This chicken breast recipe is made with satuteed garlicky spinach and melted mozzarella. Perfect for those hot days, no need to turn your oven on, you can do this all outside on the grill! What is the best way to grill chicken?

If you’re doing this on the grill, make sure to have the sauteed spinach and peppers ready. First grease the rack with non stick spray or oil. Then turn on the grill on and let the grill (or grill pan) get hot. Once it’s hot, place the chicken breasts and let stand until there are grill marks and chicken has browned. Then flip and do the same. This is anywhere between 2-5 minutes per side depending on it’ thickness. You can turn the grill off, top with sauteed spinach and mozzarella and let stand for a minute or 2 with the grill closed to let the cheese melt.

You can make this with skinless chicken thighs as well. Just trim the fat and adjust cooking time, thighs take a bit longer.

Ingredients

  • 24 oz 3 large chicken breasts sliced in half lengthwise to make 6
  • kosher salt and pepper to taste
  • 1 tsp olive oil
  • 3 cloves garlic, crushed
  • 10 oz frozen spinach, drained
  • 3 oz shredded part skim mozzarella
  • 1/2 cup roasted red pepper, sliced in strips (packed in water)
  • olive oil spray

Instructions

  • Preheat oven to 400°F. Season chicken with salt and pepper. Lightly spray a grill or grill pan with oil. Cook chicken until no longer pink, about 2 to 3 minutes per side.
  • Heat a skillet over medium heat. Add oil and garlic, sauté a 30 seconds, add spinach, salt and pepper. Cook until heated through, 2 to 3 minutes.

  • Place chicken on a baking sheet, divide spinach evenly between the 6 pieces and place on top. Top each with 1/2 oz mozzarella, roasted peppers and bake until melted, about 3 minutes.

  1. One of my family’s all time favorite chicken breast recipes! I used fresh spinach wilted with a little olive oil and garlic. The first time I made it I didn’t have jarred peppers but I did have a fresh red pepper on hand so I used that and have continued to use fresh ever since because it is so good!
    I just cut the pepper into quarters, seeded it, let it char skin side up under the broiler. When it blackened I let it steam in a zip top bag, that way the charred skin comes right off and the pepper is soft and incredibly aromatic and delicious. Slice into strips and it’s good to go.
    I’m sure jarred peppers are good too, I’ve just never had them.

  3. So I loved the flavor of this chicken. I ended up using fresh spinach and next time need to use more. I also just oven baked it for 15min at 400 and then layered with the toppings for another 5 min. They were so juicy.

  5. This is a favorite recipe. Can’t believe I just made it for the first time. I used grilled chicken that I had marinated lemon, and rosemary and herbs. I used fresh spinach and also added a 1/3 cup of onion to that. Got some local Caputo Brother fresh mozzerella to splurge on these and it was so good. A winner, would be enjoyed by company. Saw a recipe in Skinny taste book for pearl couscous with veggies–also saw on on the web site, and had a version of that with this–aspargus, zucchini yellow squash, (in the couscous) Thanks for a great recipe

  10. Do you mean thawed frozen spinach? I used frozen spinach- so I couldn’t drain it? And it took longer to cook on the stove.

    I have had many fabulous meals from the Skinny Taste website; this was not one! I read the reviews and go from that. I do not know how anyone could give this a 5 star rating. This was all right, but I certainly won’t make it again. And, yes, I followed the recipe.

  13. My family devoured this!  I subbed kale for spinach and used tomato confit (tomatoes cooked in olive oil and garlic) in place of the roasted red pepper because it is what I had on hand.  It was a delight watching my kids shoveling those greens in their mouths!

  17. this is delicious. I tweaked a bit by baking thin chicken cutlets for about 5 minutes. Then adding the toppings and finishing until cheese melted. Used a very yummy roasted red pepper and artichoke bruschetta from Trader Joe's (zero points).

  19. My husband and I have been trying to become healthier people since finding out that our parents are each having cholesterol, blood pressure, and heart problems early in their lives. We've even somehow managed to cut out canned vegetables, broths, and soups (they are extremely high in sodium and you usually add even MORE salt when cooking them). It has been such a challenge to find a variety of healthy recipes that weren't bland and left much to be desired. I made this tonight and we LOVED IT! I used red bell peppers instead of red peppers because Kroger had them on sale lol I think next time I'll add a little lemon juice to the spinach for a slight zing. Thank you for making my life a little easier. This was nutritious AND delicious! Even our 16 month old ate his entire plate!

    I made this the other night and it came out fantastic! I did modify a few things, instead of using chicken breasts I used chicken thighs. Instead of using roasted red peppers I used sun-dried tomatoes (I'm so glad I did this!). And the leftovers heated up really nicely.

  28. I did this with Fresh baby spinach. The spinach gets such a yummy garlic flavor. We also didn't have any mozzarella cheese but I thought we did and I used Swiss instead and it was actually pretty tasty!

    This recipe is a great base to help me clean out the fridge. I used turkey cutlets and caramelized onions. It did increase the calories a bit but I'm sure it will still be delicious!

  38. Just made this! I had Green Giant Lightly Sauced Spinach Steamers. I thawed in microwave then sauteed with the garlic. I had a bit of left over shredded chicken. I placed it at the bottom of a dish, put the spinach on top and topped with Kraft Swiss cheese singles. It was yummy! I have 3 toddlers in the house who loved this over some rice. I had mine over salad.

  41. I made this tonight for dinner using broccoli rabe instead of spinach and it was delicious!!!!!!!!!!
    How do you roast peppers yourself?

    1. The way we roast our own peppers, is to put them on a baking sheet in the broiler until charred, blistered and black (you could do it on a grill also). Once they are out of the flame, put them in a ziploc bag for about 20 minutes. The skin will peel right off, and you have homemade roasted peppers!

I made this last night for dinner except I used fresh spinach and seasoned the chicken with Italian seasoning instead of pepper and salt. Went over great with my boyfriend.   50. My SIL turned me on to your site. This is the first thing I made and there is only one word to describe this dish – YUMMY. The only thing I did different was I marinaded the chicken cutlets in a little lemon juice, olive oil, garlic and parsley for a couple of hours. All the tastes blended together were just perfect. Tonight I'm trying the Chicken and Mushrooms in the Garlic Wine Sauce. My mouth is already watering. Thank you for sharing all these wonderful recipes.

    Kassie, to cut the chicken breast, press down on the chicken with your hand then using your other hand take a sharp butcher knife and slice through. If you still can't do this, you can use thin pre cut cutlets. It's really a simple dish.

  62. This may sound ridiculous, but I am giving up on trying this recipe. It seemed easy to me, too, but I can't seem to cut a chicken breast in half evenly (or even CLOSE!) Could I just use smaller breasts if I find them? Also, maybe once the grill is out and ready to go it will work, but doing the George Foreman, stovetop for the spinach, AND the broiler is too much for me. Don't get me wrong, I am a BIG FAN. Probably 3/4 of the meals I make are "Gina recipes". But I just can't seem to get this one to work out for me. Disappointed because it looks delish!

    1. Don't give up!! There are videos on youtube you can watch. I couldn't figure it out at first too, but the videos helped and so does a sharp knife!

    Fresh sauteed baby spinach of course would be amazing if you prefer!!!

    For a fish, I would use a white fish like tilapia, flounder or sole. Great idea! Maybe add a little lemon to the spinach!
