Shrimp Salad on Cucumber Slices

Classic shrimp salad is so easy to make and ideal for when it’s hot outside. If you buy cooked shrimp, you don’t have to heat up your kitchen; plus, it saves time. Topping cucumber slices with shrimp salad is a simple low-carb appetizer that is sure to impress. This salad also makes for a yummy snack or lunch if served on bread or over mixed greens. I always keep Greek yogurt on hand to lighten up recipes that require mayonnaise. I combined the mayo with the Greek yogurt to reduce the fat and calories. The results were creamy and delicious!

How to Serve Shrimp Salad

Shrimp salad served on cucumber rounds makes the best appetizer, but it would also work on endive slices or crackers. If you’d like to make more of a meal out of this shrimp salad, serve it over lettuce with some cucumber, tomatoes, and avocado for extra veggies. It would also be great as a sandwich on some whole-grain bread.

Can I make this shrimp salad in advance?

You could make this shrimp salad a day ahead of your event. It’s really best to eat seafood right away for freshness, but the shrimp will keep for up to three days in the refrigerator.

Shrimp Salad Variations & Tips:

  • Add fresh dill to the shrimp salad.
  • If you don’t have adobo seasoning or seasoning salt, use Old Bay seasoning or a mix of garlic powder, onion powder, and salt.
  • This recipe yields about 1 pound of salad without the cucumbers.
  • Buy fresh or frozen cooked shrimp to save time.

Ingredients

  • 3/4 lb cooked shrimp, peeled (weight after peeled)
  • 2 celery stalks, chopped
  • 1 tbsp red onion, chopped
  • 2 tbsp light mayonnaise, I used Hellmann's, check label for Keto
  • 1 tbsp fat free Greek yogurt, full fat for Keto
  • Seasoning salt or adobo seasoning
  • salt and fresh ground pepper
  • 30 thin slices cucumber, about 1 large
  • chopped chives for garnish

Instructions

  • Combine shrimp, celery, onion, mayonnaise, yogurt, and season to taste with seasoning salt or adobo and pepper.
  • Arrange cucumbers on a platter, season with salt and top each slice with a heaping tablespoon of shrimp salad.
  • Top with chopped chives for garnish.

    I, too, used this as inspiration. I didn’t know this was a “light” blog website and that I shouldn’t adapt any recipe that I found on this site to one I would and my family would be willing to eat. I don’t do “light” or “fat-free”. I changed it to regular mayonnaise. I do use Hellmanns. I never use yogurt so I substituted sour cream [not low-fat] for the yogurt. They came out great.

  3. Made this for lunch today to use up some leftover shrimp cocktail from Costco and it was awesome. I served it over mixed greens and put the cucumber slices and a sliced hard boiled eggs, tomatoes around th edge of the plate and put the shrimp salad in the middle. Finished it off with some fresh dill and chives sprinkled on top. It looked really pretty and colorful 🙂 Thanks Gina!

  5. So i used your recipe as inspiration for my leftover shrimp. I bought 3 lbs because it was on sale, all 5 kids loved it, as did the adults.. however, it still was too much to eat at one sitting especially with the tip sirloins…soo. i took the 1 – 1 1/2 lbs of leftover precooked large shrimp and did the following (not as lean of a recipe as yours, but nonetheless useful and super tasty with what i had on hand):

    1-1 1/2 lb. Precooked jumbo shrimp, diced. (Obviously, peeled, cleaned, deveined and PRE-COOKED)
    1 Small celery bunch – with leaves – chopped (bite size / small) – (the leaves give so much more flavor – use them as often as possible)!
    1/2 white onion (chopped)
    1/2 fresh large / heirloom size (or sreak size) tomato
    1/2 – 1 cup light mayonnaise
    1/4 – 1/2 cup horseradish sauce
    1/4 cup fat free sour cream
    1 – 1 1/2 tbsp. Dried dill
    1 Handful of chopped cilantro
    Fresh ground salt & pepper to taste… and serve however you like.

    **squeezed fresh lemon over the top and put on a bed of lettuce is how i liked it

  9. How do you keep the shrimp mixture from falling off the cucumber slices? Would it be better to cut the slices thicker and hollow out slightly before “filling?”

  13. Ok, this is one of two recipes that I am going to try for xmas eve. I have the shrimp salad already made and in the fridge so, all I have to do is cut up the cucumbers and put the shrimp salad on them. I am also going to put the cucumbers on pumpernickel cocktail bread, instead. The other is the buffalo chicken dip. So, here's to seeing what happens.

  19. Thanks Gina! I made this last night for lunches today and couldn't find Goya Adobo so I used Lawry's Seasoned Salt – perfect. Delicious and so easy! I bought salad shrimp at the meat market and the tiny shrimps were just perfect!

    Adobo is a latin seasoning that usually has cumin, garlic powder, salt, black pepper and turmeric.

  27. This looks so great! Question: if I do not want to buy the goya adoba, will it throw off the recipe by a lot? Is there a different spice that I might have in my cabinet that I can substitute?

  28. I made this with chicken instead of shrimp, and used the seasoning salt. It was super yummy. I like to add red grapes to my chicken salad but I didn't have any so I added about 2/3 of a packed of splenda and it was SO good.

    Just found your site and just made these. They are divine. No one would know they are light. The yogurt makes it taste real. In fact, my husband who can sniff out a "light" recipe in a heartbeat was popping them. He said, "those are addictive." The only problem with this recipe is that it made me think I am at the beach and then I wanted a margarita!!!

  31. this was delicious, as are ALL of your recipes…you never disappoint!

    I did make a few changes, because of what I had on hand….I subbed the celery for green pepper, yellow onion for red and the bread for arnold rounds ( 1pt for a whole round) I also added a squeeze of lemon juice. The adobo is pretty salty on its own, so I also omitted the salt altogether. I think this would make an awesome wrap as well, just cube up the cukes and add some lettuce!
