
Great cold weather soup that is easy, filling and delicious! I love this hearty soup, maybe even more than split pea. Lentils are high in protein and soluble fiber which lowers cholesterol. They have twice as much iron as other legumes and are high in vitamin B and folate. You can easily cut this recipe in half or freeze left-overs for lunch which is what I like to do.
Lentil And Chicken Soup

Calories: 126.3 • Fat: 0.8 g • Protein: 15.8 g • Carb: 14.1 g • Fiber: 5.0 g
- 1 lb dried lentils
- 3 small chicken breast halves on the bone, skin and fat removed
- 2 chicken bullion (I like Maggi)
- 1 packet Sazon (in Latin section)
- 1 small onion
- 4 scallions
- 3 cloves garlic
- 1 tomato
- 1/4 cup chopped cilantro (optional)
- 8 cups water
Meanwhile, in a mini chopper, finely chop onions, scallions, cilantro, garlic, and tomato. Add to the lentils with sazon and cook 15 more minutes, or until lentils are soft. (Add more water if needed)
Note: Sazon is found in the Latino or Mexican aisle. The seasoning is used on meats, fish, poultry, beans and even to flavor soups and stews. Typical ingredients include cilantro, corriander, annatto, azafran, achiote, garlic, onion or salt. Some brands contain MSG so check labels. I buy Badia Sazon Tropical because it has no MSG.

Can this be cooked in a crock pot? For how long?
ReplyDeleteI've never tried it in the crock pot, but I'm sure it can since dried lentil dont take as long to cook as dried beans. I would probably cook it 6-8. Let me know how it comes out if you do use the crock pot.

I find it in Pathmark by me. I'm sure it depends where you live. Here in New York we have a lot of latin foods available to us. I found it on this website http://store.cubanfoodguy.com/product_info.php?products_id=73. If not, you could use Goya Sazon.

ReplyDeletesazon is salt, garlic,cumin, coriander, and annato. the annato can be omitted because thats basically just for color. i would just mix all those spices together in equal parts and use 1 to 2 tsp of it to equal a paket of sazon. idk maybe gina has a better suggestion.

ReplyDeleteWonderful recipe!!! I left out the tomato, used 4 cups of fat free/reduced sodium chicken broth and 1 bullion, made my own Sazon (avoiding MSG), and and about 1.5 lbs of boneless/skinless chicken breasts (which probably adds a point per serving?).

Made this tonight and it was great!! Used boneless breasts that I cooked separately in the crockpot beforehand and then shredded. Also used broth instead of the bouillon and ended up having to add more since it was thick. Also pureed it with an immersion blender before adding the chicken or the onion mixture. Made the texture a little more kid friendly. Thanks Gina!

ReplyDeleteI'm excited to make this this weekend! I'm really confused on the points though... Under nutritional info, it lists this as 2 points, but the title says 3. Users said that they plugged it in to the calculator and got 6 and 8 points. Huge differences, can you please clarify?

ReplyDeleteI absolutely love your recipes - however, I think the points need to be recalculated for this recipe. The recipe does not specify how many ounces of chicken - so there is too much left up to interpretation. When i used WW's recipe builder, i input 8 ounces of chicken breast and came up with 6 pts+ per serving (serving = 1 1/4 cup). Just wanted to let you know that it may need to be re-calculated and re-posted to your site.
