This is my favorite oatmeal recipe to make ahead or serve for company! It’s also great for the holidays, or you need a potluck breakfast dish. It’s a warm, satisfying, heart-healthy breakfast your whole family will love. It feels like you’re eating dessert, only it’s loaded with fiber. What I love most about this dish is that it tastes like I am having dessert, for breakfast. In fact, if I am craving a sweet treat, I usually opt for baked oatmeal. I have seen recipes that blend the oats, but to be honest I prefer keeping them in tact, I think the texture is better.

Baked Oatmeal Variations and Tips:

  • You can make this with any combination of nuts and fruit you like, the possibilities are endless!
  • Make it gluten-free by using gluten-free oats, and you can make this dairy free using any milk you would normally have on hand.
  • Swap the bananas for thin sliced apples and walnuts.
  • Swap the blueberries for strawberries or mixed berries.
  • To make ahead, you can refrigerate for 3 to 4 days.
  • Reheat leftovers in the microwave for about 60 seconds, until warmed.

Ingredients

  • 2 medium ripe bananas, (the riper the better) sliced into 1/2" pieces
  • 1 1/2 cup blueberries
  • 1/4 cup honey, or maple
  • 1 cup uncooked quick or old fashion oats*
  • 1/4 cup chopped walnuts or pecans
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • pinch of salt
  • 1 cup fat free milk, or any milk you desire
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 375F.  Lightly spray a 8 x 8" or 9 x 9" ceramic baking dish with cooking spray; set aside.
  • Arrange the banana slices in a single layer on the bottom of the ceramic dish. Sprinkle half of the blueberries over the bananas, 1/4 tsp of the cinnamon, 1 tbsp of the honey and cover with foil.

  • Bake 15 minutes, until the bananas get soft.
  • Meanwhile, in a medium bowl, combine the oats, half of nuts, baking powder, remaining cinnamon, and salt; stir together.
  • In a separate bowl, whisk together the remaining honey, milk, egg, and vanilla extract.
  • Remove the bananas from the oven, then pour the oat mixture over the bananas and blueberries.
  • Pour the milk mixture over the oats, making sure to distribute the mixture as evenly as possible over the oats.  Sprinkle the remaining blueberries and walnuts over the the top.

  • Bake the oatmeal for about 30 minutes, or until the top is golden brown and the oatmeal has set. Serve warm from the oven. Cut in 6 pieces.

  6. Tastes great and is filling. Breakfast for 3 days for hubby and me. I did add an extra banana, blueberries and walnuts. Substituted milk with almond milk.

  7. Delicious! It is a bit carb heavy, so if you are trying to up your protein maybe use a Premier Protein shake in place of the milk? (A cousin of mine recently made a breakfast bake with this and I thought it sounded good). In any case, I made this as is but subbed 2% milk and then added 2% plain Fage Greek yogurt as side/topping for more protein. I had a square and a half and honestly could have eaten half the pan haha!

    Good healthy alternative & a nice change from plain oatmeal. I serve this a lot when we have weekend guests & it always goes over well & feeds a lot of people!

  15. I modified this slightly to lower the sugar and fat and the WW points (came out to 6 points, but almond milk would make it lower). I used egg whites and a
    1/4 cup of Maple Grove sugar free maple syrup and I also omitted the nuts (more of a personal preference). I mixed the dry ingredients in a bowl and the wet ingredients in another bowl. Then I mixed them together and added the fruit last (I chopped the banana into small pieces). I also increased the quick oats to a scant 2 cups because I prefer a firmer texture, and don’t really like the softness of regular baked oatmeal. I baked it in an 8X8 disposable aluminum pan for about 38 minutes. Inserted a knife in the center to test doneness. It was so delicious and sweet enough for me with all the fruit. I like the firmer texture. It tastes great right out of the oven. I cut it up into 6 portions (the portions were a generous size). Put it on a small cookie sheet and froze it, then bagged it into individual servings. I think I will make this for brunch when relatives visit since we are all trying to eat light and healthy.   16. I’m completely addicted to this. I made it first as written but my favorite version is peaches & blueberries. My berries were very sour so I added a bit more sweetener. But question: can this be made in an air fryer? How would you adapt if at all?

    1. To add more protein, experiment with some protein powder in with the oats. I use almond milk and then use greek yogurt on the side to increase protein. LOVE it!

  32. This recipe was terrible–a total waste of expensive frozen blueberries (which were thawed), maple syrup, pecans. It had no flavor–was plenty sweet and looked absolutely gross. Had to cook it longer than 30 minutes, and it did not brown at 375 degrees F. Had to turn oven up to 400 for the last 10 minutes. I used quick-cooking oats.

  53. Love this recipe. Bake it, cool it, cut it and freeze. Perfect for grabbing it frozen on my way out the door in the morning. Thaws quickly so then I put in the microwave just to warm it or eat it at my desk at room temperature.

  54. I’ve made this recipe a few times, and it’s delicious. Make note though, don’t use quick cook steel cut oats. The flavor is still good, but the oats are chewy.

    I mixed the egg mixture with the topping together instead of separately.
    Do you think it eould freeze well?

  58. The recipe ingredients should read 1/4 cup honey + 1 tablespoon. The reason is because the 1 tablespoon goes in the intial bake and the 1/4cup goes in the liquid mix.

      It looks like the tablespoon is in the initial bake and according to step 5, the REMAINING honey goes in the second bake. 

  59. I just made this wit Hy rolled oats and it’s really good. I made this in the toaster oven in a round 9 inch foil pan (the kind that take-out comes in). I used frozen raspberries, thawed in microwave, and one banana, sliced 1/4 inch instead of 1/2 inch so it would cover bottom. I forgot to add the remaining honey to the milk mixture but it came out fine and I just drizzled some honey on top of the finished baked oatmeal. I probably baked this an extra 10 or so minutes. I popped it in to be finished after a workout. Perfect!

  60. I followed the recipe verbatim and it was kind of runny and looked terrible.  I added cooking time which helped but just too much liquid.  My blueberries were pretty big so maybe that made it more juicy.  I will most likely not make this recipe again.  

    1. Once it happen to me, too. Later I realised that I used a smaller than advised dish. Here the dish has to be 9 by 9 or 8 by 8 inches. Hope that helps. Also when I use frozen berries, I defrost them in the fridge overnight, so it cooks faster

  61. What is the consistency supposed to be on this? I followed the directions to the letter but it was very wet and runny, which, as it’s an oatmeal, I guess it’s ok? But I expected it to be firmer.

Made this exactly as the recipe stated (which is fairly unusual for me).  Had a few friends for brunch and wanted a little something extra (already had bagels, 2 quiches and fruit salad, but just felt a little extra fiber would be good.  WOW was this a big hit.   66. Delicious!!! Like other commenters I mashed my very overripe bananas and added in with the liquid ingredients, mixing everything together. Probably used WAY more pecans than called for, but I love them! Really good recipe, and I can’t wait to try it with strawberries or apples. Just the right amount of sweet.

  67. Made this with steel cut oats & a few other modifications. I used a mix of blueberries, blackberries & raspberries. Used peanuts since it was the only nut I had at home. Used the same amount of steel cuts but added some extra milk (1.25-1.5 cups). Baked covered tightly with foil for 30 minutes then uncovered and baked until set and golden (around 20 minutes more). Came out perfect!

    This was so yummy! I did not add the honey as I don’t like things too sweet. I also used almond milk, other than that I stuck to the recipe and this is a keeper. I love oatmeal but this tastes like a dessert, wow! This would be great for those who don’t care for oatmeal because it doesn’t have that standard “mushy oatmeal” texture. Everything blended really well. I will make this again.

  70. I completely forgot to put an egg in it (oh, crap!) It still turned out yummy! Added unsweetened coconut and a few tablespoons almond butter, plus blackberries. Will definitely make this again.

    I have made this three times and I love it! It is an easy recipe that you can make in advance and reheat. I am trying it today adding PB2 peanut butter powder to the oatmeal mixture and am using blackberries. It is so versatile and you can make it your own.

  72. This is such a great recipe! It turned out delicious, very cakey, very easy. I had overnight guests, a family of 5; since we’re also a family of 5, I was looking for something that could feed a crowd and could be prepared beforehand. It made everyone happy, adults and kids and babies alike! That’s a rare thing for sure!
    Some readers might be wondering (like I did) about the texture. I used old-fashioned oats, and I blended the banana with the liquid, as some other reviewers suggested, thus also skipping the first baking. With these alterations in mind: it was soft but cakey, firm on the outside, a bit soft inside. It’s not like some super firm cake, but also not at all like porridge/cooked oatmeal! Very important to know for those who hate porridge. My son is one of them, he objects to the slimy texture of it. This made me hesitate; but he loved this recipe, as it’s truly like a soft cake, not slimy or mushy at all. To me, it seemed absolutely perfect! If it’s gooey or mushy, as some reviewers said, then I’m pretty sure it wasn’t baked long enough. I baked it for 40 minutes, but most importantly, as Gina explained, until it’s browned on top.
    To me, getting 6 portions out of this seems very optimistic. That might work out on a buffet, if you’re serving other things. If not, I’d say it’s more like 3 people with a hearty appetite, otherwise maybe 4. For 10 people, I tripled the recipe – that worked out fine for us… but we do have some very large appetites in this household 😉
    For convenience, I baked it the evening before, as many said it’ll still be great the next day. While I can’t compare, it was indeed very good reheated.
    Personally, as I used black bananas, I didn’t add any maple or honey. For us, it was absolutely sweet enough this way.
    In case anyone is wondering about a vegan option: I used oatmilk and a chia egg, which worked perfectly.
    I loved the combination of banana, blueberry, and cinnamon. Since I didn’t have enough blueberries, I added strawberries as well. I guess it’ll be great with whatever else you have on hand! Such a versatile recipe. 
    Thank you, Gina, for this wonderful recipe! This will be our new weekend favorite, and I will definitely keep making this for overnight guests! Not only is it super delicious and healthy to boot, it’s also extremely easy and convenient. A definite winner!

    1. Absolutely! Take one tablespoon of chia seeds or ground flax (either works), mix with 4 tablespoons hot water, let sit for 5 to 10 minutes. It’ll gel, thus mimicking the egg. Then use it like an egg.

  73. this is the best oatmeal. I have made it 2 times in 3 days I made it with bananas and strawberries. YUM now have to make it with other fruit

  75. This is SO YUMMY! I made the following adaptations because 1) Beyond fruit, I don’t really like sweets, especially I’m the morning, and 2) I wanted to use 0 points!
    This turned out GREAT! PERFECT! LOOOVED IT!
    -my bananas were really old and ugly so I smacked them on the bottom 
    -I used frozen blueberries and cherries in bottom cuz that’s what I had. I did NOT thaw them
    -i did NOT add any maple, honey or any other sweetener
    -I did not add nuts (they would be yummy but I was trying to use 0 points)
    -I substituted nonfat Greek yogurt for the milk (still 1 cup)
    -I used old fashioned oats (no soaking or anything other than adding them in!
    – I mixed wet and dry ingredients and spread on the baked fruit
    I put frozen blueberries and cherries and some fresh strawberries on top, cuz that’s what I had

    Turned out GREAT! It was still quite sweet so quite a treat!

    The first time I made this I swapped the bananas for apples and it came out a little rubbery, but the flavor was delicious. This time I used the bananas and added almond extract and it was even more delicious. 

    1. I used Maple Grove Farms sugar free pancake syrup which is zero points and it added a nice sweet maple flavor 

  79. Follow the recipe. Only thing we could taste were the oatmeal. Bland. I would suggest using an another fruit other than bananas.

    1. I have made this quite a few times and find that if the bananas are not ripe or just starting to ripen, it’s not as good. I let mine get to where they are starting to turn (not quite as much as I do for banana bread, but close). The bananas are much sweeter then and it is really good!

    I didn’t have any blueberries and I have texture issues. I mashed the bananas and mixed them with most of the honey. I blended that mixture the oats and nuts before spreading in the pan. Drizzle with honey once out of the oven. It was delicious.

  87. I just made this today and it’s so yummy! I added some protein powder to the milk mixture as I like extra protein in the morning to keep me full until lunch. I also had to cook it in my ninja foodie as my range is out of commission until later this week. I cooked it at 375° and it only needed about 15 minutes until it was cooked through. Will definitely be making this frequently! So delicious!

    1. Did you increase the amount of milk when you added protein powder? I actually just posted that question as I am looking to do the same. I wasn’t sure if the protein powder would thicken it too much.

        I mashed bananas and mixed everything together before pouring into baking dish (because I didn’t read instructions in time). I substituted based on what I had at home- strawberries, almonds, sugar free syrup. Came out sooo good!

      I did it in a 9 x 13 and it worked great.  I increased the banana bake time to 22 minutes and the final bake time to 40-45 minutes.  

      Thought this was really tasty!

    Part of my Christmas morning brunch this year–everyone loved it! I prepped the dry ingredients the night before (used old fashioned rolled oats for those wondering if they work–they do!) so all I had to do Christmas morning was slice the bananas and throw the liquid ingredients in a measuring cup. When it was time to add the oatmeal and liquid ingredients I just combined them prior to pouring as others suggested and it works perfectly. I can’t wait to experiment with other fruits this coming year. Such a great recipe–thank you Gina!

    OMG! This was DELICIOUS!!!!! I made per the recipe using almond milk. It’s only four WW personal points for me per serving (seven for two). I enjoyed all of the honey, it wasn’t too sweet, it was perfect as written. I wouldn’t change a thing.

    I have recommended this recipe to so many people! The basic recipe is adaptable to many fruit choices. I no longer even add the honey and don’t miss it as the fruit is sweet and vanilla enhances the natural sweetness. Currently eating this with diced apples. Leaving out the honey also reduced my WW personal points.

    1. I too felt it was too sweet on my first try. Will leave out the honey or reduce next time, but great recipe. Made as written it’s 7 WW points (under newest plan 2022). Have never made baked oats before. So versatile!

Then I warmed a portion in the air fryer for just a bit more cripness and it’s so good with coffee for breakfast. Wish my mom had known about this all those mornings when we were kids. Five stars for sure. One possible tweak would be to add just a bit of lemon juice.

    1. Good recipe. I used half maple syrup half honey and I mined all the wet and dry Ingredients together in 1 bowl added the other blueberries and poured it over the baked bananas. Worked out well!

    I have been making this recipe for years, it’s one of my favorite special breakfasts. After trying it as written to start, I now do the following: mix the wet and dry ingredients, no nuts (I’m just not a nut person) and leave out the vanilla (I thought it made everything taste too much like vanilla which wasn’t what I wanted). I also like to add raspberries on top. I’ll make this even without banana, so I just skip the whole first part and then do just blueberries and raspberries on top, I love it. It’s great reheated too. Having tried other baked oatmeal recipes, the ratios here for the oatmeal part are perfect for me so I keep coming back.

  106. I’m using old fashioned oats this time, after using the quick oats called-for in the recipe my first time. I loved the dish, but would have liked just a little more density. You don’t have to be a baker to make this dish. It accepts all sorts of substitutions of fruits, nuts, cinnamon amount, liquid choices like almond milk (I wonder how it would taste with goat milk).

  120. I always just combine the wet and dry ingredients then pour over the bananas and fruit.  Makes it way more evenly distributed.  I also switch up the fruit based on what frozen pack I have at the time.  Frozen cherries and blackberries is an excellent combo!

  122. To reduce the SP, I leave out the honey and nuts. I LOAD it up with fruit and make sure that my bananas are sweet. I only had old fashioned oats so I soaked them first. It is a soft dish, not firm like a granola bar.

    I do just mix it all together and bake it.

    I am wondering if you took cooked oatmeal, added the eggs, fruit, cinnamon/vanilla and baking powder then baked, would it be a 0 SP dish on purple?

    I do enjoy this for breakfast or a snack later in the day!

  124. Another delicious recipe from Skinny Taste! I took a few shortcuts with the recipe and it worked for me.

    – My bananas were sweet enough so I didn’t add the honey to save on SP.
    – I had old fashioned oats instead of quick oats so I soaked them in the liquid mixture for about 15 minutes while the bananas roasted.

    The oatmeal bakes up very thin and it wasn’t filling enough for me so I ended up cutting it into 5 pieces and ate one each day this week. It does reheat very well.

  125. Best banana oatmeal blueberry recipe I’ve used! I’ve tried many different recipes usually they mix all ingredients together but tends to be good right after baking and dry the next day. This turned out super moist with the right amount of sweetness. Didn’t have that many blue berries so chopped up some strawberries for first part with banana then topped with blue berries. Also used chopped cashews. turned out great! Highly recommend

      1. The sugar is coming from the honey (as well as some from fruit). Personally, I will use much less honey.

    1. You can make w/o honey as the bananas are sweet. I personally just drizzle w/real honey or real maple syrup.

      Compared to another similar baked oatmeal recipe that had 449 calories per serving, this is skinny. This has less sugar, less fat (the other recipe used 3 T coconut oil or melted buter and 1/3 cup honey or maple syrup), and half the calories. It may not be your version of skinny, but for someone trying to break a waffle or donut habit, this is way better. Her recipes are “skinny” compared to a regular recipe for a similar meal. If you don’t like it, don’t make it. I lost 94 pounds using her recipes, so they can’t be too bad.

    1. I wish someone would answer about using rolled oats rather than quick. I had all the ingredients ready to go this morning, then re-read the recipe which calls for quick oats. Darn!

    I took out the honey and used 3 Tbsp of sugar free Toroni almond syrup.  I swapped 30 cal almond milk for the ff milk.  This reduces the points on purple to just the walnuts.  I love this and don’t think I will ever have to throw away another banana because it’s too ripe!💜 whole tray is 8 pots.

    1. My kids LOVED this.
      I subbed thin sliced apples for the bananas and real maple syrup for the honey.
      I wish I would have baked it longer as it seemed a bit soggy to me. When I went back and looked I saw that it said 30 *or until golden* and I just went with the 30 minutes. I also accidentally mixed the oatmeal with the milk mixture and then poured it over, not sure if that would make a difference in texture.
      Next time I may leave out the maple syrup/honey and just drizzle it over before eating.

      Flax egg. I tablespoon of flax meal with little bit of water and mix it, let sit for a min and you’re good to go.

      1. Chia seeds ! It’ll help Thicken it in a similar manner. I would try a couple teaspoons .

  135. I’m so pleased with this recipe. Perfect combination of berries, oats, nuts, with a hint of banana. As the recipe mentions, you could add different berries and switch out the pecans for walnuts or almonds. I would definitely make this as a regular dish for breakfast or brunch! Nicely done!

  138. I made a mistake while making this (didn’t read the directions first!) and added everything together instead of pouring wet ingredients over top. I purposely also mashed the banana into the oats since I’m not a huge banana lover, but I do enjoy it in baked goods for the sweetness. I do love vanilla and cinnamon so I added extra. It was AMAZING, and I’m not a big banana or oatmeal person!! This will probably be in my weekly rotation every week it’s so delicious! I could eat the entire pan!! Thank you Gina!!

  142. I have gout and need to have low sodium, what can I take out of this recipe to lower it please?

    1. I have to follow a low sodium diet also and 77mgs is low. (I’m supposed to stay under 1200 mg) There are only two salt sources in the recipe. Baking soda and salt, just don’t add either. That really all you can do to modify it. but it could affect the flavor or texture since baking soda is a leavening agent.

      1. I also eat very low sodium, I leave out salt and do use the baking soda you can always cut the baking soda amount in half.

    This was really good. I made it the way the recipe states the first time and tried it the way some other reviewers advised the second time with mixing it all together and not baking the bananas first. We liked it better with the bananas baked first. Either way it was delicious and it keeps you feeling satisfied.

    Made this today and it was amazing, I did use frozen blueberries, and mine set up fine, cooked 35 versus the 30 minutes. Only change I made was using maple syrup instead of the honey.

    I love this recipe for meal prep for breakfasts or lunches.  It freezes well too.  The second time I made it I mashed the bananas and mixed in with the wet ingredients then mixed wet and dry ingredients together in a bowl.  I skipped the step of baking the bananas.  I liked it even better this time as I wasn’t a big fan of the consistency or appearance of the mushy bananas on the bottom.  Otherwise made just as directed.  So good!

      I always find it best to defrost and dry out frozen blueberries before using them in this recipe, pancakes, breads, etc. Hope that helps!

  158. Meh, this was very very bland.  A LOT more salt would help it.  Next time I would also double the walnuts, there wasn’t quite enough to have any sort of satisfying crunch. 

    Also the top says 35 min cook time, however there is a 15 min bake of the bananas, and then 30 min bake of the oatmeal (which actually takes more like 40 min to set).  So it is at least 45 min to bake. 

    Also, what is the purpose of spreading the oats then pouring the milk mixture over?  Why not combine them first to make sure they are well-mixed, then spread it all over the bananas – way easier. 

    Also it took 3 bananas to cover the bottom with measuring the thickness to half an inch in an 8×8 pan.  It seemed very thick.  I think 1/4 inch would be better.  Also – why not incorporate the bananas into the bake?

    1. It freezers beautifully! I freeze portions and then when I want some I take a frozen block out of the freezer and microwave it for 3 minutes and it is PERFECT, just like the day I made it!

It looked nothing like Gina’s photos. There was so much milk that the berries were floating in it. BUT it turned out delicious. I don’t believe this recipe is supposed to have a bar/cookie texture (like some commenters were expecting); mine certainly doesn’t. But it’s true to its name – baked oatmeal. Would definitely make again! Yum!

  173. Absolutely wonderful! I left out the nuts to save a few calories and used old fashioned oats (not quick) plus frozen blueberries. Turned out perfectly with those slight variations and my house smells like a bakery.

    For those who are disappointed, baked oatmeal is not equal to an oatmeal cookie. Imagine the softness of an oatmeal with a smooth bread pudding like consistency in the middle, then golden brown oats that are a little more firm on top. Will make again perhaps even Christmas morning.

  174. I made this today as part of my weekly meal prep. I wasn’t thrilled with the consistency of it, I was thinking it would turn out more like a “breakfast bar”, but it was mushy.  My hubby and I taste tested it, we agreed the flavor was good but it was too mushy and we threw it away.

    Wow! I first tried the pumpkin and was not impressed probably because as you cannot get canned pumpkin in Mexico I used just pureed one and it probably was lacking sugar. This however. WOW! I used instant oats since quick oats again do not exist in this country and frozen blueberries since regular ones are very expensive here and I figured since they were going to be baked it would not matter much. I used sweetened almond vanilla milk and added a bit of stevia, used maple instead of honey and just one tablespoon to cut down the total carbs. Made them in individual ramekins. Literally delicious, we have our first cold front in Mexico City and this hit the spot, so fluffy and satifying, basically like the best muffin I have ever had but without any added fat! Thank you, you made a Mexican very happy. Making this every week.

    Worked a treat using frozen wild blueberries. I also substituted maple syrup – had no honey around at the time. And I used almond milk. Great!

  178. The recipe builder in the WW app or website will tell you what the points are if you make changes. It’s really easy to use.

    I reduced the honey by 1/2, no nuts and cut into 8 because I’m horrible at division and have my own point value for these bars, which are delicious!

    My only other change is that I do think they are mushy so I’m going to heat it in a dry skillet tomorrow, to firm up the bottom a bit.

  179. This was great! I used 365 (Whole Foods brand) Old Fashioned Rolled Oats (not quick cooking) since they were one of the few brands that tested zero for traces of weed killer! They still baked no problem. I also used half the amount of honey figuring those who like it sweeter could just drizzle a little more on top if they liked.  Personally I could use more cinnamon but that’s just me ?

    1. This had consistency of a bread pudding to me. Kinda custardy. It was not muffin type or dry if that makes any sense. Definitely need a fork or spoon to eat

  184. When I put the nutrition info into the WW app it comes up to 9 points per serving! A big difference from the listed points here.

    1. Hi Sally! You MUST use recipe builder when getting points. The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting 0 points foods such as eggs, chicken, fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, that is why.

      The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”)

  189. I made this today for Easter brunch. I substituted raspberries instead of blueberries. Did anyone bake it longer than 30 minutes? Mine was mushy in the middle so I baked it 10 minutes longer.  I will definitely make this again. 

  190. Oh my! I just made this Baked Oats this morning and it sure is yummy. I followed the recipe to a T and it turned out delicious. I like how it’s not too sweet. It can be eaten as a breakfast, or you can divide the portions even smaller for 2 or 3-point snacks or desserts. My kids loved this, too;one had a bit of cream poured on top. I’m looking forward to trying this recipe again with maple syrup and other fruit.

    I have made this twice. Once as written…GREAT.. Then once with changes – still GREAT (sugar free maple syrup instead of honey and no nuts. also just mashed the bananas into the milk mixture and added right to the oats…mixed and poured. MUCH easier than the banana pre-baking) This is a very, very good recipe. I could eat it for breakfast OR dessert. Thanks!

    1. I’m wondering the same due to a diabetic husband. I guess I could use the sugar free pancake syrup for the honey. Gina  what are your thoughts on making this more diabetic friendly?

    2. I’m willing to bet you could try any sweetener. Or, try the recipe without any honey/sweetener at all and sprinkle whatever you want on top of your portion just before eating.

  198. A simple substitute for an egg is to stir a teaspoon of chia seeds into about 1/4 cup of water. Wait a few minutes and it will become thickened to the consistency of an egg. This binds pretty well.

    1. Just look at your WW points to see what 1/4 cup nuts is worth and subtract that from your recipe. 1/4 pecans is 6 points. So if the whole recipe is 6 servings at 6 pts each, then not using pecans reduces each portion to 5 pts each. Just do the math!

  203. I made this on Sunday for breakfast and it is wonderful.! I pre-portioned the leftovers for this week and they reheat beautifully. Mine needed a few minutes longer in the oven and then I let it sit for 5 minutes before serving. Definitely a keeper. and 6 SP’s well spent.

The recipe suggests that you use really ripe bananas….which mines were not super ripe so they didn’t have an overwhelming banana taste. My sister made it with ripe bananas and I enjoyed it despite the strong warm bananas, though I will always use under ripe bananas going forward.

    I haven’t made baked oatmeal before so I don’t know what it’s supposed to taste like. But I was surprised at the consistency of this- it was definitely a more mushy than I expected. I think I had been expecting something closer to the consistency of he breakfast cookies. 
    I love so many skinnytaste recipes but not  sure I’ll be making this one again.

    Just made this – didn’t have bananas on hand so I used a Granny Smith apple. DELICIOUS!!  Made exactly as written although I did serve with a spoonful of Greek yogurt. Will definitely keep this in the breakfast rotation!

I make a similar version of this in muffin form, and I put 3-4 pureed dates in as my sweetener (in addition to the bananas). _I_ think it tastes lovely but it is definitely less sweet than most breakfast oatmeal/muffins. I tried it with no dates, just bananas and it was too plain tasting for me. I’ve been slowly reducing my added sugars for a while, so I’m used to it. I just did a quick calculation with 4 dates and it looks like about 8 grams of added sugar per muffin – all from fruit.

  213. I made this for breakfast this week with my modifications (low FODMAP, no dairy, gluten free, etc) and it was DELICIOUS. I subbed pure maple syrup for honey/agave because I can’t have those and it was so incredibly delicious! I’m making a second tray tonight so I have it for the next few days! Great morning breakfast for me before running!

    1. Made this tonight for a quick and healthy breakfast option throughout the week for my kids…hope it makes its until the morning!! Made a few adjustments to make GF and used an almond/coconut milk blend, Gina and the skinnytaste recipes have helped fall back in love cooking again.

  220. What could I sub for eggs? I am feeding a crowd next weekend and several are vegan. This might be a good option for them for breakfast. 

    1. There’s so many egg subtitiutes. I use a flax or chia seed “egg.” I’ve also used applesauce as well as water, baking soda and vegetable oil. All work great! 

      1. I don’t have eggs or applesauce.  How much water, baking soda and oil did you use?

      1. I was going to ask this as well. Does the cooking time change for using old fashioned oats? What if I use steel cut oats? I have those on hand as well. Would those change the cook time? Thank you!

      2. I used half steel cut oats and half old fashioned oats (not quick cooking) and followed the recipe exactly. It turned out great.

    1. I made it with sweet potatoes! Sliced the potato and steamed in the microwave for 5 min, then followed recipe as written.

I make this at least twice a month and eat a piece each day for breakfast. One pan lasts a week and tastes freshly baked when you warm a piece in the microwave. DELICIOUS!!

This is amazing.  I made it this morning with a couple of minor revisions since I didn’t have all the ingredients on hand.  I used frozen blueberries instead of fresh and I used maple syrup instead of honey.  I cut the maple syrup down to 1/8 of a cup.  I also added sliced almonds instead of the walnuts or pecans.  

    It was so delicious.  It smells wonderful while it is baking.  Honestly, it was hard to keep myself from eating the entire pan!

    1. Hi DH, did you thaw the frozen berries first? I don’t have fresh berries so I wasn’t sure. I may also cut down the maple syrup/agave/honey.

  237. So, it took just 4-1/2 years to find and make this, but what a find! It tastes as wonderful as my house smelled while baking it, and I “sampled” my way right through 1-1/2 servings before forcing myself to stop. My bananas were so ripe that I didn’t need to cook them down first. Just layered everything together, put all the walnuts on top (so they would be nice and toasty) and placed it in the oven. Took just a little over 30 minutes to arrive at YUM!

    I just baked this but I tweaked it to add more fiber and calcium:  Step 1 is the same.  In Step 2 I used quick cook STEEL oats and pumpkin  pie spice, with pecans.  Step 3: Biggie:  Instead of milk I used sweetened light vanilla soy milk–1 1/4 cups to compensate for the denser oates.  NO honey, NO extract.  This can also be done with sweetened vanilla almond milk, etc.  Same cooking time–it was perfect.  6 oz container of blueberries is perfect.  I’m 64 and need the higher fiber and calcium.

  241. Great recipe! I used Quaker old fashioned oats (which are 5 mins vs quick oats which take 1). I didn’t have any vanilla so substituted 1/2 tsp almond extract. I also didn’t have any nuts so sprinkled some granola on top. Served with fat free half and half. We devoured it!

  245. My grocery store was out of blueberries, so the first time, I tried it with strawberries. I sliced the strawberries on the bottom layer and cut them into chunks to sprinkle on top and I used honey. Today I made it with blueberries and agave nectar. I like the classic strawberry-banana combo better, but prefer agave nectar, as I found the taste of the honey overwhelming. I love the combination of apricots and cherries, so I am going to try that when those fruits are in season. This is a really great and filling breakfast, love the simplicity of the recipe.

I've made this in a number of different versions, for example: with and without blueberries, with apples, with other berries, with old fashioned rolled oats, with and without nuts, with coconut flakes… the list goes on. The leftovers are also very good cold, or you could just make it the evening before if you prefer it cold. Highly recommended! 🙂

Unfortunately, I was only able to salvage a small serving before my 2 very hungry 4 year olds devoured the entire batch.     Tried to post this yesterday but it didn't work. I usually make a baked French Toast for mother's Day. It is very fattening! This year I wanted something healthier so decided to try this baked oatmeal. I didn't think it would be very good, but I was so wrong. It was absolutely delicious!     I usually make a very fattening baked french toast for Mother's Day, but since I was trying to be healthier this year, I tried this baked oatmeal. I have to say I wasn't that psyched to make it, somehow I didn't think it would be that good. But I was WRONG!!! So delicious! I can't wait to make it again. Made this for brunch today, my sister gobbled it up despite being full, I had to battle myself fiercely to not eat more than one serving and my housemate, who is sick with the flu and refused everything I had offered up to that point took one look and said "yeah, I want some, looks good".     I am in love with this recipe! My husband and I are both watching what we eat – I made this – and we add a dallop of light cool whip and have it for breakfast. It's fabulous! We eat it cold or reheated. Sometimes I also add a little brown sugar splenda before I bake it to the top just to add a little something special.

  292. My husband and my son, who both love oatmeal, bananas, and blueberries separately, did not like this. I thought it was okay. The blueberries came out so tart and I couldn't even taste any sweetness from the honey. Hubby also hated the texture of the walnuts. I'm going to try again in a couple of weeks, though…pulverizing the nuts to mix in with the oatmeal, subbing raisins for the blueberries, and adding a touch more honey. I never thought of making baked oatmeal, so this was a great idea and something I can customize to our liking. Thanks!

  293. Note to anyone trying this recipe, DO NOT use a 9 X 13 pan! That's what I get for not following the directions. It was really dry, but the flavor was good. I'll just add more milk before warming it up to eat again.

    1. No cane sugar, correct.  But agave has higher fructose content than high fructose corn syrup.  If you’re trying to go sugar free, try xylitol, stevia or other plant based sweetener.

    1. I make it every Sunday and it’s fine for my breakfasts all week 🙂 I scoop out a piece, warm it in the microwave for a minute, then add some low fat vanilla Greek yogurt on top. Heaven!!!

    1. Needs to cook longer at a lower temp. I did it for an hour on 335ish. But I also made 6 times what the recipe said. ????

  300. Made these today and they were FANTASTIC. I left out the blueberries and substituted toasted slivered almonds for the walnuts. I also mashed a banana into the oat mixture. This will be added to my breakfast rotation. Most delicious oatmeal I've ever had.

I super hate regular oatmeal (it's a textural issue) but love the flavor so I figured this would be a good way for me to get some into my diet. it was completely delicious! When fall gets here I'll be making this with apples on the bottom instead of bananas, cranberries instead of blueberries, and maple syrup instead of honey. Can't wait!

I used steel cut oats that I soaked in an equal part of water overnight, so I'm slightly concerned that the oats won't soak up more moisture, but crossing my fingers that in the cooking and evaporating process it'll happen! I also bumped up the oat amount to 1.5 cups as 1 cup didn't sound like enough for 6 servings to me, and used 3 bananas as I had 3 to use and they covered the bottom of my 9×9 in a nice single layer, but kept other measurements the same.

  316. I find it comes out really soggy if you rinse your blueberries prior to putting them in the dish and add them while they are still wet. The extra moisture made a difference for me.

  320. I used regular oats for this and it came out great! I love your recipes, Gina! The one thing I tried was baking these in my Pampered Chef brownie pan. I cut down the cooking time by 5 minutes for my gas stove and baked at 350°. I couldn't wait for them to set before I had to eat one. This helps with my feeling like I get to eat more, sine you get to eat two. Your recipe filled this pan perfectly! I only had to add a little milk for the last one. Good gauge when splitting ingredients I put enough oat mix on to just barely cover the fruit, then the milk mix just to cover the oatmeal. I think these will freeze well, and I will just take out of freezer night before into the fridge and nuke in microwave to reheat.

First of all, it looks delicious and second of all I pretty much had everything except the honey. I just substituted some real maple syrup for the honey and used old-fashioned oats instead of quick ones. This recipe was perfect for the wild blueberries I had in the freezer that I picked this summer and the ripe bananas that I had sitting on my counter. Love the taste of the warm bananas.   350. We just made this and it was amazing! We made two small changes – We used 2 1/2 sliced bananas to cover the bottom so we smashed the remaining half and mixed it in with the milk. It spread the banana all over the oatmeal! The other change was we reduced the agave a lot.

  363. I make a version of this quite frequently, use some raisens . I cut mine into 9 portions . I use 9+9 pan. Let cool and wrap on plastic wrap and freeze pull out for bfast or snack…I also use egg beaters instead of egg , Splenda for sweetner , my recipe calls for small amt yogurt .

    Gina, it has been a while since I have commented on one of your recipes but I HAVE to tell you how much I love this one!

    First of all, the title has three of my toddler's favorite foods in the title–banana, blueberries and oatmeal. I knew I had to make it! I made it for dinner (as breakfast in our home is usually super simple and quick, like yogurt or toast) and when my husband came home from work he thought I had made a blueberry crisp for dessert–and I said, "No, this is actually a healthy dinner". Needless to say, we were ALL happy and satisfied!

    The leftovers heated beautifully in the microwave so it would be a good make ahead option at the beginning of the week so we can enjoy it for breakfast all week long. In fact, I'll be doing that soon.

    In my opinion, the bananas made the dish amazing. I read some comments of people asking what they could replace the bananas with–I can't think of anything that would make it taste as amazing as the bananas did.

    I'll be printing this recipe and adding it to my permanent collection.

      I have 2 ripe (but not over ripe) Bananas for this, Strawberries, a handful of frozen blueberries, and some nuts and seeds. Should I wait till the Bananas ripen more before I do it or give it a go now?

    I serve this on a plate like a slice of cake. I reheat it in the microwave just to get it warm. Reading all these comments makes me want to make it again!!

    However, when I put it in the recipe builder on WW, it came out to 6 points+. I talked to my meeting leader about it and she said that when you bake the fruit, you have to count the points for it, so it is actually 6 Points+.

  379. Made this again yesterday with cherries and apples. Instead of vanilla I used almond essence and it was so good, tasted just like cherry apple bakewell. Delicious served with 0% Greek yogurt. I had also frozen a piece of baked oatmeal on Saturday and took it out yesterday to see how it tasted after freeing it. It was okay,it lost it's bite and felt a bit mushy but the flavour was still good.

I peeled and sliced 3 apples instead of bananas and cooked that with the blueberries an extra 10 minutes and it was plenty soft when the whole thing was done. I find your points a little high. Do you add every ingredient into the recipe builder or only those ingredients that have known PP values? I didn't do any of the fruit (fruit is 0 points) and came up with slightly fewer WW points. All that said, it's amazing. Thank you! I may omit the nuts next time because it will bring down the points evern more as what I really liked is the fruit on the bottom and the yummy cake like oatmeal goodness on the top.   391. Would love to know if anyone has any tips on making this with steel cut oats? I am not sure if they would just require extra soaking or if they would just not fit in to this dish at all?

    1. I tried using Coach's Oats which are a variation of the steel cut oats. Coach's claims that the oats can be used just like any rolled oats and they cook in 5 minutes. This was the first time this recipe every failed for me. The oats just didn't cook. There were clumps of dried oats throughout. So, if it didn't work with Coach's Oats, I highly doubt it would work with Steel Cut oats. I might try again and try adding more milk.

I used frozen blueberries, and the finished product ended up more liquidy than what your picture shows, so I think the next time I make this with frozen blueberries I will adjust the amount of milk I put in the recipe.   406. For those wondering about making it ahead… I assembled this last night for this morning, skipping the 15 minute banana bake, using old-fashioned oats. Chose those oats b/c they'd be soaking in the milk all night. It came out soft, like a bowl of hearty, thick oatmeal loaded with fruit. Didn't have time to bake longer to see if it would get crispier. As it was though, everyone loved it and it'll see regular rotation in our Saturday morning "big breakfasts." Do think I'll try swapping some of the honey for brown sugar.

My only substitutions/changes were no nuts (forgot!), I used blackberries AND blueberries, and I added a layer of banana slices on top.     Hiya! I made this tonight for dinner! It was SO good! I made a vegan version of it with unsweetened soy milk and 1 TBSP of ground flaxseed mixed with 3 TBSP of Water to replace the egg I also used AGAVE instead of honey. I didn't check to see what the difference in calories were but this dish was WONDERFUL…so good right out of the oven! It doesn't taste too sweet and it is VERY moist! The hot blueberries just popped in my mouth! Looking forward to eating it in the morning as well! THANKS!

    I am new to this cooking thing to be honest… I've been married for 3 years but have just started cooking ( I know, I know, pathetic!) we just had our second child and after spending 53 days in the NICU (she was 11 weeks early.) my weight went crazy so I'm trying to cut back with the help of your fabulous site!

    Being new to cooking I'm not sure how apples would factor into this. I know my 2 year old loves apple/cinnamon oatmeal so I could I just follow this recipe exactly (simmer the red apples awhile.) and subsitute red apples for the fruits in your recipe or no?

  429. We have made a similar "clafoutis" recipe. I cut it into the appropriate serving sizes and wrap each one individually and freeze. Take one out at night and put it the refrigerator. In the morning just put in the microwave for a minute or two. If you forget to take it out the night before you can still microwave it from frozen. Fast and delcious breakfst!

  434. I saw this post yesterday and thought, "Oooh… so gonna be making this on my day off!" – and when I got home, my husband had already made it. Win!

    He had everything on hand but the milk, so he used half-and-half (adds a point per serving, btw). It is wonderful as dessert, and I reheated some in the microwave for breakfast. I love the idea of adding a little milk; might do that tomorrow if there's any left.

    I might experiment with freezing portions, too. I could see this being a great go-to item for breakfast on the run.

    This really is like a dessert! The texture is like the moistest cake you've ever had, not crispy or dry.

    You can leave the cinnamon out, or replace it with a spice you like. I'm sure you can assemble this the night before, then add the liquid in the morning and bake. And if you want to bake the night before, go for it! I would undertake it so it doesn't dry out when you re-heat it.

  438. I have another baked oatmeal recipe, not skinny like this, that I can make ahead of time and let sit overnight in the fridge, then just pop in the oven in the morning to bake. Do you think this could be done the same way? If so, I will go make & assemble it now! I struggle with finding a hearty breakfast that will last and I don't like regular oatmeal (which the rest of my family LOVES) but baked with these fruits & nuts is something right up my alley!!

      I used almond milk (and a little less honey to balance the extra sweetness) and then almond slices (I have a 21 month old and walnuts or pecans worry me a bit unless I chop then up so small I kind of lose the texture). I also used frozen bananas (thawed out). It was delicious!!

I used apples and raisins instead of the bananas and blueberries, no nuts and extra cinnamon. I baked the apples in the cinnamon and honey first (just like the bananas). It's FABULOUS!   444. Old-fashioned oats would work. I make a version of baked oatmeal with bananas and brown sugar and I exclusively use old-fashioned oats for everything. I like the texture better with the whole oats, and you can nuke it in the microwave as well.

    Apples and cranberries would be great!! I would probably simmer the apples and cranberries over the stove first so they are soft and yummy.

    1. I made these bars (delish, delish!!), ate one (because I'm trying to be good), saved another for the next day and froze the rest. They tasted just as good reheated as the first day, although the edges weren't crunchy because I heated it back up in the micro. Otherwise, no complaints!

    1. Why not make a special serving for yourself? Would be easy to scale down and whip up in a ramekin.

    2. I doubled the recipe and divided it up into silicon muffin tins, then put the tins in the freezer and popped them out into a Ziploc bag when frozen. They were great!

    1. I made this recipe and loved it fresh from the oven.And as Gina said, it tasted like dessert! However, I did not really like it the second day.
      I use a lot of recipes from skinnytaste.com and love them. This one just didn't thrill me on day 2.

    2. I ate this as leftovers…I wrapped each one individually in foil and heated them up in the toaster oven each morning for a week and a half or two weeks. I kept them in the refrigerator.
