Grilled Chicken Bruschetta is a summer staple in my house! Basically a caprese made with juicy tomatoes, mozzarella, basil, red onion, garlic and balsamic, a delicious weeknight meal!

Grilled Bruschetta Chicken is a summer staple in my house. We love it in the summer when tomatoes are the ripest – they’re definitely the star of the show. What is Bruschetta Chicken?

Bruschetta in Italian is an antipasto made of grilling bread, rubbed with garlic, and topped with olive oil and salt. Tomatoes and other toppings are often added like this simple tomato mixture that I served over grilled chicken. This recipe takes a classic Italian appetizer and turns it into a main dish.

How to Prep Ahead

Make the tomato mixture the night before or early in the morning and let all the flavors marinate. Then when you are ready to eat, grill the chicken for a quick weeknight meal.

What to Serve with Bruschetta Chicken

Serve Bruschetta Chicken with some crusty bread to soak up the juices, or just have it over a big salad or some zoodles. Some other side dish ideas are:

Variations:

  • For a dairy-free recipe, omit the cheese.
  • Swap vine ripe tomatoes for cherry tomatoes.
  • Sub balsamic for red wine vinegar.
  • If you don’t have a grill, use a grill pan instead.
  • Serve over your favorite white fish or shrimp.

Serving Size: 2 pieces

Ingredients

  • 3 medium vine ripe tomatoes
  • 2 small cloves garlic, minced
  • 1/4 cup chopped red onion
  • 2 tbsp fresh basil leaves, chopped
  • 1 tbsp extra virgin oil
  • 1 tbsp balsamic vinegar
  • kosher salt and fresh cracked pepper to taste
  • 3 oz part skim mozzarella, diced (omit for whole30, paleo)
  • 1.25 lbs 8 thin sliced chicken cutlets

Instructions

  • Combine onion, olive oil, balsamic, 1/4 tsp kosher salt and pepper. Set aside a few minutes.
  • Chop tomatoes and place in a large bowl. Combine with garlic, basil, onion-balsamic combo and additional 1/8 tsp salt and pepper to taste. Set aside and let it sit at least 10 minutes or as long as overnight.
  • Toss in the cheese when ready to serve. 
  • Season chicken with salt and fresh pepper.
  • Preheat the grill to medium-high, clean and oil the grates to prevent sticking.
  • Grill the chicken 2 minutes on each side, set aside on a platter and top with bruschetta and serve.

  3. I am making this tonight and can’t figure out how you come up with 38.5 g of fat?? I would think that skinless chicken breasts (8) with only 1 tbsn of oil and the small amount of cheese would be much lower??

    This super delicious chicken bruschetta topped with a yummy tomato  “sauce” is, in fact, topped with a traditional tomato salad which brought back childhood family  memories in which as children we would compete with one another to be the last to spoon out our portion of tomatoes so we could enjoy the lions’s share of the

  5. I made it without garlic because I didn’t realize we were out, but it was still delicious! My husband said it was the best thing I’ve made in quite a while. I’ll definitely make this again. 

  6. Really enjoyed this. I like garlic so I used two large garlic cloves and it was too much, should have just used regular size. Added a little olive oil to the bruschetta. Delicious.

  8. This was SO good!  Because I had time, I did marinate the chicken in olive oil, balsamic vinegar & basil.  We served it over spinach & arugula salad.  It was a big hit with the family.

  12. Super good and simple recipe! I cooked the chicken in a pan and tossed the bruschetta tomato mix (without cheese) into the hot pan after the chicken was done for a minute or so, and served the chicken, warmed bruschetta mix, and cool cheese over spaghetti. Delicious!

  13. I made this for the first time tonight and it was amaaaaazing. Only chance I made was to cook the chicken in a hot pan on the stove for 2 mins on each side since it’s raining here so no grill tonight. The bruschetta was better than I’ve had in many restaurants! I’ll definitely make this again. I paired it with the pancetta Brussels sprouts from this site and it made a delicious dinner.

  17. Oh. My. Goodness. This recipe was fantastic. I don’t cook often because I cook just for myself, and I hate having to use an oven in the summer. This is the right amount of light, satisfying, and makes a super great, super quick dinner for summer weeknights.

  28. I made a bed of mixed baby spinach and arugula with a little drizzle of balsamic glaze then topped it with the Grilled Chicken Bruschetta. I can always count on your recipes when I want to try something new, and this was just perfect for our hot summer night. In addition to tasting great, my husband even commented on how pretty (colorful) the plate looked!

    This was great!! So easy. I used a big tomato from my garden, and fresh basil from my windowsill. I’ll bet this good on other meats also. Maybe we’ll try it on swordfish next.

  37. Gina, What would I do without you?! My family eats Skinnytaste at least 2 to 3 times a week. When I’m sharing recipes with friends I hear, “Oh, that sounds amazing!   40. I’m obsessed with your recipes Gina! We had this last night and it was sooo good! We had it over baby spinach with just a little added balsamic vinaigrette that I made. I’m trying to keep my diet relatively low carb and I didn’t miss the bread at all!

  41. This is definitely on the summer rotation menu! We marinated the chicken with a dry pinot/basil mixture and grilled over applewood briquettes. The smokiness of the chicken was awesome pared with the sweetness of the bruschetta and even though we doubled the recipe there was nothing left. Gina, as always, incredible!

  63. Made this last night after having Bruschetta Chicken at a luncheon at work! It was delicious, I want to eat the bruschetta with a spoon and no chicken lol.     1. no, bruschetta is the tomato mixture. You can serve it on bread or whatever else you wish, in this case chicken. You are wrong.

      1. Actually bruschetta is an Italian dish that is toasted or grilled bread topped with olive oil, tomatoes, basil etc.  It is NOT the topping- at least that is true in Italian cuisine.

    So… OMG… totally yummy! Made it for dinner tonight and it was PERFECT! Here are some tweeks. First… after cutting tomatoes, lightly salt and put in drainer. The salt will pull out some liquid and help when mixing with the other liquids… otherwise onion/oi/vinegar/tomato mix can get a bit watered down. Also, I herbed up my chicken cutlets so they held some good taste on their own. Last, instead of cubes of cheese, I cut thin pieces of mozzarella and let it melt over cutlets. I still went according to the total amount in the recipe, but this way you get cheese in every bite and it's melted goodness gives the chicken some extra yumminess. I paired with green beans and a grilled herb bread w/side of roasted garlic. OMG… DELISH!! Thank you for the great recipe!!!

  79. made this last night and it was phenomenal. cut weight watchers mozzarella string cheese into chunks and added it to the bruschetta before marinating in the fridge for a few hours.. served with side salad and fresh corn on the cob.. amazing.

  80. I made this for dinner tonight and it was great! I used fresh mozzarella and served it over a big plate of field greens. Question…..are the measurements for the vinegar and olive oil correct? In the photo, it looks like there is a lot more than just 1 TBS each.

    I made this last night, and I concur – DELISH! Rather than buying a full ball of mozzarella, I used 3 individual mozzarella cheese sticks (available in singles in the cheese section!)

    Leftovers were my lunch today, the chicken is wonderful cold served over lettuce as kind of a 'Bruschetta Chicken Salad'

  86. This was wonderful! My husband loves it, too. Used seasoning salt and some lemon pepper on the chicken. We took leftovers to work through the week. This will be on a regular rotation throughout the summer!

  101. Made this tonight and hubby and I LOVED it. (Sadly my picky 7 year old won't touch tomatoes so he had his grilled chicken with some "garlic" a.k.a. cajun seasoning on it). We aren't a big fan of red onions, so next time I'll cut them back a bit. I also added an extra 1/2 tablespoon or so balsamic because I love balsamic. This recipe is going in my regular rotation.

    My husband loved it and he's not watching his weight which is a SCORE in my opinion!

    It was really good.. the tomato mixture reminds me of the Brushetta Chicken that TGIFriday's makes..

  112. Delicious! I used cherry tomatoes (because they are my favorite) and I pressed the garlic (3 cloves) instead of mincing. My boyfriend is not a huge fan of tomatoes, but he said he could eat this every night. My new favorite meal!

  113. I made this recipe the other night and it was delicious. I have fresh basil and HUGE Roma tomatoes in my garden. I broiled the chicken instead of grilling it because my husband always overcooks the meat when he grills it. And I accidentally left out the cheese, but I loved it! A great summer seasonal recipe.     This topping is almost identical to a fresh (uncooked) pasta sauce I make so I thought your idea to put it over chicken vs. pasta was genius!

  121. I made this last night with a few changes so I wouldn't have to go to the store. I used red wine vinegar,oregano, and reduced fat feta. I'm not sure what that does to the points, but the taste was great! Can't wait to make your version though!

I was raised a Southern girl and was only taught to cook things using butter, cream of mushroom soup, and Ritz crackers. I needed to break out of the monotony!   134. I made this tonight for dinner, and it's definitely a keeper! My husband asked me to make it again next week. Our kiddos won't eat tomatoes, so we had a lot left over. It tastes great by itself too for a quick snack. Yum!!

  139. Gina, this was a perfect summer dish – easy, no cooking required, and delicious. I had with chicken grilled on my george foreman, on top of a pita bread crisped up in the oven. I made it with fresh mozzarella since I had some. Making it again for tonight. Thanks a million for all that you do, you've helped me to lose about 20 pounds.

  143. Thank you so much for this recipe! I made a slightly different version of it for my family last night and they all just LOVED it. I put diced up grilled chicken and a tsp of low fat mozzarella cheese on toasted sandwich thins that I cut into quarters(each thin makes 8 pieces)then melted that under the broiler and topped with bruschetta mixture. SO yummy!

I thought I'd try it because it looked simple with simple ingredients, and I was feeling lazy today, but I wasn't expecting amazing, I was expecting:, another attempt at healthy meals, which is always plain, dry chicken with light flavor added- healthy and plain. Boy was I wrong! This was so flavorful, moist, delicious, and soo simple! I'll probably be making this every week =o) I didn't have any cheese, so I skipped that part, I'm sure that will make it even more amazing next time, thanks Gina!

    No need to seed the tomatoes, I through it all in there.

    I have yet to find a part skim "fresh" mozzarella, I wish someone would make one!! Until then, yes I used store bought.

    I'm glad you liked my little story about Madison poking holes in my tomatoes 🙂 Little moments I will not forget when I come back to this recipe!

    I weigh chicken raw and cooked but I use the nutritional info for the cooked weight. General rule is 4 oz raw = 3 oz cooked.

    I love when people comment that they lost weight using my recipes!!! Makes my day!!
