These are the BEST juicy turkey burgers! They come out so juicy, and the flavor is delicious. I started experimenting with adding zucchini to my turkey burgers back in 2010 and never looked back. They are healthy, easy and and perfect for quick dinners any night of the week. Serve them with some air fryer sweet potato fries to make it a meal. You can also try these Greek Feta Turkey Burgers.

Adding zucchini also lowers the calories per serving because you get five patties out of 1 pound of ground turkey them instead of four. Serve them with your favorite burger toppings, on a whole wheat bun or skip the bun and serve them on lettuce to keep the carbs low. These can be grilled or cooked indoors. If you want to make them on the grill, it’s best to make the patties ahead (overnight is best) and keep them refrigerated so they hold their shape. You can also freeze them and thaw them right on the grill.

How To Make the Best Turkey Burgers

  • Use a box grater to grate the zucchini, onion and garlic super fine. A mini chopper would also work.
  • Get the pan hot before you put the burgers on to get a nice sear, then lowered the flame to the lowest setting to let the burgers cook all the way through, turning a few times so the burgers don’t burn.
  • Squeeze ALL the moisture from the zucchini with paper towels. In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, salt and pepper. Make 5 equal patties, 4 1/2 ounces each, not too thick so they cook in the center.

To Cook Turkey Burgers on a Skillet:

Heat a large nonstick skillet on high heat. When hot, lightly spray oil. Add burgers to the pan and reduce the heat to low. Cook on one side until browned, then flip. Flip over a few times to prevent burning and to make sure the burgers are cooked all the way through.

Air Fryer Turkey Burgers:

Cook in a single layer in two batches 370F for 10 minutes, turning half way until browned and cooked through in the center.

For Grilled Turkey Burgers:

Clean grill well before cooking and spray with oil spray to prevent sticking. Cook the burgers on medium heat about 5 minutes on each side, or until no longer pink in the center.

Ingredients

  • 6 oz grated zucchini, when squeezed 4.25 oz
  • 1 lb 93% lean ground turkey
  • 1/4 cup seasoned whole wheat or gluten-free breadcrumbs
  • 1 clove garlic, grated
  • 1 tbsp grated red onion
  • 1 tsp kosher salt and fresh pepper
  • oil spray

Instructions

  • Squeeze ALL the moisture from the zucchini with paper towels. In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, salt and pepper. Make 5 equal patties, 4 ounces each, not too thick so they cook in the center.

  • Preheat the air fryer to 370F.

  1. WOW – by far the best tasting and juciest turkey burger I have even eaten. There is no going back from this recipe. Using ingredients on hand, I used a shallot to 3 lbs turkey in lieu of red onion, added a cup of pureed porto bello mushrooms, crushed saltines in lieu of bread crumbs, added 3 eggs as binder. Rest of recipe as above. AMAZING !! Thank you Gina !!

  5. These are so very good! So good, I tripled the recipe so that I could grill & freeze the rest to pull out for lunch/dinner when I don’t have time to cook. No bun with a couple slices of fresh avocado on top is perfect, & I like that there’s not enough breadcrumbs to make much of a difference if you’re watching carbs.

  7. I was a little sceptical just because I’m not a fan of Ground turkey but now I’m just echoing everyone else. These were very moist, tasty, stayed together well and I will definitely make them again. Delicious! Following another reviewers advice, I put them in the freezer for 30 min before cooking. I cooked them in the aeroblaze 450 for 10 min. I think next time I’ll BBQ them.

    Made a batch of these a little while back and wrapped individually and froze because I often work late and then on my days off I’ve been so busy I haven’t always had the time to do a lot of meal prep.

    I grate the zucchini onion and garlic in the food processor because it’s easier and quicker imo and I can be incredibly lazy when I am trying to prep things in larger quantities

  13. This burger is great and such a healthy alternative to beef. My husband is thrilled with these. I do freeze them for about 30 minutes or so before we grill them and spray both the burger and the copper grill mat with olive oil before cooking. The burgers stay together, no crumbling or melting through the garstes.

This is the second time making these burgers, first time with 93% ground turkey, second time chicken breast was on sale so I made my own ground chicken and followed the recipe exactly and they were not dry at all, I made multiple’s and froze them individual and have them in the freezer whenever I want them, so delicious.

These are delicious, I also added some onion and garlic powder, and a sprinkle of Tony Chacere’s seasoning salt, I still go to Weight Watchers for Weigh In accountability but count calories now and have not eaten 93% meat in years because many foods are so high pointed on WW, it felt good to have a burger that’s not 99% dry meat to save points, thanks for all you do Gina for creating these delicious recipes once again.

    Rating this 5 stars for technique.
    I am one to tweak recipes because I like LOTS of flavor as I am married to a chef, but always need a starting point. Chef I am not.

    Here is what I did for the people who like this recipe but might want to change it up.

    I added Panko instead of breadcrumbs
    1.5 Tbls of grated ginger and red pepper flakes. Served with chopped cilantro, basil and mint over lettuce with slices of avocado. Delicious.

  22. Delicious TURKEY burger. It doesn’t taste like a regular burger so you won’t trick anyone into thinking it is. But if you have a family who will eat turkey burgers (I don’t so I have 4 more burgers for myself!) this is for you! As someone else also mentioned I could totally see these being meatballs and served with marinara sauce. They definitely have an Italian taste with the breadcrumbs. I may actually try that with some of my leftover formed raw burgers. Just to mix it up.

  25. Really great and light!  We doubled the garlic and onion.  Added a finely mined jalapeno.  Soaked our breadcrumb in a little milk.  And used Tony Chacheeries for 1/2 the seasoning salt.  Cooked on the grill. Juicy, tender and flavorful!  Will make again!

Our family LOVES these turkey burgers and can’t get enough of them!  My son got creative with his toppings, and we all think this is seriously the best burger around: top it with an egg with a soft yolk (which I normally wouldn’t even eat, but it’s awesome on this), a slice of cheese, avocado and cholula.  Absolute perfection!

    I will make these again. This first time I made them I used 99%FF turkey. Aside from the fact that they were a little dry, the flavor is terrific. I put the zucchini, garlic & onion in a mini chopper to make it easier for me. We had side salad to go with it.

  29. These turkey burgers are one of our favorites. Turkey on its own tends to be dry. The zucchini adds the moisture needed. I typically add some diced jalapeno and crushed red pepper flakes because we like spicy foods. I also add extra zucchini. I cook the burgers in an electric frying pan because they end up cooking in their own juice. We tried using the grill once, but prefer the electric frying pan over the grill. This recipe is an easy way to get your kids to eat zucchini.

    My food scale is broken . Do you have any idea how much zucchini that is instead of oz ? Is it a cup grated or 3/4 c or what ? Would love an answer .o put in 1 cup after it was squeezed but looks like maybe too much .

  31. So many good burger recipes you have I have not done this what I call the original classic in awhile. It is so good and we even did on the grill which I usually don’t do. I add additional herbs to it–a spice called Bavarian Seasoning, which as a combo of baarian stlye mustard rosemary garlic thyme bay and sage. ( made by Penzeys) Other then that follow just as is.   40. This is a star recipe, representative of how good healthy cooking can be. Every time I make them, I think I could live on these. This time just did in skillet. Only addition was some spices ( Penzey Bavarian seasoning) sprinkled on the outside before browning in skillet. A favorite every time.

      1. There’s 8oz of liquid in a cup, it’s different for solids. You’d need to use a kitchen scale

  44. Gina, you create some awesome recipes and this one does not disappoint. I’ve made these several times and everyone loves them.  They are so juicy. I just made a double batch for company and typically serve them with grilled veggies and a salad.  In the beginning I made the burgers following the recipe exactly. Lately I’ve been adding a chopped jalapeño, extra crushed garlic and some crushed red pepper. We like things spicy!  I love that these are very healthy. This has become a regular meal rotation for us.

These are incredible!  I was leery about the cumin but I made them as written and, honestly, wouldn’t change a thing.  I grilled them on my ninja foodi and it took about 12 minutes on medium. They were juicy and delicious and the texture is just like a hamburger.  I will be eating these instead of beef on hamburger night from now on. BTW, I also get 4 points on WW green when I put this in the recipe calculator.  I used regular bread crumbs so that may be the difference.  Thank you for another keeper!!

    So simple, so quick, so healthy, and so delicious. I didn’t have any seasoned breadcrumbs so I used plain breadcrumbs with ~1 tsp of Italian seasoning. I was surprised by how moist the burgers were. Can’t wait to make them again!

  52. Parsley, Sage, Rosemary, Thyme, Garlic, Green onions, olive oil. Daughter suggested maybe adding feta and cranberries. I cooked them on the grill. Did not use breading of any kind and they held together great.
    . Beware, For those of you tempted to use Panko, the second ingredient is SUGAR

This was really delicious, I had to use up left over zucchini and it really stretched our burgers further.  I ended up omitting the bread crumbs and they still turned out perfectly!  I like eating my burgers with spinach, fig butter, and some laughing cow cheese- this patty was so juicy and filled me up, will definitely rotate this into my recipe arsenal.

  58. Made these for the first time tonight and cooked them on my George Foreman grill. Delicious ! Way better then I expected since turkey dries out easily, the zucchini, solved that issue. I used frozen zucchini and thawed it over the day and cut it up into small pieces. Only change I made was to skip the salt and add a teaspoon of Maggi,

I just want to tell you how wonderful I have found this recipe.  My wife and I are on a balanced/protein based program to lose fat and gain muscle.  I have been making these for about 4 months now, starting out with cooking them on the stovetop and now I’ve migrated to baking the batch all at once on a silpat in the oven.  We have lost about 60 pounds between the two of us and discovering this recipe from you is a major component of our efforts.  My wife, especially, was not a ground turkey fan, but I have won her over.  A batch hardly makes it through the week.  Thanks again, great work!!!!!

    These tasted nice but weren’t juicy at all. Not sure what I did wrong. Did I squeeze the zucchini too much? Or maybe I had them in the air fryer too long? I was trusting my meat thermometer. I will try again. The family enjoyed them.

  65. Made this for lunch and absolutely delicious. Grilled. Served on bun with lettuce leaves, sliced tomato and a dill,prickle slice. Moist and flavorful. Froze extra patties. Hubby cannot eat red meat due to dietary restrictions and this is a great “hamburger” option.

  66. So easy and so good! Did these in my new air fryer and they were to die for- mine did cook a bit quicker than 10 minutes so make sure you check the internal temp while they are going! I’ve found my fryer cooks quicker than a couple recipes. I froze the extra patties for later 🙂

Such a delicious recipe! the burger patties turn out flavorful, juicy, and delicious Here was my twist for serving the burger: I made it into a “pizza burger” and it likely may not comply with WW and calorie watching but just thought I’ll share. I had pretzel buns at home so I lightly crisped the buns on a pan with olive oil spread, then placed a drizzle of warmed marinara sauce on the bun, a slice of pepper jack cheese on the warm bun and warm sauce to start melting, then placed the burger patty on the sauce/cheese. Added a little more marinara on top of the patty and the top bun for my husband/lettuce on top for my burger.

  70. Why when I build all your recipes in my WW app the points are always off I did this one to a T and they come out as 1 point ? I do love this burger it’s fantastic the only difference is I used ground chicken cutlet

    This really is a great recipe. I tweaked it a bit by adding grated carrots, substituted cooked quinoa for the bread crumbs, and added a dash of Everything But the Bagel seasoning from Trader Joe’s. I also used 99% lean ground turkey and cooked them burgers on a grill pan. I made protein burgers by wrapping them up in crisp iceberg lettuce–they were delicious! I served them with air fried sweet potato fries.

  74. Yummy turkey burgers! I like to use all white meat ground turkey but can end up with a dry burger. With the addition of the zucchini that was not a problem. I enjoy lemon pepper and celery seed in my mixture so went ahead and added them along with the other ingredients. My hubby grilled the burgers for me and enjoyed them with a grilled corn salad.     Great recipe, i used plain panko breadcrumbs, fresh parsley ,basill & dill.. made 4 burgers with 1 lb of meat. Topped with gorgonzola, served on a toasted english muffin.

  84. I made some changes… my turkey came in 1.33 lb packages, I didn’t increase the zucchini but added some leftover shredded carrot I needed to use up. I used plain panko bread crumbs and added some other burger grilling-type seasonings because that’s what I had. And I left out the grated onion. I added a few dashes of Worcestershire sauce and 2 eggs. With my additions, it was a bit too wet so I added some old fashioned oats until it looked right. I should have used them instead of the panko to begin with, but I forgot. It made (7) 4.5oz burgers with a bit leftover. I pan seared the little one and it was great, very moist! The others are chillin’ in the fridge until tomorrow night. 🙂

  87. I’ve been making these intermittently for a number of years and they’re always great. Our family is mostly vegetarian and my husband is vegan (all on preference rather than principle) but I regularly make these to bring a meal to friends and about once or twice a year make a batch for our family. I make 12 slider style mini burgers and pack them in my kids’ lunches. They love them! So many of my favorite freezer recipes come from you, such as black bean butternut squash enchiladas and mushroom shepherds pie. Just wanted to pop in and say thanks!!!

  88. These look delicious! Another way to keep lean turkey (I use 99% lean) moist is to mince 2 or 3 mushrooms and some onion to mix in with the turkey. I don’t add egg or breadcrumbs. They are deliciously moist every time and only zero freestyle Points! If they are chilled when you put them on the grill, they don’t fall apart at all.

    I am making these on repeat!! The only changes I made was to saute the red onion in a bit of of olive oil for added flavor and I throw in a few splashes of Worcestershire sauce. 

  91. Everyone who I make these for love them. They are so juicy and tasty.  We put a little fresh avocado on top and then melt a thin slice of provolone cheese (they don’t need the bun).  Easy, quick and delicious!

    Why are these 3 free style points? The only thing that isn’t a zero point is the bread crumbs and that works out to less than 1Tablespoon of crumbs per burger and 1/4 cup is only three points. Great recipe!

  94. I added a bit of coriander and cumin and omitted the breadcrumbs by accident. I am also GF and I did not miss the breadcrumbs at all. The 2nd time, I added turkey bacon on top! OMG! Mind blown! I cannot believe the taste. Seriously…I just may not ever make a beef burger again. It’s just that good! Nom, nom, nom. My husband is not a huge turkey burger fan and LOVED these! WhoopWhoop!

    Delicious!  I actually made mine with venison  and on the grill and came out perfect.  My son the picky eater (he’s 7). Enjoyed the burger gave it a thumbs up.  It’s so hard to get my kids to eat veggies, this was perfect.

  106. Why are these so good? Separately you wouldn’t think the ingredients would be magical, but somehow put together, they are delicious. I had to make some slight adjustments because I was out of bread crumbs, so I crumbled some saltines in and also added some rolled oats. Also, I wanted to save some of my zucchini for another recipe, so here I used half zucchini and half grated carrot. I also added an egg because I was worried it wouldn’t stick together, but I’m not sure if that was necessary. I don’t think these changes made the flavor much different from the original, however, and it is GOOD. I never thought I’d like a turkey burger better than a beef burger, but this is steep competition.

  129. I tried these for the first time last night and all I can say is WOW! I am completely impressed and pleasantly surprised all at the same time. I was skeptical about putting zucchini in my burger. My husband was even more skeptical. He tolerates zucchini but is not a fan by any stretch. So when he saw me putting grated zucchini into the burger patties he got a little concerned about his dinner. His concerns (and my skepticism) were quieted when we took that first bite. It was moist and delicious and you honestly cannot taste the zucchini at all. These will definitely be making it into the regular rotation in our house!     Help!  Can we have approximate zucchini amounts in cups as well as by weight?  I don’t have room for a scale in my kitchen and I cook by the volume not weight.  5 oz  zucchini, squeezed dry is approximately how much in cups?   Thanks!!

      I have similar Q about the quantity of zucchini. I’ve never grated zucchini before. I plan to start with just 1 average-sized zucchini (since that’s what’s in my fridge) and hope it will produce about 5 oz of grated zucchini.

      Due to dietary restrictions in our household, the zucchini will be peeled and seeds removed, so 1 zucchini may come up short especially after squeezing the moisture out. However, I don’t think too little zucchini will make the recipe unworkable, maybe just less tasty. Any input from those with experience grating and measuring zucchini would be much appreciated. 🙂

      1. it’s less than one. A small to medium zucchini is about 7 oz so that may work taking out the seeds.

  146. I made these as mini turkey meatballs today. Cooked them at 350° for 25 minutes on a lined baking sheet and then dropped them into a big pot of minestrone soup and let them simmer along with the soup a few minutes before serving. All 5 of us loved it!

    I have the same question about leaving out the breadcrumbs. I'm grain-free so oatmeal is a no go as well. Would an egg or two make up for the breadcrumbs? I have a Greek meatball recipe that leaves out the breadcrumbs and subs in 2 eggs and they turn out great. Would that still work with having the zucchini in there? Thanks!

  169. These burgers are amazing! I like using turkey as a substitute, but it has a tendency to become dry. Adding the zucchini kept it SUPER moist. Love, love, love this recipe! It's definitely a keeper!

  170. Made these tonight. Didn't have red onion so I used dried shallots. I added some worcestershire sauce too. Turns out dried shallots are really strong and I think it overpowered the turkey. Will definitely follow the recipe as written next time.

    These were excellent! I added some garlic salt and omitted the red onions. I was concerned that these wouldn't bond without an egg, but that was not the case. "Grilled" them on the griddle and the "charring" only added to the amazing flavor. My 3 year old loved them.

    I have been meaning to review this recipe for a while now. These turkey burgers are just amazing!!! I used the italian seasoned ground turkey which gave it a little kick. I also used ground oats instead of breadcrumbs and added some flax seed meal. They came out so moist and flavorful, something you would not expect from a turkey burger. I served these on homemade sesame seed buns with lettuce, tomato and mayo and they were perfect :)I did not read all of the other comments so forgive me if someone else already suggested this but this recipe would make amazing meatballs, can't wait to try it out.   183. Delicious! Upped the garlic to 2 cloves and added a bit more than the 1 tbsp. red onion, and the flavor was fantastic. After forming the patties I thought the consistency might not hold well, but as soon as they hit the skillet the patties firmed up. (I did ring the grated zucchini in a dish towel to remove excess liquid before mixing ingredients.) I'll make these again!

I modified it slightly by using panko breadcrumbs, shallot instead of red onion, and a dash of worchestershire. These blew my mind, as well as those of my husband and sister. I modified it quite a bit but definitely give you the credit for the zucchini idea! I eat gluten free, so I omitted the breadcrumbs…instead, I added a bit of the following: egg white for keeping it together, dash of Worcestershire sauce, sauteed chopped onion, little light mayo and dijon mustard, salt/pepper, and the minced garlic. These were so moist and delicious and most importantly they didn't fall apart while cooking which most turkey burger recipes seem to do.   233. I made these tonight and they were very good. I put the veggies in the food processor to save time. I only made a few changes. Instead of breadcrumbs I used oatmeal. I used regular yellow onion. I only had 1 lb of meat so I used that but still had 2 big burgers. I think they turned out very good. Next time I will try them on the grill.

Family ate them up, including the young-adult college son & nephew, who are very picky when it comes to grilled hamburgers (or in this case, turkey burgers)

  248. Just made these for my housemate and I, they were delicious. Made my own breadcrumbs by drying out some multigrain burger buns for a few days and then put them through the food processor with wheat germ and flax seed. This recipe is definitely a keeper- very easy and yummy!

    Isn't it amazing what the zucchini does to these burgers! I don't understand people that don't like zucchini but at least there are plenty of ways to sneak it into their food. Zucchini bread is another great way!

  255. I made this recipe last night for my boyfriend. I expected them to be a good substitute for the cheeseburger I'd been craving lately but I did not expect it to be BETTER! My boyfriend was OBSESSED! We both are having them for lunch today as well seeing as we have left overs. I put about 1/4 c of onions in because i love onions and i seasoned the patties with burger seasoning once they were on the grill. They were moist and juicy and AMAZING. It just makes me happy to know that i don't have to feel like i'm missing out on things like cheese burgers. I had them today for lunch with BBQ pop chips and the total points value was 4.5 points.     I wouldn't leave them out, I don't think they would hold well but oatmeal would work just as good. You can easily make your own, toast the whole wheat bread slightly or leave it out until it gets hard, then put in the food processor with dried parsley flakes, romano cheese, salt, garlic powder and onion powder.

  260. Has anyone ever left out the bread crumbs? I have not had any luck finding whole wheat bread crumbs. i tried them tonight and used some panko. they were fabulous but i was wondering if i could just leave out the bread crumbs altogether? If i must have them then I was wondering if the oats tasted good? Is it just quick oats or instant oatmeal? I loved this recipe and many other recipes of yours.
    Also has anyone ever made their own ww bread crumbs?

  263. Absolutely loved the recipe "as is" but I've ramped them up a notch for what I think is only 1 additional point. Local farmers' market has ground lamb, which I mixed 1:1 with the turkey, added 1/8 c more bread crumbs, and then stuffed with caramelized onions. Got 9 hefty burgers done on the gas grill. Served on 1 point buns with lots of lettuce and tomato – huge and filling!

  264. I love this recipe, Gina. First off, my veggie phobic 7-year old son, who won't touch anything green, gobbled these down like he couldn't get enough. When I asked if he liked his burger, he said, "Niiiiice, Mom." Put that sucker on a whole wheat bun with mustard and ketchup and the kids won't know the difference!!! And, for me, it was awesome to be able to have a bigger burger!! I also used this recipe to make meatballs and sauce, and again, he family was none the wiser. These are terrific on the grill with a side of your corn salsa with lime and/or your mango-avocado salsa. I'm just lovin' your recipes, Gina. I check in every day now! Keep up the great work!

    @Sarah- yes, adding too much zucchini can make them brittle. You could add an egg white, or I would add a little more bread crumbs if you have this problem.

  267. Made these a few minutes ago and they were great! I made the sweet potato fries from the website too. Great healthy version of a burger and fries. My super picky boyfriend liked them as well which is a HUGE compliment! His only comment was that they seemed a little fragile, could this be because I used a medium zucchini instead of a small one? Could throwing an egg as an emulsifier solve the problem? Im new to cooking so Im skeptical of straying too far away from the recipe.

    @kermit- I'm so glad the little one liked them!! I'll tell you, my dad is Czech and makes amazing Czech burgers with cabbage in them. Probably the best burgers in the world but who would think? That's where my inspiration came from. I seriously think you can sneak any vegetable into a burger and it would taste good. I'll have to post dad's recipe one day!

Halfway through his second, he said…"what is this green stuff?" I said, "zucchini, it makes the burgers moist" and he went on to finish the second and have a third.
