Chicken Quesadillas

These chicken quesadillas are a meal in one! Loaded with chicken and veggies and very filling (I couldn't finish mine). I made these for dinner with my leftover avocado mango salsa but these are also great for lunch or you can even serve them as appetizers.

Servings: 4 • Serving Size: 1 quesadilla • Old Points: 7.75 pts • Points+: 10 pts
Calories: 386.9 • Fat: 18.6 g Carb: 31.6 g Fiber: 16.3 g Protein: 37.7 g

Ingredients:
  • 16 oz skinless chicken breast, fat trimmed
  • cumin
  • oregano
  • garlic powder
  • salt and fresh pepper
  • cooking spray
  • 1/2 small onion, cut into strips
  • 1 bell pepper (red or green) cut into strips
  • 1 clove garlic, minced
  • 1 tbsp oil
  • 1-1/3 cup Weight Watchers Mexican blend shredded cheese
  • 1 cup avocado-mango salsa
  • 8 low carb whole wheat flour tortillas, La Tortilla Factory

Directions:

Slice chicken breast in half so you have 4 cutlets. Season chicken generously with salt, pepper, cumin, oregano and garlic powder.

Lightly spray a skillet on medium heat with oil or if using a grill, grill chicken until cooked on both sides. Remove from heat and cut chicken into strips, set aside. To the skillet, add 1 tbsp oil and cook onions and peppers, season with salt and pepper. Cook about 2 minutes, add garlic and continue cooking until vegetables are soft being careful not to burn the garlic. When cooked, set aside.
Heat skillet on medium heat and lightly spray with oil. Add tortilla, top with cheese, chicken, onions, peppers, and pico de gallo or avocado-mango salsa. Top with the other tortilla. Cheese should be melted and the bottom of the tortilla should be golden brown. Put a plate on top of the quesadilla to flip it over onto the plate. Then slide the other side onto the skillet. Cook another minute and remove with a spatula. Cut into wedges and serve with sour cream if you wish.

    13. I love chicken quesadillas! I cook them in half the time using a George Foreman grill. I don't have to turn them over....the grill does the work for me. I also brush the tortillas lightly with a small amount of olive oil. I'll have to try the low carb tortillas. Thanks for your great recipes!

    33. I absolutely love this website. As a seasoned WW member for quite a few years it is nice to find some great, quick & easy recipes. I have tried quite a few recipes including the pot & leek soup, baked zucchini sticks, ham/swiss chicken (had these for supper tonight) and the beef strogonoff. All excellent that you can feed the whole family. Can't wait to try the mac & cheese & going to try to the asian turkey this week. Thanks for all your help!

    35. Gina, I am new here and I cannot thank you enough for these incredible recipes! I love to eat good food and have gained some weight since I moved overseas. Now I can make yummy new recipes just like back home while here in Okinawa. ;) This is my third time on WW and this time I plan to reach my goal weight! ;)

      ReplyDelete
    36. Gina I made these last night and loved them!! WOW......these were amazing! Thank you for the scrumptious recipe. I just ate 1/2 because 1/4 cup of my cheese was 3 points and I also did not have low calorie wheat tortilla. :( I calculated that 1 tortilla is 3 points....so that means that 2 tortillas are 6 points! Not including the cheese and chicken and other add ons! I am scared I have no clue how many points I really ate. I grilled teh chicken on Gerge Foreman and followed what you said on everything else. Is there any way I can figure out how many points I am eating? I was wondering what 1/4 cup WW cheese is worth and the low cal tortillas ( 2 of them) are worth so I can compare and deduct points from my 35 weekly.
      Either way......these were sooooo good!

    39. I am going to have these tomorrow during a girls movie night. I figure we will have a quesadilla bar were everyone is able to choose the toppings they want. I will stick with this recipe. Thanks for the idea.

    40. I used the waffle iron idea...worked perfectly. thank you Kathleen.
This meal was awesome. I have never made one of these before! I just had a pita pocket on hand and it worked real well. I also used a slice of pepper jack cheese. made it nice and spicy.
Gina you are really something. Can not thank you enough.
Just found your site today and I already made 3 things.
and I still have 3 points left for dessert. hehe

      Thank you!

    43. I'm trying these tonight! I'm guessing they will be husband-approved too. He doesn't mind so much when he can't SEE the veggies, so stashing them between two tortillas is a great option... Thanks!

    44. Really filling and the salsa was so flavorful! My picky picky husband even loved it.

    45. These were very good. We did a rough chop on the chicken so it would spread out a little more evenly, but followed everything else to the letter. Delicious and very filling.

      ReplyDelete
    46. I made these a few nights ago. I used regular mild Salsa instead of the mango and it was still delicious. The hubby and I split one and had the Zucchini Sticks on the side....delicious and brought the points value down. I am a Lifetime member but finding maintaining my goal weight really challenging. I love this site and pass the address on to everyone I know

    60. I have some of the chipotle peppers in adobo leftover from the zucchini enchiladas. If I were to add them to this recipe for a little kick, where would you add it? Thanks!

    69. Gina--

I'm notoriously bad at cooking chicken and never like the taste of chicken that I cook myself.

Is there any way I could use pre-cooked chicken? Like the Tyson grilled chicken strips that are in the store by the salad ingredients? Would it change point values?

      Thanks.

      ReplyDelete
    70. chicken is chicken! only use 12 oz cooked for the same points.

      ReplyDelete
    71. I got Mango Peach salsa (0 points) from Target's refridgerated section and added 1/2 a 100 calorie pack of Wholly Guacamole (1 point for half the packet, 3 points for the whole packet) to each quesadilla. Delicious! Thanks, Gina! I will likely just make this chicken and the vegetable mix when I'm craving fajitas...for very few points!

I have to say, I have loved the recipes I have tried from your site in the past week. I even impressed two of my foody friends sending them links, and usually I have to learn from them! My Mom and I are getting excited about Weight Watchers again after a few weeks of boredom, so thank you so much for making that possible!

      ReplyDelete
    72. I made these for the first time a couple weeks ago and again this week. They are wonderful. I love sauteed onions and red peppers, so I didn't miss the cheese so much (since I would tend to LOAD this with cheese on my own :-). I like that I can make them separately and give my husband more cheese for his, too. I love that it's a HUGE serving. It's good for nights when I'm really hungry. Thanks again for another fabulous addition to my dinner repertoire! I think it was pretty easy and fast, too. (I did use store-bought salsa to help with that.)

      ReplyDelete
    73. I'm so glad you liked them!! Yes, these are pretty filling and I too thought the onions and peppers give them so much flavor.

      ReplyDelete
    74. Love your site Gina! it is always my mid morning go to site while at work!

I'd love to make these and bring for lunch. Have you ever tried reheating in a microwave? Wondering if they'd just get soggy doing that.

      Happy Holidays!

      ReplyDelete
    78. Made these last night without the mango salsa. This is the second time I made them and they were better this time. I served them with reduced fat sour cream and salsa verde!!! Excellent meal. Thanks for all of your incredible healthy recipes.

      ReplyDelete
    79. Just made these and wasn't sure about the tortillas but gave it a try. It was quite good! I did squeeze a little fresh lime over the chicken, it was so good and filling. Thank you.

    81. Is it 10 points in the whole quesadilla or 10 points in 1 triangle?

      ReplyDelete
    82. Can you tell me if the recipe calls for large or small tortillas?

      Thank you

      ReplyDelete
    83. Like this recipe and looking tasty! You always share easy and delicious recipes. I would like to make this on my coming weekend. Thanks for sharing.

    84. Gina I am in Nassau County. I find La Tortilla but they are 3pp per tortilla (larger ones) at Stop n Shop. Where do you find the smaller ones? (I have always made your recipes with the larger ones anyway but if I could find the smaller that would be great!)

      Thank you!

      ReplyDelete
    85. I made these, except instead of using the skillet I cooked everything on the George Foreman, and I loved them! The salsa made it a little runny, so next time I'm using drained pica-de-gallo or however you spell that. My husband was impressed!

    88. I have commented once before, but I have to say it again. I am such a HUGE FAN of you and your blog. I basically cook from your website each week and then tell all my friends how wonderful it is. You have made it so much easier to get off these 15 lbs. I just lost on W.W. Thank you for NORMAL and AMAZING food that meets all of my cravings and all my point values! You are awesome my dear.

    89. I made these the other night and they were absolutely incredible! I used pico de gallo instead of the avocado-mango salsa and I made it following this recipe: http://allrecipes.com/recipe/pico-de-gallo-3/ Instead of lime juice I used vinegar, and instead of jalapeño I used cayenne pepper. I also added a bit of lemon-pepper seasoning to it. Also, I used red, orange, and yellow peppers in the quesadilla instead of just red and the whole thing came out amazing! My housemate tasted it and loved it as well. We both agree that it tastes like something straight out of Chili's!! Thank you, Gina for being so awesome! It's so rewarding to eat healthy, delicious meals. :)

    90. Omg I made these today. They tasted good, and I guess it's a good recipe, but oh. I am not a cook. I just wanna pour a bowl of cereal and be done with it. Spent over an hour cooking, cutting and cleaning. I really admire people who can do this stuff everyday. Me? I'll stick with my microwave cheese on toast sandwiches for now.

LOVE LOVE LOVE your site and i tell everyone i meet!

    96. This is definitely one of my favorite dishes to make from your recipes! I've been following your site for over a year now, and when I first made these chicken quesadillas, my husband said that he would love to eat these weekly! I've made them a number of times now, and last week when we had them, we ate most of the mango avocado salsa before the chicken was even done cooking! You just can't go without that salsa! THANK YOU for giving me and my family healthy options that taste WAYYYY better than take out or dinner from a box!!

      ReplyDelete
    97. Best quesadillas ever!! I made a couple of small changes to adjust our family's taste. I probably messed with the calories and points but nbd. The chicken was a little bland for our family so I added some ginger, a pinch of chipotle powder, and red chili powder. Also cut the chicken into small pieces before cooking it. I didn't have the ingredients on hand for the avocado mango salsa so I just substituted with Chichi's chunky salsa which still tasted good. Lastly, pulled out the quesadilla maker I've been meaning to use for a while. Came out perfect! On point!

      ReplyDelete
    98. Sounds so delicious. I am going to have make this minus the mango salsa. I love the taste of mangoes but found out the hard way that I am allergic to them.

      ReplyDelete
    99. This is sooooo yummy! Made with sabra salsa and white tortillas (not as healthy) because I'm not a huge fan of whole wheat tortillas. Let me tell you, these babies are muy delicioso!

      ReplyDelete
    100. How many points is it for the entire quesadilla. Is one entire quesadilla 4 servings? I guess I am a little confused/
