Mexican Shrimp Cobb Salad is a beautifully layered salad with shrimp, avocados, grilled corn, black bean salsa, cucumbers, tomatoes and cheese.

Mexican Shrimp Cobb Salad

This is delicious Mexican inspired shrimp cobb salad is served in layers in a glass trifle dish. It’s layered with shrimp, cheese, avocado, black bean corn salad, cucumbers and lettuce which pairs great with Avocado Buttermilk Dressing or creamy cilantro tomatillo dressing. Because there is no cooking involved, this makes a perfect summer potluck dish and the presentation is beautiful. You can bring the trifle dish to a party and give it as a hostess gift! If you don’t have a trifle dish, you could always layer this in a large platter in neat rows.

As a main course salad this would be more than enough for 6 people, if you are bringing this to a party where it will be eaten as a side, this would serve 8 to 10.

Variations:

  • Use grilled or shredded chicken in place of shrimp.
  • To make this as a meal prep lunch, divide and layer the ingredients in mason jars or meal prep jars.
  • For a simple dressing, make a lime vinaigrette by combine olive oil, lime juice, salt and pepper.

For the Shrimp:

  • 6 cups romaine lettuce, shredded
  • 15 oz black beans, rinsed and drained
  • 1 cup grilled corn kernels, I used Trader Joe's frozen roasted corn
  • 2 tbsp red onion, divided
  • 2 tbsp cilantro, chopped
  • 1/2 lime, juice of
  • 1 seedless cucumber, diced
  • 2 cups diced tomatoes
  • 1 ripe hass avocado, diced
  • 1 cup reduced fat Sargento Mexican Blend shredded cheese

Instructions

  • Rinse shrimp and chop into large chunks. Toss shrimp with a little salt, chipotle chili pepper, and fresh lime juice.
  • Combine drained beans, corn, red onion, cilantro, lime juice and salt to taste.
  • In a large glass trifle dish or clear bowl, layer salad ingredients starting with the lettuce, black bean mixture, cucumber, tomatoes, avocado, cheese and shrimp on top.
  • Serve with your favorite dressing such as Avocado Buttermilk Dressing on the side.

  1. This was delicious and the dressing was a great. I will make this again but the prep work took forever. Not good for a weeknight unless you use shortcuts (prewashed greens, no fresh corn, commercial dressing, pre-cooked shrimp, etc). Either that or prep some of it ahead of time. A keeper. That said I will make it again. Not sure why it’s called Cobb salad because that normally has bacon, egg and blue cheese.

  3. How do you make the lime vinaigrette dressing? Would you make it the same as your lemon vinaigrette but substitute the lime instead?

  4. I love this salad and it is so beautiful to look at… I sauteed my shrimp in garlic & butter, lime and tajin seasoning, then let it cool while I chopped up the ingredients and OMG was this a winner! We will definitely be having this salad again❤❤❤ Thanks Gina!

  6. Loved this! Bought a salsa verde avocado dressing that was tasty and very similar to your tomatillo dressing. I kept the lettuce seperate because my kids aren’t fans. I put theirs in pitas and they goobbled it right up!

    So dellcious! I brought this to a party and it was spectacular. Next time I would grill the shrimp a bit before serving and possibly add some crumbled bacon (if I didn’t mind the extra calories).

  19. Made this for a coworker's going away party and it received RAVE reviews! So easy and portable! I just put everything into ziplock bags and laid it out 5 minutes before serving. The only change was that I didn't have chili powder so I used trusty Tandoori and greek yogurt instead on the shrimp.   20. WOW! Made it for 3 adults&3kids(all very picky!!) Everyone loved it! Several of them say they wont eat avocado, so I only put it on half of the salad, but I threw the other half into the dressing. The last of the dressing that didnt get portioned onto the salad was scooped up with tortilla chips like a dip by those same professed avocado haters!

  25. This is the best summer salad EVER!!! I will make this over and over again. I loved it! I am not a fan of cilantro at all so ended up doing a different dressing – actually made this for company and used purchased several different dressings at the store, but found the best one with this was a Lite Southwestern ranch. DELISH! I have taken the black bean mixture and made that separately as just a salad to bring to work for lunches. Wonderful, wonderful, wonderful!! I especially like the idea of taking to pot lucks and leaving the trifle bowl as a hostess gift.

  30. This is such an amazing looking salad- I have recently transitioned to vegetarianism (I still eat seafood) and this salad just screamed to me. I made the dressing a few hours before the rest of the salad to give it time to chill. I will be making the salad shortly, and adding black olives, and crispy onion strings on top.   34. i made this tonight, but not exactly the same. I didn't have any corn or black beans so it was lettuce, shrimp, cilantro, onion, lime, and cucumber. I also added a red bell pepper. I made the tomatillo dressing too. Both were super good. Really fresh, easy, and low point!

    You could substitute a regular tomato for tomatillo.

  57. Mmmmm, this looks sooo good! I plan on making this very soon! I discovered your website two weeks ago and I am HOOKED!! I have made over half a dozen recipes, and I have one in the crock pot right now (chicken ropa vieja) and they have all been fantastic.

    I usually hate cooking for a few reasons 1) I don't like to clean up the mess 2) the food never comes out as good as I had hoped so I feel like I wasted alot of time for something not worth it….     Samantha, thanks for sharing! I think the shrimp makes the dish but if anyone is vegetarian you could leave out the shrimp and increase the avocado and cucumbers!
