Broiled Fish with Summer Grape Tomato Sauce

Broiled fish topped with a quick garden tomato sauce using summer grape tomatoes, fresh basil and garlic. I served this over orzo for a complete meal.

This simple sauce is also great over pasta or chicken.

Broiled Fish with Summer Grape Tomato Sauce

Ingredients

  • 1 tbsp olive oil
  • 6 cloves garlic, smashed
  • 1 lb grape tomatoes, cut in half
  • salt and fresh pepper
  • 1/4 cup fresh chopped basil
  • olive oil spray
  • 4 pieces 7 oz each flounder (or tilapia or sole)

Instructions

  • In a large skillet heat oil on high heat.
  • Add garlic and cook until golden.
  • Add tomatoes, salt and fresh pepper and reduce heat to low.
  • Simmer for about 15 minutes, add fresh basil and cook another 5 minutes.
  • Meanwhile, while sauce is simmering, season fish with salt and pepper and lightly spray with oil.
  • Broil or grill fish on medium heat until cooked through.
  • When fish is cooked top with tomato sauce.

  1. This is so yummy. I made a it a week ago with cod (only fish available) and even my picky husband loved it. That you need so few ingredients to whip it up is awesome. This sauce could go on anything.

  2. Very good and easy. I used a mix of grape tomatoes and ground cherries and served it over branzino fillets. A great way to use some of the produce from my garden

  3. Simply delicious!  What make this dish special is using really good tomatoes. I actually left the garlic cloves out because it wreaks havoc on my reflux.  I put a little high quality garlic powder in and I didn’t miss it.  I also dusted it with freshly grated parmesan.

    Absolutely delectable sauce! I put it over baked cod and WOW.  Light and garlicky and fresh. Love the tomatoes.

  8. Great recipe! Really easy and quick, which is exactly what I needed after my vacation. If you need any variation ideas, I added spinach to the tomato mixture so I can serve the fish over it and stay better on target to lose the weight I’m working on taking off now.   9. Made this tonight with halibut.  Only changes, I added a splash of balsamic when adding the basil to sauce. Served with some fresh Fettuccine tossed with lemon infused olive oil and S&P.  It was divine. Hubby gobbled it up and wanted to know exactly how he could reproduce it. So quick, simple, and fresh. Delish!

  10. Made it for dinner tonight, it was fantastic. I used cod which worked well. Instead of using all red grape tomatoes, I used half red and half yellow, and the color of the sauce was beautiful. The only other addition to the recipe, was kalamata olives, which I thought would go well with the sauce, and they did indeed. Served the fish over orzo and some wilted baby spinach. 

  11. This fish recipe was better than anything I've ever had at Red Lobster! The garden-fresh cherry tomatoes gave it a sweet candied flavor. My husband said he could literally smell it cooking as he pulled into the driveway! I served the fish and sauce over Trader Joe's whole wheat couscous. I used swai fillets for the fish. I will definitely be making this again!

    Found this from Pinterest, made it and it's SO good! Used a whole regular tomato and a can of diced tomatoes, holding the fish to cook in the finished tomato sauce. (I can't leave anything alone 😉

  19. Oh my lordy… this tomato topping is AWESOME. I made it last night with fish (I just bought cod, which worked fine and was CHEAP) and today I used the leftovers for a topping on a piece of toasted garlicky bread with some melted parm on top. HOLY SMOKES. IN. LOVE. I added some red pepper flake and just a little white wine with the tomatoes and it is seriously out of this world. Even better the next day! It's thick and delish.

  20. When I cook with fresh grape tomatoes, I make the sauce a little smoother by using a potato masher and smashing the tomatoes. It smooths the sauce a bit and you can also thicken it with tomato paste which will add richness to it. A little sugar will mellow the tartness of the tomatoes if they are too sharp.

  21. I made this tonight and it was delicious!!! I used 4 pieces of Tilapia (1 pound total before cooking) and it reduced the points plus value. I will be making this again! It was so yummy!

  22. I made this dish last night with tilapia. So yummy! I'd never actually cooked with grape tomates before and I loved the sauce. I will definitely make this again with more tilapia and chicken.

    this is one of my favorite things to do with grape tomatoes. I was sitting here wondering how you get yours to "explode" so fast. I re-read and re-read…then…DUH! "Light bulb moment!" You cut them in HALF!! Mine take forever to explode and now I know why!

    I also like to roast them in the oven 🙂

  25. This reminded me of a comment you made a while back about lightening up Bacalao. That is my favorite dish that my husband's grandmother makes.

    It seems like it's just a lot of veggies (tomatoes, onions, garlic) and the salted cod, so it shouldn't be terribly high in points, but I would *love* to see your delicious spin on it!

    I would like to add a small amount of tomato sauce (maybe a 1/2 cup) to the tomatoes. Do you think that would work. I would like the consistency of the sauce to be less chunky. I appreciate the advice. I love your blog.
