My Sicilian friend Julia is a wonderful cook. I remember the first meal I ate in her NYC apartment; lamb chops and fried cauliflower which she calls broccoli a pasteta. She joked that day you can fry a sponge and it would taste good – she’s probably right. These are a lightened version of her recipe, made with Pecorino Romano, parsley, egg, garlic, white whole wheat flour and just enough oil to saute them in a pan.

Serving Size: 2 fritters

Ingredients

  • 6 cups roughly chopped raw cauliflower, from 2 small heads
  • 3 cloves garlic, crushed
  • 1 cup white whole wheat flour
  • 2 extra large eggs, beaten
  • 1/2 cup plus 2 tbsp grated Pecorino Romano
  • 1/4 cup parsley, finely chopped
  • 1/3 cup hot water
  • 3/4 teaspoon kosher salt and pepper
  • 4 teaspoons olive oil

Instructions

  • Steam the cauliflower in 2 1/2 cups water over medium heat until tender, about 5 to 6 minutes. Drain and quickly rinse under cold water to stop it from cooking.
  • Chop the cauliflower into smaller pieces with a knife once steamed and measure to make 5 cups. Set aside the rest for another use.
  • In a large bowl, combine the steamed cauliflower, flour, garlic, eggs, grated cheese, parsley, 3/4 teaspoon kosher salt and pepper. Add water so that batter becomes slightly more dense than pancake batter.
  • Heat a 12-inch nonstick skillet over medium-low heat, add 1 teaspoon of oil coating bottom of the pan.
  • Use a 1/4 cup measuring cup to form fritters. You can fit 4 fritters at a time, flattening them slightly with the back of the measuring cup.
  • Cook until golden brown, about 2 1/2 to 3 minutes on each side. Repeat with the remaining oil and batter 3 more times.

  1. Long time reader, first time commenter! This was awesome and easy!! I used the prepackaged Trader Joe’s riced cauliflower, and boiled it quickly. Halved the rest of the ingredients except eggs. Wow!!

  5. Made these last night because I couldn't bear the thought of spending much time over a hot stove in my tiny NYC apt in July. Ended up having company and these were a hit! I added a bit of curry powder and red pepper flakes and glad I did, they would have been a little bland without it. Steamed the cauliflower in the microwave to limit stove use.

    I was wondering if you eat these 2 fritters alone, i mean for dinner? Or if you eat this with starch? For a healthy and diet meal what do you recommend? Only these is too little right? Thanks in advance for your answer.

  7. I tried making this recipe on Friday night and I was pretty disappointed by the blandness. Granted, this is a diet recipe, so it is much harder to get full flavor. Next time I'm going to add onions and cheddar.

    These tasted great freshly made but i was bummed when i reheated left overs and they just didn't taste the same. i recommend cooking only what you plan to eat immediately

    I'd like to make these, but as a single person, I'd have way too many leftovers. Rather than cutting the recipe in half, do you think I could freeze the uncooked fritters and cook them later?

  12. These were good, but needed something. I think a dollop of low far sour cream and a sprinkling of chopped chives or green onion would make them perfect. Thanks for your lovely recipes.

  14. This is similar to a family recipe of ours. We are a family of New Orleanian Sicilians. Our recipe calls for it to be fried in a pan, and as one giant frying pan size patty. Which is incredibly hard to flip! Good to have a lighter version, thanks!

But I do have a question. I see where you say 5 cups of cauliflower after steamed. But then I see in older posts from a few years ago that you state 4 cups. So should I be using 5 cups of steamed or 4 cups. Can't wait to make these!!

  25. They were yummy but I needed to add quite a bit more salt to the batch as I went. If anyone has as tip on how much salt they used please pass on. I had to use parmesan ramano cheese as well but that's salty so I thought it'd be ok.

  26. Fabulous recipe. Have made it several times. I coat with Panko bread crumbs. I make mini fritters for appetizers, sometime topped with pepper jack shreds which melt right away… I usually add random herbs from the garden minced & tossed in the batter & always… Jeff Mauro, Sandwich King's Apricot Mustard Spread for the dip.   28. These were great! They tasted just like potato pancakes. My four-year-old daughter liked them even more than your split pea soup!

  29. I think these are a great idea but they were a little bland as prepared. Next time, I would add some cayenne to the mixture, and then do a light garlic or horseradish aioli to top it off. My husband whipped up a quick light mayo/sour cream/horseradish mixture with a dash of lemon juice, and that added some necessary zing.

    These were amazing Gina! I did end up measuring 4 cups chopped before steaming, (just one head) and I believe that I needed to use two heads instead (about 8 cups uncooked) to get 24 fritters. I will measure out 4 cups after steaming for more fritters next time. Thank you so much! My husband loved them.

  33. These were yummy and my 1 year old daughter agreed! My second batch I doubled the garlic, added 1/4 finely chopped onions and block of frozen chopped spinach (squeezed to remove water). I didn't change anything else in the recipe and they are just as yummy. I feel like the possibilities of different veggie combinations is endless!

    Any ideas how to veganise these? I know the cheese is primarily for flavor so I'm ok with cutting that but do you think I could sub flax seed for the egg? They look so good!

    Ok Gina, these are REALLY good but I was sitting here enjoying the fritters and NC BBQ chicken breast, and I thought…..couldn't I make gnocchi with the batter? What do you think? Would it be doable?

I added Knorr's Vegetable Mix with the dried veggies — added some color and flavor — I can't say it made it better because I have not made it as stated above — delicious- Definitely will make again — I can see them as a great side dish for Thanksgiving – not as individual fritters but as a casserole type dish — thanks for the recipe!!

  42. Tried these last night. Don't care for romano cheese, so I left it out and just tried putting in lots of seasonings. They were very good and I can't wait to try them again. Next time I will add a little sour cream or yogurt, low fat cheese, and turkey bacon and try for a loaded baked potato flavor. Great way to substitute for potatoes!

  49. I loved the texture, but I found them to be floury. We only ate a few, and I refrigerated the rest. This morning I warmed them in the microwave, and although they were not crispy, they were much tastier. I'll make these again, but add chicken broth instead of water, and let the batter sit for a few hours so the flour absorbs the liquid better.

  50. These were delicious! Not sure there was much of a caloric savings over potato pancakes because of all the flour and cheese, but man were they good. I'm wondering if I could get away with less flour to cut back on the calories. Soooo good, though.

    I used white flour (which is all I had), added dried chives, used parmesan (again, all I had), and used frozen cauliflower. Served with light sour cream. Outstanding!

  51. Confirmed! The kids loved these and are a great substitue for regular potatos when watching carbs! Definitly has a lot of possibilities for alteration or spicing up a bit too depending on what they'll be served with. Great recipe!

  52. ok, so I made these today and here is my outcome:
    I chopped and measured the cauliflower before steaming it. An entire medium sized head gave me about 6 cups chopped (pretty small pieces). After steaming, it gave me about 4 1/2 cups.

    I used a 1/4 cup measure to make the fritters, and I got exactly 20 of them. I don't think there is any way possible that you can get 24 out of this batter unless you increase the ingredients, or make them smaller than 1/4 cup. I'm wondering if maybe you miscounted when you originally made them? Or didn't use a full 1/4 cup (I leveled it off each time, it was never a mounded 1/4 cup).

    I was also able to reduce the oil used to just 2 tablespoons, so that keeps the points the same! If you only get 20 fritters, but reduce the oil, then 2 fritters are 105 calories, 5 grams of fat, 3 fiber and 5 protein!

    Oh and by the way, they are delicious!

    Great recipe, I made these tonight. My daughter, who is 9 years old, loved making them with me. My 10 and 4 year old boys ate them up. This was family hit for sure. I think next time I will add a bit more salt. I thought I added enough, but in hind sight, they could have used a pinch more. But that was totally my fault and your recipes. I learning to use more salt for flavor, but not to make it a salt lick;) It can be a hard balance:D

  57. These were SO GOOD!!!!! I vowed to only eat 1 (we had them with the Cheesy Jalepeno Popper Stuffed Chicken so I was trying to be good), but I had to have another half. I added some chopped scallion (since I had it for the chicken) and used garlic powder instead of whole garlic (because I quartered this recipe). As usual, I cut the recipe down and it came out great!

    My husband LOVED them. He had 2.5. He scarfed down the whole dinner.

  63. I HIGHLY suggest adding Old Bay Seasoning to them (in the batter or sprinkled on top). They're good without it, but they are addictive and amazing with the OBS!

    I think the oil for frying should be noted as such in the ingredients; I accidentally added it to the mix! Clearly, it was user error, but kitchens can be hectic. It wasn't a big deal; it just made them a little looser than I think they should have been (and much more caloric). Also, "medium low" did not cook them hardly at all. I went to medium-high and that did the job.

  65. I just had to add another raving review of these delicious fritters! We had these along with some grilled flank steak and my husband couldn't get enough. I used a 2 Tbsp size cookie scoop to portion mine into the pan. I sprinkled a tiny bit of salt over each one as I removed them from the pan. Really really good!

    Just made these to take to a Passover seder tonight. They are divine! I am going to reheat them, cut them in half and put a piece of smoked salmon and touch of sour cream on each for an appetizer. Great recipe. Will definitely make again.

  69. Count me as another person who ended up with 12-14 fritters! I used a 160z bag of frozen cauliflower, which is exactly 4 cups. This was still delicious, and I dont feel bad about eating a couple more because this replaces my carb with my meals because I dont even miss it!

  72. I know I'm late to the party, but I made these last week and did bake them. I preheated the oven to 400 and let them go about 8 minutes per side. They weren't as crispy as they'd get in a pan, but I am horrible at pan frying/sauteeing and didn't feel like giving them too much attention. They turned out great!

    I was looking for an answer to the same question as Anon on Nov 21 – my kids need gluten and wheat free recipes, and I want to try this one. I wonder what else I can use in place of the wheat flour. I am going to see what I can find at my grocer today and give it a whirl. I will let you know how it turns out.

I followed the recipe to a T and I also used a 14/ cup to measure each fritter exact. My question to Gina is, do I need to ad more points to these fritters?     These seem to be a sure fire hit, but we don't usually eat fritters in our house. What do you pair with them? Do you eat them with applesauce or sour cream like you would potato pancakes?

  91. I made these but tweaked them just a bit. I cut the flower to 3/4 C., substituted 2 eggs for 4 egg whites, and did 1/2 broccoli 1/2 cauliflower. also I nixed the oil and used pam. Put them at about 40 calories a cake and super delicious!

  95. I never touched cauliflower before I saw this recipe. Then I decided to try it, with a few modifications: I used half the cheese, added leftover quinoa and corn to the batter, and used scallions instead of parsley. Turned out great!   105. I made these and I definitely did not get 24 by using a 1/4 cup measuring cup. I believe I got about 15 and they're quite large. The first night I didn't really like them and was very disappointed because I thought they would be fabulous. However, the leftover ones I really do like! I'm thinking the flavors just blended better after sitting for a while – the first night they tasted too much like flour. Do you think the flour could be reduced? I doubt mixing them up ahead would work very well. I also made them on a non-stick griddle with non-stick spray instead of the oil. Next time I am thinking of adding herbs and maybe zucchini like somone else said – that would be great.

  107. No one here is a big cauliflower fan, but I we love your recipes and decided to try these. They were wonderful! I really felt more like I was eating potatoes than cauliflower. I used a 16oz bag of frozen cauliflower and with the 1/4c water it was the perfect consistency, but I only ended up with 12. Only think I omitted was the parsley. My dh and I used lo cal sour cream and the kids ranch for the dip.

  108. Made these last night – changed them up a little, though. Added 1/3 c. finely diced vidalia onions, didn't have any parsley on hand so used italian seasoning & some chilli flakes. Turned out delicious. And like latkes, I ate mine with some FF sour cream.

    My batter looked nothing like your picture, did you mean 4 cups after they're steamed and chopped or 4 cups of cauliflower chopped and raw? I added more water, flour, and wasn't sure how much salt or pepper, they still turned out really good.

  111. I made these tonight and they were even better than I was hoping for! So good! I cooked them on our counter top griddle with just a little bit of cooking spray, no oil, and they turned out great! My Jewish friend told me that with traditional Latkes, they dip them in (fat-free) sour cream and apple sauce. I tried it with these….. YUM!!!!

    I think it would work without the cheese, the cheese just gives it lots of flavor so it would need more salt. Maybe separate the batches so that yours has cheese and his doesn't so you can enjoy them the way they are meant to be.

  115. Gina – I am wanting to try these for my kids. My two year old is allergic to soy, dairy and corn. Do you think I could substitute the cheese for something???? I have yet to find ANY non soy, dairy or corn cheese out there (even the veggie cheese has soy in it). What do you think I could put in there that will give it taste and let it stick together?

  117. I made these, last week, and they were outrageously good!!! So simple, and the measurements/yield was spot on!!! The only thing I did differently was use scallions in place of parsley…only because I had to make them, as soon as I read the recipe, and didn't feel like running to the store, just for parsley. (It annoys me when I read a recipe, and people leave comments about how they "improved" the original) Just like JenniferAnne said, they so reminded me of fried cauliflower…previously, my favorite way to prepare!   118. Holy Crap! These were absolutely amazing. I LOVE cauliflower, but sometimes, plain old steamed veggies can get a little boring. I was so excited when I saw this recipe. I had planned to make this two weeks ago and for one reason or another, every time I planned to make them, something came up and I wasn't able to. Finally got it together and made them this past weekend. They taste like a combination of fried cauliflower (one of my favorite pizza night apps) and potato pancakes.   133. My family absolutely flipped over these! My husband hates cauliflower so I told him they were potato. He loved them and ate the whole batch for a meal! I have made them many times since for guests. I did make the mistake of measuring the cauliflower before it was cooked and after being cooked, it was very little. The second time I cooked 2 heads of cauliflower to make enough cooked. I measure them exactly and can't quite get 24, I got more like 18, but they are SUPER YUMMY!

  145. Made these for dinner tonight as a side dish with your turkey meatloaf! I used two different pans, one with oil and one with cooking spray. For me, they turned out the same! So I ate the ones with spray and my boyfriend ate the ones in oil. I will make these again. I had 4c of cauliflower, but it only made 14 1/4c fritters. So Ill try next time and see if I did something wrong! Oh and for dessert later we will have your strawberry cheesecake that I made this afternoon!! Ill comment on that recipe after I eat it, although I already know it will be awesome! I used to never cook til I started WW recently and found your blog. Ive made so many things on here and they are all great! Thanks!

  156. Wow Gina, I just made these and they are fantastic. I am using a non stick pan (from Christmas Tree Shops no less) and don't need as much oil (no sticking) but the oil is helping them brown. These are sooooooo good! And a head of cauliflower is cheap!

    How do you get these to not stick to the pan? I love making fritters but always want to use the least amount of oil possible. I always use non-stick pans, but end up having to "saute" my fritters!

I am learning how to cook (and not mess things up, LOL) & I want to say that although I did not really care for these, because they were just really "different" (But not bad) and I personally won't make it again — I will say that this recipe was EXTREMELY easy to make, and to cook…I have a hard time knowing when the pan it hot enough, or getting it too hot, etc…and I am sooo proud of myself that I made these JUST LIKE THE PICTURES =) So, I would say that this recipe was great especially for beginners, but the taste of cauliflour was really different to me.

    Shaunna- measure the cauliflower cooked, in small pieces. It would be different uncooked or in large chunks.

    I love cauliflower but my family, not so much but they love it like this. Without the cheese, I haven't tried it, I feel the cheese adds to the flavor. I wouldn't leave it out.

After looking around a bit, I stumbled upon the cauliflower fritters recipe and as I happened to have cauliflower in the frig, I immediately proceeded to make it for dinner for the family. The fritters are AMAZING. Seriously, we are pretty gourmet in my household and everyone gave this recipe an "excellent" rating. My only complaint is that although these are healthier, I can't eat just one…or two. So, I spent 10 points on fritters last night. Well worth it.

  183. One easy way to solve printing problem. I always place my mouse at the beginning of the recipe and then drag it to the end of the recipe, highlighting the recipe. Then I go to "file" at the top left of screen, click "print," then when your print screen comes up choose "selection" and only the portion you had highlighted will print. At least this works with my HP printer. Could be that other printers would work differently, I suppose.

    I am confused. I made these last night. A friend of mine made them too the same night. Followed your recipe above. We both got 12 fritters and when calculated on spark recipe builder each fritter ( 1 ) is 122 calories and 6.8 grams of fat. For 2 that is 244 calories and almost 14 grams of fat. Mine look the same as the photo above and taste pretty good but I am concerned that the calorie/points is do not match up. I do enjoy your blog …I do not mean this to be hurtful but thought I should let you know.

  200. Gina this is my new favorite recipe! Excellent! I must tell you that I used two heads of cauliflower instead of one to get 4 overfull cups. Also used parmesan cheese instead of Romano because that is what I had in the fridge. I cooked them on a non stick griddle with Pam-type spray and my yeild was about 26-28 fritters. I believe cutting out the oil had NO effect on the taste just cut the calories down to one point per fritter. These freeze nicely too.     I just stumbled on your site….OMG!! I'm in heaven! I unfortunately fell off the wagon, I had lost over 25 lbs on counting points with WW and unfortunately gained back 5lbs in the last month, but I'm back and am going to use your recipes in getting back into better shape and hopefully lose the 5 lbs I gained and hopefully lose another 10 lbs or more. Your recipes are amazing, and I mean every single one of them. Easy to follow and the pictures are great! I am now inspired to get back into my bubble. Thanks so much!   218. Gina, I love all of your recipes and am waiting for your cookbook some day. The pictures of your food are so beautifully done, but when I print the recipe I don't necessarily need the picture too. It wastes ink when all I really need are the words.

    I do love your website and if you're not famous yet, you should be!

    I'm on weight watchers and my boyfriend and I both tried these out…GIRL these are off the CHAIN!!! I absolutely LOOOOOOOOOOOVED making and eating these.
