Sweet treats and some sweet news!

Life is pretty hectic these days in my home, but I’m not complaining, I love every minute of it. Here’s a little peek into a typical day in my world.

My sweet little one year old is at the stage where she wants wants “mama” all day long, especially whenever I’m in the kitchen about to cook, this is usually what I see when I look down…

“Up!”

My sweet little pup is usually hanging around waiting for some food to fall on the floor which seems to happen a lot lately…

When my teen isn’t busy with homework and college hunting, you can usually find her baking something sweet in my kitchen for her friends or for Skinnytaste (but never without her iPod and cell phone!)

Lately finding time to cook, photograph and post recipes has been my biggest challenge. I have so many ideas and recipes in my head, just not enough hours in the day to make them. You are all such wonderful followers, you’ve been spreading the word about my site on Facebook, Twitter, meetings, community boards, voting for me in blog contests, and I really can’t thank you enough so I’m sure you will like what I’m about to tell you…

Sweet News and a Sweet Recipe!

I’ve decided to leave my day job to spend more time with my family, children and yes, Skinnytaste. It’s a sweet new chapter in my book of life and I’m very excited about what’s to come. I’ve always loved my career in photo retouching, I’ve had the pleasure to work with some fierce talent and it’s sad to see that behind me, but I feel good things ahead and hopefully I’ll have more time to cook.

And now for these sweet treats…

Black and white chocolate chip meringue cookies are perfect for your sweet tooth. They're light, airy, melt in your mouth, low fat, gluten-free and delicious!

Black and white chocolate chip meringue cookies are the perfect fix to cure your sweet tooth. They are light and airy and melt in your mouth and somehow get better with time. I like to make them the night before and store them in an air tight container, the next day they are nice and chewy and even chewier the day after. Low fat, gluten-free and delicious! Make sure your bowls and spatulas are squeaky clean, your egg whites are room temperature and you use a metal bowl to guarantee success.

  1. I think these sound good for a keto cookie if monkfruit sugar will work. also will substitute Choc zero white and dark or milk choc. chips as they are sugar free! Anyone tried this yet? then they will be low carb!

I am trying to loose weight by counting calories this is wonderful to have a free recipe everyday with all ingredients and calories listed I have bought 3 of your cookbooks so far and all are wonderful

  3. Absolutely the best marshmallow fluff we’ve ever made (licking the beaters). I left out most of the chips because my daughter was clamouring for the plain vanilla ones we get at the store. I snuck in a few butterscotch chips and even my husband, who current care for the store bought ones, is enjoying these.
    Thank you so much!

  4. I haven’t made meringues in ages, but last time I did, I made these. Good then and good now. Just when you are ready to dump your egg whites and start over– wait at least 5 more minutes!! I need to make these so much more often and make them my go-to WW snack.

  6. These are so awesome. I make them often. It is really important that the egg whites are at room temp. Tried it once cold, and it doesn’t thicken up (flat cookies, still tasty).
Now I am going to make them for a change with toasted coconut flakes. Macaroons!

    Thanks!

  7. To celebrate Halloween we left out the chocolate chips and used three M&M's. One as mouth and two as the eyes. They looked like ghosts. My kiddo's loved it and I felt better giving them this than candy.

  8. I have tried several of your recipes and they have all been awesome! I am determined to lose weight for the holidays and am trying a new recipe from your site almost everyday! Love the pictures too!

Hi! I apologize if this question has already been answered (tried looking but you get so much blog love!) – can something else be substituted for the silicone pad or parchment paper?

  10. I don't know if I should thank you or curse you! LOL! I made these so I could have a sweet treat in the house for when a craving hits. Too bad I hardly ever get to eat them because my husband and kids devour them! I can barely let them cool before they are sneaking cookie after cookie! Even a double batch doesn't last more than 3 days in my house!

    Fantastic cookie!

  11. Wow! I just made a batch of these and I am trying to figure out how much exercise I need to do to burn off the dozen I just consumed! Thank goodness they are low fat…These were great!!! Light, melt in your mouth goodness like cotton candy. (And they will be even better tomorrow??!!) I bet peppermint extract and peppermint crunch would be good as well… Gives me an excuse to experiment with more flavors. Thank you for the recipe.

I am trying to make these cookies, however my mixture is not stiff (at all)! Any suggestions?

  13. Yum these were so good and addictive. I had doubts about how they would turn out because I made meringues once before and they tasted like Styrofoam. These however were so soft and chewy! I will be making these again in the future for my chocolate cravings.

I was also trying to double the recipe however the batter turned out very runny….where did I go wrong?

  15. I tried twice to double this but when I add the last bit of sugar I can not get the peaks again…any tips?

  16. I can't stop making these, my boyfriend LOVES them. Also, they transport so well. I just gave a friend of mine 30 of these for his 30th birthday- no fuss to carry over to his party!

  17. I Tried to make this today and FAILED miserably. 🙁 I was really wanting to taste them too. I dont know what went wrong. I'm thinking it might have been the eggs. I will have to try again tonight. I guess i can leave out some eggs in the meantime. I left the eggs out for an hour to get to room temp but they still were a little chilly. Any idea about how to get the eggs right so everything is not watery.

If your beaters and bowl has the slightest amount of grease on it, it won't work. Make sure it's squeeky clean and metal is always suggested.

  18. These are absolutely DELICIOUS!!! They are so easy to make and even easier to pop in your mouth. It's hard to just stop at one or two! Thanks for a fantastic recipe.

  19. I justed wanted to say that I love all your recipes and as a WW member for 18 months (down almost 70 lbs) you have made it so much easier to eat healthy delicious food.

I tried these cookies with Splenda instead of sugar as an experiment and while they were edible, they weren't nearly as nice as when I made them with sugar and the points savings probably aren't worth it.

    Oh yum! 🙂

Saw this recipe upon finding your site last week, and today I decided to make these.

I did a few variations–for example, I had some extra vanilla sugar (best. thing. ever!), and used it in place of plain sugar. Also, instead of dark chips, I used some festive swirled white + semi-sweet, along with the called for white choc. chips (because I'm crazy for white chocolate). 🙂 They turned out lovely, though they only made 24 (I used my smallest ice cream scooper to dish them out).

I *had* to taste one after I pulled them from the oven (What? To make sure no one else gets sick, of course! *cough*) and they were very light and delicious, I can imagine they will indeed only get better after a day or so. I will definitely be making these again, they are quick and easy to make changes to (for different flavors and occasions) and best of all, great tasting! The fact that they are *semi* sort of healthy dessert for you? Only adds to the enjoyment!

    Thanks for this wonderful recipe!

    Enjoy,

  21. Made these with with mini chocolate chips and used just a half cup. They turned out perfect, tons of chocolate flavor. Can't wait to try them with other chips like peanut butter or butterscotch! Thanks for the great recipe!

  22. Hello- Just curious if these would freeze well or if I should refrigerate them. Thanks- They are delish!

  23. The raw meringue tastes like marshmallows! Couldn't wait for them to bake:) Question: Any suggestions for what to do with egg yolks? Between egg white breakfasts and other baked goods I throw away alot of them.

    1. Avatar photo
      The_Book_Queen

It's not the best idea, but with the three I had from today's batch of these cookies, I made some quick scrambled eggs (well, yolks, I guess), with a bit of milk and cheese. Not the healthiest or most original, but hey, didn't have to throw out the yolks today. 🙂

But I'm also curious about some other uses/ideas for extra yolks. Could they be frozen? If so, would they thaw right?

      Enjoy!

  25. I made these a few days ago, they are DELICIOUS! I am so glad that I found your website. It's so hard to find recipes for Weight Watchers. Thank you!

  26. Hi Gina–

I've only recently started reading this blog and am so excited to find so many delicious, healthy recipes! Meringue cookies are one of my favorites, especially just the plain jane vanilla ones. I'm anxious to try the vanilla version but want to be sure I'm recording my calories, etc., correctly. Do you know of a decent recipe building site for those of us who are not WW members?

  27. Made these yesterday – ate a few fresh out if the oven and another today. Both ways were delish! Thank you!

  29. Hi Gina!

Love your website! Congrats on the new chapter in your life! I see a Skinnytaste Cookbook in your future!!!

If you used Splenda with these, do you know what the points plus would be?

    Thanks so much!

  30. Just stumbled upon this site. Yes! So excited! Hey, wondering what kind of camera you used to take that great pic of your teenage daughter?? My old Cannon Powershot did the b&w with color accent, but the quality of yours looks even better. Maybe it was just a better Cannon?? Answers, please!! (:

  31. my husband is addicted. I've made them 4 times since finding your website. They're my dish that I bring to other people's get togethers now.

By any chance, do you know if these are gluten free?

  32. OMG!! I just made these and they are better than any high fat dessert I've eaten lately! YUM….my husband ate six of them already! Thank you for the recipe!

  33. I made these last night and took them in to work today for a meeting…they were a huge hit! My fiance was jealous that he missed out, so I made another batch tonight. So yummy and easy…thank you! 🙂

  35. These are so so good. I made these Friday and they were already gone by Sunday night! Thanks for such an awesome recipe! I love your website!

  36. I just made these and they were GREAT! I ate 6 lol, but I had 12 points left for the day, so it's all good. They were bigger than I thought they'd be – like regular size cookies. I will definitely make these again…and maybe try the chocolate ones too. Thanks Gina!

If you live somewhere that is very humid, or a rainy humid day can be an issue. Everything must be squeeky clean, bowls, spatula, etc or they won't work. Eggs need to be room temperature.

  41. I have tried this recipe 3 different times and I cannot get the hard peaks to form:-( any recommendations!!!!

  42. These cookies are delicious. Made them tonight for an at work Weight Watchers meeting. One problem…they went gooey on me. I let them cool completely. The texture was great…I taste tested them to make sure 🙂 Store them in an airtight container but when I just checked them they were getting kind of gooey. Could it be the extreme humidity? I put them in the refrigerator to try and save them. Not sure if that is a mistake or not 🙂 Any ideas?

  43. Thanks for this recipe! Meringue cookies are one of my all-time favorites and I never thought I'd be able to make them. Just tried this recipe and they're perfect! Thank you!

It shouldn't collapse when you touch it. But they do harden as they sit and cool so you don't want to over cook them.

  45. I am sorry your right, I just looked over the recipe and yes you did mention it, my fault. I have a question though, how do you no when the cookies are done? Should they be a pale white still or allover light brown? I am afraid to pull them out to early/to late? at 30 minutes they are slightly brown? help

    Gina @ Skinnytaste

I actually do mention it… "Make sure your bowls and spatulas are squeaky clean, your egg whites are room temperature and you use a metal bowl to guarantee success." I guess you overlooked it 🙂

  47. Gina for us first timers and newbee's, we need exact info, like me for example I had no idea until my mom told me (after I tried 2 times and failed) that you need to beat eggs and cream of tartar in a glass bowl or metal not plastic it will not work, and of course mom know's best, when I used the glass bowl cookies came out perfect, so for anyone like me, must be beaten in a glass bowl or metal. good idea to note that in your recipe as I did not no that and wasted ingredients two times, but great recipe when does work out. thanks gina

zeeeeleven, I wish I liked Stevia, I just can't get over the aftertaste. I'm glad they worked though!!

Anonymous, rainy days can effect them, also if the bowl and mixer aren't squeeky clean they won't work. But my teen makes them ALL the time and she never has any issues. Maybe you just need to mix a little longer.

  50. I don't know it's just me, but I tried making this recipe three times and had no luck 🙁 I let the eggs sit out and beat the heck out of them, but my mixture was runny each time. Any ideas? Or I am just a hopeless chef wannabe?

OMG you have just brought back childhood smells. My Mom made these all the time w/o the choc. chips, melted in my mouth. Thank you!!! Little pup is so adorable.

  52. These rocked! But I think I have found an even "skinnier" version… I used Stevia instead of sugar, also added zest of one orange when added only milk chocolate chips(all I had)….results were amazing….and with ZERO calorie sweetener, you van eat more!!!!!!!!

Will totally be keeping these on hand as a tiny reward at the end of the day (when I've been good). Love your site! M.

  60. Hi Gina,
Love your site! Thank you so much. I'm back at WW again and this is so helpful for finding new reciepies that has all the figuring already done. Hi Gina! Ok, so I am loving these, I made a batch last night and I have a question for you…although I believed them to be dry after about 40 minutes of cooking, they're quite chewy today (props to me for even having any left today, I had to seriously self monitor last night, they're sooooo good!) and I'm wondering if I should cook them longer, or is the chewiness to be expected? I didn't store them in the fridge, just airtight on the counter.

Thanks for all the great recipes, and congratulations on this new chapter!

  63. I started "dieting" in January and yours was one of the first blogs I found. It's been so helpful in the start of this journey. Thank you for sharing your recipes.

How exciting for this new chapter of your life!

  64. congrats on the big new adventure !
Thanks for all the recipies, they're all so good ! and most them I tired are now a favorite in our house !
Just tired these cookies, and amazing !
I didn't have cream of tartar in the house, so I used vinegar (3 x 1/8tsp) instead.
Love the result, will definitly make these again !

  65. Hi Gina, I am so happy for you that you get to spend more time with your kids. I am looking forward to more recipes and I especially enjoy your main course recipes that really help me with meal planning.

  69. I have made these cookies 4 times since I saw this recipe on Thursday, and each time they have disappeared within the day. Finally, I made them late enough last night that there were some left this morning. Good thing they are only one point!! My entire family loves them! 🙂

I went to a reunion cast party, tonight and took them (along with another batch of cookies, and a batch of sausage balls)…the co-host is a gluten-free eater, and so…I made everything gluten free. EVERYBODY loved these cookies…it was inSANE! I didn't tell them that they were not only gluten free, but also LOW IN POINTS+! :o)

I used mini chocolate chips, and no white chips…OMG…sooooooooo good!

  91. Dear Gina, your little girl is just adorable! and the puppie is so cute. I can only imagine having them both around when you´re cooking.I am a mess in the kitchen just hanging around by myself!!
    I love your recipes. Delicious!!

  93. As already mentioned, you really need to work on getting a cookbook published! I have been LIVING on your site. I'm obsessed! No recipe of yours has disappointed me yet. Thank you and best of luck on a smooth transition to your new chapter in life.

  94. Good luck with your new life. Enjoy every minute of it!!!! Thank you for all the wonderful recipes.

Congrats and good luck to you! I for one am glad that we can look forward to getting even more great ideas from you. I think I need to open a whole board on Pinterest just for Gina's recipes!!

  97. Oh Gina!!! Congratulations, this is GREAT news! So exicting!!!! For you, your family and for us readers!!!! Could a cookbook be next???? Kidding! (sort of! 🙂 )

  98. Congrats on a wonderful decision made! I left my day job 4 months ago and haven't looked back. It's great being home for my 2 and 4 year old!
Question about the recipe: does it work with Splenda?

I loved reading all your comments, some made me laugh, smile, and others confirmed I've made the right move. I wish I could respond to each comment directly, but know that I am reading them over and over again!

A cookbook is something I would love to accomplish in the future, fingers crossed.

And who am I kidding, I probably won't have any more time than I already have now, I always felt like going to work was my stress reliever and quiet time. Having a little one running around is a whole lot of work!! But worth it. I'm sure I'll find a way to squeeze in the cooking.

  100. Congratulations on your new stay at home adventure…I'm sure family and all your fans will keep you busy. I'm pleased you'll be cooking more too. Thanks!

  101. Gina, I have made ALOT of your recipes. Actually, at work a few of us cook from your site and discuss the results everyday. EVERYTHING is delicious. You should put together a cookbook with your extra time. I know we would all purchase it. Enjoy your extra time and family time. Thank you for posting these delicious and healthy recipes.
    Becky

  102. Wishing you all the best as you make this transition…and super excited about where you'll take your site next! Thanks for being such an important part of our family life. We make recipes from your site every single week!

  103. Congratulations and the best of luck to you. I can't wait for all your new recipes that you will come up with. YUMMMMMMMM!!!!!

  104. I am glad to hear you will still be providing great recipes! I cook from your site often and find your pictures of the food amazing and dare I say, almost sensual 🙂 they really make me want to try and serve the same thing!

  105. That is so great! I think often about how lovely it would be to take some time to do what I really enjoy, although I do love my job.

I really enjoy your blog, and have made several recipes that are always big hits! Keep up the great work!

  107. I love your site! You are gifted in many ways—-look at your photos of food—you could make a brown paper bag look good–but all points aside, you have found your niche. Your NEW focus will be blessed beyond measure. Kudos,to you!!!!!

  108. Huge Congrats for making this change. I want to say THANK YOU!!! From the bottom of my heart, when I was having trouble losing my baby fat when my daughter was born I turned to WW and found your site which I fell in love with instantly. This sparked my desire for cooking that had been lost while I was pregnant. I lost some weight, but more importantly, your site and recipes help my family grow closer and gave me the tools and support I needed to become a better person. I didnt lose all the weight I wanted to, but I realized I dont need to. I love my "new" curves and I am healthy. Thank you!!!

  109. Congrats on making that big leap! I'm sure that was scary but it will be so gratifying for you, I'm sure. The cookies look great!!!

Hello Gina, I'm sure that decision did not come lightly but change is good every now and again. I know your family and your followers will certainly appreciate it! :o)

I wanted to ask you about using parchment paper. I had my first experience with it recently when making some (tsk tsk) slice and bake store cookies. The bottoms were burnt solid black! I was trying to protect my new pro-grade cookies sheets but ended up having to toss the whole batch. Did I do something wrong? Can you only use parchment paper if it specifically suggests it? Maybe it was bad cookie kharma for buying pre-made cookie dough.

  111. Gina so very happy for you, and yes so very happy for me and the rest of your followers. Selfish as it is, I love love love the idea that you will have more time to create and post new recipe's. By far the BEST site for recipes and not just for healthy eating, but for rich flavor that is never compromised. You are my Recipe Rock Star!! All the success!!

  112. Hi Ginna!
I wish you all the best and my hats off to you for having had the incredible energy to have been juggling so many things (motherhood, chef, photographer, career, blogger, etc, etc!!). I recently shared some of your recipes at my local WW meeting. Besides your great recipes I just love the pictures you post!..I'm trying myself to learn more about photography…it's so cool to be able to capture precious moments on camera…I'm sure your move will be a complete success and I look forward to your future postings….Go girl!!!

  113. What you described is exactly what I experience with a 2 year old. I wish I had more time to make recipes and take food photos but with working full time it's tough. Congratulations on being able to stay home! Your little one is so cute. I can't wait to be able to do that some day. 🙂

  114. Gina, I just joined WW and love it. I visit your blog almost daily and I even told my meeting how great ALL your recipes are, and easy too. My four year old and I made these cookies yesterday, and we adored them! QUESTION: If I want to use stevia instead of sugar, will the recipe still work or do you need the sugar to create the fluffiness? Thanks Gina for helping me have a yummy WW start!

  115. that is wonderful, Gina! enjoy this special time with your family and your recipes. i come to your site daily for inspiration in my own kitchen. peace.

  116. Congrats on your sweet news! I adore this site, your recipes and beautiful photographs. All the best to you.

  117. Congratulations on your new journey and plenty blessings! You have touched so many of us with your wonderful recipes and we cannot thank you enough for your postings. My family and I enjoy your recipes so much that it has turned into a Sunday ritual. We browse the site and cook a recipe we want to try. We make enough to last for the week or at least until Wednesday since they're so yummy! Thank you again. I look forward to seeing what else you have in store for us. Recipes and pictures!

  118. I must second many on their comments. I too discovered your site not too long ago and I check it every day. I usually tag things on my wish-list of baking/cooking or end up going to the grocery store to take on the challenge of making something you've made. I absolutely love your work and I hope you have great success. Sometimes leaving job just opens the doors for others to follow. Congratulations!

  119. Wonderful news! It is a blessing to be able to make that choice. I look forward to more yummy recipes and gorgeous pictures.

I wish you the very best in this new and exciting chapter of your life!

  122. My family makes these every year at this time of year only we call them meringue cookies. 😉 They are delish!! We make them for Passover since there are so few yummy dessert items made without flour. Glad others are going to get to enjoy what we have been enjoying for years.

    And Congrats!!

  123. I'm so happy for you! I recently found your site and have to say that EVERYTHING I have tried so far has been amazing… well, aside from the carrot cake but that was me not you! I'm sure had I followed the directions and fully baked my cake it would have been awesome!!! I have shared your site on my blog, with family, and with pretty much anyone who has mentioned they are trying to eat healthier! THANK YOU!!!

Enjoy your time at home with your family!

  124. Gina I always enjoy your recipes and comments from viewers. I am always trying to lose weight and it seems at 72 it gets harder every year. I enjoy when I get your e-mail's with new recipes. Congratulations on your new adventure and staying home with your little darlings. I must say as a Mother of 3(they have been long gone) the years go so fast, even with our Grandaughter (who has just travelled the World after University). Enjoy your little darlings before they are off to University. Good Luck

  125. Congratulations on the changes in your life. You have such a talent for photography, food and writing I just know you are headed for wonderful things. 127. I am so very happy you have decided to focus on your passions- FAMILY FIRST, food and fotography (had to stick with the theme). I know this is the right path for you and I wish you the very best. I cannot WAIT to see what Skinnytaste is about to explode into! My continued support to you always!!!! Best of luck to you! make something from here no less than 4 times a week and have been doing so since I discovered it maybe 6 or 7 months ago. I've often thought to myself, "How on earth does she have time to do this!??" You are Wonder Woman, that's for sure! Anyway, thanks for all you do.

  128. I just wanted to take a moment to thank you for your dedication to this site and always coming up with great new recipes or adapting others to make them WW-friendly. I started WW 11 months ago, wearing a size 16 and being incredibly unhappy with myself. To date, I have lost 48 lbs, I'm wearing a size 10, and my confidence is through the roof! There is no question that my beloved skinnytaste is a HUGE reason that I've had such success! I make something from here no less than 4 times a week and have been doing so since I discovered it maybe 6 or 7 months ago. I've often thought to myself, "How on earth does she have time to do this!??" You are Wonder Woman, that's for sure! Anyway, thanks for all you do. Your hard work and commitment to this website have personally affected my life by making it easy for me to plan and cook healthy meals and stick to the plan. You are so appreciated!!!

  129. Thanks Gina for all your time and recipes.Love them all.

  130. Wow Gina this is really great news! I want to thank you for your dedication to all your followers and your terrific blog. Also for helping me to maintain my weight and most of all to really enjoy cooking and learning so much from your great recipes! I will buy your book when it comes out( i know you're gonna get a deal, you're too good not to!) and I hope you have your own show too! I can't wait to make these cookies for my family and friends! Thank you Gina you're the best! Love that you represent NY too 😉

  131. Congratulations on starting this new (and exciting) chapter in your life. I wish you only the best! These cookies look delicious. I make a similar meringue cookie, that is amazing…if you like mint and chocolate. 🙂 Recipe varies a bit from yours and I use mint extract and mini chocolate chips – but they are amazing! Each cookie is 22 calories, 1 g. fat, 4g carbs. If you'd like, I'd be glad to share the recipe.

I love your site! Being able to prepare healthy, nutritious, low point/calorie meals for my family and having absolutely NO ONE complain is priceless. Especially since I'm feeding my hubby, a 4 year old, and 2 year old.

I'm definitely going to have to try your variation of chocolate chip meringes. They sound delish!

  132. oh gina! such great news! this has to be my favorite post so far. love the pics and they made me smile… and these sweet treats…. oh my my my…. right up my alley! next time you are here we are making them!

  134. Congratulations! I'm so happy for you and JEALOUS! 🙂

  143. Congratulations and good luck on this wonderful new chapter in your life! I hope this change brings you and your beautiful family much happiness.

I admit I've never been a fan of meringue cookies, but your daughter's recipe looks surprisingly good to me. It's actually the texture I don't care for, so based on your description, I think I'm going to give them a try and just let them sit for a couple of days before I eat them.

Thanks for everything, Gina. Your work here is very much appreciated! 🙂

  144. How exciting! I havent' commented in a while, but I'm still following you.

Thank you, thank you, thank you for posting these. I need something sweet and I'm tired of the same old light stuff.

  145. You had me nervous there for a minute-I thought you were going to be leaving us! I just found you when I started WW 4 weeks ago, and I have to say, your recipes are AMAZING!! I select something from your collection each and every night. You are a very talented woman, and I am happy that you are going to be gracing us with even more healthy treats in the future. Good luck with this new transition, enjoy every minute of it! And thank you again for all the time and effort you put into getting and keeping all of us healthy, happy, and well fed!

  146. Congrats 🙂 MMMM these look so good. My grandma makes them without chocolate chips, this is a brilliant idea!

  147. Congrats! These look very good, do you think you could use butterscotch chips in them instead of chocolate chips?
