This Thai-inspired stir fry made with colorful bell peppers, fresh pineapple, and chicken has a wonderful savory, sweet, and spicy flavor.

Thai Chicken and Pineapple Stir Fry

Years ago, I attended a Thai Kitchen event, where their chef demonstrated a few dishes using their new Thai Kitchen sauces. This Thai Chicken and Pineapple Stir Fry was one of the recipes, which they kindly shared with me. I slightly modified it to give it more kick, but you can leave out the chili pepper if you don’t like your food too spicy. More Asian-inspired chicken dishes that are super quick and easy are General Tso’s Chicken and Asian Peanut Noodles with Chicken. I also like Chicken Satay with Peanut Sauce and Honey Teriyaki Drumsticks.

How to Make Stir Fry

I love stir fry for quick weeknight dinners because they cook fast on pretty high heat. To make this dish even faster, prep all your ingredients ahead of time. Then when it’s time to cook, you can just throw in everything and have dinner ready in under 20 minutes.

  • Mix the chicken and fish sauce and then toss with corn starch.
  • Stir fry garlic and ginger for 30 seconds.
  • Next, cook the bell peppers, chili pepper, and pineapple for three to five minutes and add the sauce.
  • Take the veggies out of the skillet and cook the chicken. Then put the pepper mixture back in the skillet.

Variations and Tips:

  • Swap chicken for shrimp.
  • If pineapple is out of season, use canned pineapple.
  • Omit the chili pepper for a milder dish.
  • Add snap peas, broccoli, carrots, or onion for extra veggies.
  • I highly recommend using the fish sauce as it doesn’t taste fishy and adds a more complex flavor, but if you prefer not to, sub it with soy sauce.
  • Serve this pineapple chicken stir fry over jasmine rice for a complete meal.
  • Freeze the stir fry in food storage containers for up to three months. To reheat, thaw overnight and microwave for a couple of minutes.

Ingredients

  • 1 lb boneless skinless chicken breast, cut into 1-inch cubes
  • 1 tbsp fish sauce
  • 2 tbsp cornstarch
  • 1 tbsp oil, divided
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 2 cups cubed assorted colors bell peppers, 1/2-inch cubes
  • 1 red chili pepper, chopped (optional or to taste)
  • 1 cup fresh pineapple chunks
  • 1/3 cup Thai sweet chili sauce
  • cilantro leaves, for garnish

Instructions

  • Mix chicken and fish sauce in medium bowl. Add cornstarch; toss to evenly coat. Set aside.
  • Heat 1/2 tablespoon of the oil in large nonstick skillet on medium-high heat.
  • Add garlic and ginger; stir fry 30 seconds.
  • Add bell peppers, chili pepper if using and pineapple; stir fry 3 to 5 minutes or until peppers are tender-crisp. Add sauce; cook and stir until heated through. Remove from skillet.
  • Heat remaining oil in the skillet. Add chicken; stir fry 5 minutes or until cooked through.
  • Return bell pepper mixture to skillet; stir fry until well blended.
  • Garnish with cilantro.

  1. My husband and I really enjoy this recipe. Yesterday I made it with hoisin sauce as I didn’t have fish sauce. I also added leftover orzo and brocolli. I was going to add spinach but forgot. I love that this recipe is so forgiving and a great way to use leftovers.

  2. Where do you use the Thai sweet chili sauce? It doesn’t say it in the recipe. And in the video, it looks like she drizzles it on at the end but 1/3 cup is a lot to drizzle…

  3. I’m sure this would be good as is. But I needed to sub a few things. Only a green pepper so used carrots, red chard stems to fill it out. No Thai sweet chili sauce so used chili sauce and Thai green curry paste with a tablespoon of sugar. Also, my hubby is allergic to corn starch so used flour. We both enjoyed even tho the recipe was majorly altered. I promise to buy the ingredients for next time! So healthy served on brown rice. Thanks!

  7. So yummy! I added some chopped onion and mushrooms and used a jalapeño but kept everything else the same. The chicken browns up nicely and the sauce is divine. Comes together very quickly after the veggies are chopped up. I definitely recommend trying this out when you are craving Asian food.

  11. My husband and I LOVE this dish! The pineapple goes so nicely with the peppers, and the fish sauce/cornstarch mixture for the chicken makes the chicken so moist and flavorful. I used to find Thai Kitchen’s Pineapple Chili Sauce in the supermarket and it was wonderful in tis dish. Unfortunately I am not able to find it anymore, even online. Haven’t tried it with regular sweet chili sauce, but will soon.

    Gina – this is one of our go-to recipes…it is so good!!  I have a quick question.  It says 7 points on the new plan (it was 3 on personal points for me) and I can’t figure out where all those points are coming from!  Chicken is 0, pineapple is zero, and everything else in the recipe are small point values.  Was this one miscalculated?

  18. This Thai chicken stir fry was simple, quick to prepare and was absolutely delicious! It was hard to stop eating it. I threw in a can of diced water chestnuts, but otherwise prepared the dish as written and will make this again soon!

  19. Love this recipe. We do a variation switching the chicken out with tofu. We prep the tofu with cornstarch and cook separately first with oil until it is crispy. Then add it at the end to prevent the tofu from getting soggy. Very good.

    I made this with G. Hughes sugar free sweet chili sauce instead of Thai sauce. It was excellent.
    I also cooked onions with the peppers and added a can of the water chestnuts at the end.
    My middle aged self learned how to ripen pineapple by turning them upside down in vase.

  24. I doubled this recipe for a family birthday dinner, and it got rave reviews. I made it just as described, other than using only 1 red chili pepper for the doubled dish. I used 2 yellow, 2 orange and 2 red peppers, and I’ll have to say that in combination with the pineapple, this made the dish very visually appealing. I served the stir fry over jasmine rice with a simple green salad on the side. Delicious and easy!

  26. So delicious and easy to make!!!! One skillet made for very easy cleanup. Perfect weeknight meal. Whole family loved it and there was no leftovers😪. The only thing I added was a handful or so of peanut halves when I cooked up the pineapple and bell peppers.

  31. My store was out of fresh ginger. Do you suggest ground ginger, ginger in the jar, or neither?  Also, do you know if the amount I need to use should change and how much?   Thank you so much. 

  32. Wondering where you get the smart points from? I put the nutritionall information into my calculator and it says 8 points per serving.

The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.

      The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, now you know why.

    1. Thai sweet chili sauce is in a large bottle in the asian section of pretty much any grocery store….and sooooo yummy!

    1. Lauren, I dont eat any fish at all. I still use the fish sauce. I know its crazy, but you really dont detect any fish in the recipe at all. I wouldnt skip it, just dont let them see you use it and for sure, dont smell it! 🙂

  38. I skipped the chili pepper and it was plenty hot! When you remove the veggies from the pan, be sure to wipe out the pan with a paper towel. The sweet sauce burned like crazy in my pan and caused my chicken to become black before it was cooked. If you don’t have the fish sauce, I think you can skip it and just use water. My last note is that I wish this had some red onion and maybe another veggie in it. Don’t be afraid to add another veggie – it will work!

  39. The points are not adding up. When i put in all the ingredients in Weight Watchers to create a recipe, I get 3 points. When I put in the nutrition info from above in it is showing me 8 points. Gina, you are showing 7 points. Any insight?

    It says in one place that this is 7 SP and then in another place it on the page it says it is 4 SP. If you have time could you please double check and clarify which one it is?

  41. I made this tonight and we loved it. I only used half the amount of bell pepper but added red onion and snow peas. I also used frozen pineapple. It was spicy enough for my family without added any hot pepper.

  42. I made this but with much less peppers and added a bunch of stir fry veggies and still used pineapple. I had everything on hand but the sweet thai chili sauce. I found a recipe online and it was easy to make. I am glad I made it so I could control or lower the spice level. We love the flavors in this meal. Since we are doing WW smart points I didn’t serve it with rice. That is another reason I added a lot of veggies!

  44. I made this tonight when I didnt have my daily menu ready! I did alter the recipe by adding to it  broccoli,snap peas and carrots and using 1/2lb of chicken. I didnt have sweet chili sauce so I made up a sauce with tropical fruit juice,garlic chili paste,stevia brown sugar,cider vinegar- more of a sweet and sour.  I followed cooking directions and it was tasty and full of veggies. I did figure the smart points on my version and it was 6.5 per serving, basically the same!

This is a new favorite at our house!  I added extra bell peppers and probably more Sweet Thai Chili Sauce than called for….also used a splash of siracha for heat instead of the red chili pepper, because my store doesn’t carry those.  (love small-town grocery stores!)  I served it over a Texmati rice blend, which was great.   The leftovers were fantastic the next day.  You could really add any vegetables you like, as the recipe is super-flexible.

    1. It looks like she changed the recipe. Thai sweet chili sauce will be just as delicious. The Thai Kitchen specific sauce that she mentioned before was sometimes difficult to find.

  48. Made this last night and my husband loved it. I used a mix of bell pepper and onions, and canned pineapples. The sauce I found was a sweet chilli sauce made it Thailand and it went great with it. Served it with garlic rice. Thanks for a great recipe.

  49. I've made this numerous times and it's still one of my favorite Skinnytaste recipes. I've made it with the pineapple & chili sauce mentioned, and I've also used either sweet chili sauce or a mixture of duck sauce and sweet & sour sauce. It's always come out great!

    I've made this three times and each time it has turned out fantastic! As many others here have discussed, finding the Pineapple sauce was tough, but I substituted it with Sweet Chili Sauce and it was still amazing.

    I also used potato flour instead of cornstarch just because I thought it might be a little bit healthier (?) and it turned out just great. I actually tried it once with the cornstarch and then the next time used potato flour – I really couldn't tell the difference.

    If anyone is still having trouble finding the pineapple and chili dipping sauce, I recommend trying Albertsons if your town has one. That is where I found mine 🙂 Can't wait to make this for dinner tonight!

  52. Made this tonight and it was really good. Wegmans didnt have thai kitchen pineapple chilie dipping sauce but wegmans brand had sweet chilie sauce which was just as good. I also added mushrooms Everything else i kept the same. Will def make again. Served over white rice.

  53. DELICIOUS!! I made this dish last night and even my harshest critic (7 yr old) LOVED IT!! @Elizabeth (above), my little one is Celiac and cornstarch IS gluten free so you will be safe. Also, I didn't have the pineapple-chili sauce so I just substituted Thai Kitchen Sweet Red Chili Sauce. It was amazing!

  54. This is delicious! However, I'm getting this to be 8 points+ per serving. The chicken is showing as 12 for one lb. and the sauce at 18 for a 1/2 cup. Am I doing something wrong? I will definitely make this again – just want to make sure I'm counting it correctly!

    Did not have enough bell pepper so added green onions. Use pineapple juice and Siracha sauce in place of dipping sauce. Add ginger and garlic to oil before cooking chicken. A touch of soy at end. Canned pineapple worked well, too. Hubby said it was good upon first taste. BTW found recipe after searching for "tasty chicken pineapple recipe". Will definitely make again.

  58. This is an awesome recipe. Tastes amazing, but is not really a healthy alternative. The Thai Kitchen sauce (which calls for a 1/2 cup!) is loaded with sugar. Try using unsweetened pineapple juice and soy sauce instead. Keep the ginger, the garlic and the red chile pepper, and it will still be awesome.

  59. This was excellent and easy! I left out the chili because I was also serving this to a 4 and 6 year old (they loved it), but I don't think it significantly impacted the overall flavor of the dish. I also used sweet chili dipping sauce because I had it on hand and after searching high and low I still couldn't find the the Thai Kitchen pineapple chili sauce. I'm sure if I had made this according to Gina's exact directions it would have been even better!

  60. This is SO good. I used some kind of frozen chile cubes in the freezer section and I put WAY too many in but I like the spice so it was ok. The color and flavor were amazing.

I used frozen pineapple cuz I can't seem to keep fresh fruits and vegetables or they go bad too quickly. My family loved it! My kids have not rejected a recipe yet!! I am not a very good cook and I don't like to cook, but when I make one of your recipes, I actually get excited and enjoy cooking it. Thank you for the pictures.     I just checked the calories and I am not getting such high numbers as you. Are you using raw or cooked chicken in my fitness pal, as that will alter the calories. Send me an email so we can figure this out.

  63. I was plugging this recipe in to calorie count and my fitness pal (since I use both), and I too found that the calories were significantly off. I use 3 bell peppers so when I measured in cups, I was able to bring it up to 5.5 1 1/4 cup servings but the calories are still sitting at 271. Still pretty good but I hope maybe the calories could be updated in recipes!

  64. I love and use your recipes all the time. I made this tonight and it was delicious. However like most of your recipes I'm finding the calories are wayy off. Myfitnesspal.com has this at 301 per serving. Still not bad at all.

    I made this for dinner last night. I used a habanero and the heat level was perfectly balanced against the sweet. I used quinoa for my grain and that gave it a nutty balance that was well suited to my taste.

    This is my absoloute favorite…I couldn't find the pineapple & Chili dipping sauce so I used pineapple juice and sweet chili sauce…tasted wonderful. The taste on this site is out of this world. I very rarely cook from anything other than this site!!!!

  69. Is there a replacement for Thai Kitchen Pineapple & Chili dipping sauce? I live in Australia and won't be able to get it. This dish looks absolutely AMAZING!

    1. It is called sweet chili sauce comes in a 32 oz. bottle as well as smaller ones.  You can find it in the asian section at your supermarket or at any asian store.  I also use it on top of fried chicken or grilled chicken breasts.  Hope this works for you.

Had to go to 3 grocery stores and finally found it at Albertsons. It was well worth the search though. I did use the hot pepper in it and loved the sweet/hot flavor in it.   80. This was great! Prepped the night before it's a fast weeknight meal. For those who don't want to use or can't use fish sauce a great alternative is 2 parts soy sauce and 1 part lime juice.

    I tried this for dinner tonight and it was A.MAZE.ING!!! My local grocery store didn't have the Thai Kitchen Pineapple and Chili sauce. But I did get a sweet and sour sauce that was pineapple and chili based (two top ingredients). I imagine it was just as good. Instead of the chili pepper i used some crushed red pepper flakes. Thank you for sharing such a delicious recipe. I served mine over brown rice!

    I made this last night with brown rice and it was amazing. I also couldn't find the pineapple chili sauce so I just used extra pineapple and the leftover sweet chili sauce from your bang bang shrimp recipe (also an amazing meal!)
    My husband lived it and went back for seconds. Sweet and spicy, a real crowd pleaser!

    A skinny egg roll recipe would be perfect for this dish.

  106. Love this! Like a lot of other people, I couldn't find the Thai Kitchen Chili and Pineapple sauce anywhere in my area, so I improvised a bit. I used my stick blender to blend some pineapple with a bit of bottled sweet and sour sauce and a bit of the Thai Kitchen sweet chili dipping sauce. I don't know if it tastes like yours, but it was delicious. I'll keep looking for that Chili and Pineapple sauce, though, because it sounds really good.

My husband said he didn't think much of it when I first told him what we were having for dinner, but once he tried it, he kept raving about how great it was. I accidentally forgot the cornstarch coating on the chicken- not sure how I did that! But it was still delicious. I also couldn't find the pineapple chili sauce, so I used half Thai sweet chili sauce and half pineapple sweet and sour sauce, and added in some sriracha. Can't wait for the leftovers tonight!

Using Thai sweet chili sauce (for some reason even in Singapore I can't seem to find Pineapple and Chili Sauce), the Points+ comes to 7 per serving, rather than 5. Perhaps this sauce is the cause?

  121. I cooked this last night. I also couldn't find the pineapple sauce, so I bought the Thai Kitchen Spicy Thai Mango sauce, and it was really delicious. I added 1/2 of cooked rice to it, and it was one of my favorite "diet" dinners ever. FYI, I ate two servings of it, for about 600 calories for dinner. Which is about perfect for my 1900/day goal.

    My only complaint is that it's just really high in sodium. I know that this is a constant issue for asian foods. But I wondered if maybe there's a way to exclude the fish sauce and replace it with something with low or no sodium. I really think I could eat this meal once a twice a month if the sodium were a bit more manageable.

    I couldn't find the Thai Kitchen Pineapple & Chili dipping sauce in the store even though they had other Thai Kitchen items. I got another Sweet Chili dipping sauce.

    I also added chopped onion as I love it in all savory dishes.

  128. Great recipe, yet again, Gina! I couldn't find the sauce, but I did find a pineapple cooking sauce in the Asian food section, so I used that and added some chili pepper paste. I also used canned pineapple chunks with the juice drained. It was delicious, and my hubby loved it!

    Eva, don't use Oyster sauce, it's not the same. Soy sauce would probably be the closest thing but if you like Thai food, I suggest you buy Thai fish sauce, I use it a lot!

    Sweet chili sauce may work but the taste will be altered a bit. Same with any sweet and sour sauce.. without tasting it I can't be sure how it is. If you make this with changes, let us all know!

    I didn't use canned pineapple, but I'm sure it would be fine. Use pineapple in juice, not syrup.

    You could use soy sauce in place of the fish sauce. The rice would be extra, I served this over 1/2 cup of rice.

    1. Sesame oil is NOT, I repeat, NOT a substitute for Thai Fish Sauce!
      If you want the same taste but without the fishiness, use light soy sauce or Tamari.
      Thai Fish Sauce is a seasoning that adds depth of flavor AND salt.
      Sesame oil does NOT do this.
