If you’re not concerned about cutting the carbs, it’s also just a delicious way to prepare cauliflower and makes a great side dish to accompany any roast or chop like Garlic Lover’s Roast Beef, Pork Chops with Dijon Sauce or Rosemary and Lemon Roasted Chicken.

This easy mashed cauliflower recipe is made with just 5 ingredients–cauliflower, garlic cloves, buttermilk and butter.  Will it taste like mashed potatoes? Pretty close! But of course, it’s cauliflower so keep that in mind. If you want more of a potato texture, you can do half mashed potatoes with half cauliflower similar to this Baked Potato Soup recipe.

How To Make Cauliflower Mash

If you can boil water, you can make this easy dish! Simply boil or steam the cauliflower in water or broth until it becomes tender. Then puree it with liquid in an immersion blender until it becomes smooth. This is the immersion blender (affil link) I use. If you don’t have an immersion blender, you can use your regular blender, just be careful not to over-process it and turn it into soup.

Tips and Variations

I like using buttermilk because it’s creamy, and low-fat. If you don’t have buttermilk, light sour cream also works great. Adding a touch butter gives it that creamy, mashed potato flavor. You can add herbs, cheese, bacon, etc like I did in this Loaded Cauliflower Mash Bake.

Ingredients

  • 1 medium head cauliflower, cut up into florets
  • 4 cloves crushed garlic
  • 1/3 cup 1% buttermilk
  • salt and pepper to taste
  • 1 tbsp salted butter, plus optional more for serving

Instructions

  • Steam or boil cauliflower and garlic until soft.
  • Drain the cauliflower, then add buttermilk, butter, salt, pepper and purée with an immersion blender. (If you don't own a hand blender, you should consider getting one. It is one of my most used gadgets in my kitchen, you'll wonder how you ever lived without it!) A regular blender would work fine as well.

    I love the cauliflower mash. I just add an extra step to it. I wring out the Cauliflower in a cheesecloth after cooking it. It absorbs the water so that its not so loose

  4. This is one of those great recipes that I have not made in a long time, and now have reminded myself how good it is. I used the pressure cooker 10 minutes and manuel release then drained the cauliflower florets, before adding to food processor. I used two laughing cow wedges like someone else mentioned and some light butter and kosher salt. Just wonderful, I really like better then mashed potatoes in many ways, as can really have a nice serving for less calories.

  5. I’ve been making this for a long time. It is delicious. I drain my cauliflower really good and use a potato masher, so it doesn’t get runny.

  6. I accidentally put in the garlic raw and it was still great 😂. I would recommend adding the milk as you blend to get the consistency you prefer. They were a little runnier than I expected.

    I USED SOUR CREAM AS I DIDN’T
    HAVE BUTTERMILK. THANKS GINA I SERVED AS A SIDE WITH THE MAPLE DIJON CHICKEN.

I’ve been making the same foods over and over and over for the kids and myself, so much that we are so sick of the same. My best friend told me about your website.     Do you include the garlic into the rest of the recipe or do you just steam with the cauliflower and then trash the garlic?

      I sauteed whole crushed garlic cloves on low heat with butter. It gives it more of a roasted garlic flavor so it’s more subtle and totally delicious.

  18. You don’t need 4 cloves of garlic! The garlic made my batch so bitter tasting that I had to throw the whole thing away. I wish I would of sautéed the garlic a little bit first to help with the taste or used garlic powder instead. 

    1. I think garlic is for people’s preferences. I actually added 5 garlic cloves and think it’s wonderful! But I get it – I can’t stand anything even slightly spicy and others love it. I love garlic (and apparently so does the cook who made this recipe), but it’s not your fav.

    I was alittle disappointed that it wasn’t smooth. Had I read the introduction instead of the Instructions I would have known to left the liquid. The instructions said to drain Cauliflower and that’s what I did. ☹️

    1. I drained my liquid. Mine came out very smooth and creamy. I added the butter and buttermilk to the blender. I did stir it it and keep turning my blender on until it was perfect. 

    2. I drained the liquid, definitely. I did add the butter and buttermilk and kept blending it (had immersion blender) until smooth. It took a little while. I think if you don’t have the immersion blender, you can blend it in the blender until it’s smoother. You could prob even do it the next day.

  22. Hey Gina, instead of buttermilk I add 2 laughing cow light wedges when I mash. Oh it is good and because I am a potato addict this has absolutely taken their place. You can find it on my table nearly every night. Easy and delicious and to me it IS mashed potatoes!!

  23. I make this every night for dinner. My go-to for potato substitute and absolutely delicious. Instead of butter or buttermilk, I simply add laughing Cow light and BOOM! Wonderful and simple and I am completely satisfied.

I keep coming back, and it really truly is every bit as satisfying to me as a bowl of mashed potatoes…it must be the buttermilk. And even better if you follow her ‘loaded’ recipe where you add bacon, butter and chives :-). A super lower fat, lower carb alternative side!

  29. This was delish!  I boiled the cauliflower in chicken broth/garlic and just used chive cream cheese and salt to season.  Never thought to use a hand blender on cauliflower.

  31. This is our go-to substitute for mashed potatoes. I cook mine in the microwave, an entire head of cauliflower at a time. Add 1/3 cup water, then microwave on high, covered for 12-15 minutes. We don’t do Keto, so to give it a REAL mashed potato flavor, I add 2/3 cup instant mashed potato flakes. I use about 1/2 cup cashew milk, butter flavor salt or butter buds. Use the immersion blender until smooth. This gives us 6 generous servings, 1 Freeestyle point per serving.

  44. This was so, so good!! Used whole milk and 1/2 tbsp real butter (all we had in house) and it was still 1 SP per serving. Honestly there’s no reason to have regular mashed potatoes – this was just as tasty and so much healthier. Also my toddler never likes vegetables and he had two servings. Will definitely make again.

  48. I don’t have an immersion blender so tried making this with a hand blender and it came out more like rice than mashed potatoes. It still tasted good, but I wanted a mashed potato consistency. Then I put it in my Nutribullet and wow!! They became the most creamy whipped cauliflower smash ever!

  49. Love at first bite! To me it tastes better than mashed potatoes. And so easy to make. I steamed the florets in the microwave & dumped all the ingredients into the food processor & whizzed it up. Tomorrow I’m making the Salisbury stead meatballs to have it with.

I made this tonight to go with your Salisbury Steak meatballs… Oh my goodness… I’ve made a cauliflower mash before but it was always kinda watery.  With the buttermilk and letting it simmer out some of the liquid I could honestly say I was having mashed potatoes… But I did the cooking so I know better.  The meatballs were amaze balls too… With some garden fresh green beans.. I’m stuffed and so low in points!… Thanks for all your great recipes.  When I don’t know what to make for dinner I check your site!

  53. Spoiler Alert!!
    Weight Watcher Smart Points count each cup of a puréed vegetable as one point per cup per my online conversation today with WW. I thought “Self, this is TOO good to be so low in points”. Sad, but true. Perhaps the serving size for 1 point was w/recipe but I didn’t find it.  Four cups of puréed cauliflower is 4 points. Total recipe is 7 or so points. 

    1. As per the WW website: If it’s something you’ll drink, like a juice or smoothie, the nutrition facts for zero SmartPoints value fresh fruits and vegetables count towards the total. If it’s something you’ll eat, like a salsa, sauce, stew, or soup, fresh fruits and most vegetables remain zero SmartPoints values in those recipes.

    That's pretty much impossible when you think about it, k916. 1 TBS whipped butter is 50 calories. 1 medium head cauliflower is 150 calories. 1/3 cup 1% buttermilk is 33 calories. Negligible in garlic.
    So that's less than 250 calories in the entire recipe which is what the Skinnytaste info comes out to.

  55. Gina, when I import this recipe into my fitness pal, it calculates the calories as 506 cal/serving for 4 servings. This is obviously a HUGE difference from the 60 cal you quote. And that's even with the butter changed to light butter. Any idea about why there is such a huge differenct???

    This is great! I pureed in a blender (no hand mixer…yet) and it was delicious. My boyfriend commented on how rich it tasted — I love recipes like these that make me feel like I'm beating the system by enjoying rich flavors without the fat! I served it under a lean brisket with lots of sauce, it soaked it up and was delicious.

    I was wondering about the new Weight Wathcher's Smart Points. In the cookbook etc there is no info on sugar and how much saturated fat so that makes it extremely difficult to convert to Smart Points. Any suggestions? I just got the cookbook (after giving several as gifts) and realized it doesn't work for the new program.

  60. I HATE CAULIFLOWER….Just had to start off with that. Tried a different version of this a long time ago and didn't like, so I thought I would try again. I used the light sour cream and my hand mixer. Took a few bites and couldn't get past the texture. Almost gagged. The key to this really is the "puree" part. I dumped half of what I made in my food processor and let her rip. Then added some jar chicken gravy too it and let it mix some more. End result, I could actually eat it! Turns out the jar gravy wasn't all that good, so it probably would have been much better with homemade. Thanks for the recipe. I might try it again. Will see how it tastes left over with some chicken to go with it tomorrow.

    I tried this under shrimp n' grits today as "the Grits" (instead of grits) It worked wonderfully!! Delicious, and I'm not the biggest fan of Cauliflower… Thank goodness I found an alternative to grits, I had no idea they had 160 per 1/4 Cup !!

  67. First time making this and I didn't have any buttermilk, so I used fat free sour cream and OMG this was absolutely amazing! My fiance says he never wants mashed potatoes again!   68. So I made this tonight to go along with a burger I made for dinner since I was craving some mashed and this looked like a great alternative. I love how it came out. I didn't have fresh cauliflower so I used the frozen 16oz bag. Also, I don't have a hand blender so I used my regular blender. The only issue I had was the # of servings. I only ended up with 3 at 3/4 cup each. Gina, any idea how much a head of cauliflower yields either in cups or oz? I'd love to make it again but if I use the frozen florets or even the fresh I want to make sure I have the right amount to get 4 servings. But I love how it came it and it tasted great and it was filling! A perfect compliment for my burger and it'll be a side along some chicken for lunch tomorrow.

  71. I was a bit leery about how this looked when I first used a hand mixer by mistake to 'blend', but once I realized my mistake & pureed it – it turned out great. I didn't have buttermilk (& didn't want to buy any since I rarely make things with it), so I used 2 oz FF cream cheese. It was the perfect consistency.

    My husband says it's BETTER THAN MASHED POTATOES. The taste IS different than potatoes – I doubt you could fool someone- but a very good flavor if you like cauliflower. I will be using this instead of mashed potatoes from now on.

  73. I make this all the time and it is delicious. Instead of milk, I add 2 oz of lowfat cream cheese. Makes the mash creamier. Also, when I feel too lazy to pull out the gadgets, I just use a potato masher in the pan I cooked the cauliflower in. If too much water remains in the pan, I turn the heat on low so the moisture evaporates as I mash.

    is there a way to make the consistency a little more mashed potato like? i know it's a "puree" but i just made it and it's so watery i'm wanting the real thing. i was hoping this would be a great alternative to starchy mp's – i'll see how the man handles it when he gets home. i'm not going to tell him it's cauliflower ha.

      1. I have read other recipes that say to let the cauliflower rest for ten minutes (covered) before you mash/blend/mix in order for it to reabsorb moisture (just as you let meat rest after cooking). Not sure if this is accurate, but it’s worth a try.

    Just made this with the low fat sour cream, and topped with a little cheese and a slice of crumbled turkey bacon for lunch. It took a bite or 2 to get used to it, but when I did, I cleaned the bowl! I admit I was a skeptic at first the whole cauliflower turned potato thing, but you just made me a believer!   83. oh my gosh this will be a new staple forever! I made real mashed potatoes the night before and my boyfriend said he liked these better. I also used low fat sour cream because i had no buttermilk on hand – can't get over how great this was!!! I mixed it in a magic bullet for people out there who have one, do it in batches though cause it is too hot to do all at once.

  85. Gina!! I have to post my surprise combination side dish I had tonight! OMG! I made the creamy cauliflower and was having the cream of zucchini soup too. I thought the two flavors were very compatible. Do I decided to try them like mashed potatoes and gravy. OMG! If it were a blind taste test I would swear it was mashed potatoes and chicken gravy! I hope someone else tries this! Close your eyes however or eat it in the dark! Green gravy!

  86. I just put this recipe into my recipe maker on Weight Watchers because I wanted to change it up a bit, but noticed the recipe was still only 1 points plus – even with 2% buttermilk!

  87. This is an amazing recipe. I found it very tasty and healthy. I'm lactose intolerant so I changed it up a bit- instead of using buttermilk I used coconut milk with apple cider vinegar. I found this tip online- for 1 cup of coconut/soy/rice/whatever milk you add 2-3 teaspoons of apple cider vinegar or lemon juice. Let sit for 10 minutes then add it to your recipe. Turned out great!

  93. These are the best! As a carboholic, I could eat mashed potatoes for every meal 7 days a week. This recipe gives me my mashed potato fix without the guilt (or increase on the scale). I almost never have buttermilk in my fridge, but use Fage 0% greek yogurt instead. It adds creaminess and tang and is still really healthy. Yummy!

  102. No, it sounds like your garlic didnt cook long enough. When cooked (boiled in this case) the garlic has a very mild flavor.

    @Vicki- the shrimp dish is a stew so you probably did nothing wrong! The addition of mushrooms and onions to the lasagna rolls sounds lovely!

    You can replace the buttermilk with light sour cream if you wish.

  107. oh this looks good!! I am loving your site.. I made the garlic coconut shrimp the other night..not sure what I did wrong- but it was like a soup– but it was heavenly!! so its a keeper!! and then I made the lasagna with spinich– WOW– no one would ever know it was diet food!! Next time I think the addition of mushrooms and onions might be fun to try as well!

    1. Vicki–I also made the garlic coconut shrimp and it turned out very soupy. Maybe simmer longer next time to reduce? Either way, the flavor was amazing, and my guests loved it!!

  109. I make this quite often as a yummy side to have with casseroles or with anything saucy.

    It's also delish with lite cream cheese and chopped chives in lieu of the buttermilk and garlic!
