I love a quick grilled chicken salad in the summer. Other variations I love to make are Halal Food Cart Style Chicken Salad with White Sauce. Or Tex-Mex Grilled Chicken Salad with Peanut Sauce and even a refreshing Chicken Salad with Strawberries and Spinach.

Last week I got tickets to see the Dr. Oz Show live in the city, talk about a fun day! After, I had lunch with my friend at a Turkish restaurant and I fell in love with their Shepard’s salad. They served it with fresh grated feta on the side and fresh lemon, I don’t think I’ll have feta any other way now. I savored that salad and took notes so I wouldn’t forget it.

Today, I fell in love with it all over again.

The fresh flavors of the lemon, a hint of dill, cucumbers, and tomatoes with the grilled chicken makes a wonderful main dish salad. Even perfect for lunch or dinner. If you want to make it more substantial you could serve it in a pita. I went with real feta, I’m not a fan of the chalky taste in reduced fat feta and a little goes a long way.

A wonderful high protein, low fat, low carb, low point, gluten-free main dish salad! To make this Paleo-friendly, leave the cheese out.

Ingredients

  • 1 lb skinless boneless chicken breast, cut into 1 inch cubes

For the marinade:

  • 2 tbsp fresh squeezed lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic, crushed
  • kosher salt to taste
  • fresh ground black pepper to taste

For the salad:

  • 1 1/4 cups cucumber, peeled
  • 1 1/4 cups diced tomato
  • 1/4 cup diced bell pepper
  • 2 tbsp red onion, diced
  • 1/4 cup black olives
  • 1 1/2 tsp vinegar
  • 1 1/2 tsp fresh lemon juice
  • 2 tsp olive oil
  • 1 tsp fresh dillweed
  • 1 tsp fresh parsley
  • 1/8 tsp dried oregano
  • salt and black pepper to taste
  • 4 cups shredded lettuce
  • 1/2 cup feta cheese, grated (omit for paleo)
  • lemon wedges for serving

Instructions

  • Marinate the chicken at least 2-3 hours or overnight.
  • If using wooden skewers, soak in water at least 30 minutes if grilling outdoors.
  • Combine the first 12 salad ingredients (cucumbers through salt and black pepper, not the lettuce) and set aside in the refrigerator to let the flavors set.
  • Thread chicken on 4 skewers and cook on a hot grill (indoor or outdoor grill) until chicken is cooked though, about 10-12 minutes.
  • Divide lettuce between four plates, top with tomato-cucumber salad, fresh grated feta cheese and grilled chicken.
  • Serve with lemon wedges.

  1. Love this recipe. It’s a regular go to for me. The only thing I don’t like is this new website. I can enter the exact name of the recipe I want, and still have to scroll through a bunch of other recipes to find it.

  2. This was a light meal that we really enjoyed.!  Chicken came out very tender and tasty.   Easy to make with very little clean up.  Will definitely make this again!

  4. This marinade is not trying to cover up the chicken flavor..better it brings it out to deliciousness! I will keep this chicken cooked ahead of time to use in many ways.

  5. Chicken was really tasty. Salad was a great blend but needs a little more of a dressing.
    This meal was satisfying but light enough where we didn’t feel like porkers after eating it.
    Will definitely make again.

    I went to Greece almost 20 years ago, and one thing I found a most restaurants was a large slice of feta cheese (around 3"x3" and about a 1/2" thick) that was dipped and fried and came with fresh lemon wedges to squeeze over top. Your comment about the feta with lemon reminded me of that. I'm sure the fried block wasn't very healthy, but man was it good.

I didn't realize until I read the comments that you used white vinegar. I used a combination of red wine vinegar and white balsamic oregano vinegar. SOOOO yummy!!!   28. Absolutely delicious! Took me back to honeymoon in Greece last June! Added marinated artichokes and used kalamata olives instead of black olives. Great recipe I can't wait to make again!

    I'm not a huge fan of bell pepper. Would leaving it out make a huge difference to the salad? And should I replace it with something like extra onion?

  37. Truly, truly fabulous. I was a bit skeptical about not needing extra dressing, but the veggies with the dressing tossed in was perfect.     I don't know how I was surviving before I found your blog! I went to weigh in on Friday and I was down 4.8 pounds and that was just from cooking and eating your recipes. My daughter is 10 and the dr. has said she needed to drop a few lbs. I had no idea how I was going to feed her diet blah food. Then along came skinnytaste. You have made my family so happy they get so anxious when they see me cook now.

    I just finished eating Skinny Loaded Nachos with Turkey, Beans and Cheese for dinner. I wasn't sure if my husband would eat it since he doesn't really like nachos but it was a hit.

    I have tried so many of your recipes and I love everything. My favorite comment I have had from my family is when my daughter was eating baked chicken parmesan and she said "the angels are singing" That is why I can not wait to make this salad it to looks like it will make the angels sing.

      If you are grilling the chicken kebabs with wooden skewers, you'll want to soak them so they don't burn if grilling outside.

    there is a KEY ingredient that should be there for a really authentic middle eastern marinated chicken…that is GROUND SUMAC…that is the secret of the Middle Eastern restaurants. I just adore it and I put it on salads as well. I marinate mine the same way as yours except for adding the ground sumac and red pepper flakes and of course olive oil. Try the ground sumac, I guarantee you will LOVE IT!
    Want to see the BEST Middle Eastern cookbook on the market? Check out Ma Basema (something like that) it is superb!!!
    BTW seeing Dr.Oz live is beyond cool!
