How good does this look…

Even if you have no intentions of celebrating the Chinese New Year, this is a tasty way to make a pork tenderloin if you are looking for something different.

Could you make this with chicken? Sure! This would be fabulous over a chicken breast if pork is not your thing.

I served this with my own coconut rice creation that my husband loves (recipe coming soon) and he literally cleaned his plate! You could also serve this over steamed jasmine rice for a simple side dish. Enjoy!

Prep: 10 minutes
Cook: 40 minutes
Total: 50 minutes
Yield: 4 servings
Serving Size: 1 /4th

Ingredients

  • 1 tsp garlic salt
  • 1/2 tsp ground ginger
  • 1 lb pork tenderloin
  • 1/4 cup Sweet Red Chili Sauce, I used Thai Kitchen
  • 1 tbsp honey
  • 1/2 tsp Sriracha sauce, or more to taste

For the salsa:

  • 1 large ripe mango, peeled, seeded and coarsely chopped
  • 1-2 tbsp chopped fresh cilantro
  • 1 small clove garlic, minced
  • 1 tbsp minced jalepeño, seeds removed and diced
  • 2 tbsp fresh lime juice

Instructions

  • For the salsa: Combine all the ingredients in a bowl, season to taste with salt and pepper.
  • Refrigerate salsa until ready to serve. Makes 1 cup.
  • Preheat oven to 375°. Mix garlic salt and ginger in small bowl. Rub evenly over pork. Place pork on rack in foil-lined roasting pan.
  • Roast pork in preheated oven 40 to 45 minutes or until desired pork is cooked to your liking. (New pork guidelines allow pork to cook to 145°, if you prefer it cooked well, cook it until the internal temp reads is 160° with a meat thermometer)
  • Mix chili sauce, honey and sriracha in small bowl.
  • Brush over pork during the last 10 minutes of cooking.
  • Slice pork and serve with pan juices and mango salsa on the side.

  1. This was amazing! I didn’t have any Thai chili sauce, so I made my own (2 tsp chili flakes, 2 Tbs honey, 2 Tbs vinegar / rice vinegar). Served with rice and steamed broccoli. Cooked the pork in the air fryer. Instead of basting the pork loin (feared it would dry out), each serving got a spoon of chili sauce drizzled on it when served. Its now in the rotation. Mmmmm.

  2. I found this recipe yesterday as I was thinking about what to make for dinner. Yeah I have been bad at meal planning this week! Loved how quickly it came together. It is worth pulling together about two hours prior to cooking to allow the mango salsa flavors to meld. I loved the mango salsa and it was an excellent pairing with the pork. I served it with jasmine garlic rice and steamed asparagus. My husband did the cooking while I was at Barre class. He cooked it as directed for 30 minutes. It came out a perfect medium rare. Next time I will use the broiler at the end to caramelize the sugars in the glaze. I think that could further elevate the dish. You could serve this for a crowd and for a casual Summer dinner party. I agree with another reviewer you could reserve some of the glaze for dipping. This may be fun for younger members of your household or guests. Overall, definitely a keeper and one headed into our rotation. Thank you!

  3. I made this for companyl ast night and found out at the last minute that two of the guests do not like cilantro, so I made one mango salsa with cilantro and jalepeños and the other I substituted fresh mint from the garden and omitted the jalepeños. I must say the mint/mango combination was pretty good. Although I much prefer the original version.

  4. This is my new favorite way to prepare and serve pork tenderloin!!! So incredibly simple and delicious. The glaze for the pork seemed like an awful lot so before I brushed it on, I spooned some out into a separate bowl for dipping. There was still plenty left for the glaze. I knew my kids probably wouldn’t care for the mango salsa but love sweet thai chili sauce so figured they’d be happy with the extra sauce. I was right. But my husband and I loved the mango salsa! I left out the jalapeño because I can’t handle it, but I felt it had just enough bite with the raw garlic. My husband added some heat by adding habanero pineapple hot sauce to his. I served with jasmine rice. This one is a keeper for sure. Thank you, Gina!

  5. Per usual, excellent, easy and delicious. I served this with green beans, broccoli and rice noodles. I WILL make again!!

  6. Really good. Added some diced red bell to the salsa which was nice. Pork had great flavor and was easy to put together. I served with coconut rice. Family really liked it!

  7. Gina – I don’t think I would have made it on WW without your recipe inspirations to keep me going. My husband and I are amazed that such flavor and variety are low points. I’ve been following you since January 2021 and bought one of your cookbooks and as of today I am -30lbs.
I can’t thank you enough. You helped me change my life. Making this pork recipe tonight!
Forever grateful. I am a lifetime follower.

I am making this now… couldn’t find any mango either as out of season but made salsa with frozen mango.. just left iut a couple hours to defrost and is very good

  9. Love this pork tenderloin and especially the salsa.  Very simple and delicious combination of spicy and sweet! Served with rice and green beans. Will make again!

  10. My husband raved. Easy to put together. Served with stir fried veggies and couscous. Think I’d reduce the garlic salt by half to reduce the sodium. Thanks. 😁

  11. I made this last night (just the tenderloin, not the salsa since I couldn’t find any mango) and it was AMAZING! I couldn’t believe the calories were so low. We’ll be making this regularly. My fiance said it was the best dinner I’ve ever made! Thanks Gina!

  12. Another hit!! So easy, so delicious! Didn’t have ground ginger so used fresh ginger and it turned out great. Thanks again Gina!!

  13. This recipe is excellent! I have now made it several times and it’s one of those that gets easier and easier to make. I usually double the dried ginger and garlic and it’s great with or without the mango salsa.

  14. I made this without the mango salsa, which I am sure is wonderful, but even without out it the pork is delicious! This recipe will totally be added into the monthly meal rotation 🙂

  15. I would love to know the time and temperature, if you cooked this in the air fryer. Has anyone done this?

  16. Absolutely fantastic (even without the mango salsa!) I only had ingredients for the pork so I made it anyway. To my 3 pounds of pork tenderloin (one package of a 2-pack from Costco) I tripled the sauce recipe. Worked out perfect! I don’t think I’ll bother with the mango salsa unless I have stuff on hand because this was perfect. I will prob add a little more sriracha next time, but otherwise not change a thing. I DID baste my sauce over the tenderloin at about 5 min and then at the end because it seemed to slide right off. Makes a good sauce to spoon over the meat for plating. Thanks again for a great recipe!!

  17. I made this for dinner tonight and even the thin end of the pork stayed juicy. I didn’t make the mango salsa because the store didn’t have any ripe ones so I served it with roasted vegetables instead.  I’ll be making this again.

  18. This is perfect for company or every day. I serve it brown rice and roasted veggies. Everyone loves the salsa so I make extra. I have made the salsa with pineapple too. Thanks, Gina for another delicious recipe!

  19. Can you make the Sweet Fiery Pork Tenderloin in the instapot? If so, can you please provide the directions? Thank you

  20. I don’t comment on recipes, but I am going to make an exception for this one. Cooked it for dinner tonight and it was delicious! I’ve enjoyed all of your recipes to date but this is the bomb! Had it with Thai coconut rice. Your website has expanded my repertoire of meals greatly. And I cook much more healthily. Thank you.

  22. I can't read all the comments, so maybe this was mentioned, but I plugged this recipe into the Weight Watchers Recipe Builder (without the salsa) and it is 5 Smart Points per serving. I selected "16 oz Pork Tenderloin, lean only, raw". Is that correct? Otherwise, not sure why its coming out to 5 instead of 4 SP.

  23. Making this weekend, looks fabulous! Question, ground ginger in the spice section or the wet kind ground jar in the produce section?

Hi! Question: How would the cooking time/oven temperature change if I used pork loin chops (boneless, about 1/2 inch thick) instead of a tenderloin? I'm cooking for only myself so, a tenderloin is a bit much. Thanks!! 🙂

  25. I made this for the first time tonight and everyone loved it! So many flavors. I will definitely make this again. I wanted to eat the mango salsa up all on my own!

  26. This was great! My hubby and I really liked it and my kids ate it up with no complaints 🙂
The mango salsa was AMAZING!! This will be a new regular for me with chicken or pork, quinoa and veggies. Thank you!!

  27. I would like to try this in the slow cooker…any thoughts? I'm thinking 8'ish hours on low, but wondering when to add the sauce.

  28. I can't wait to try this tomorrow night!
What is Sriracha sauce…I don't think I've seen that before. Any ideas on a substitution?

  29. I tried this recipe tonight. It was fabulous!!! The tenderloin was well……..so tender!! Thank you many times over for your great recipes. I am going to try this with chicken next!

  30. I bow down to your amazing cooking skills!!! I was always a failure at cooking meat in an oven untill is recipe. This recipe itself is fabulous and delicious! But, now I use is as a base for cooking my pork tenderloin to my liking, I've used many different spices as the dry rub portion and have tried many different sauces for the last ten minutes, my favorites are your sweet chili sauce, teriyaki, and bbq! I love when a blogger really takes the time to teach you how to cook it right! Thank you!

  31. Made this last night with the coconut rice and it was AMAZING!!! My husband, a tough critic, devoured it! Just finished eating it for leftovers tonight (made two tenderloins). Will definitely be making this again and again!

  32. This recipe was amazing!!! I think I may make that mango salsa and eat it with my Baked Scoops it was so good! The combination of the flavors of the pork and salsa was wonderful. I served it with couscous, roasted yellow squash and zuchinni & broccoli slaw. I will have to try your coconut rice you mentioned. thank you for posting such awesome recipes!

I couldn't find the Sweet Red Chili sauce so I picked up Garlic Chili Peppper sauce (A Taste of Thai). Do you think this will work?

Made just the pork tonight. We all loved it! My 22 month old I think loved it the most which is saying A LOT. Thank you so much for all your hard work! Oh and I probably used only about 1/2 the sauce which I'm sure affects the nutritional information.

  35. Maybe I missed it but you should tell people to let the pork loin rest for 5 or 10 mins after it's out of the oven. I've noticed this recipe is so much juicier when the meat is left to rest. Good job on this, me and my girlfriend love it!

  36. Im sorry, buy I tried this and did not like it at all! To be fair, it was my first time cooking loin. It was cooked well and not over or underdone. The sauce was ok but I just didnt like it.

  37. I cook this probably once every 1 – 2 weeks, rotating it between pork, chicken breasts and salmon filets.. and it is delicious! I could eat it every day for dinner, so could my husband. Thanks, Gina, for all of your amazing recipes! I'd say I use your recipes 4-5 times a week and you've helped my husband and I eat healthy and tasty foods for the last two years! Keep up the great work, it is definitely appreciated.

  38. If I had to pick only one animal to eat the rest of my life it would be the PIG!!! I love PORK! This is a great recipe, I made it tonight, except I used my homemade peach salsa that I canned this weekend. It was quick and easy! THANKS AGAIN for all your great recipes.

  39. I made this last night for my boyfriend. He said, this is a make again recipe. We both loved it. The textures and combination of flavors was amazing! I did leave a couple of seeds w/the jalapeno and the salsa ended up being a little hotter than we both liked but, I guess it is a learning experience. Since, I made the shrimp salsa that seemed a little blah when I took out all of the seeds from the jalapeno. This would be good even with out the salsa we decided.

  40. I made this last night and it was AMAZING. My boyfriend LOVED it and already wants me to cook it again for him!

  41. Had this last night, my husband said it was by far the best thing I've ever made (I'm not the cook in the family:) ) It was delicious! Went very well with the coconut rice (though not that coconutty as I expected). I paired it with steamed snow peas and shredded carrots. Thanks for such a great recipe!!

Delicious! We didn't have the salsa yet because I didn't want to go to the store. I needed a recipe for pork when the thunderstorms ruined our grilling plans, and I had all the ingredients for this. My DH's exact words were, "We should never grill pork tenderloin again!"

Thank you so much for your creativity and recipes!

This recipe is amazing! The mango salsa complements the spiciness of the pork tenderloin so well! Thank you.

  44. I found a sweet Thai chili pork tenderloin at Sams club, I made that so I wouldn't have to drag 3 kids around looking for Thai red chili sauce. The mango salsa was amazing!!!! And the 2 together were to die for!!!!! It's a catch 22 because I want to eat way more than I should. My husband, the hard to please man, loved it and even asked for that salsa again tonight when we were having chicken. Thanks for the awesome recipes!!!

  45. We made this tonight and loved it! It's perfect for us. I love the sweet and my husband loved the heat. This goes on our favorites list. Keep them coming!

  46. This was so tasty! I bought pork tenderloin at our local farmers market, and the flavors from the rub and sauce were delicious. This was a huge hit in my house. As my husband said, "Another winner!" Thank you so much, Gina. You are so talented at what you do!

  47. Loved this recipe! I made it for my family last night, and was a definite hit! I'm sure I'll be making it often. I also made some Coconut Brown Jasmine Rice to go with it.

  48. This is so delicious! I made it for lunches for the week and it keeps getting better by the day. I added some corn on the cob on the side to just make sure I get my vegetables 🙂

  49. I made this tonight for dinner and it was absolutely amazing! You need to make sure the mango is ripe or the salsa will be bitter. The sweet chilli glaze was a hit! I will be making this again and again!!

  50. I am so glad you included this in your Father's Day post, because I missed it the first time around. Made it last night and, truly, one of the best things I've made from this site – and possibly ever! Easy yet… moist, flavourful, succulent, delicious. Words fail me. Will be making this frequently. Thank you so very much, Gina!

  51. I made these with just 2 chops that I cut from a big piece of pork loin that was on sale! Cut down on the time to 30 mins. It was amazing!

  52. AMAZING. My husband said it was fantastic (first time in our 5 yr marriage he has used that word to describe dinner and I cook a lot of good food..or so I think).

  53. We are making this for a family reunion this weekend. My mother in law is soooo excited. She loved it when we made it for her. Thanks for all of your recipes they keep us eating healthy at our house. 🙂

  54. Do I baste after the pork has cooked for 45 mins or do I do it at 35 mins…kinda confused and want to nail this recipe as it looks delish!

  55. Thanks for the inspiration, Gina! Gave you a shout-out on our blog today: http://3flygirlz.blogspot.com/2012/04/spiced-pork-tenderloin-with-mango-salsa.html

  56. I made this for dinner tonight and it was amazing! I made an extra tenderloin so we could have leftovers 🙂 I served it with sauteed red and orange bell peppers, fresh green beans and sliced garlic cloves – delish!

I've cooked a few of your recipes and every one has been awesome! I love how easy and full of flavor your recipes are! I've cooked at home more thanks to you – Keep them coming!

  57. I never comment even though we eat off your site pretty much every night, but Jesus, Mary, and Jerome, this was INSAAAANELY good…so good that my husband packed up the leftovers for his lunch tomorrow before I could even get another piece. I might have to kill him. Thanks for posting this simple, delicious recipe!

  58. Finally got to try this – delicious! I got home from work late so I sliced my pork into medallions and sauted them on the stove in a little bit of olive oil, then glazed them with the sauce for a few minutes. So delicious and on the table in no time.

For those looking for Thai Sweet Chili sauce – Frank's Hot (the buffalo sauce) also makes one now that is with the BBQ sauces if you can't find it with the Asian condiments.

  59. I made this for dinner tonight and it was delicious! I added pineapple to the mango salsa. It was a great side with the pork. Thanks for all the yummy recipes – really helps me with the WW program!

  60. This is going to be our Valentine's dinner tonight and I can't wait!!! I have tried so many of your recipes and have never been disappointed. I don't follow WW, but LOVE your healthy alternatives for my family 🙂 Thank you for taking the time to post so many yummy recipes! I look forward to reading your blog for new ideas 🙂

    1. Oh my goodness! This WAS as amazing as it looked!!! My husband and I will be arm wrestling for the leftovers tomorrow 🙂

Made this tonight…and it was so tasty that we forgot about the mango salsa! It's still in the fridge! Oops! This was a great recipe. Easy and really delish!

  62. Made this tonight and OH. EM. GEE. I can't stop eating it! So easy and so delicious! I served it with Bulgar Pilaf and Sugar Snap Peas. Thanks once again, Gina!

  63. This was amazing! Loved it. Perfectly spicy and one of the best pork tenderloin recipes I have ever made. My husband loved it but it was too spicy for my kids (2 & 4). I just cut the glazed part off of their serving. Really doen't need the salsa but it is a great addition. I had plenty of glaze left to use as a dipping sauce.

  64. Some time ago, I made a mango/peach salsa pretty much the same as this except I used a splash or two of balsamic vinegar instead of lime juice. It was like eating dessert!

  65. Wow! SO GOOD!

Just made this for dinner tonight. Not only was it super delicious, but it was really simple to make!

I couldn't find the sweet chili at the store so I bought Hunan chili. OOOOEEEEE SO SPICEY!

  66. I am cooking this tonight looks awesome I have cooked many of your recipes and they are great I have so many people hooked on this sight

  67. I made this last week and it was absolutely great. My family really enjoyed it. Served with brown rice and steamed broccoli. Also made extra sauce for dipping.

  68. This was the first recipe I tried from your site and I am hooked! The flavors were on point. My husband usually figures out the healthy recipes but he raved on how great this was. Now im off to find another recipe from your site for dinner tonight. Thanks for such a GREAT collection of recipes–keep them coming!

  69. I cant wait to try this! So far every recipe I've followed has been a hit!! Is there a strong ginger taste to this?

  70. Just found Skinny Taste last week so this is the first recipe I've tried. Let me just say, This Was AMAZING!! The flavor combo was delicious and Hubby said I out did myself! No leftovers 😉 Thanks, Gina. I'll be following from here on.

  71. Hi! I am making this for my in laws tonight and my father in law hates coconut, so is there another side that would pair well with the pork? Thank you SO much!

  72. Fantastic!! Added Chinese five-spice powder to the rub and scallions to the salsa. Also substituted ginger syrup for the honey in the sauce which was an excellent combination – sweet, spicy and tangy. This is a keeper.

  73. sooo good…absolutely LOVE this dish and now my family is completely addicted to mango salsa!! thx Gina

  74. This is what is on the menu tonight! We love pork tenderloin at our house…and so many of my tenderloin recipes are so much better on salmon…so if this is a hit – i'm subbing salmon next time. Now let's see if I can be delicate with the mango!

Thanks for all of your great recipes. What are the point values for this if you don't make the salsa? Still 6 points plus? Thanks!!!

  76. Wondering.what the cooking time would be for a turkey tenderloin as well as the points plus values? Love this site and your delish recipes.

  77. I really like the sweet and spicy glaze, I think I am going to have to try this on the grill.

Nice blog, glad I found it.

  78. oes anyine know how long the ork needs to cook? My meat thermometer is broken and I plan on making this tonight. Thanks

  79. This was really good, one of my favorites from your site (the dijon pork chops still are my favorite)
served with your cilantro lime rice recipe but made it with quinoa… so good.

  80. This dish was fabulous. I used pork chops because that's what I had on hand. The mango salsa was a perfect accompaniment to the pork. I served with plain quinoa and mixed it all together. Thank you!!!

  81. This was SO good! Served it with some roasted garlic couscous and peas, and my kids devoured it! My girls aren't big on spice yet (they are 4 and 2) so hubby and I sprinkled crushed red pepper flakes on our servings.

What would the calorie content be minus the mango salsa? I am the only one who eats mango, and I didn't want to make a special trip to the store just for that. 🙂 Love this site Gina, I refer so many people to it! Thank you!

  82. This was soooo good! made it for dinner tonight, and the entire family LOVED it, including my pickiest eater (my 8 yr old). Thank you so much for continuing inspiration . . . I love your blog!

  83. i just wanted to say thank you for making a difference in the way i eat during the work week! your recipes are healthy, delicious, and spot on with the way i like to cook… and i love that your recipes generally are made with things i have on hand and/or without a million ingredients. <3 this is my favorite food blog!!!

  84. Walmart does have the sweet red chili sauce! I didn't find it in the same brand used here, but I did find it and it came out tasting great!

I made this for my boyfriend's birthday Saturday night and it was AAAAAMAZING!!!! We're not huge on cilantro but after adjusting the amount we were so pleased with this recipe! I made the Pineapple Bliss Cupcakes for dessert too! Thanks so much for everything!

  85. Where is the best place to find the sweet chile sauce? I want to make this sometime this week! Target didn't stalk one, and I have everything but that. Does WalMart have one? Anyone know?

Also Gina, how do you think this would do in a crockpot? For me, it's easiest to put everything in the slow cooker before I leave for work in the mornings and just have to quickly do sides once I'm home in the evenings. I might try it that way and let you know how it goes! 🙂

  86. Hi Gina,

I don't eat pork but since this is a mango recipe I must tell you I make your mango nut bread ALL THE TIME! It really is incredible. Thank you!

    Wade

  87. Made this tonight and it was amazing!!! My 14 year old loved it also!! Can't wait for the coconut rice recipe!

  88. This looks so yummy. I am going to try it with chicken thighs since we don't eat pork. I love your site and have turned on several friends to it also. Thanks for the great ideas.

This was fantastic! I doubled the recipe & I'm so glad I did because now we can enjoy the delicious leftovers. Your description of the coconut rice sounded too good to pass up, so I made the WW Thai coconut pineapple rice & served it with steamed asparagus. This meal got rave reviews (as ALL the recipes I make from you do!)! Thanks again!!

  90. Another fabulous recipe Gina – made the pork tonight, we're not much for mangos here so skipped the salsa. But the pork was amazing. Just what we were in the mood for.

    Thanks!

  91. This recipe is to die for! I made it this evening! I can't wait for you to post the coconut rice to make next time. This recipe would be excellent for entertaining.

  92. Loved it and so did my family. I thought my youngest would think it was hot but he was dipping into the sauce all through dinner!

  93. Dish came out really tasty!!!!
My pork loin didnt come out with the same color.. but the flavor was pretty awesome!

Thanks! so much! I live by your recipes! ;0)

  94. Gina, I've been a looong time follower. Since your amatuer photo days! I have made 75% of your recipes. I have made many of them 4 or 5 times. To make this mild, simply leave out the sriracha.

If you don't have a rack, place it directly on the foil. No biggie!

This feeds 4, if you divide this in 4 equal portion, that is the serving size.

I think this would be great in chicken breast!

I'll try to post the rice today!

  98. I made this last night! It was delicious! I added grated ginger and grated garlic to the sauce and red onion to the mango salsa.

  99. I haven't made this yet….but it is next on my list. Can I tell you how wonderful ALL of your recipes are! I I live in Mass and we have a huge Patriots playoff game tonight against Denver….anyhow I just made your zucchini sticks, sweet potato chipolte fries and chicken nuggets as game day food for my family. For dessert we are having your coconut macaroons. Everything is so delicious oh and by the way I made your scones after dinner two nights ago and my hubby and kids went nuts for them! All I can say is THANK-YOU, THANK-YOU, THANK-YOU. I tell all my friends about your blog too. Keep up the great work.
    Deb from Mass…Go Patriots;)

  100. I used canned mango because its january and the mangos at my store were hard as rocks! The sauce still tastes good…i also added red pepper flakes to the glaze for the meat. It's in the oven now! Can't wait to taste it!

Quick question about the serving size. I just started WW today and want to make sure I have this right. What is the serving- 1/4 of the whole pork and how much of the salsa? Thanks!

  102. As others have asked, how do you recommend "de-spicing" this? My husband does not like anything hot. If I simply take out the "hot" ingredients, would the salsa still work? Thanks!

  103. In the past week I've made three of your recipes: the Asian turkey meatballs, the chicken enchiladas and this one.

    They've all been fantastic.

Thank you so much for your site. I'm doing a DIY WW and skinnytaste is making it so much easier.

  104. Tasted great! I love any meat dish with fresh mango–hard to go wrong. Pineapple is good also, and I want to try this recipe with pineapple instead.

  105. I can't seem to add this to my recipe box. It shows up as "Recipe Search" rather than the title of the recipe. And the link doesn't work properly 🙁 Any way to fix that?

  106. The salsa is no points because if you're following ww point plus fruits and veggies are zero & mango's fall into that category. I plan on making this tomorrow night for dinner. I love how I can still be on ww and eat normal food. I also love how I can still cook dinners & not have my boyfriend be deprived lol We had the Avena shakes yesterday & he loved it. I even threw a banana in it & it was delicious!!!

  107. The flavor combinations sound wonderful. Would chicken breast be an acceptable substitute? I can't eat pork and figured since the tenderloin of pork is so lean, perhaps chicken breast would work.

  108. Just found out about your blog. WHAT A GEM!!!!!! Thank you for posting such a great varieties of recipes.

  109. Can you post the recipe for the coconut rice before Sunday?!? I'd love to make this whole meal for my family's Sunday dinner! Looks delicious – I know they'll love it!

    1. When I make coconut rice I use half the water it calls for and half lite coconut milk. I also add a little sweetener to the coconut milk bc its not the sweetened kind.

This looks delicious. I took chicken out for dinner tonight, I might try this with the chicken.

  111. I love your recipes Gina. I have one cookbook that suggests whole meals, like the sides to go with things. I would love it if you did this. I'm always good with the main dish but have difficulty matching things to go with it!

  112. This looks great!! Pulled out a pork loin roast from the freezer today to give it a try.

Question for you.. do you ever use round steak? we get half a side of beef every year, and a large chunk of it is round steaks it seems. It would be nice to have some lighter recipes to use it in. I crock pot it in some beef broth and herbs, refrigerate, then have used it in place of a pricier cut of steak in the carne bistec. I also chopped it up and used it in place of burger in a meat sauce.

thanks again for your awesome blog! Back on the wagon and this site does help ohhh so much!! I love that it's REAL food to! not all prepackaged or nutrasweet- which i can't have.

  113. looks outstanding. this is my question. it specifies to place the pork on the rack in a foil-lined pan. in the picture, it appears as if the pork is placed directly on the baking rack. am I understanding this correctly?

    1. If you look real closely at the last picture..it is on a rack on a lined cookie sheet. Optical illusions can be deceptive. 🙂

Sriracha is a spicy Thai hot sauce. If you can't find it use crushed red pepper flakes. You can make this as mild or as spicy as you wish.

Chicken breast won't take long to cook, maybe 15-20 minutes?

I promise to post the coconut rice soon!

Rebecca, don't have the info off hand, sorry! You can use sparks or my fitness pal to check the calories with changes.

Starbaby, happy birthday to your boyfriend!

    Thanks Jessica : )

Christie- oops, glad you're losing with mine!

  124. YUM! And I've learned a lesson about your recipes. Last week when I planned my entire menu with your recipes, I lost 4 pounds. This week when I didn't, I didn't lose at all. I think there might be a lesson to be learned from this! 🙂 Needless to say I am planning my menu now! Thanks Gina!!

Btw since cooking from your site I e lost 14 pounds but feel like I've been feasting lol I hope you create your own cookbook
    Thanks
    Claire

  128. Hi Gina, love your recipies! Made the chicken enchilada soup today and kids wanted more (planned on left overs but oh well…) just wondering what sriracha is and is there a substitute? I live in rural Ireland and anything different can be a challenge ( my mom sends me salsa verde as I have yet to find tomatillas here!) Your site keeps me interested in cooking. Thanks, Sherri

  138. I can't wait to try this! My husband will absolutely flip. Two of his favs: pork and mangoes 🙂

Thank you so much for what you do. You are a huge part of my weight loss journey and success. I mean that from the bottom of my heart. We eat 5 or your recipes weekly and haven't had one that wasn't delicious. I couldn't have lost weight just eating baked chicken and steamed broccoli and you've SO helped.

I've lost 25 pounds and my husband has lost about 30. Thank you for your help!!
