A low fat ranch dressing will leave you feeling cool as a cucumber! Light and refreshing, perfect on a simple wedge of lettuce, with tomatoes and cucumbers.
This ranch dressing was lightened up with Greek yogurt, low fat buttermilk and light mayonnaise along with cucumbers, Spring chives, parsley and a hint of lemon. If you don’t like mayonnaise you could replace it with more buttermilk and yogurt.
Skinny Cucumber Ranch Dressing

Serving Size: 1 /4 cup
Ingredients
- 1/2 cup lowfat buttermilk
- 1/4 cup light mayonnaise
- 1/4 cup fat free Greek yogurt
- 1 small cucumber, peeled and seeds removed
- 3 tbsp fresh parsley
- 1 clove garlic
- 1/4 cup chives or scallions
- juice of 1/2 lemon
- 1/8 tsp garlic powder
- 1/4 tsp fresh ground pepper
- 1/4 tsp salt

- Combine all ingredients in a blender.

Gina, What can I use as a (dairy free) substitute for the yogurt? (can't use sour cream either). I can eat mayo and I'm going to substitute lactose milk and vinegar for the buttermilk. Thanks!
This was perfect for last night's main dish salad. I subbed cilantro and lime for the parsley and lemon, and threw in half of a seeded jalapeño. Was a bit short on chives, so some red onion worked as a stand-in. And finally, used full fat plain yogurt. Thanks for such wonderful inspiration!!!

What type of light mayo do you use? I have light mayo in my fridge but it is 5 grams of fat for 1 tablespoon. Does this sound like yours? I just want to make sure that I don't increase the number of points!
For a 1/4 of a cup of milk, put maybe 1-2 tsp of vinegar or lemon to make buttermilk. Let it sit for a few minutes until it thickens. I like lots of vinegar and like to watch it curdle to buttermilk!

Made this today and love it! It's so light and crisp. It tastes like summer to me! I love that your dressings are so light that a serving is a 1/4 cup. That's huge, love it! I don't know that I'm ever going to buy bottled again.
Awesome dressing!!! Super light, cool and refreshing. I was thinking garlic AND garlic powder?? but it's not overpowering at all. I have a major food aversion to mayo, never used it and never will I have honestly never even touched it so I used moer buttermilk and greek yogurt. Mine came out more watery than the picture but I love it still. Thanks!!

This would make an awesome light snack or side dish. I like to chill my cucumbers beforehand to get them extra crunchy.

really tasty! i make almost all my own salad dressings but my repertoire is lacking in creamy dressings like this. I wanted to to make something to mix with some broccoli slaw for a quick side dish and this was perfect. I upped the salt a tad and next time I might add some hot sauce to make it a little feisty.

To scoop out the seeds, cut it in half lengthwise then scoop out the seeds.
Sour cream would work in place of yogurt, this would last about 3 days in the refrigerator. You can make half if you don't think you'll use it all.
I keep a can of "powdered buttermilk" in refrig and use it all the time.. works great!
aso.. can ff sour cream be substituted for yogurt?? and I too would like to know how long it will stay fresh? thanx

Great tip with the buttermilk, thanks for sharing! This would store for about 3 days. You can easily make half instead if you are eating for one.

Hi Shannie Michelle, I have a tip for you for your buttermilk, after using the amount called for in the recipe just freeze the rest in 1/2 cup portions and the voila buttermilk for your next recipe and no more buttermilk to pour down the drain

could I substite the buttermilk with lowfat milk and vinegar? I just don't buy buttermilk because it always goes to waste before I can use it all.
You can buy powdered buttermilk…
I do not know if vinegar and lowfat milk will work. However, my grandmother taught me to just throw buttermilk in the freezer until you need it. It works well for me!
You can freeze buttermilk in pre-measured quantities and freeze it until needed, too. I saw on Pinterest someone using ice cube trays.
Let the low fat milk & vinegar sit for about 10 min. I use this as a substitute for buttermilk all the time. I use skim milk and a little more than a T of vinegar per cup of milk.
