Made with lean ground turkey, Rotel, corn, and beans, this taco soup is a bit of a cross between soup and chili. It has all the great flavors of tacos with the heartiness of chili. It takes just 20 minutes to cook but it tastes like it was simmering for hours! Talk about the perfect recipe!

What You’ll Need

Here’s an overview of what you’ll need for this taco soup with ground turkey. Scroll down to the recipe card below for measurements.

  • Ground turkey – I used 99% lean ground turkey.
  • Veggies – This taco soup is loaded with onion, bell pepper, Rotel tomatoes with green chilies, and corn.
  • Beans – I used no salt added kidney beans and fat-free refried beans. You could use black beans in place of the kidney beans if desired.
  • Taco seasoning – You can use your own homemade taco seasoning or opt for a low-sodium packet of seasoning from the store.
  • Chicken broth – I always recommend using less-sodium broth in soups to control the salt level.

How to Make Taco Soup

The best part of this easy taco soup recipe is that it’s ready in just 30 minutes! See the recipe card below for more detailed instructions.

  • Cook the meat. Brown the turkey, breaking it up into small pieces as it cooks. Add the onions and pepper and cook for an additional 2-3 minutes.
  • Simmer. Stir in the remaining ingredients. Bring the soup to a boil then cover and simmer for 10 to 15 minutes, to give the flavors time to meld.
  • Enjoy. Serve with your favorite toppings and enjoy!

Tips & Variations

Here are a few things to keep in mind when making your turkey taco soup.

  • Drain any grease. If you use 99% lean ground turkey as I did, it shouldn’t create any grease during the cooking process but if you use a less lean percentage, it may. Just drain any grease from the pan before adding the veggies.
  • Adjust the heat level. This soup is quite mild when prepared as written but you can customize that by using spicy Rotel or replacing some of the bell pepper with diced jalapeno.
  • Simmer longer if desired. You can absolutely let this soup simmer for more than 10 to 20 minutes, which will only increase the flavor of the soup. But there are enough bold flavors in there that 10-20 minutes is plenty of time for a tasty bowl of soup.
  • Swap the protein. You can use ground pork, beef, or chicken in place of ground turkey if desired. You could even make this a vegetarian recipe by omitting the turkey and adding more beans.

Topping Ideas

Just as with regular tacos, you can customize each bowl of turkey taco soup with your favorite toppings. Here are some ideas:

  • Low fat sour cream
  • Jalapeños
  • Shredded cheese
  • Chopped scallions
  • Diced onions
  • Fresh cilantro
  • Avocado
  • Lime wedges

Proper Storage

  • Fridge. Store leftover taco soup in an airtight container in the fridge for up to 4 days.
  • Freezer. Once cooled, transfer to a freeze-safer container and freeze for up to 3 months. Thaw overnight in the fridge.
  • Reheat. You can reheat your turkey taco soup on the stovetop or in the microwave. You may need to thin it out a bit by adding more broth or water.

This quick and easy Turkey Chili Taco Soup, filled with beans, tomatoes and corn is one of my favorite soups for lunch! It takes just 20 minutes to cook but it tastes like it was simmering for hours!

Serving Size: 1 1/4 cups

Ingredients

  • olive oil spray
  • 1.3 lbs 99% lean ground turkey
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 10 oz can rotel tomatoes with green chilies
  • 15 oz canned or frozen corn, drained
  • 15 oz no salt added kidney beans, drained
  • 8 oz tomato sauce
  • 16 oz can fat-free refried beans
  • 2 tablespoons + 1 1/2 teaspoons taco seasoning, or 1 packet store bought low-sodium taco seasoning
  • 2 1/2 cups less-sodium chicken broth

Instructions

  • Spray a large pot with cooking spray then brown the turkey over medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add the onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, re-fried beans, taco seasoning and chicken broth. Bring to a boil, cover and simmer about 10-15 minutes.
  • Serve with your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions,  onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.

    This has been in my rotation for years! My picky husband even likes it! Sometimes I sub the turkey for super lean beef. It’s delicious and it makes for great leftovers too! Simple an healthy and so yummy!

  4. Tasty but more of a chili than a soup. It turned out to be super thick! It was still very tasty. I did add a few things of my own… oregano, extra cumin, six chili powder, extra garlic, and smoked paprika. I think if I used half the refried beans it would be more soupy. Thanks for the recipe!

    1. I left out the refried beans as didn’t have any on hand. Used my own spices instead of taco seasoning pack. Substituted black beans for kidney beans. Delicious!

  35. I’ve made several variations of Taco Soup over the last 25 years, but this is by far my favorite!  The fact that it’s lighter is even better!  I cooked at high pressure in the instant pot for 8 minutes, natural release and it was perfect.

    This recipe freezes very well- I just pulled some out of the fridge for my husband for his lunch- he has potato as zero points so he’ll top half a potato with this yummy soup for a 3 point lunch (for him). Sooo filling and flavorful.

  39. This is my favourite soup recipe! I’ve made it with ground Turkey but prefer using a rotisserie chicken. I don’t like tomatoes so I just add extra tomato sauce and some salsa. I make my own refried beans and add garlic.

  44. Another great recipe that is easy and fast to put together. Added diced jalapeños from my garden, some red pepper flakes and can of diced tomatoes (didn’t have tomato sauce). Amazing and full of flavor. Tons for leftovers…put in mason jars for easy single serving grab and go lunches for the week. Will definitely make this again!!

  46. I made it using the instructions to an Natasha’s IP chicken chili and it was fabulous. 
    Place turkey in first and add ingredients (except refried beans) and processed 20 minutes, natural release ten minutes then whisked in refried beans

    I made this and substituted black lentils for the turkey and homemade vegetable broth for the chicken broth.  It was delicious.

    1. Amazing recipe! I did only use 2 cups of chicken broth and seasoned the turkey right away with little salt and pepper.

  49. I am SO disappointed. This is the first recipe I found that I did not like. Now I live in Texas, so we are used to spicy, full of flavor food. I used fresh corn on the cob, even seasoned the ground turkey with salt, pepper, chili powder and cumin because I had a feeling we would need more flavor for the turkey. Otherwise followed the recipe exactly,, but it has zero flavor. I have now added a tortilla soup spice packet hoping it salvages this huge pot of soup.  😕

    1. I’ve made this recipe probably over 100 times in the past few years, and I can see where you’re coming from. I made it tonight ( I follow WW) and I couldn’t use a lot of cheese(too many points!) and I kept trying to add seasoning after seasoning to make it better. I’m usually able to put a ton of cheese and it helps a lot, plus cilantro. I sometimes wonder if we should use 2 seasoning packets. Whatever it is, I still haven’t figured out what makes the difference, but some nights it tastes better than other times. The quality of ingredients definitely matters. (I also season the turkey meat)  regardless, I still make this recipe a lot!

    1. You won’t even taste the refried beans. Be sure to use fat free. I think they are essential for the yummy thickness of this soup. Sticks to your ribs! Great winter soup. I serve it to guests, with cornbread and salad. Yum!

    This has become a family staple recipe. It’s quick to make and very tasty. I add a chopped jalapeno too for a bit of spice. We top it with shredded cheese, sour cream and chopped avocado. Leftovers are awesome too – flavors blend together.

  58. I love this recipe so much. This is a go to for me for lunch all year long! Today, when I made it, I used Tone’s Garlic Sriracha seasoning instead of taco seasoning. It’s still yummy and has quite a “kick” to it!  If you’ve never used this seasoning, it’s very good. When I am doing a quick beef taco, I use half of this seasoning and half taco seasoning.

  61. First time making this and it was delicious!  I will definitely be making it again especially since it is so easy.  I love that it has the little zing from the Rotel but not so overpowering that you don’t taste the other flavors.  

  62. Unfortunately due to the craze at the store, they only had 93% lean turkey so that added points. I used McCormick low sodium taco seasoning and that added points as well. And the refried beans added points as well. Next time I’ll make my own taco seasoning as homemade seasonings rarely have points. 

    Question though- do you use pinto beans? Or an actual can of the creamy refried beans?

  65. Seriously YUMMMM! I’m sitting here with a bowl of this soup now. I added a bit of chipotle chili and cumin, and I only had 1 lb of ground turkey breast; but otherwise, I followed the recipe. I love the texture that the regrows beans add.

    I’ve started following the purple WW program, so it’s ZERO fabulous points! I snacked a bit much this afternoon, so I didn’t add my usual sour cream, cheese, and tortilla chips. There’s plenty of flavor, do I don’t  miss them at all. Thank you so much!!

  66. This soup is so so good, it’s one of my main staples for winter. Being in Australia the rotel tomatoes with green chillies can’t be bought, so I substitute fresh chilli or chilli flakes in various ways depending on how hot I want it. I also tend to use black beans over kidney beans, or when I’m doubling the recipe I use a can of each. It’s become one of my favourite dishes for entertaining – when I do that I omit most of the chicken broth and serve it as chilli, and cook it on low slow in my multi cooker so that there’s the least fuss and mess possible when my guests are present. Everyone has raved about it. Thankyou!

  67. I can’t get this soup to come out as zero points. The kidney beans had points due to sugar in the can, the refried beans had sugar and tomato paste so they had points. The taco seasoning packet had points and the chicken stock had one point. Can you please tell me what brands you used?  

  68. As is, this is a Home Run.  Similar soups in the city are 8-10 bucks a bowl.  

    Made some tweaks to fit my family’s taste.  Instead of the kidney and re fried beans , I used a can of Goya black bean soup..  (my kids don’t like kidney beans).  Black beans also give each spoonful  a pop of color that’s pleasing.  Also instead of chicken broth, i used half chicken stock and half broth.  Finally, added a tablespoon of tomato paste make the consistency a little thicker.

I have been making the chicken enchilada soup for years and it’s my all-time favorite but my fiance got sick of me making it all the time so I tried this one and DAMN. This will be a new staple for sure. I used black beans instead of kidney cause I had a ton of them (due to the enchilada soup addiction) and it was mouthgasms!

A question about the homemade taco seasoning.  Do I use the whole amount in the recipe?  It seems like a lot.  I made the seasoning and it is excellent, I have only added 1/2 and it tastes great, just not sure if I was suppose to add it all.  This is so yummy!  Waiting for my husband to get home from work so we can eat!  

  72. Wondering if this could be done in the Insta Pot saute for browning then Soup setting and for how long. I have made this many times on stove top and its fantasic!

    1. I did make in Instant Pot tonight. Turned out great. I did get burn notice so make sure you deglaze the bottom. I omitted the water & used the full can of refried beans. I cooked with the pasta. I didn’t use whole wheat since I couldn’t find them. Used large shells. Cooked for 4 mins. Quick release. I wanted mine on the thicker side but you could add the water or more broth. Added the cheese at the end. Really easy & delicious.

  74. WOW, so good.. Waaay better than expected. Best part about it is that kids and husband, who need lots more calories, liked it and could add toppings to make it more caloric—sour cream, cheese, tortilla chips, avocado, etc. For my part, excellent with hot sauce and cilantro.

    I love this recipe and have made it 3 times so far. Delicious and makes me full with zero points! Get all my ingredients from ALDI so it’s very cost friendly. I’ve also froze half the recipe and still turned out well.

    Made this tonight and doubled the recipe, using a pound of ground beef and a pound of turkey. It was so good. My favorite chili I’ve made so far- so happy we have double the amount so we can freeze some!

  79. Fantastic! I eat it every day. It’s 0 points but I would eat it even if I weren’t dieting. I freeze some in 1 serving size bowls to use after the 4-day recommended fridge time. 

  80. This was amazing!!! My top favorite thing I’ve made on here yet, and that’s hard to say because everything is awesome.

    The only thing I didn’t get was 9 servings. Not sure how for a cup and 1/4 that was possible….I had about 7 servings out of what I made so had to adjust it in the app for my points. . (Mine was 4 points per serving because of the can of beans and I used 93% beef).

  84. I have made this recipe several times and it has become a favorite! It’s quick and easy to put together and even my picky eater likes it. Mom win!
    I recently made it for a chili contest (using ground beef instead of turkey and veggie broth instead of chicken broth due to a poultry allergy at the gathering) and won first place! This recipe (and every recipe I’ve tried so far on this site) is a definite keeper.

  87. This recipe is SO yummy! Just out of curiosity- what is the serving size in cups? I looked up 11/4 cups and it stated that it is 2.75 cups….. is that correct? Seems like a lot for only 255 calories.

    1. We made this last year to take on a ski weekend with friends. It was hearty and delicious. Easy to make at home and pack and great reheated. I can’t wait to make it again this year!

  88. Making this right now and entered into the recipe builder. I noticed the Rosita’s non fat refried beans are not zero points. I scrolled through the comments and saw the Trader Joe’s brand is. I also used 93% turkey so I was expecting it to be 3 points, but the brand of beans I used made it 4. 

    When you use a fattier ground meat but drain the fat really well do you still count it as the percentage you used?

    1. Beans are 0 if there is no oil. Of course, even a can of regular beans will have points if you use the calculator and the nutritional label so you have to use recipe builder.

  89. I’m sad I discovered this towards the end of soup season – it is stellar! It freezes brilliantly and is perfect for those days when I don’t have other leftovers to take for lunch. If you portion leftovers individually and freeze, move a serving to the fridge the night before and reheat in the microwave. My only changes to the recipe were to use black beans that I had on hand, instead of the kidney beans, plus adding some hot sauce because that’s my style. Gina’s homemade taco seasoning is spot on. I topped with some reduced fat colby jack, crushed tortilla strips, and scallions. Thanks for another winner!

  91. This soup is sooo good!! I left out the refried beans and made my own homemade taco seasoning. I used Fire roasted frozen corn instead of plain canned corn. I garnished the soup with a few sprinkles of pepper jack cheese and a dollop of fat free Stonyfield yogurt. It was amazing!!! Thanks Gina!

  93. This chili is SO GOOD. I’ve been making it about once a month for my family for about 2 years now. They love it. Over time I’ve made it my own by using 2 cans of kidney beans, omitting the broth (we like it thicker) and using 2 packs of taco seasoning. Sometimes I sub regular ground turkey for Jennie-O taco flavor ground turkey and use only 1 pack of seasoning.

  95. It turned out fantastic!  I personally think most Chilis are simply too thick and don’t have an interesting taste.   FYI…I did add one tablespoon of chili powder to the entire batch to zing it up a bit.

    1. The refried beans kind of act as a thickener, so if you like really thin soup you could omit. Another option would be buzzing a second can of kidney beans or black beans in the blender and adding for thickness.

    Made this last night and it was delicious! I couldn’t find 99% fat free ground turkey at our local store but using 93% only made the recipe a 3 SP meal on WW which I think is great. It was so easy and quick such a great weeknight recipe, Not too spicy, but plenty of heat to satisfy my husband who loves spicy food. This a definite keeper! Thank you so much.I

  119. This soup is SO GOOD, just like every recipe I cook from Skinnytaste!!!! Everyone in my house loved it! I made my own refried beans (can of pinto beans, 1 clove of garlic, a teaspoon of olive oil, cumin and a splash of lime juice) and I used homemade taco seasoning. I also added 2 tablespoons of cilantro paste because I LOVE cilantro. The cilantro made the soup tasty and really pretty with the flecks of green.   120. Question on the refried beans fat free
    I looked at my grocery store and the closest I could find was Old El Paso which was 0.5 total fat for 1/2 cup and 0 sat fat for that serving size.
    If I use nutritional label entry (which counts the beans which should be zero) it would add 8+ points to the recipe total.
    What brand do you find that is fat free or is that close enough to be considered fat free?

      I make my own refried beans with pinto beans. no fat-low sodium. I make in my crockpot and then I freeze them in separate containers the size of this recipe (16 oz).

  121. Omg!! This soup was delicious!! I’m not a huge ground turkey fan, but let me tell you
    now I am!  Only thing I added was fresh  garlic with my zester.  Also, I sautéed veggies first
    and added chop meat to cook after with veggies. When it was done added some low fat cheddar to my bowl.

    I made this today, my pot wasn’t big enough! I had to leave out the beans and corn. Note to self, a 3 qt saucepan will not accommodate this recipe.! I plan to add the beans, now that I’ve had a bowl. This is a wonderful soup/chili! Made it according to directions with the addition of some hot pepper flakes. The turkey I used showed up as 3 points on my WW app for 4 oz. I cooked it until it was no longer pink, then put it in a strainer in the sink, and rinsed the meat with hot water, so maybe I rinsed all the fat away? Either way, very few points and a delicious soup!

I’ve noticed this with your oatmeal blueberry muffins too that the SP points value associated with the recipe does not match up when the info from the recipes are inputted. Wondering if I’m doing something wrong. I am new to weight watchers so could be user error!

  136. This is simmering on the stove as week speak, but I had a question. I created the recipe using WWers recipe builder, and it shows that the freestyle points for this is 1 point. The only things that had points were the chicken broth (1) and the taco seasoning (5). I chose the 30% less sodium taco seasoning, and 30% less sodium chicken broth. Just wondering if anyone else had this issue.

    I’ve loved all the recipes I’ve made of yours, and I so appreciate you going out of your way to calculate the points for us.

  138. I have made this many times. I do reduce the chicken broth to 2/3 cup and make it more chili like and top it with fat free Greek yogurt and fat free salsa. So good and to make another meal I make stuffed peppers and sprinkle shredded cheese on top and bake. Delicious!

    I made this as directed and it was terrific, but I’m just not a huge meat eater so I wanted to try it another way. I just made it again and added black beans and a bit of rice in place of the meat and it was delicious. I added a bit more chicken broth as well (32 oz total) so it was a bit more like a tortilla soup as opposed to a chili, but still a wonderful flavor.

When I go to print this recipe, the video image shows up as part of the print preview, and then when it prints, there’s just a giant white space on the printout (and the printout ends up being forced into two pages). Is there any way to correct that so that the video image is not part of the printout?

  150. I’m curious where the Freestyle point calculation comes from. When I plug this recipe into the recipe builder on Weightwatchers, it comes up with zero points. It’s also very similar to the ingredients in the crockpot chicken taco chili which is listed as 0 freestyle points. Just wondering.

  160. This has become a staple in my house. My toddler inhales it and even my picky husband loves it! I do use 93/7 ground turkey so there are a few points, but totally worth it. I also use clack beans in place of kidney beans just because it seems to be my toddlers preference. This freezes phenomenally so I freeze it in single serving containers and just grab one out to pack for my lunch at work whenever I need something!

I was ecstatic to see that it is now 0 points, but according to the WW calculator, the 40% less sodium Ortega taco seasoning is 1 point per serving (6 total in one packet). I know you can also do the homemade seasoning, but it might be worth mentioning that it’s not 0 points with the packet. And now that it is 0 Smart Points!!!?  WoW!!  My question is, when I put in the calculator to make a custom food so I can post it on my dashboard (for myself to see). It still comes up 5 points. I also would like to know because I ate 1-1:2 servings!! It WAS that good. And I’d like to know at what portion would the point count change. Any ideas??i did use the 99% fat free turkey. Added a little (2 Tlbs) tomato paste. Didn’t have refried beans so I added a little fresh spinach for bulk. It came out soupier versus stew which I wanted. So good!! Adding points separate for 1/4 avocado and 1 tbls light sour cream to top!! Thank you !!  Gina Q

    1. The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting 0 points foods such as eggs, chicken, fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, that is why.

  163. Gina- I have made this re pie many times and it is an easy dinner that we all love. My question is this – before freestyle it was 5 smart points per
     1-1/4  cup. I thought it should be less on freestyle. Your points now show 0. When I put in my calculator it still comes up as 5 points. 
    All items seem to have changed, ie., veggies, eggs using My app.  Wondering what point value this should be on freestyle. Thanks so much. Love your recipes

    This soup was on the meal plan and it was fantastic. When it said just one cup per serving I thought I’d be hungry later but I wasn’t. It really sticks to you cause it is loaded with fiber. Just delicious! I’ve made other versions of this but now this is my favorite.

I cooked the turkey in a frying pan followed by the onions and peppers and then dumped everything in my crockpot and let it sit on high till we were ready to eat-perfect!     Made this in the Instant Pot tonight.. I added a can of rinsed low sodium black beans, and an extra cup of chicken broth, I was worried it would be to thick like Chili and I wanted a soup. I turned the IP on saute, and put Turkey burger , onions and bell pepper in until turkey was brown. Drain. then add everything else and put on Manual for 10min….manual release after 10min. Came out great. topped with some tortilla strips and jalapenos.

  184. This whole recipe is “free” on Simply Filling, if you make your own taco seasoning instead of buying it! Excellent recipe. Was craving soup, but wanted to stay on the Simply Filling plan with WW. I added black beans because I had them on hand. Added some fat free sour cream and cheese and it’s great. I also added more peppers because I wanted to use them up. I did use homemade taco seasoning instead of a packet. So good!

Very good!  And easy!  I used black beans as I had them in the cupboard, and added some mushrooms (just because we love mushrooms).  I also had it simmering for about an hour – only because it took a bit longer for us to be ready to eat.  With the extra simmering, it was thicker than soup, but not as thick as chili, maybe more “stew” like.  My husband likes to “dip” tortilla chips into chili and eat it that way, and it was thick enough for him to do to that.  Really good!  Try it!  You’ll love it!

  191. I’ve reviewed several of the recipes created for Weight Watchers Smart Points. However, none of them seem to list the Saturated Fat grams, only Total Fat grams (one of the factors in calculating Smart Points). I realize you have already calculated the Smart Points, but I always like to check the points myself.

    1. I know you asked a while ago, but in case you were still wondering 🙂 I made this in my instant pot and it came out great. Cooked meat and onions/peppers on sauté, added rest, and cooked on manual for 10. Did natural release because I wasn’t home, but probably could’ve manually released after 10 or so.

  193. This is my absolute favorite thing to cook. My husband isn’t a big fan, so I make it and then freeze the rest of the portions for myself (it freezes amazing). It’s great for a quick lunch. The only difference I do is I add “hot & spicy” taco seasoning to give it an extra kick. 🙂

  197. Hi, I really liked this. However, it’s a little hard to believe that it’s only 225 calories per serving…Is it really that low in calories? LOL! 

    1. I wouldn’t doubt it…there’s nothing high calorie in it. The highest calorie ingredient is only 350 calories for the entire can of refried beans, and there is at least 9 servings in this huge pot of soup…if not 10 to divide that by. And her serving size is 1 1/4 cups for 225 calories with no toppings.

  200. I made this soup because I loved how simple it looked and HAD to try it! It was amazing, especially considering how easy it was! The only differences I made were we used 90/10 ground beef instead of the ground turkey (personal preference in our family) and I added 1/4 cup of sofrito to the soup because I always have it on hand. My only changes were to use small red and orange bell peppers (didn’t have green) and I only had 1 lb. of ground turkey instead of 1.3 lbs., so I added an extra can of black beans. Absolutely delicious! Your recipes make staying on the WW plan so much easier. I’ve had your soups every day for lunch for the past two months and each one has been just fabulous.   213. This soup is so incredibly delicious!!! I used ground chicken instead turkey because I prefer the taste. I served it it with a dollop of sour cream, shredded cheese and crushed tortilla chips. So yummy. It comes together really quickly too, so it is great for a weeknight meal!

  216. I made this to use up left over Thanksgiving turkey. The only changes I made besides not using the ground turkey was using pinto beans (it was what I had in the cupboard), added garlic and I used Gina’s homemade taco seasoning recipe. I threw everything except the turkey into the crockpot and cooked it on low for 6 hours. When it was time to eat, I shredded up the leftover turkey, put it into bowls and poured the hot soup over it to warm it up. It was so delicious. The family raved about it, and I will definitely be making this again.

    Genius adding the can of ff re fried beans, makes soup super thick and creamy.  I am definitely putting this easy recipe in my rotation for cold Minnesota winter and sharing recipe with my weight watcher peeps.  I used 1/2 oz of taco seasoning that I buy in bulk at Costco and it was not too salty as others have posted. Thanks Gina for your recipes….helped me to be successful on weight watchers without feeling deprived!

  219. This was great!  I omitted the corn, used a 1/2 cup less of chicken broth and rather than using refried beans I pureed a can of black beans.  The consistency of it was perfect!

  234. I never use store bought pre – mixed seasoning in m,y cooking, because they always contain salt. Salt is one ingredients I never use as well. I don’t even have any salt in my spice cabinet. There are so many wonderful spices and herbs that you would never miss the salt. Try it sometimes. Maybe at first you would miss it I don’t know. My kids (they are all grown now) do not use salt either, because they grew up eating salt free foods and when there is salt in the food they can taste it.

This is great!  I used two ears fresh corn (cut off the cob) and added another pepper (one red and one green).   I was skeptical about the refried  beans – but they added the right thickness without long cooking time. Froze in single serve containers and will have lunch for at least a week.  Really happy with this and will be making it again.  Thanks Gina!  ❤️

  239. A really hearty and filling soup for fall. I made exactly as recipe states. Only 5sp per serving,. It was so good, I had 2 servings. Hubby isn’t on WW, but he ate it and liked it too. It made enough for ust to have dinner, lunch the next day, and still enough to freeze for another meal.  I ordered the cookbook and can’t wait to see what else I can try!

  242. Delicious! I used chick peas instead of corn and only bought 1 lb of turkey but other than that, followed the recipe. It’s quick, inexpensive, healthy, a one-pot meal, and so good–perfect weeknight dinner!  I did find it a tad salty, but I topped it with chopped fresh tomatoes and a dollop of plain Greek yogurt and the flavors balanced perfectly.  This is definitely going into the rotation.

  244. I made this tonight and was really skeptical about adding the refried beans….but it was delicious! I added some pickled jalapeños, a dollop of greek yogurt and cheese as a garnish. This also made a ton, so plenty for leftovers.

    1. Yes! This has become a favorite at our house and I make it in the Instant Pot. Here are the directions that I adapted forr the IP. NOTE: I always use the homemade taco seasoning recipe that Gina includes in the recipe because it is fantastic.

      1) Spray pressure cooker liner with cooking spray. Brown the turkey on SAUTE setting, breaking it up with a wooden spool as it cooks. When cooked through, add the onions and pepper and cook 2 – 3 minutes. Add taco seasoning for last minute of the saute. Add chicken broth and stir. Add tomatoes, tomato sauce, re-fried beans, but DO NOT STIR.

      2) Cook on high pressure for 5 minutes with 10 minute natural release.

      3) Remove lid and stir well, making sure re-fried beans are well incorporated. Add pintos and corn and stir again and simmer on saute function for a minute or two until heated through.

      4) Serve with shredded cheese, low fat sour cream or yogurt, jalapenos, chopped green onions, taco chips, etc.

I made this tonight and it’s FABULOUS!  It’s quick, easy, healthy and delicious!!!  What more could one want?  I didn’t have tomato sauce so I subbed petite cut tomatoes.  They worked just fine.  I wouldn’t have thought to use refried beans but love that addition.  I made zucchini noodles and placed them in the bottom of the bowl under the soup.  I added rice on top of my husband’s bowl (as we’ll as “zoodles” underneath his).  He loved it too.  Another winner from you, Gina.  Thanks so much!

    I made this for meal preps this week for dinner. It was DELICIOUS!! I added kale to mine to get more greens in. I am definitely making this again. Keeping it in mind for meal prep rotation, especially with the fall season coming. 

  249. Made this soup today and it was delicious.  Followed it almost exactly. Used 3/4 bell pepper and a tri blend of beans.  I used low sodium ingredients. I don’t usually watch the sodium when I cook but I couldn’t tell any difference in taste. ,  I used  all the condiments suggested and it was so good plus I love how easy it was to make.  YUM!!   This will be in my rotation of soups for the winter.  Love your recipes, I don’t mind using ingredients like beans and tomatoes that come from a can!  It is not realistic for most of us to use everything fresh, it was a great combo of fresh and canned.  

  250. Most of your ingredients seem to come out of a can, surely this is an expensive and not necessarily nutritious way to cook.  I think fresh is best.

    1. Here’s an idea: slow cook a chicken to make broth, cut fresh corn off the cobb, soak and boil kidney beans, and dice fresh tomato and green chiles. Then you’ll have everything fresh! The rest of us don’t have time for all that and are going to use some canned/frozen items. 

      You are also welcome to not use Gina’s recipes and then you won’t have to post insulting comments on them.

      1 1/2 tablespoons cumin
      1 1/2 tablespoons chili powder
      1/4 teaspoon garlic powder
      1/4 teaspoon onion powder
      1/4 teaspoon dried oregano
      1/2 teaspoon paprika
      1 teaspoon kosher salt
      1/2 teaspoon black pepper

        I also noticed the sodium content was too high for our diets. I would use no salt added tomato sauce/tomatoes (or several cut up tomatoes) and Chef Meg’s taco seasoning which is salt free (Spark People) and probably ditch the refried beans or use just a half can. Perhaps you could use less broth or part sodium free.

      2. I subbed the refried beans with black beans. That in addition to the other changes noted by Marcy would definitely help with the sodium.

      3. I too subbed refried beans for black beans and do not have the same sodium issue. Give that a try

    2. Try using a homemade taco seasoning. It’s so simple and lets you control the salt. I use Alton Brown’s recipe.

    3. I second the idea of using your own taco seasoning. If you have to restrict your sodium intake the first thing you should be looking to eliminate is a seasoning packet of any kind! I actually use the ingredients in Gina’s One Pot Cheesy Turkey Chili Mac, which has a homemade taco seasoning in a very similar chili recipe.. Only 1 tsp of salt, which is not much in this recipe (9 servings). Of course there are many versions of this on the internet and probably also many that are for low-sodium diets.

  309. This is SUPER yummy. I made some minor changes. My turkey was about 95% lean (I get it ground fresh at my butcher which I think makes a huge difference..very lean, yet still moist). Anyhow, instead of Rotel, I used one can diced tomatoes and a small can diced green chiles. I misread and used 2 cans of re-fried beans, so mine is extra thick. Oh, I also added a little bit more chili powder/cumin, but that is a personal preference. So far I've just tasted it (made it for lunches) but it was very yummy. It made a huge batch, so I am giving some to my Dad and sister.

    3. the verdict is in. this taste best if you use 96/4 ground beef. however it taste the same whether you use ground turkey or the boca crumbles, which is still pretty dang good! very happy with how it turned out with the meatless crumbles, if i ever find it on sale again i wont hestitate to buy and use in this recipe! 🙂

    I made this last night and it was delicious. I squeezed just a bit of lime over it and put in a tbsp of sour cream, reduced fat cheddar, and scallions. The scallions and lime were great (had them on hand because I also made the cilantro dressing from your site, which went great over lettuce as a side salad to this meal.) I added tomato paste because I found the soupiness unappealing and I'm a huge chili fan. The refried beans in this added an unusual taste that I liked a lot.
    I also mixed in 1/4 cup baby spinach leaves for added nutrition. I do that to any food whose taste is so good that it can stand up to spinach, and this meal was definitely good enough!
    I had leftovers for lunch today- great!- and froze two portions. Just the right size.
    What I really like about this meal is that it satisfies my craving for Mexican food, especially when I have the salad with cilantro dressing with it- the jalapeno has a great kick!
    And it was SO fast and easy to make.

    I don't follow WW–just try and eat healthyish. I have made this 2x and OMG YUM ALERT!!!!

    I'd never know it was WW. The changes I made were: 2 full cans of low sodium chicken broth (about 3.5-4 cups), a whole lime squeezed into the finished soup, and some low fat cheese and chopped cilantro on the dishes when served. The second time I used 95% lean beef but surprisingly, I preferred the turkey. I didn't use lean turkey, just regular ground turkey.

    I only cook for myself and hubby, but we demolished this. I am actually excited to eat my frozen leftovers for lunch.

  392. I made this for friends for a nice lunch & it was really good. I made the Crockpot Chicken Taco Chili last week and was surprised how different these were. I think it was the refried beans. Very good & definitely a keeper! 🙂

    Thanks for sharing,I used 3 cups of cooked lentils in place of the turkey meat and added my own spices instead of the taco seasoning. My body has real issues with sodium and even the reduced sodium was too much for me. I tasted it and was happy with the result. While I was setting the table my eighteen year old niece showed up with three of her friends.

  396. just wanted to say I had done the math wrong when I made this and im so excited that even with using 96/4 lean ground beef this still only comes out to 4 points(old plan) per serving! this so good im making it again tonight so i can freeze a bunch of portions!

  398. OMG, I just had to comment and tell you how much I loved this recipe. I was reluctant to make it because I have a chili recipe I use alot and love, but this was so easy, so good, and so different than my usual chili. It was the perfect combo of tasting fresh and tasting so flavorful like it had been cooking all day. Not sure how you do it, but keep up the good recipes. LOVED this one.

  403. I made this tonight as well, I topped it with reduced fat cheese, fat free sour cream, and fresh cilantro, yum!! I also used black beans instead of kidney beans. I added the ingredients I used to the recipe builder and it did come out to be 5 points prior to adding the sour cream and cheese (for the poster above who was concerned). Thanks so much for your recipes Gina! This is the second one I made this week and they are definitely helping me stay on track 🙂

  404. made this tonight, so quick and easy and best of all delicious!i used lean ground beef so that uped the points to 6 points(old program) per serving(hope my math is right) i did add a few dashes cumin and adobo at the end for a little more flavor but other than that everything else was the same. top with cheese, sour cream,and with tortilla chips was the perfect way to eat this!

  408. Are you sure this is only 5 points? I put this recipe into the recipe builder on weight watchers and it calculated each serving as 7 points.

  409. I made this for dinner tonight and WOW. It had so much flavor I did not feel like I was eating something good for me at all. The changes I made were: I used refried black beans (just because I love them), I didn't use corn (because I totally forgot – just found the package on the counter 5 minutes ago), and I used hot taco seasoning. I used maybe a cup of the chicken broth to get it to the thick and hearty consistency I like. The heat was definitely borderline too much, but once I added a dollop of sour cream it was perfect. I only cook for myself, but I am actually excited for once to eat all the leftovers!

  411. Gina, this is probably one of my favorites of your chili recipies! I used lean ground beef instead of turkey, used the whole can of tomato sauce and only one can of chicken broth, and I made my own taco seasonings so it definitely had a kick to it! I added 2% Mexican cheese, cilantro, and a dollop of sour cream. Amazing! I was nervous about using the refried beans but it was sooo good! I also made the cornmeal cake to go with it! 🙂

  412. I love taco soup! My recipe also has a can of hominy and uses black beans instead of refried beans. This is a very adaptable recipe.

    Because this is a "quick" chili, the refried beans give it that creamy consistency you get from letting your chili simmer all day. You could probably just use a can of your favorite bean and puree it in the blender if you prefer.

    Jenny-o and Shadybrook Farms carry 99% lean. The points might be the same for 95% lean.

    My one year old loved this, you can adjust it to your liking, play around with different beans, add chipotle peppers or jalapeño if you like it spicy!
