Since making chicken rollatini stuffed with prosciutto and cheese a few weeks back my husband has been craving chicken rollatini the way he grew up eating it, stuffed with cheese and topped with sauce and more cheese. I added some spinach and it turned out delicious. It’s a cross between my Chicken Parmesan and Spinach Lasagna Rolls.

To serve this chicken rollatini, I like to make a big chopped green salad on the side.

To freeze the leftovers, transfer to freezer safe containers and freeze for up to 3 months.

Ingredients

  • 8 thin chicken cutlets, 3 oz each
  • 1/2 cup whole wheat Italian seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese, divided
  • 6 tablespoons egg whites or egg beaters
  • 5 oz frozen spinach, squeezed dry of any liquid
  • 6 tbsp part skim ricotta cheese
  • 6 oz part skim mozzarella, I used Polly-O
  • olive oil non-stick spray
  • 1 cup pomodoro sauce or your favorite marinara sauce
  • salt and pepper to taste

Instructions

  • Wash and dry cutlets, season with salt and pepper.
  • Preheat oven to 450°. Lightly spray a baking dish with non-stick spray.
  • Combine breadcrumbs and 2 tbsp grated cheese in one bowl and 1/4 cup egg beaters or egg whites in another.
  • Shred or finely chop 1.5 oz of mozzarella cheese and combine with remaining grated cheese, spinach (make sure you squeeze it dry), 2 tbsp egg beaters, and ricotta cheese.
  • Lay chicken cutlets down on a working surface and spread 2 tbsp of spinach-cheese mixture on each cutlet. Loosely roll each one and keep seam side down.
  • Dip chicken in egg mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed).
  • Repeat with the remaining chicken. When finished, lightly spray with olive oil. Bake 25 minutes.
  • Remove from oven, top with sauce then cheese.
  • Bake until cheese is melted and bubbling, about 3 more minutes.
  • Serve with additional sauce on the side and grated cheese.

    Are there any whole wheat bread crumbs out there that don’t cost $14.80 (Amazon). If not, can someone post a link to homemade whole wheat bread crumbs. I can not justify paying $14.80 for bread crumbs.

  2. Why did you switch all your recipes to freestyle points and not just keep the smart point values as well? There is a large portion of WW people that did not switch, or, switched back to smart points after they found they were not having success with new plan. 

    We do love your recipes by the way! I check your meal plan first while thinking about the menu for the week. Thank you for all you are doing.

  4.  Made these tonight and they were great. Made some minor modifications … Served with pasta for my carb lovers and and for a couple family members I crumbled crispy turkey into the spinach and ricotta mixture. Also I used fresh spinach, chopped in the  Cuisinart instead of the frozen.

    I have this cooking in the oven as we speak and its looking good! I used fresh spinach and chopped it up and added mozzarella and parm cheese to the ricotta. Can't wait to see how these are going to turn out. I think ill try that spinach and grapefruit salad since i have a lot of spinach left over!

  9. Made this last night for a date and it came out exactly how I hoped! Instructions could have been formatted so they were a bit easier to follow. I ended up with some extra spinach/cheese mixture that I couldn't stuff into the cutlets (I used halved breasts actually).

    Served with green beans (melted butter and breadcrumbs) and salad.

  10. Loving your recipes! Can u tell me how u get 6 tblsps of egg white? I live in Australia and havent heard that term or egg beaters. I only know wgg whites from an egg.

    1. (Sydneysider) you can buy egg whites only from Coles, in the fridges near smoked salmon and deli dips etc. Just ask someone at the counter.
      However if you want to use actual egg whites the internet tells me that 2tbsp is about 1 eggwhite.

  15. I have made this recipe before and love it. I love every recipe on this site! Do you think I could put the chicken together early and keep it in the fridge for a few hours? When I make this, should I cook it first and then freeze it for reheating or can the rolled up chicken servings be frozen in the raw state? If frozen in the raw state, should they be allowed to thaw before cooking them? They sound delish!

    Hi! If I make these ahead of time…should I cook then reheat or just leave uncooked and cook when it's dinner time. I am going to make during my kids naps so it will only be like 3 hrs until I cook them. Thanks!!

      I made this for a friend who had lost a loved one, and they kept it in the fridge uncooked for 2 days before baking it, no problem. I'm planning to try it as a freezer meal sometime (uncooked) and just defrost in the fridge the night before.
      You may need to add extra time if it's been in the fridge and is colder. Just check it and adjust as needed. 🙂

    I am making this for a friend that lost a loved one. Would this freeze well? I am thinking I'll give it to her uncooked, with directions to bake for 25 minutes, top with cheese, and bake for 3 more minutes. If she doesn't use it in the first few days, she can freeze it and come back to it (defrosted first).
    Or should I bake it first, and let her reheat as she wants? I just don't want it drying out.
    Also, I'm thinking I'll skip the breading step… she's doing low-carb… and give it to her in the sauce to keep it warm. Just a bag of cheese on the side for the last step.

  35. This is the recipe that I and my fiance are obsessed with. I double the spinach and add in a whole bunch of garlic powder to the ricotta mixture (and freeze the resulting leftover mixture for next time) because yum. Also we might have garlic bread on the side, negating the extra spinach. Whatever, this is one of our favorite dishes ever.

    I made this last weekend and it was so delicious!!!! I didn't have any frozen spinach so I added fresh spinach and even some fresh arugula in the ricotta mixture and it was so yummy!

    I have a question – I want to make this dish for a co-worker that just had her baby. I was going to make this and take it out after 25 minutes. Let it cool down and then add the sauce and cheese on top and then freeze it. Would that work or would the texture of the ricotta mixture change? And what do you recommend on how to heat this in the oven?

But I needed a vegetarian dinner for one of my kids and didn't have a lot of time, so I made a little extra of the spinach and cheese mix and stuck it between two of her favorite vegetarian 'chic'kn' patties and baked it at the same time and temperature as the rest of it and she loved it!

Except more healthy and it kept me more full thanks to the protein in thethe chicken instead of the carbs from the pasta.     I have not used gluten free crumbs, I did try them with almond meal but was not a fan. I might leave the crumbs off for a gluten free option.

    This is SOOO good! I made it with fresh spinach because I was trying to use up a bag. Hubby scarfed down 2 servings and I was soo tempted to join him! Saved a portion for lunch Monday instead. I laughed out loud though, because when I was putting the leftovers in a container, he took the spoon from me and made sure every single scrap possible was scraped out of the casserole dish– he didn't want me to accidently throw a bite away!

    I was surprised at how easy these were! Really the first "stuffed" chicken I've ever made successfully. I love that you don't even have to bother with toothpicks. I used regular chicken breasts and sliced them in half for thin cutlets (a bit tricky but I got the hang of it). The end result was delicious and filling with a caesar salad on the side.

  231. My girlfriend decided to make these tonight with my help of course, and let me tell u , what a treat.  Although I'm not a big lover of spinach, the combo of sauce , cheese, chicken, of course, and spinach was simply splendid.  

    With a side a angel hair pasta with the pomodoro sauce, and a glass (bottle!) of chianti, it made for a terrific dinner.  And the best parts is, seconds will be had for Monday night football. BRAVO!!!!

I made this the other night and it was fantastic…We enjoyed it so much that I also used the Spinach filling as a base for manicotti…just added a little crushed fennel seed and some extra ricotta, parmesan, and spinach and there was plenty to fill an entire box of shells!!   236. I prepared these the night before I served them, and although I was worried they would be soggy, they came out great! This was the second time I've made these, and there were a few things I did differently that I think made them better. First, I made sure to really squeeze the spinach dry, including following Gina's suggestion to use a paper towel to get any excess liquid out. Second, I bought the thin chicken cutlets, but I also pounded them to make sure they were all even thicknesses. I think this also tenderized the meat a bit. Lastly, I used panko bread crumbs which added a little extra crunch. Both times I made these were a hit with no leftovers!

  240. Finally got round to making this for the first time, I'm the one who asked if ricotta cheese would be suitable for someone with lactose intolerance, answer is not really, not even for the mild intolerant ones.
    Just thought I will post this so other people with similar problem can find a substitute for the ricotta cheese.

  241. Made this last night and it was awesome! Changed up the steps a little bit to dip chicken cutlet in eggs, both sides in breadcrumbs/parm mix; spread ricotta/spinach/mozz mix; then roll and place in pan. (Just like the prosciutto rollatini).

    You could replace the ricotta with mozzarella, although I'm not sure that wouldn't be an issue for someone who is lactose intolerant.

    I'm assuming you are in the US Laura but they shouldn't! I use either the ww calculator by calculating the nutritional info first, or recipe builder. Keep in mind that different brands can alter the n.i. Also I use cooked weight for meat, 4 oz raw = 3 oz cooked.

    I thaw the spinach in the microwave, then squeeze it dry in a mesh colander. I even use a paper towel to help soak up any remaining liquid. Enjoy!

    Do you mix the spinach with the cheese, eggs, etc WHILE its frozen? Or do you thaw it first? If you do it while its frozen, do you just put the frozen spinach in a paper towel to squeeze out the extra liquid? haha, sorry, I'm a little slow when it comes to cooking 😉

    Tinamarie: It sounds like you didn't squeeze the excess liquid from the spinach which would make this runny. It should actually be thick.

    Tracy – A veggie version sounds fab and these would freeze great I'm sure!

    This was on our dinner table last night and everyone went back for 2nds except my husband – he had thirds! A few weeks ago I made the filling and homemade dough, as my granddaughter wanted calzones. The only thing I changed was adding Italian sausage. So much of the filling was left over, I froze it. Tonight, I made a quick tomato sauce, we cut and pounded the breasts, and they were ready in no time. Served with sauteed spinach. This recipe will now be my go to company dinner – outstanding!

  302. hey gina, i made this tonight but it was a bit runny, anything that comes to mind that i maybe messed up??? i actually ended up toothpicking it, then removing the toothpicks when i took them out to put on the sauce and mozza. but i think if i hadnt done that it would have been a soupy ricotta yummy mess! any thoughts???

    i should note, it was still INSANELY good…yummmm 5 points?!?! so amazing as usual.

    I tried this but couldn't find whole wheat bread crumbs so I just used regular italian bread crumbs. This dish was DELICIOUS! My family loved it – thank you I will definitely be trying more recipes.

  308. OMG! This was the bomb! My husband and I love-love-loved it. I just served it with steamed green beans and it was plenty! I didn't follow the measurements exactly so I ended up with a lot of extra spinach mixture…which was great because I quickly whipped up 4 spinach lasagna rolls for tomorrow night's dinner. Yum!

    Yes, I added 1.5 oz of mozzarella which I through in my chopper and mixed it in with the spinach so that it all binds well when melted and hot. The remaining mozzarella I thinly sliced and topped on the chicken, but you could use grated or whatever is easier. You just want a nice amount of melted mozzarella on top.

    If you can't find them, take a breast and slice it in half so you have two. Then lightly pound it with a mallet to make it thinner.

    1. I use chicken tenders for these rollatinis and it works great too, they are small and thin easy to roll up.

    2. Try pounding the chicken breasts between waxed paper. We used to do that with veal cutlets to make veal parmigiana. It works for chicken as well.

    3. Another alternative to cutlets would simply be just cutting chicken breasts in half. From top of the breast down to the bottom.
