Sheet Pan Potatoes, Sausage and Peppers

This is such a fuss-free way to roast sausage along with some potatoes, onions and peppers. Drizzle it with extra virgin olive oil, add some fresh rosemary and stick it in the oven. Don’t you love a meal that only dirties one pan!?

This easy one-dish meal makes clean-up a breeze, and the smell in your kitchen will make everyone hungry! If you want to make clean-up even easier you can line the sheet pan with foil.

Everyone in my house loves Italian sausage, so it’s a staple on our kitchen table whether we make sausage and peppers on the grill, toss them with pasta like this Spicy Whole Wheat Linguini with Sausage and Peppers or serve them like this, with potatoes and veggies, my favorite way to eat them!

Finding a great tasting chicken sausage alternative could be a challenge, I’m in love with Premio’s which I can find everywhere here in New York, but also this Al Fresco’s Sweet Italian Chicken Sausage, is pretty great, both are 75% less fat that pork sausage. Of course, Italian turkey sausage or even Turkey Keilbasa would taste great here.

Tips For Success

The most important thing when making this dish is cutting everything about the same size so they cook even and don’t crowd the pan. The potatoes take the longest to cook, so if you cut them small it all evens out. The onions get a little charred which I love, if you want to avoid that you can add them later with the sausage.

Variations

  • Swap the Italian sausage for Turkey Kielbasa.
  • Try it with red potatoes, new potatoes or russet potatoes.
  • Keep it low-carb and swap out the potatoes cauliflower or turnips.
  • Add more veggies like zucchini, yellow squash or mushrooms.

Ingredients

  • 1.5 lb about 3 large potatoes, russet or new
  • 1 medium onion, peeled and quartered, layers separated
  • 2 red bell peppers, seeds removed and cut into 1 inch pieces
  • 2 tsp extra virgin olive oil
  • kosher salt and fresh cracked pepper to taste
  • 1 tsp chopped rosemary, fresh or dry
  • 1/2 tsp garlic powder
  • olive oil spray, I use my Misto
  • 1 lb Italian chicken sausage, each link into 6-7 slices **

Instructions

  • Cut the potatoes into small 1" x 1/2 inch pieces. These take the longest to cook so cutting them small ensures everything cooks evenly.
  • Preheat oven to 375°F.
  • Spray one large non-stick baking sheet, or two small ones with olive oil spray to prevent the potatoes from sticking.
  • In a large bowl, combine potatoes, onions, peppers, olive oil, salt, pepper, rosemary and garlic powder. Mix well to be sure everything is coated with oil and seasoned evenly. Pour onto the prepared baking sheet and place in the center of the oven; bake for 15 minutes.
  • Use a spoon to toss so nothing sticks or burns.
  • Add the sausage to the baking sheet with the potatoes and vegetables and bake, tossing once or twice for 25-35 minutes, or until your potatoes are cooked through.
  • Cooking time will vary depending on the thickness of your potatoes and sausage, keep an eye so they don't burn.

  2. This looks delicious! Has anyone tried this with Beyond Meat Italian sausage? I am thinking it might be a good meal option when the vegetarian son comes to dinner.

  3. Yummy! I halved the recipe and made this with Italian Turkey sausage and cooked it in the air fryer. I was needlessly concerned my picky DH wouldn’t care for it but he really enjoyed it. Left overs will be an omelette. Another great recipe!

  10. Great dinner with ingredients usually on hand. Ease to follow recipe with variations provided. I boiled potatoes for 15 mIn prior to baking. Seasoning can be adapted based on family needs.

I do add dried oregano because your awesome first cookbook adds it and it makes a difference to me as I love dried oregano. But I always really love the addition of garlic powder in this instance. Yum!!

  12. We love this recipe and make it often! We change it up just a bit. We use Italian seasoning instead of rosemary and garlic powder. We also add fresh sliced garlic. This recipe is so versatile. We don’t really have a rotation, but this is a regular dinner for us.

    I can’t be the only one leery of putting raw meat on the same pan as the veggies. How do you get pa?st that, LOL

    2. The thing is, you are cooking the meat. It’s much like adding carrots and onions to a pot roast, or doing pan roasted chicken with potatoes. Since you are cooking the meat and the veggies, you are bringing everything up to a high enough temp to kill the bacteria.

    Delicious! I added  shallot 2 cloves and it was wonderful. Easy, a little prep and no clean up.

      If you didn’t get color on anything, you were probably not cooking it long enough or didn’t get enough oil on everything. I cooked the recipe on 350 degrees with the convection fan running. If you want more color, just broil the dinner for a few minutes at the end.

    Substitute cubed kohlrabi for the potatoes and save a TON of calories [36 in a cup of kohlrabi vs 167 in a cup of potatoes] and carbohydrates [8g in kohlrabi vs 31g in potato]. A relative of broccoli, kohlrabi has none of the sulfur smell but cooks and tastes a lot like potatoes — maybe a tad sweeter. They look a little strange, but just peel off the outer layer and cut up like potatoes. Also makes great scalloped “potatoes”. I’ve served kohlrabi to my potato-loving husband a half dozen times in place of potatoes and he has yet to notice any difference.

  21. Fabulous flavor and filling meal. Created this just as written except added 2 tablespoons of Ken’s Italian Dressing and marinade as well as 2 cloves garlic. Worth 10 pts on green with the addition. So good!

  22. Does anyone know what 1/4 of the recipe ends up being in terms of cups or ounces? I’m using extra of everything so I’d like to get an approximation for how I could measure it out. Thanks!

    1. 1 potato, 1/4 onion, 1/2 bell pepper, 1/2 tsp olive oil, 1/4 tsp rosemary, pinch garlic powder, 1/4 pound sausage. I would not probably suggest but that’s about 1/4 recipe.

  23. Another home run by Gina.  Made this last night exactly as suggested except for oven time. Baked it for 45 minutes but that’s an individual oven thing. Pleasantly surprised as how 2 teaspoons of EVOO was all that was needed…I use to down my veggies. The end product was full of flavor and all veggies cooked perfectly. A keeper for sure!

  27. Could I substitute chicken chunks instead of sausage? How would I do that..leave of cooking time the same, less, or add after veggies are almost
    cooked?

    1. If you leave in a town that has Publix supermarkets they sell “Greenwise” which is their organic brand name, chicken Italian sausage which is really good. Hot or mild.

  28. So I’m a pretty accomplished baker but suck at Rice Krispie treats. Whenever I tell my husband I’m going to cook dinner he is tentative. Well tonight I hit a home run. He loved this dish.   35. Could you use those small potatoes you can microwave? They come in a plastic container…cant thinn of the name right now. Also if you used chicken sausage would that change the points a lot??

  36. I made this recipe last night but used an electric skillet because I wasn’t too confident using the oven in our motorhome. It was perfect and delicious!!!  I couldn’t fine the Alfresco sausages so I used regular mild Italian chicken sausages.  We will have leftovers today and I might put an egg on top for lunch.  Thanks Gina for a great recipe!

    Made exactly as listed, and it was ok. Easy prep and clean up. Potatoes steamed and did not brown on my non stick half sheet pan. I will start them alone next time, then add the rest later. I may add a little more/different spice to jazz it up a bit. It probably will be great with eggs tomorrow morning!

  43. This is the perfect clean-out-your fridge recipe. I vary it a lot depending on what I have on hand. We like regular and sweet potatoes, broccoli, asparagus, carrots, mushrooms, peppers, literally whatever I have on hand. Cherry tomatoes are great to throw on top the last few minutes in the oven if you happen to have some. Thanks for the basic recipe. It serves our home well!

Bought the ingredients and gave my husband the recipe, told him to make it.  Came out great, we both loved it!  It’s going into our regular rotation.  Although every recipe of yours that I’ve made is tasty,, I especially love these easy ones because we are often too tired to cook something with many steps at night.  Keep em coming.  (Have 2 of your cookbooks, will be getting more).

  44. We love, love, love this meal in our house! It’s soooo easy and satisfying. It’s easy to modify to your tastes (sausage flavor, veggies, spices) that you can easily change it up for variety. It’s excellent the next day as part of a frittata or an omelette!

  56. Really looking forward to trying this tonight! I was bummed that the Al Fresco sausages at my store only came in 12 oz. packs, nothing bigger. I bought 2, cringed at the cost just a little, but I know it’ll make for a good dinner that can last me all week. I ended up getting the Asiago & Red Pepper chicken sausage (didn’t have the Italian flavor)- plus red potatoes, onions, peppers and I might throw in some mushrooms that I have on hand. Not sure what I’ll eat this with yet but I’m already looking forward to dinner. Started Weight Watchers for the 2nd time, yesterday, and I’m so thrilled to have your recipes as a resource!!

  57. I’m making this for the 2nd time this week, it’s so good! I subbed Aidell’s Chicken Apple Sausages, sweet potatoes and sweet onions in the recipe and it’s awesome. I’m doing Whole30 and this is probably my favorite meal I’ve made so far. I eat it with either avocado or an over easy egg on top.

    So excited to try this! One question: if I'm not going to include potatoes (doing low carb) would the cooking times change for both parts? I was going to cook onion/green beans and then add the chicken sausage. Thanks!

    1. The bulk of the cooking time is for the potatoes, so the cooking time would change quite a bit. I would cut the time in 1/2 and there wouldn't be two parts. Just put sausage with the onions, spices and oil. You'll need a less spices when you remove the potatoes. Put the green beans in for the last 20 minutes or so.

    I used my Palermo Spiralizer for the potato and onion, and I used Hot and Spicy Chicken Sausage, instead of mild. It was a HUGE hit with my husband and my 8 year old son! SO YUMMY!

  64. I have no idea why but when I first made this recipe it came out perfectly but the 2nd time I tried it it didn't go so well. My potatoes burned a bit and they stuck to the baking sheet even though I used the non stick spray. I'm guessing it may vary depending on oven as I know some ovens can cook faster than others at the same temperature. But either way the recipe was amazing I loved it and it was so good too thank you for sharing with us.

    Made this for dinner tonight. I unfortunately do not have an operating oven so I made it in my large saute pan on top of the stove and it still turned out lovely. Definitely will be making this again!

  70. Gina, I made this last night for the first time. I bought the Simply Balanced chicken sausage at Target. It was fantastic! Even my picky 3 1/2 year old son loved it. I used a mix of red and green peppers (since it was what I had at home), Eastern potatoes (again what I had!) and everything was just delicious! It was so filling and I had leftovers! Just curious if you could tell me roughly how much a 1/4 of a serving is? I was going to try to measure it out in cups but forgot to before I served everyone. Thank you for your wonderful recipes!   72. I made this Wednesday night and my 9 yr old loved it, we had it for leftovers last night and it was even tastier. I didn't have any rosemary so I subbed a little dried oregano on the veggies, followed the rest of the recipe exactly and it was delicious! This is a keeper!

The chicken sausage was much easier to cut after throwing it in the freezer for 15 minutes while I chopped the veggies, then while the veggies cooked it had a chance to thaw out.   82. Wow. I made this for lunch today, using Turkey Kielbasa in place of the chicken (had some opened that I had to use up). It was delicious! Hubby and I added 2 tbsp ketchup (well, he added 3) to our bowls and stirred it in to make a delicious skinny hash. Hubby was over the moon. I think this is his new favorite dish.

    I used turkey sausage because the store I stopped at didn't have chicken sausage.My whole family raved how good it was except using regular hot sausage because it is about impossible to find chicken sausage here .

    1. My husband and I make this all the time by itself and it is plenty of food and we always have leftovers which reheat nicely!

    2. when I make this I make some scrambled egg beaters with some spinach wilted on top and some 2% cheddar. sooo filling!

  97. I made this about a month ago and I forgot to report how delicious it was! I made a portion of this with Tofurkey sausage for my vegetarian husband and added extra veggies too but kept the oil the same. My whole family raved how good it was . I bought a big bag of potatoes and made your yummy baked potato soup on Monday and I was looking for a recipe using potatoes for tonight when I remembered this one. Can't wait for dinner tonight!

  110. Another family hit! I used smoked turkey sausage Instead of chicken sausage. It did take quite a bit longer than listed for my potatoes to get tender and then browned but it was just delicious (and easy!).

  115. Made this tonight with some tweaks, forget to buy onion, but subbed mushrooms out for the potatoes since we're on a no grains & starch diet this month (Thanksgiving will be the exception!). Since there were no potatoes to cook, peppers, mushrooms & uncooked sausage all went into the oven at 350 degrees for 25 minutes. HEAVENLY! 🙂 Thanks for sharing this one, Gina!

  116. I had Bistro Sensations Habanero and Monterrey Jack Chicken Sausages on hand so I took the recipe in a spicy direction by omitting the rosemary/garlic and using cajun seasoning.

    FANTASTIC! Love the sweetness of the roasted peppers and onions with the heat of the chicken sausage and the potatoes.

    I can't wait to try it with the rosemary/garlic and I am going to use Bistro Sensations Pesto Chicken Sausages.

  119. Seriously, this is the third time I've made this just this week alone. The first time, I kept true to recipe, except using regular hot sausage because it is about impossible to find chicken sausage here. Second time, I made it true, added green peppers, no sausage.
    This time, green pepper, no red pepper, added some thyme and some cayene pepper, and basil chicken sausage from Trader Joes. I officially love Trader Joes! This is an awesome recipe!

    There something something so fall-ish about sausage and potatoes. Or is it just me? Maybe I associate it with Oktoberfest, lol.

    I love how easy, but delicious dishes like this are. I only wish chicken sausage was available in Japan! It's hard finding good sausage at all, much less chicken or turkey sausage. I usually make my own turkey sausage, but I just make patties, not links.

    Regardless, I need to make this soon! Yum!

  133. Wow! I am not a sausage fan, but have fallen in love with chicken sausage. We only used 12 oz of sausage, not the full lb and the portions were still SO GENEROUS! I love food and have been having difficulty managing my portions, but this was easy to do. I served this with a garden salad with light parmesan peppercorn dressing. If I wanted to go all out I would add some garlic bread, but that would be an all-out feast!

  139. This is delicious! I made it tonight and because I had extra points to use, I added a little shredded Parmesan to my serving. Also, I used green bell peppers because that's what I had on hand. It was a lot of food and we split it into 6 servings instead of 4. I also had some bread that was only 2 points that I put along with it. It was just a delicious meal all by itself!     When I use red or new potatoes I don't peel them, all I had was russet so I prefer them peeled. It's a matter of taste.

    If it's cooked sausage, add it the last 10 minutes of cooking so it heats through. This dish will be as good as your sausage, so keep that in mind.

    The chicken sausage was made from dark meat I believe. Not sure what I would sub it with, kielbasa if he eats that.

  151. Oh YUM! My college makes something similar to this but using 100% fatty ingredients so I stay clear, I'm so thankful you put up a healthier option.

    Plus I'm sure this would be tasty in a low calorie tortilla and some cheese for a breakfast burrito. Delicioso.

  152. I make a similar recipe, but do it in the crock pot with oregano. I'll have to try rosemary next time. I put the potatoes on the bottom, then sausage, topping off with onions and peppers. I add a little fat free, low sodium chicken broth at the bottom to keep moisture so nothing burns. The sausage is so tender. When I have left overs, I add it to some scrambled eggs for breakfast.

    You can leave the rosemary out if you're not a fan, I personally love them with potatoes but it will still be good without.

    I think using sweet potatoes would be nice, I think I would add some hot paprika to the sweet potatoes to balance the sweetness.

  159. Is there something I could use in place of the rosemary? I love it, but my husband thinks it's like eating trees, so I've come to terms with omitting it from my cooking.

    1. Just omit it or have you tried mincing it very finely, that's the only way I can eat it…I don't like the larger chopped pieces either. Try and chop it very finely for him, then don't tell him it's Rosemary till he's finished enjoying the meal!!

    2. Are you using fresh or dried rosemary? Because the two are VERY different. I never liked rosemary till I had fresh! Dried is like eating sticks! But fresh is delicious, and you only need a little!

    3. It may be old fashioned, but I use my beloved bamboo mortar and pestle for grinding dried rosemary. We all hate the "tree" taste of dried, but no one notices anything other than the flavor when I use this method!
