Prosciutto, Arugula and Balsamic Sandwich



Prosciutto di Parma, peppery arugula, sweet balsamic and heart healthy olive oil on french bread is a winning combination.

The addition of prosciutto in this sandwich is a perfect example of using meat as a condiment. It has so much concentrated flavor, that a little goes a long way. I load this up with arugula and balsamic (sometimes I add fresh tomatoes and shaved parmesan) and I'm one happy camper!

French bread or baguettes are usually fat free, so that's my bread of choice when I make a sandwich. Always check nutritional info because some brands add oil. And by the way, I cheated and scooped out some of the bread to give me a larger sandwich for less carbs, I think this is a Long Island thing, we do that with bagels too!


Prosciutto, Arugula and Balsamic Sandwich

  • 3 oz french bread or baguette
  • 2/3 cup baby arugula
  • .75 oz imported prosciutto (fat trimmed)
  • 2 tsp balsamic vinegar
  • 1 tsp extra virgin olive oil
  • fresh cracked pepper

Whisk together balsamic and oil. Cut bread, top with arugula, prosciutto and top with balsamic, oil and fresh cracked pepper.

      What brand / kind of french bread did you use? Is it whole wheat? The picture looks like white bread. I'm okay with white bread, just want to find one that is low in points plus! Thanks!

    14. Yeah, scooping the guts out of bread MUST be a ling island thing!! Lol it's pretty genious!

      The bread was from the bakery section of my supermarket. It was white but if they had whole wheat French, that would have been great. The bread was 3 pts, so as long as it works out to 3, use what you like.

      Let's see, I would maybe use watercress? Or even mixed baby greens.

    23. This would be great with that unbelievable Cream of Asparagus soup you posted last year (or 2009?). Started WW in January and you've been my go to place for the best recipes. Being Hungarian, I had to try those palacsinta (sp?) crepes that you made. They were great - eventually I'm going to try to lighten up our family's fave blintze recipe. I'll let you know if it's successful. Thanks for doing all the hard work - we reap the benefits!

    24. I had no idea that french bread would be so low in points. I haven't been eating many sandwiches lately because I can't find a good low point bread! For me the sandwich is all about the bread! This looks sooo good. Can't wait to try it!! As always Gina, you knock it out of the park!!

    27. I made this sandwich with some tomato and frexh mozzarella cheese and it was delicious! When I ran out of baguette I chopped up the ingredients small to make a salad with the oil and balsamic vinegar as dressing. So good!

    31. I make this ALL the time. I love it. I toast the baguette in the toaster oven and them add the prosciutto and arugula. It's a delicious meal in minutes. YUM!

    34. My store didn't have prosciutto so I used ham and it was still DELICIOUS! I loved the oil and balsamic over a mayonnaise.
