This pink-hued red beet salad made with cilantro and carrots is delicious and a great alternative to potato salad!
Red Beet Salad
Red beets, cilantro, carrots, onion and mayonnaise, a perfect side dish at your next BBQ that goes great with chicken, fish or steak. If you haven’t tried beets yet, I promise you this is delicious. This was the recipe that got me to love beets. Similar to a potato salad without all the points. Hubby liked it too to his surprise, even had seconds!
A friend of mine makes a similar salad to this only she adds chopped hot dogs. Sounds strange, I know but it’s actually really good!

Ingredients
- 2 large beets, washed and stems cut off
- 1 cup carrots, peeled and cooked
- 1 tbsp cilantro, chopped
- 1 tbsp diced onion
- 2 tbsp light mayonnaise
- salt and pepper
Instructions
- Boil beets in water until soft, about 50 minutes.
- Peel and cut into small 1/2" cubes.
- Cook carrots until tender and cut into bite size cubes.
- Combine diced onion, carrots, beets, mayonnaise, cilantro, salt and pepper.
