
Cranberry sauce is a must on my holiday table for Thanksgiving. This simple cranberry sauce is sweetened with pineapples to reduce the amount sugar of added. The perfect combination of sweet and tart. Even non-cranberry eaters would like this. Serve this with turkey, or it's even great with pork. If you prefer to use Splenda, this would be 33 calories per serving or 0 points. Make this the night before.
Cranberry-Pineapple Sauce
Gina's Weight Watcher Recipes
Servings: 12 • Serving Size: 1/4 cup • Old Points: 1 pts • Points+: 1 pts
Calories: 54.5 • Fat: 0.2 g • Protein: 0.2 g • Carb: 13.9 g • Fiber: 1.2 g
- 8 oz fresh cranberries
- 20 oz can pineapple in pineapple juice
- 1/3 cup sugar (or agave)
Drain liquid from pineapples into a measuring cup. Add water so that you have a total of 1 cup liquid. Add to sauce pan with sugar and bring to a boil.
Place cranberries in a food processor or chopper and chop fine. Add to pan and stir well. Cook over medium heat, stirring occasionally, until thick (about 10 minutes).
Place pineapple in a food processor and chop. Add crushed pineapples to cranberry sauce and cook one more minute.
Allow to cool then place in a covered container and refrigerate overnight.
Makes 3 cups.

ReplyDeleteThanks so much for your cranberry sauce recipe. I am always on the look-out for new recipe ideas when making my cranberry sauce. Have used red or white wine a few times and orange juice and apple juice. Just like always re-inventing a family favorite.

ReplyDeleteOkay, this sounds amazing. I usually think cranberry sauce is too tart on its own, and I realllly like the sound of adding oh-so-sweet pineapple to the mix. I can just imagine it on my leftover turkey sammy now...brilliant!
ReplyDeleteI have always brought fresh cranberries to a boil in the liquid and let them boil until you start to hear them pop. Would that work too, or is there a reason you have to chop the cranberries before you place them in the boiling liquid? I'm all for simplicity. :-D Sounds like a great recipe, can't wait to try it!

ReplyDeleteI really enjoyed this and it will be making an appearance on our Thanksgiving table in lieu of traditional cranberry sauce this year. I love cranberry sauce, but often it is soooo sweet. This was perfect! It's still very sweet, but lacking the overkill factor. I prefer my cranberries whole, so I put the pineapple chunks in the blender and then added that to the whole cranberries that had popped on the stove. LOVED it!! My husband isn't a big cranberry sauce fan and even he said this was good. Thanks Gina!

My husband and mother in law are diabetic, so I used Splenda to keep the sugar down, and it still came out delicious! Thanks, I will definitely be making this on Thanksgiving :) :) :)

ReplyDeleteI made this over the weekend and served it with smoked turkey. We also put it on little rolls and made turkey sandwiches with the leftovers.
