
Taste the wonderful flavors of fall in this beautiful salad with apples, craisins, pecans, honey and creamy goat cheese tossed with mixed baby greens. I love the combination of the goat cheese paired with the sweet taste of honey and fruit. This is great as a side salad or a light lunch.
I was surprised to learn that goat cheese is 30% lower in fat and calories than most cow’s milk and it's tolerable for those who cannot digest cow’s milk.
Honey Goat Cheese Dressing
Gina's Weight Watcher Recipes
Servings: 15 • Serving Size: 1 tablespoon • Old Points: 1 pt • Points+: 1 pts
Calories: 43.1 • Fat: 3.4 g • Protein: 1.4 g • Carb: 2.0 g • Fiber: 0.0 g • Sugar: 1.8 g
Sodium: 28.3 mg
Ingredients:
- 4 oz fresh creamy goat cheese, room temperature
- 1 1/2 tbsp honey
- 2 tbsp extra-virgin olive oil
- 2 tsp apple cider vinegar
- 1/2 lemon, juiced
- 1 tbsp water
- Kosher salt and freshly ground black pepper
Directions:
In a small blender, combine goat cheese, honey, olive oil, vinegar, lemon juice, water and season with salt and plenty of freshly ground black pepper. Mix until fully combined and creamy.

- 1/2 oz dried craisins (1/2 pack Craisins 100 calorie pack)
- 10 pecan halves
- 1/2 apple sliced
- 1 cup mixed baby greens
- 1 tbsp honey goat cheese dressing
Directions:
Fill a bowl with mixed greens. Top with pecans, apples, and craisins. Drizzle 1 tbsp honey goat cheese dressing over top of salad.

Serves 6-8
2 ea. Large English cucumber (peeled, diced 1/2 inch)
1 pkg. Chavrie®
1/2 tsp. Garlic, chopped fine
1 Tbsp. Mint, chopped
1 Tbsp. Dill, chopped
1 oz. Lemon juice
Salt and pepper to taste
Instructions
Drain cucumbers for 10 minutes in a colander
Meanwhile combine all remaining ingredients
Fold in the drained cucumbers
Refrigerate overnight before serving
Serve with pita chips

I am seriously digging that Portabello Panini! I find that I use the panini machine a lot because you can put just about anything in between a couple of pieces of whole grain bread and the heat and squish make it all so delish (I didn't mean for that to rhyme!). One of things I really like about goat cheese - and oddly enough, Chavrie is the one I find is best at this - is that it has a very good flavor especially when heated or melted. Some cheeses lose their flavor but goat cheese seems to get better. So you can use less and still get the bang for the buck.

ReplyDeleteI liked the Asian Chilled Pasta as there are many easy substitutes for the ingredients to make it more WW friendly. I can imagine the tangy taste of lemongrass with the goat cheese and ginger. Best of all, this is a make ahead meal, refrigerates well (tastes better , in fact, if you don't eat it right away). I can make a batch on Sunday and seal/freeze it so all it needs is to be thawed out for lunch at work.

Ingredients
1 pkg. (17.6 oz) turkey cutlets
4 tsp. extra virgin olive oil
1 pkg. 5.3 oz. Chavrie® Pyramid
¼ cup finely chopped pecans
5 tbsp. whole berry cranberry sauce
Instructions
Heat broiler. Brush one side of cutlets with olive oil; place oiled side down on broiler pan. Brush tops with remaining olive oil.
Broil about 4 inches from heat for 5 minutes. Turn and broil 3 minutes or until no longer pink in center.
Meanwhile, mix Chavrie® and pecans in small bowl. Spoon mixture over top of broiled cutlets and broil and additional minute or until cheese is warm.
Top with cranberry sauce.

1 tsp. ginger chopped
1 Tbsp. curry paste (your preference)

1 pkg. Square wonton wrappers
1 C water
Vegetable oil
Instructions
Put the chicken, lime juice, honey, red curry paste, and cilantro into a medium bowl and mix well by hand.
Split the Chavrie® Goat Log in half and cut ¼ inch half moon shaped pieces
Lay out 10 wonton wrappers in a row. Put 1 half moon shaped piece of Chavrie® Goat Log into the center of each square. Top with 1tsp. of chicken mixture.
Working quickly, dip your fingers into the water and moisten the edges of the wonton. Fold it over the filling to form a triangle, pressing well to seal. Curl the 2 points in towards each other, moisten 1 point and press them together to form a bishop's hat. Repeat with the remaining wontons.
Pour 3 inches of the vegetable oil into a large saucepan and place over medium heat. When ready to cook, drop the wontons into the hot oil in batches of 6 until puffed and golden, about 3 minutes.
Remove and let the excess oil drain.
Serving Suggestions:
Serve with the Chavrie® Thai dipping sauce
Wontons can be cooked in chicken stock and used as soup garnish if you prefer not to fry them

The Goat Cheese Spaetzle is, hands-down, the best I have ever had. My husband, who is German, loved these - only after he was done did I tell him that they were made with goat cheese. Another "goat cheese?!" phobic converted!

Regarding the recipe for the wontons on the Chavrie site, which sound totally yummy, do they mean raw ground chicken or already cooked ground chicken?? I hate to sound foolish, but I'd hate to put a lot of effort into this only to screw it up by not asking the question....Keep the recipes coming!!!

ReplyDeleteI love this salad, I make it quite frequently because I just adore goat cheese. I decided that I wanted to have it for dinner last night but wanted some protein in it. I made a new weight watchers recipe for pecan crusted chicken and sliced it and put it on top. It was so perfect! I also cut grapes in halve and put them on this salad when I make it because grapes and goat cheese are a match made in heaven. Yum! Keep the wonderful recipes coming Gina!
