Roasted Green Beans topped with Parmesan come out perfectly charred and tender – SO good, I can literally eat the whole batch and made with just four ingredients!

I am not a fan of boiled or mushy green beans, which is why I love them roasted. They come out tender yet crisp and are so delicious, especially as a side to a dish like Baked Chicken Breasts or Rosemary and Lemon Roasted Chicken! Try these wrapped in bacon green beans too! And if green beans aren’t your thing, you can try these with Roasted Asparagus.

Roasted Parmesan Green Beans

An easy side dish I make quite often, you can season them however you like, add some crushed red pepper for a little kick or leave the Parmesan off to keep them dairy-free. If you want to double the recipe, I suggest using two baking sheets. Serve them immediately out of the oven for best results.

How To Make Roasted Green Beans

  1. Line a sheet pan with foil or parchment paper.
  2. Drizzle green beans with olive oil and season with salt and pepper, to taste.
  3. Roast them in a single layer 425F until slightly charred and tender, about 15 minutes.
  4. If desired, top with Parmesan cheese.

Variations

  • Squeeze some fresh lemon juice over the top instead of Parmesan cheese
  • Add grape halved tomatoes with the green beans and finish with a drizzle of balsamic glaze at the end.
  • Make them in the air fryer, to do so air fry the green beans in an even layer, in batches as needed 400F 4-5 minutes, until beans are starting to blacken and blister.

Ingredients

  • 12 ounces green beans, trimmed (make sure they are dry)
  • 2 teaspoons olive oil
  • kosher salt + fresh cracked pepper to taste
  • 1/4 teaspoon garlic powder
  • 1 1/2 tbsp shredded Parmesan, Omit for Whole 30

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with aluminum for easy clean-up.
  • Lay green beans out on the baking sheet and drizzle oil over them. Season with salt, pepper and garlic powder and toss to evenly coat.
  • Spread them out on the sheet so that they all lay flat and place on the lower third section of your oven.
  • Bake 10 minutes, shake the pan to turn; bake 5 additional minutes.
  • Remove from the oven and sprinkle with grated cheese.

  1. These are great, even without the cheese (I forgot it)! Like someone else mentioned, I might remove a few minutes from the bake time to keep them a bit firmer. This just depends on how you like them.

  2. This is a great recipe, except for one thing….you roast the green beans far too long. They turn out very soft. I roast for a total of 8-10 minutes and they turn out tender, yet not mushy.

  5. So um, after adding the stuffing in my IP and letting it cook I opened it and it was basically a soup like consistency. Any idea what I did wrong? I used pepperidge farm cubed stuffing.

  7. Thank you for this recipe. I was looking for something where I did not have to blanch, then saute the green beans – too much work, too many pans to wash. I didn’t read the instructions thoroughly and put the parmesan on the beans when I put them in the oven but they got this crispy, crunchy cheese like a frico and it was good anyway.

    This recipe sounds great! My husband would never eat green beans until he had mine that were cooked with bacon, onion and garlic…im gonna try this recipe but ad bacon to it…he should like it and be willing to try it!

  10. Just bought some fresh green beans and looking for a different way to cook other than just steaming. Since I have always thought that Skinny Taste recipes looked great I looked there first. So many great ideas! I think I will try the green bean and Parmesan cheese recipe first. Wish me luck!

    These are so easy and yummy! Best way to eat veggies is cooking them in the oven like this. Can’t wait to try more recipes like this.

    Let me start by saying these are delicious! However, a huge pet peeve of mine is when people rate a recipe and they alter it without having tried it as the original recipe. I have learned over the past two years that I LOVE oven roasted vegetables! I learned this by accident while eating at a friends wedding reception at a high end restaurant and begrudgingly ate the carrots. They blew my mind! I asked the chef what he did to them, he said he just oven roasted them with a little olive oil, salt and pepper. I did not believe him so I tried them at home. They were just like the ones in the restaurant. NOW, to this one. I had roasted some garlic about a week ago and had put that in some olive oil to have garlic flavored olive oil. I used that olive oil on these green beans. However, I do not think it really changed the flavor of them much from what they were supposed to taste like. These green beans were AMAZING! I cooked them a little longer because hubby wasn’t home yet but on his way. I also, convection roasted them.. not sure if that made a difference either. I will say they were delicious right out of the oven, as they sat about 5+ minutes and were then cold, they were not as mind-blowing but still extremely good! Even my picky teenagers liked them. You may want to try this with cabbage or brussell spouts sliced thin… they are delicious like this too. My husband commented that the ones that were darker; appearing burnt but not, were the best one. Keep an eye on the, because oven roasted veggies can burn in a couple of minutes once they are done. Just as many of the other reviewers said; “I cannot believe I hadn’t thought of roasting green beans before!”

  18. Temp too high, cooked too long. Beans should be tender crisp. Flavor is good though. I would cook @400 degrees for 10 minutes… otherwise the recipes is good. Hate mushy green beans!!!

  19. I make these in the air fryer. 400 degrees for about 6-8 minutes. They’re amazing and one of our favorite side dishes.

  22. This is simply delicious! I cooked the green beans a bit longer than stated in the recipe and they got this caramelized layer on them that was so yummy! My husband said that he wouldn’t like the fresh green beans because he likes canned green beans, but this recipe has converted him!   26. This is so simple, yet it may be my favorite ST recipe. We make it probably once a week– the salty cheese makes the green beans so delicious, and it’s SO easy. We also just use spray EVOO.

    Roasted the beans with EVOO, balsamic, garlic powder, S&P for 20 min @400. Then put a piece of prosciutto down and grated a little fresh parmesan, drizzled a little fresh lemon, added some of the roasted green beans on top and rolled everything up, secured with a toothpick.  Finishing each roll on the grill to serve with big fat bone in grilled pork chops, grilled nan bread with honey goat cheese and some nice red wine. Also adding good music and wonderful friends!

  38. Being in my 50’s I’ve cooked many green beans many different ways and this is my all time favorite. So easy and simple. I followed the recipe exactly except I used the middle oven rack. Simple enough for everyday. Good enough for guests.

  41. This is definitely a keeper! Very simple & quick. I am going to stop at 10 minutes next time, it was plenty done for me. Would not change a thing, really like the garlic powder & Parmesan.

  42. I cooked these at 400 degrees since I was roasting radishes on another sheet pan. I used fresh garlic and left off the cheese. I think I’d use garlic powder next time since the fresh garlic got a bit dark. We enjoyed the crispness that roasting gave to the green beans.

  44. Love it!  I’m addicted to green beans.  Even easier on a daily basis is I buy the ones that go into the microwave.  Take them out sprinkle with truffle salt and a little parmesan.  Back in for another 30 seconds and ready to go!

  45. Roasting any vegetable makes it taste so much better. My son has always hated brussel sprouts until I served them roasted and now he can’t get enough. I’m making this for dinner tonight with green beans so it was a nice reminder 🙂

We used green beans from the garden that we had blanched then sealed and frozen, not canned. I made the cream of mushroom soup (not from the can, it was so good) and we also made the crispy onions to top it.   57. Made these the other night to go along with my horribly fattening Pioneer Woman's alfredo with rotisserie chicken and they were honestly my favorite part of the meal!   60. For those wanting to use frozen green beans I would first cook them the way I cook my frozen veggies. So often frozen veggies are soggy so I saute mine on low to get rid of the moisture. This would be a good way to prep them for this recipe.
    I make a veggie pizza that I use frozen stir fry veggies in and prep the veggies this way.

  66. Made these last night – it was great! Rather than use olive oil, I used Olive oil cooking spray very lightly to lessen the calories. The green beans did perfectly well with just a light spray, rather than a drizzle of oil. I will definitely make these again.

    1. YES, I do sweet, russet and red potatoes sliced thin, green and yellow zucchini, and red/orange/green bell peppers all in the oven all roasted this way. I even do onions quartered! The house smells awesome when we roast veggies.

    I made these tonight, along with the Lighter Chicken Saltimbocca. Both were absolutely delicious!! I don't think I'll ever make green beans another way. So good! I even topped them with leftover proscioutto from the Saltimbocca. So delicious!

  82. These are amazing….a family favorite. Growing up, green beans were always from a can (homemade canned) and simmered with country ham for hours. I never even considered buying them fresh from the produce department. Now, I prepare them this way at least 2 times a week. Thank you! YUMMY!

  86. Mine came out soggy. I used fresh beans 425 for 10 mins then stirred around then in for 5 more mins. Maybe I should try only 10 mins?

    1. Have you checked your oven temp? Is it accurate? If anything, they should have come out burned.
      If too low a temp they will not "crisp up".

  95. Do this all the time with asparagus and broccoli and just bought green beans to try them…I use the minced garlic in the jar instead of powder though…and they're great when they get crispy and carmelized in the tips!

  113. Well it's a miracle Gina – roasting green beans according to your recipe has gotten my daughter to eat them!!! She has hated green beans forever but put a little olive oil, salt, pepper and parmesan cheese on them and she is fan :). DEFINITELY making these on Thanksgiving!!

    I am so glad you all liked them! I'm actually a picky eater myself, I love vegetables but only if they are cooked right. Nothing out of a can. These are so simple, and you can mix it up with different seasoning! Sesame oil and garlic would go great with my asian glazed chicken!

  121. Yes! This is the best way to make green beans! Just started roasting them a few months ago and I can't get enough! I do an asian style too with a little sesame oil, soy and garlic/ginger.     The recipe is vegan, but I just sub milk for soy milk and butter for margarine, etc.

    1. That is usually how I make asparagus. I like to use Cajun Seasoning for a little kick, but the Parm works well too.

    2. I use a little Mrs Dash, roast the asparagus, then sprinkle parm on after they are done but still good and hot to let the cheese melt a little. so yummy, It is the only way I can get my kids and hubby to eat asparagus, going to try the green bean recipe tonight for a healthier version of what I usually make.

  137. I make ones just similiar to this. I add the oil and some chili poweder to a skillet with some garlic and warm it all up and then add the green beans to coat. Put in the oven and roast them for 10-15 mins and then put the parm cheese on them..we are having them for one of our thanksgiving side dishes
