I make these low-carb Zucchini Pizza Bites all the time for lunch or snack. Even my husband thinks they are pretty darn good! They are also gluten-free and perfect for meatless Mondays. If you haven’t tried these yet, they are a must while zucchini is in season! Some other fun pizza recipes are my Pepperoni Pizza Bites and Pizza Sausage Rolls with my Greek yogurt bagel dough. This recipe is an oldie, but goodie! I had a big zucchini that needed using up and I was sooo in the mood for these yummy (and guiltless) zucchini pizza bites!

Are giant zucchinis good to eat?

Yes, giant zucchinis are good to eat. They can be bitter, so I recommend eating them cooked and not raw. This zucchini bites recipe is a perfect way to use them up!

How to Use Giant Zucchini

There are so many ways to use giant zucchinis. Make zucchini tots, fritters, soup, or zoodles. Grill them or stuff them. You can even grate oversized zucchinis and add them to baked goods, like Banana Zucchini Cake, Chocolate Zucchini Bread, or Pineapple Zucchini Cupcakes.

Low Carb Pizza Bites, Just three Ingredients:

These pizza bites couldn’t be simpler. There are only three main ingredients, plus olive oil, salt, and pepper.

  • Oversized zucchini
  • Marinara (jarred or homemade sauce)
  • Shredded mozzarella

How to Make Zucchini Pizza Bites

  1. Prep: Cut the zucchini into ¼-inch thick slices. My zucchini was very large, so if yours is smaller, cut it at an angle to get big ovals.
  2. Season: Spray both sides of the zucchini rounds with olive oil and season with salt and pepper.
  3. Cook: Broil or grill the zucchini for about two minutes on each side.
  4. Top: Spoon marinara and mozzarella over the slices and broil for another minute. They can burn quickly, so keep an eye on them.

Variations

  • Zucchini Subs: Swap oversized zucchini with yellow squash or eggplant.
  • Sauce: Use pesto instead of marinara.
  • Meat: Add Italian sausage or pepperoni to these pizza bites.
  • Veggies: Add chopped bell peppers, mushrooms, or onions.
  • Herbs: Top with fresh or dried basil, oregano, or thyme.
  • Spice: Sprinkle the pizza bites with crushed red pepper.

Ingredients

  • 4 slices large zucchini 1/4" thick, or 1 medium zucchini cut on diagonal
  • olive oil spray,
  • salt and pepper
  • 2 tbsp quick marinara sauce
  • 1/4 cup shredded part skim mozzarella

Instructions

  • Cut zucchini about 1/4 inch thick.
  • Spray both side lightly with oil and season with salt and pepper.
  • Broil or grill the zucchini for about 2 minute on each side.
  • Top with sauce and cheese and broil for an additional minute or two. (Careful not to burn cheese)

  1. loved it and went for seconds. Added mushroom, tomato and bell pepper powder, pepperoni slices and herbs. I will make this several more times!

  2. Looking forward to making these. I can’t use my broiler in my apartment. Has anyone tried them another way?

    1. I cut slices, spray with olive oil, etc. and saute on each side for a minute. Not till mushy!! Then top with sauce, a little, and a good spoonful of cheese on top of each slice. Put a lid on and leave the heat on till the cheese melts.

    They are so good. I’ve been looking for a couple of healthy snacks and I think this may be one of my favorites. Super easy to make and if you don’t feel like cooking it just pop them in the microwave or eat it like a lunchables.

    I plugged this recipe into my WW calculator and it says that one serving is 4pts not 2pts With that being said, I thought this was a very good and light dinner for me to have since it checked off all my boxes. I have always enjoyed Skinny Taste recipes. I just wish your point system was accurate.

  7. These are delicious! First I made them with the marinara and cheese and loved them and then made a second batch with turkey pepperoni slices under the sauce. I thought these were yummy without the pepperoni and with the pepperoni they were out-of-this-world delicious. I made them in my air fryer. So so yummy! I will make them again and again. I know this recipe has been up for a while, but I just came across it.   My question is, do you think this would work with yellow squash?  My mom has a bunch of them in her garden, so I have been getting a lot of them too. My experience with squash vs zucchini is that squash is a lot soggier when cooked, so I don’t know if they would work for this.

  13. I've been meaning to try these for months and just made them today. So, so good! The family had pizza last night (I had fish!) and that pizza box was taunting me in the fridge….until I remembered that zucchini I just bought yesterday. 🙂 This more than satisfied my pizza craving, and with a side salad I'm still feeling full 6 hours later. Making a trip to the store after work to pick up some more zuchs!

  18. I've done this before, but in the oven. When you put them in the broiler do they produce less liquid? Mine always turn out a watery mess (but still delicious).

    1. same happened to me and I can't figure out why. I sautéed the squash in a cast iron pan and then finished in the oven. I don't have a broiler so I bumped up the temperature to 500F.

      they were great tasting but they were definitely swimming in zucchini water.

  19. I know this recipe is ages old, but I just HAVE to comment. The other night, my family ordered pizza for dinner. My plan was to eat 1 slice of pizza and then fill up on these bites. The bites were SO incredibly delicious and filling that I was able to pass on the regular pizza. I have never passed on regular pizza in my entire life.   38. I made these for a snack today and the turkey meatballs for dinner. Both were wonderful and the kids loved them. I did use eggplant since the grocery store just had tiny zucchini. I cooked it a little longer

  40. I tried making these a couple of nights ago. I had gotten the recipe from another site. That site said to cook for 7 minutes on each side (I used a broiler). Everything else was the same as your recipe. They smelled delish and looked delish, but the texture wasn't delish 🙁 . The skin was too rubbery and hard to bite through. Did I do something wrong? Was 7 minutes too long on each side?

    I am SO glad I found this site! It's so hard to cook on weight watchers without recipes. It's a pain in the butt to do the math for recipes I already have just to figure out which would be do-able and to figure out servings? Old family recipes have nothing about servings! haha

    Either way I just made these for lunch and I love them! They took a little getting used to, but definitely curbed my craving for pizza and I plan on doing them again. Thank you :-). My Zucchinis were small to the other ingrediants yielded around 8 slices!

  54. I made these last night when a friend brought over a mutant zucchini!!! The first round was a little crunchy but very good still, the second round got a little overcooked (oops I forgot them in the broiler) and tasted even better!!!! Vive la zucchini!!!!
