have shared it with 7 people and have had no complaints. I give them all the recipe with your website on it.

    Angela, aww now I know you make all my recipes!! I love the flavor from the rue best, nothing beats it! So in this soup which uses only a few ingredients and is low in points anyway, I prefer the rue. Something using more complex flavors, and which would have more fat, I make a slurry to keep the points down. The creamy mushroom soup is basically a slurry. Sometimes with a slurry you can taste the flour, which I try to avoid by cooking it longer. Hope that helps, in the end, yes it's about making it thick.

    1. @Angela & Gina…that would be "roux"…not to be nit-picky…but here in France…hey…it just "stuck" out at me a bit…The recipe is sublime…with a sprinkle of fresh chives it is truly creamy, warm and comforting!

    I made this soup tonight b/c I saw your note about vitamin C and I've been a little under the weather….question, sometimes you do a slurry (chicken pot pie soup), sometimes you make a rue (this recipe) and in the cream of mushroom soup you just mix the flour with cold water….what's the difference b/n the three techniques? I mean, it seems like the goal is to thicken….? I'm just curious! Thanks for the recipes!! This one tastes like cream of potato soup….only better:)

  424. This is really, really good! I just made it, the kids love it! One thing I did different from the recipe, is that I sauted the onions with the butter before adding the flour and cooking. I don't know if it made any difference in taste, but I have always sauted onions before adding liquid when I make soup.

    1. It would make a difference because you are caramelizing the onions. Changes the flavor a little 🙂

    This was good…but even better with some garlic powder, dried mustard, and Hungarian Paprika, with just a splash of fat free 1/2 & 1/2 at the end. Sorry, but we needed a bit more flavor.

  429. Question: is whole wheat flour the same as unbleached flour? I don't have unbleached but I have whole wheat flour, wondering if this will work.

    Made the soup this morning and I'm blown away at how delicious it is! So simple, so yummy. The only change I made was the addition of two finely chopped garlic cloves – I was graving garlic (wink!). After one serving, I'm actually satisfied…still licking my lips! Thank you so much for sharing…

    I made this for lunch today and it was amazing! I had to use frozen cauliflower and chicken bouillon (because that's all I had in the house) and it was still delicious! I also added in a clove of garlic. Mmm!

  435. This was great! I am a sucker for spices so I had to add garlic and onion powder, which made it wonderful.

    1. You ARE a downer and your self-important remark has absolutely NOTHING to do with the soup! Why waste everyone's time?

    3. I would rather someone correct me, instead of letting me continue to make a fool of myself. It is a roux, not a rue… At least anonymous was polite when she/he made the correction.

    4. I don't know why anyone would bother to get their nose bent out of shape about this comment. I'm a big fan of Gina and of this site, but it IS roux, NOT rue. The commenter above was perfectly polite and Gina is a big girl. I notice she has edited it to make the correction.

    5. Why not just email Gina directly with spelling corrections?.. her email is published on her contact page..

    6. I don't think you're being a downer at all. You're just sharing basic culinary knowledge and I'm sure Gina knows what roux is and simply misspelled it and now she corrected it thanks to your gently pointing it out. Everyone needs to calm down!

  437. This recipe looked so good I had to make it right away. I didn’t have fresh cauliflower but I had a bag of Birdseye steam fresh frozen garlic cauliflower (12 oz.). It worked great and soup was delicious and filling.

  441. @Momgateway If you got to My Helpful WW Links in the middle column, there are two links, one is A-Z WW Points Food List, a list of just about every food you can think of with the point value and quantity,and the other is a WW Points Calculator where you input calories, fat and fiber and it gives you the point value. That’s it in a nutshell!
