This easy chicken quesadilla recipe is a complete meal in one! Loaded with chicken, veggies, avocado-mango salsa and cheese, it’s very filling and so delicious!

I made this healthy chicken quesadillas recipe for dinner with my leftover avocado mango salsa and some sauteed onions and peppers. They are very satisfying, with almost 38 grams of protein and 17 grams of fiber. They are also great for lunch or even as appetizers. Chicken Quesadillas

Chicken Quesadilla Ingredients

  • Chicken: Trim the fat off 16 ounces of skinless chicken breasts.
  • Spices: Season the chicken with cumin, oregano, garlic powder, salt, and pepper.
  • Onion: Slice half of a small onion into strips.
  • Bell Pepper: Slice a red or green pepper into strips.
  • Garlic: Mince one clove.
  • Cheese: You’ll need a part-skim Mexican shredded cheese blend.
  • Salsa: I used avocado mango salsa for extra nutrition and flavor.
  • Tortillas: Buy low-carb whole-wheat tortillas, like La Tortilla Factory.

How to Make Chicken Quesadillas

  1. Prep Chicken: Slice the breast in half lengthwise so you have four cutlets. Season the chicken for the quesadillas with salt, pepper, cumin, oregano, and garlic powder.
  2. Cook the Chicken: Heat a skillet over medium heat, lightly spray with oil, and cook the chicken for a few minutes on each side. You can also grill the chicken on an outdoor grill. Check that the cutlets are done with a meat thermometer. Once it reads 165°F, the chicken is ready. Remove the cutlets from the heat, cut them into strips, and set aside.
  3. Sauté the Veggies: Pour a teaspoon of oil into the skillet, add the onions and peppers, and season with salt and pepper. Cook for two minutes, add the garlic, and continue cooking until the vegetables are soft. Once ready, transfer to a plate.
  4. Assemble the Quesadillas: Heat the skillet on medium heat and spray lightly with oil. Place a tortilla in the pan, top with cheese, chicken, onions, peppers, and salsa, and then put another tortilla on top.
  5. Cook the Quesadillas: Once the cheese melts and the bottom tortilla is golden brown, place a plate on top of the quesadilla and flip the pan over so the quesadilla is on the plate. Slide the other side into the skillet, cook for another minute, and remove with a spatula.

What to Serve with Chicken Quesadillas

Serve your chicken quesadillas with sour cream, salsa, and guacamole for dipping. If you want to make some sides to round out the meal, try this Skillet Mexican Zucchini, Black Beans and Rice, or Cilantro Lime Cauliflower Rice.

How to Store Quesadillas

Leftover chicken quesadillas will keep in the fridge for up to three days, and you can reheat them in a skillet until warm. If you’re cooking for one, you can store all the ingredients separately and make the quesadillas fresh over the next few days before eating.

Variations

  • Tortillas: Any eight-inch whole wheat or flour tortillas will work if you can’t find low-carb tortillas.
  • Chicken: My Slow Cooker Salsa Chicken or Chipotle Chicken would work well in this quesadilla recipe. Or if you prefer ground meat, try my Turkey Picadillo.
  • Spices: If you have taco seasoning on hand, use that to season your chicken.
  • Vegetarian Quesadilla: Omit the chicken and cook more bell peppers and onions, or add black beans for more protein and fiber.
  • Salsa: Swap mango salsa with pico de gallo or any thick jarred salsa.
  • Cheese: Substitute shredded cheddar cheese.

Ingredients

  • 16 ounces skinless chicken breast, fat trimmed
  • 1 teaspoon kosher salt , and black pepper, to taste
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • olive oil spray
  • 1/2 small onion, cut into strips
  • 1 bell pepper, red or green cut into strips
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1-1/3 cup part-skim Mexican blend shredded cheese, or dairy free cheese like Violife
  • 1 cup avocado mango salsa
  • 8 low-carb whole wheat flour tortillas, La Tortilla Factory original size (or gf tortillas like siete)

Instructions

  • Slice chicken breast in half so you have 4 cutlets.
  • Season chicken with salt, cumin, garlic powder, oregano and black pepper.
  • Lightly spray a skillet on medium heat with oil or if using a grill, grill chicken until cooked on both sides, about 2 minutes on each side.
  • Remove from heat and cut chicken into strips, set aside.
  • To the skillet, add 1 tbsp oil and cook onions and peppers, season with salt and pepper.
  • Cook about 2 minutes, add garlic and continue cooking until vegetables are soft being careful not to burn the garlic. When cooked, set aside.
  • Heat skillet on medium heat and lightly spray with oil. Add tortilla, top with cheese, chicken, onions, peppers, and pico de gallo or avocado-mango salsa. Top with the other tortilla.
  • Cheese should be melted and the bottom of the tortilla should be golden brown. Put a plate on top of the quesadilla to flip it over onto the plate. Then slide the other side onto the skillet.
  • Cook another minute and remove with a spatula. Cut into wedges and serve with sour cream if you wish.

  4. Wow. This was fantastic! I highly recommend this one! I used 1/2 cup fat free cheese, carb balance tortillas, and subbed the sour cream for nonfat Greek yogurt. This came out to 6 points on WW! It was absolutely delicious, my family approved!

    After some trial and error with the flip- I slid a spatula all the way under the quesadilla and held a small plate at an angle, and brought the two together. Then I was able to slide the quesadilla back onto the pan

    I make quesadillas in my air fryer all the time. Just spray them with cooking spray or olive oil. I am going to make this today. Chicken will be brined and then cooked in the air fryer and then the quesadillas will go in. Will have to saute the veggies on the stove though….

  8. Help! Has any one tried this delicious looking recipe? I’m trying to envision my clutzy self flipping it without burning my forearm or making a disastrous mess. I wish there was a video of Gina doing this.

    1. You might find it easier to divide the filling into eighths. Place 1/8 filling over half of 1 tortilla and fold over to enclose. Brown on each side…much easier to turn w/out loosing the filling.
      2 halves = 1 serving

    2. I will be making it this week. It is much easier however to make two half moons… and flip those. Just fill one half of the tortilla, flip other half over and put into the pan – repeat process with one more. Now you have a full skillet but flipping the two of them is a breeze (one at a time of course). Make sure you move them around in the pan as they brown up… hope this helps.

    3. I hear you! I have heavy metal pans, so flipping with one hand and covering with a plate with the other hand is really hard. I spatula it off onto a plate. Put a plate on top of that plate, flip it over, and then spatula it back onto the pan. I hope this helps!

    4. I have done it and plan on making them tonight use potholders to hold the pan handle if hot use a plate that is bigger then the mouth of the frying pan put you hand on the top of the plate hold the plate down firmly into place then flip it over put the pan back on the fire and slide the quesadilla back into the pan if it does not slide easily use a spatula to help you slide it PS if you have a panini press you can use that – You got this Heather!!!!

    5. I find it easier to make one tortilla quesadillas by putting half the filling on one half of the tortilla, then folding the empty side over the top of the filling. Press down lightly and it should remain folded. This way I can cook two servings in a single pan [long folded sides in the middle of the pan] and they are easy to flip by lifting the curved edge with a spatula and just rolling it over onto the other side.

    6. I have made the chicken one and the shrimp and avocado. I haven’t had an issue, and I can’t flip an omelet to save my lift hahaha I prefer using my Gridler, but I do make them on the stove top. If you leave them go long enough before sliding them onto a plate and over, the cheese should hold everything together. I spray my pan well at first too to help it slide easier. I even use fish spatulas and smaller tortillas if I’m using the stove, instead of one big one a piece. I think it’s easier. I’m sure you will do just fine!

  10. Does anyone know if they still make/sell the Weight Watchers brand shredded cheese? I never see it anywhere but I see it referenced in recipes here and there. It seems to be the lowest calorie and lowest WW point shredded cheese I’ve seen. Anyone know? Thanks

    I never seem to think of quesadillas when it comes to simple low calorie meals. I’ll think of wraps for some reason and there is very little difference between the two. This quesadilla has everything I would put in it also! Peppers, chicken, cheese. A+

    This is sooooo yummy! Made with sabra salsa and white tortillas (not as healthy) because I'm not a huge fan of whole wheat tortillas. Let me tell you, these babies are muy delicioso!

    Best quesadillas ever!! I made a couple of small changes to adjust our family's taste. I probably messed with the calories and points but nbd. The chicken was a little bland for our family so I added some ginger, a pinch of chipotle powder, and red chili powder. Also cut the chicken into small pieces before cooking it. I didn't have the ingredients on hand for the avocado mango salsa so I just substituted with Chichi's chunky salsa which still tasted good. Lastly, pulled out the quesadilla maker I've been meaning to use for a while. Came out perfect! On point!

    This is definitely one of my favorite dishes to make from your recipes! I've been following your site for over a year now, and when I first made these chicken quesadillas, my husband said that he would love to eat these weekly! I've made them a number of times now, and last week when we had them, we ate most of the mango avocado salsa before the chicken was even done cooking! You just can't go without that salsa!   22. I made these the other night and they were absolutely incredible! I used pico de gallo instead of the avocado-mango salsa and I made it following this recipe: http://allrecipes.com/recipe/pico-de-gallo-3/ Instead of lime juice I used vinegar, and instead of jalapeño I used cayenne pepper. I also added a bit of lemon-pepper seasoning to it. Also, I used red, orange, and yellow peppers in the quesadilla instead of just red and the whole thing came out amazing! My housemate tasted it and loved it as well. We both agree that it tastes like something straight out of Chili's!! Thank you, Gina for being so awesome! It's so rewarding to eat healthy, delicious meals. 🙂

  25. I made these, except instead of using the skillet I cooked everything on the George Foreman, and I loved them! The salsa made it a little runny, so next time I'm using drained pica-de-gallo or however you spell that. My husband was impressed!

  26. Gina I am in Nassau County. I find La Tortilla but they are 3pp per tortilla (larger ones) at Stop n Shop. Where do you find the smaller ones? (I have always made your recipes with the larger ones anyway but if I could find the smaller that would be great!)

  32. I made these for the first time a couple weeks ago and again this week. They are wonderful. I love sauteed onions and red peppers, so I didn't miss the cheese so much (since I would tend to LOAD this with cheese on my own :-). I like that I can make them separately and give my husband more cheese for his, too. I love that it's a HUGE serving. It's good for nights when I'm really hungry. Thanks again for another fabulous addition to my dinner repertoire! I think it was pretty easy and fast, too. (I did use store-bought salsa to help with that.)

I got Mango Peach salsa (0 points) from Target's refridgerated section and added 1/2 a 100 calorie pack of Wholly Guacamole (1 point for half the packet, 3 points for the whole packet) to each quesadilla. Delicious! Thanks, Gina! I will likely just make this chicken and the vegetable mix when I'm craving fajitas…for very few points!

    I made these a few nights ago. I used regular mild Salsa instead of the mango and it was still delicious. The hubby and I split one and had the Zucchini Sticks on the side….delicious and brought the points value down. I am a Lifetime member but finding maintaining my goal weight really challenging.   57. Gina I made these last night and loved them!! WOW……these were amazing! Thank you for the scrumptious recipe. I just ate 1/2 because 1/4 cup of my cheese was 3 points and I also did not have low calorie wheat tortilla. 🙁 I calculated that 1 tortilla is 3 points….so that means that 2 tortillas are 6 points! Not including the cheese and chicken and other add ons! I am scared I have no clue how many points I really ate. I grilled teh chicken on Gerge Foreman and followed what you said on everything else. Is there any way I can figure out how many points I am eating? I was wondering what 1/4 cup WW cheese is worth and the low cal tortillas ( 2 of them) are worth so I can compare and deduct points from my 35 weekly.
    Either way……these were sooooo good!

  61. i made this but with chicken thighs instead( not a white meat fan) the seasoning on the chicken was good. i think its a very adaptable recipe and you can change the veggies anyway you like.

  71. I love chicken quesadillas! I cook them in half the time using a George Foreman grill. I don't have to turn them over….the grill does the work for me. I also brush the tortillas lightly with a small amount of olive oil. I'll have to try the low carb tortillas. Thanks for your great recipes!

Your recipes are just perfect, not too complicated, and are the same foods and ingredients I LOVE, this is the best recipe site! Do you have a picture of you up on the site? a bio?   75. what is the points if you do not use the avocado salsa and a 1 point tortilla??? I would like it better with ff salsa!! Love your recipes. Made the Ministrone soup yesterday in our snow storm and can't keep the zucchini fries in the house!!!!

  76. Oh I just so adore chicken quesadillas! These sound so so good. I haven't had them prepared on the top, always in the oven or micro. I am going to give your method a try.
