Serve it with fiesta lime rice, cilantro lime rice or a two bean salad or black bean cucumber salad on the side to make it a meal.

For this recipe, I basically deconstructed my jalapeño poppers and stuffed them into chicken and the results where mouth watering!! Now updated to include Air Fryer directions!

Variations and Tips:

  • Use panko in place of breadcrumbs for a crunchier texture.
  • To make this gluten-free, use gluten-free panko.
  • For a milder version, take out the jalapeno seeds and membranes.
  • To make them spicy, leave them in.

Ingredients

  • 2 slices center cut bacon, cooked and crumbled
  • 3 jalapeños, chopped (remove seeds for milder)
  • 3 oz 1/3 less fat cream cheese, softened
  • 4 oz reduced fat shredded cheddar jack, Sargento
  • 2 tbsp chopped scallions
  • 8 thin sliced skinless chicken breast cutlets, 3 oz each
  • 1/2 cup Italian seasoned whole wheat breadcrumbs, or GF crumbs
  • 1 1/2 juicy limes, juice of
  • 1 tbsp olive oil
  • salt and fresh pepper
  • olive oil non-stick spray

Instructions

  • Wash and dry chicken cutlets, season with salt and pepper.  Preheat oven to 450°F.
  • Lightly spray a baking dish with non-stick spray.
  • Combine cream cheese, cheddar, scallions, jalapeño and bacon crumbles in a medium bowl.
  • Lay chicken cutlets on a working surface and spread 2 tbsp of cream cheese mixture on each cutlet.
  • Loosely roll each one, secure the ends with toothpicks to prevent the cheese from oozing out.
  • Place breadcrumbs in a bowl; in a second bowl combine olive oil, lime juice, salt and pepper.
  • Dip chicken in lime-oil mixture, then in breadcrumbs and place seam side down on a baking dish. Repeat with the remaining chicken.
  • When finished, lightly spray the top of the chicken with oil spray.
  • Bake 22-25 minutes, serve immediately.

Air Fryer Directions

  • Follow Steps 1 to 8, then air fry in batches 400F for 12 minutes, turning halfway.

  1. Made this tonight and it was sooo good. Unfortunately 12 minutes was not long enough in the air fryer for my cutlets and we realized they were still raw in the middle. A quick 5 more min and they were cooked thru and very tasty!

  2. Another absolute home run! I wish that I could post a picture of the end result. My husband doesn’t like bacon (yes, there is something wrong with him, haha!) so I left it out. I’m trying to do keto/low carb, so I used Louisiana hot sauce flavored pork rinds that I ground up in place of the breadcrumbs. Perfection!

  3. Another absolute winner from Gina! These were so good- I really wanted seconds but I restrained myself. I made them exactly according to the recipe and they were a cheesy delight. I served them with the black bean avocado salad from the website, which also got good reviews.

    I have made this on several occasions. It is one of my favorite chicken recipes. Made it for a good friend of mine and she loved it too. I can’t eat spicy foods but this was just perfect when removing the seeds and membrane. If you haven’t tried it yet I recomend that you give it a chance.

  6. Wow – This was fantastic! I forgot the bacon but it still tasted fabulous. Chicken was so moist and just enough spice. Cheesy but not over the top. Used with the panko bread crumbs and only coated the top to save carb calories, even though there are not a lot. I will recommend this to all my friends and it will be a regular on the menu!

  7. Love love love this recipe! The chicken is so good fresh and reheated. I didn’t have cheddar jack so I used half pepper-jack, half shard cheddar. This will definitely get added to our meal rotation. 

  8. I’ve made this a couple times now and my husband and I love it. It’s a perfect blend of cheesy spicy goodness. I followed the recipe exactly for the first couple times I made it. Last night, I rolled the chicken, covered it in lime, and then put it right into the skillet (no panko). It was just as good! I know a little bit of panko isn’t going to make or break the points/calories for this, but I wanted to try it.
    We served the chicken with a Mexican-ish stir fry style rice – cauliflower rice, corn, jalapenos, poblanos, and onion.

  11. I make this with Costco rotisserie chicken. I know that probably changes the calorie content some however I omit the breadcrumbs doing this too. I keep the lime and the cream cheese/jalapeno stuffing then mix everything together in a sort of casserole. Husband and I love it. I made it once as recipe said and was time consuming for our busy house. A+

    Great and Tasty. Easy to prepare. The temperature was way too hot in my oven. I reduced after the first 10 minutes.

    For those who are looking for something spicy, definitely leave in the membranes and seeds. I removed them out of habit, and the jalapeño really mellows when it’s baked.

    So delicious!!! I thought it was going to be too much jalapenos but it was perfect! So delicious, My husband loved it too! I served it with roasted rainbow carrots and it was a delightful and healthy meal.

  19. I hate rolling chicken but I love the flavors of this recipe so much. So I just breaded the cutlets and air fried them flat. Then I topped them with the cheese mixture and air fried or broiled them until the cheese was melted and bubbly. Same flavor. Less hassle.

  21. Hi! This was amazing! Howeve, I put this in recipe builder and it came up as 8 points. Are the servings off? Or did I do something wrong? I didn’t just put in the nutrition info. 

      1. Gina, is it possible that you removed points for unused breadcrumbs? I’ve seen you note that on other breaded recipes. I came up with 8 on blue too

  26. This is so fantastic! I have to make it at least once a week. It’s hard for me to get thinly cut chicken breasts in my small town so I filet my chicken and beat it semi-thin. Still comes out oh so tasty! 

    The best part is it doesn’t feel like your eating a low calorie/diet kinda meal!

    This a seriously great dish! Only thing I changed was to sauté the jalapeños with some fresh garlic before adding them to the cheese/scallion mix. I’ve made it twice and it’s a keeper!!!

  32. Hey there, just wondering if anyone has tried this in casserole form?  I used the breasts from my chicken already and wondered if I could cook the remaining chicken in the IP and cut up and mix this all together for a yummy casserole?

    1. It says Freestyle points. Not Smartpoints.  I put it in recipe builder and it came up as 8 points for the 2 pieces.

    This was AWESOME, and I never comment on anything- but my husband who is NOT at all interested in changing his diet LOVED this. I told him after he licked the plate clean that it was a WW recipe and he said- BS! I added a side of brussel sprouts with bacon and parm to mix it up and it was a great dinner. Everyone should try this!

  35. All I can say is wow!  I have made this dish several times now. It’s so delicious ????. I had it for everyone at Christmas. They all loved it!  It was a big hit. Everyone was asking me how I made it. I had 15 people over. Bought frozen chicken breasts from Costco.  Sliced them lengthwise in half as they were thick. Then I slightly pounded them flat. I used 9 breasts. Had two left. We also had tri-tip and a few side dishes although everyone raved about this dish the most. I made the cream cheese mixture the day before. Just doubled the ingredients and took out most of the seeds and membranes so it wasn’t to spicy.  ????

  37. Wow, these were fantastic! Didn’t change a thing. Used the panko crumbs and it gave it a nice crunch. My husband wasn’t able to eat it until the next day, and he texted me and said “Holy crow, that chicken you made last night is wicked good!”  So I’d say this is a keeper recipe!!

  40. Delicious! I made it with about 1oz of cooked pork sausage in place of the bacon and it was still great! It tasted to luxurious and creamy. I served it with steamed broccoli, but I wish that I had baked the broccoli tossed with some of the leftover cheesy mixture.

    GREAT recipe! So many positives. First, it was so much easier than I thought it was going to be. I cut larger chicken breasts into fillets myself, so they weren’t all exactly 3oz, some were 4oz. That was the hardest part! At first I was trying to insert the toothpick right after stuffing, but that made it difficult to coat in the lime and breadcrumbs, so I finally figured out to just hold it together and pin it once in the pan. OK – my guests LOVED it. It looked great, tasted great and we loved that we could have 2 and still be within our WW points! Thank you! I would have never given this a chance on another food blog because the ingredients sound quite indulgent. Thanks for finding skinny ways of doing comfort food!

  49. PHENOMENAL!!! I used the jalapenos without seeds, and it had very little kick to it – so people who aren’t into spicy can rest easy. I’ll probably keep the seeds in next time, but regardless this is going under my list of favorite recipes!!

  50. I made this for dinner for my husband and I – WOW. Totally putting this in the rotation. It’s perfectly spicy, not too spicy, creamy, cheesy, etc. it literally tastes like a jalapeño popper! The breading is very light and crisps up so well in the oven (I don’t have an air fryer). I halved the recipe and wish I hadn’t! It was great for leftovers the second day and again, wish I had more to eat leftover! Thank you Gina for always coming up with creative, delicious recipes even my husband gets on board with and loves! It makes eating healthy so easy and we never feel like we sacrifice, because frankly, we don’t!

    This is sooooo good!! I don’t have much experience cooking with raw jalapenos so I was conservative and scooped out the seeds and membranes. It still had the flavor of the jalapenos, but not the heat. My kids told me I could make it a bit spicier next time, which I will do since this will definitely stay in the dinner rotation. I used the air fryer instructions and it came out crispy and delish.. I served it with yellow rice and steamed broccoli. Thank you for this yummy recipe!

  55. I just made these and they were really good! Unfortunately a lot of the cheese leaked out despite my best efforts (I’m not the greatest at stuffed chicken, maybe with practice I’ll get better!) and I found the bottoms got really soggy.
    I also realized part way through I didn’t have any bacon but they still tasted great!
    Would love to try this fried one day if I’m feeling like a greezy cheat day.

  57. Wonderful, I cut back on amount of cheese as I picked up whipped cream cheese “regular” by mistake! Exceptionally creamy isn’t it! So used 1.5 ounce or 4 tabs of it and 1/4 cup daisy cottage cheese and just 28 grams of shredded reduced fat Mexican cheese., to make up for it. We loved it and could eat it every day! I had plenty of filling as I had (5)- 4-5 ounce chicken breasts that I pounded thin. Made a combo of your cauliflower rice and the skillet zucchini–(just no cheese in it) combo and it was a wonderful vegetable medley to go with it. Thank you. Just wonderful

My son ate my second piece before I had a chance to grab it but that was okay because one piece filled me up and it was soooo good.  I think my son ate 5 pieces of chicken but he is a growing teen and a football player so I often have to double your recipes for my family of 4.   59. I loved this!!! So, so good and boyfriend approved!! My 14 yr old however declared it “gross” because he didn’t realize I put real jalepenos in it…….uhm, hello?? It’s called JALEPENO popper stuffed chicken for a reason!!! I served with broccoli and grape tomatoes for myself and my boyfriend opted for waffle fries lol.   64. make the cheeses full fat, substitute grounded up plan pork rinds [add seasonings of your choice] for bread crumbs and you have KETO! no rice of course… maybe some riced cauliflower or just some broccoli or spinach. ;–)

    If you use fat-free cream cheese instead of reduced-fat and leaving everything else the same, the Recipe Builder drops the SmartPoints from 8 to 5.

    Seasoned Bread Crumbs – 7 points
    1/3 less fat Cream Cheese – 9 points
    Center Cut Bacon (2 slices) – 2 points
    Sargento reduced fat Cheese – 5 points
    23 divided by 4 came out to 6 points…

  70. Really good! Not very spicy…maybe I need to leave the seeds in next time? I was worried because my wrapping was a little shoddy, but even though the filling leaked a little it stayed all together in a clump and was very tasty!

  71. Absolutely Delicious!!! Great flavor I seeded out jalapeño so perfect amount of spice for family.  Simple sided of grilled asparagus and unsweetened applesauce.

  78. I made this last night with your warm Mexican corn salad. It was a super hit, and my boyfriend and I both loved it.

    I’m horrible at beating chicken breasts, but my store didn’t have cutlets. I just cut four breasts in half and did the best I could rolling them with toothpicks. Between my shoddy work and high altitude, I baked them for 25 minutes at 375 and then an additional 20 minutes at 450 (turning them once).

    Like I said, they were fantastic! And even better with the corn salad as a side. Rolling them in the lime juice before the panko was a wonderful touch.

      I would recommend using a green bell pepper in however many your are planning on making for them. They’re mild and would make a great substitute.

    2. Try a poblano pepper. They’re not nearly as hot, but flavorful and with similar flavor as jalapeno. I’d avoid the bell pepper.

  83. I made these without the bacon and used panko breadcrumbs. I also added cumin and cilantro to the filling. It was FABULOUS! I also had bigger pieces of chicken that couldn’t get as thin as I wanted them to, so I baked them for 375 for 25 minutes, then 450 for another 5+ minutes to get the golden color. Thanks for another phenomenal recipe! This meal was husband approved.

  89. I made this last night, and it was just the yummiest!
    I had some problems with the chicken. The package SAID thin-sliced cutlets, but what I got were two cutlets and one breast. Grrrr! So I pounded that breast out thin and cut it in half, et voila. Took longer than it should have for my hungry guy, but I hooked him up with a beer, and he waited happily, then he inhaled the meal!

    This is definitely a keeper, and is going into the rotation!

  90. OK just have to say thanks for this fab recipe! The taste is amazing and the portion is good sized! I made these as written a few months ago and wished I had done a double batch, so yesterday I made that double batch and froze them! I parbaked the completed chicken rollups for 10 min at 400, then "flash froze" for 3 hours on plates in my freezer… Then I put them in a gallon freezer bag. Just reheated a couple straight out of the freezer for 25 min at 450 (I think the higher heat keeps the inside moist and the outside crispy) and enjoyed them so much! It might seem like a lot of work, but the reward of getting home at 9 pm and having dinner basically ready without eating fast food is so, so worth it. Thank you Gina!!

  91. This is just perfect the way it is!! I don't use bacon though, I use the lower fat bacon pieces you can buy in a bag with the salad fixins at the supermarket. Way easier than frying bacon.

    1. It says to preheat oven to 450. My chicken cutlets were thicker and I didn’t want the breading to burn, so I did 30 mins at 375 and cranked it up to 450 for the last 5 minutes to get the color.

    I made this last night and was happy with it. I made the mistake of not getting enough chicken at the grocery store though. The recipe calls for 8 3oz pieces of chicken, so I though "Hey, that's about a pound and a half-ish, I'll just get one container of a pound and a half." I should have gotten two containers, because I only ended up with four pieces of chicken and a lot of mixure left. Derp.

    The only thing I did different was I brushed on the oil/lime mix with a basting brush instead of dipping it, for neatness. When I make this again (and I will) I think I'll pound out the chicken (just a little) to make it more of a consistent thinness. I think it will provide a bigger surface to spread the mixture too.

I added a little bit of TJ's roasted peppers & onions frozen veggie mix to the filling, and I coated the chicken in crushed tortilla chips since I didn't have breadcrumbs. Don't skip the bacon, it really adds a nice smokey note to the dish.

    I served it with tortilla chips and a red cabbage salad with roasted corn, black beans, tomato, cilantro and lime juice.

    These were delicious!! I used regular chicken breasts, sliced them in half and pounded them slightly. I used turkey bacon. And while I liked them with scallions, I might leave them out next time for a more original "jalapeño popper" taste. Thanks for the great recipe! 🙂

  136. This recipe is absolutely fabulous! Since I've found it (two weeks ago) I've made it twice, can't get enough! My grocery store has Perdue thinly sliced breasts so I just use them but typically only 5-6 in a package. I make the filling the same amount and any leftover I put in a small bowl and put it in the oven for 10-15 minute and it makes an amazing dip! I am headed to a party this weekend and might just make the filling in a dish as a dip for the party!

    Made this last night with the fiesta lime rice. WOWZERS!!! Normally I avoid jalapenos, but my boyfriend loves them so I thought it'd be a nice treat. I LOVED THIS DISH!!! The jalapenos (minus seeds) added awesome flavor and warmth without burning your mouth out. Unbelievably tasty! And the rice paired perfectly with the chicken. Definitely making this one again!

  140. I agree with JesseGirl – briefly sauteing the jalepenos calms the heat and sweetens them a bit. In an effort to make this recipe gluten-free, I tried it without the breadcrumbs. It turned out a bit too tart for me, so I think I might try adding some sugar-free sweetener to the lime juice-olive oil mixture next time to make it taste like "margarita" chicken. Filling was great though.

    I didn't have bacon so I added chorizo instead and it worked absolutely great. The smokiness and spices of the chorizo really worked well with the cheese.

    I used panko breadcrumbs, but 1/2 cup wasn't enough. I probably used close to a full cup. I used turkey bacon because it's what I had on hand. We couldn't really taste the lime, not sure why not. Maybe because of the panko? I had my hubby make me cutlets from the breasts of a whole chicken I bought, and now I'm making your stock recipe with the carcass. Well, it'll be stock, not broth, but yummy all the same. I think next time we will cook the jalapenos a little. They were a tad crunchy for us.

    I made this recipe last night and it was AMAZING! I made a few changes to the recipe mainly because I had just made your jalapeno poppers and wanted to use up for ingredients. I used panko crumbs instead of bread crumbs, regular cream cheese because that was what I had on had, and extra scallions to use up the rest. I loved this recipe so much and my boyfriend says he wants to eat it again soon! Next time, I will add a little cayenne pepper to the lime mixture to add a little heat on the outside of the chicken. I was surprised how NOT spicy this dish is and we LOVE spicy so cayenne is a must in my pantry! Thanks for the recipe!

    Just tried this recipe…LOVED IT!! Only did a couple things different; omitted the cheddar cheese, used plain bread crumbs, and baked them a little longer. My husband, who is hard to please, suggested roasting the peppers the next time!! The next time was a positive from him..lol

  166. I made this today… Yummy!

    I used mozzarella because cheddar is not easy to find where I live. I only used 2 jalapeños. I used lemon instead of lime (I always do that) and I added the zest to the breadcrumbs. I ended up with a few tiny breast pieces that I couldn't roll so I just breaded them and put some of the cheese mixture on top, those browned really really nice I might try doing that instead of rolling next time.

  174. Oh, one other difference, I put the chopped jalepenos into the pan with the bacon (once the bacon was all crispy) and just cooked it for a minute to soften. BUT BE CAREFUL! Cooking hot peppers can make strong, fumes – do not breath them in. But that kept them from being crunchy.

  182. This was a big hit in our family. My guy said that it was his favorite. i made the Fiesta Lime Rice recipe, as suggested and it was perfect! He doesn't really like rice but he ate a ton of this. And, of course, i felt great that i was making him a healthy meal.
    i found this very easy to make. i've rolled chicken breasts up before. Learned how to make cutlets (cut a breast in half) on the internet. i find that if i dip the chicken thoroughly, in this case, the oil mixture, then the breadcrumbs, it seals the rolls up and makes the inside mixture not leak as much. Even if it does leak – it's still great!

  188. Made this for dinner tonight and it was a HUGE HIT…even my 6 year old asked for seconds! I had to substitute red onions for scallions, as I didn't have scallions on hand. I look forward to what it will taste like with the right ingredients :). I sautéed tomatoes, mushrooms, red onions and garlic and served that as a side. They paired nicely together.

    I'm a casserole kind of girl and luckily my husband is a casserole kind of guy. As delicious as this recipe looks and sounds I didn't want to mess with chicken cutlets mainly because I had boneless/skinless chicken breasts in the freezer. I took them out, cut them up (frozen, with a good knife), mixed everything up together and threw it in one dish. I'm eating it now, with a Pampered Chef skinny margarita and some lime tortilla chips and it is TO DIE FOR!!! Thanks so much!!!

Everything was fresh, flavorful and light. Will definitely put this into my normal rotation. Glad to know that it is easily freezable as well!

    This was AMAZING!! This is the first recipe I made from this site and now I can't wait to explore more! I honestly couldn't believe how wonderful this was considering the nutritional stats.
    One quick question. Well, maybe two. 1) Can we email Gina directly with questions? If so, how? 2) I am an online Weight Watchers member and tried to calculate the points by using the recipe builder but ended up with two points higher than listed above. When, however, I used just the nutritional information provided by Gina, I found it to be exactly as she has reported. I didn't include the jalapenos as I know sometimes the recipe builder adds for 0 point veggies, so I really don't see what happened! Thanks for your thoughts.

  194. Loved this! And so did my boyfriend, which is great! He loves spicy so I added more jalapeno, used the panko as you said, used turkey bacon instead, and used fat free cream cheese! Delicious. He even heat up the leftovers and ate them the next night! I love being able to cook something with a lot less calories, but still having that feeling of eating something that isn't "diet" food. I have the hardest time with stuffing and rolling chicken, (I'm just challenged that way), so I cut a pocket and stuffed them, then just put them pocket up in the pan, so they wouldn't leak, and it worked great. Not messy at all, crispy and good! Loved every bit of it. I couldn't really taste the bacon, though, so I might leave it out next time.

  200. I made this tonight and it was great! I don't like spicy food, so I was a little apprehensive about using all three jalapenos (even with seeds removed). There was no need to worry; these turned out great!

    I made a couple changes: 1) I used turkey bacon, and 2) I only made 6 cutlets. I recalculated points given my changes (keeping the same amount of filling, even though I didn't quite use it all, and subtracting 1.3 oz of breadcrumbs since I only used 1.1 oz). My points turned out to be 7 points per piece, but having one piece paired with the fiesta rice and a big serving of veggies is more than enough!

    I didn't use bacon since I'm not a big fan.
    I had leftover backed mac and cheese that I had to use or lose so that and steamed string beans were the side. I used the mixture that came out of the cutlets on my string beans. I'm going to use the rest of the cream cheese to make a warm dip it was that good.
    As someone else suggested I'm going to try either a pocket or just fold over a cutlet rather than roll them next time and I wish I had a BBQ to try them grilled.

It was only my husband and I eating, so I made 4 pieces, but made the same amount of filling – which was a good idea, because even though I toothpicked the ends, some of the filling still baked out. So I just nuked the leftover filling and made a little "bed" on the plate and put the 2 pieces of baked chicken on top – problem solved and no cheesy goodness lost 🙂 I also seasoned my plain panko bread crumbs with a lime zest/pepper spice blend. It was a little trickier than I anticipated as I only had regular chicken breasts and tried to pound them out to make them thinner….except I don't have a meat mallet, so I used my pestle. Which then ripped through the chicken. Nevertheless, I soldiered on and other than it being a bit messy (the cheese mixture melted out of the chicken), no harm done.

    I will just buy the chicken cutlets next time for a much faster/less messy experience.

    1. Cover the chicken with plastic (or put in a plastic veggie bag or unzipped ziplock) and slap it a few times with a sturdy frying pan. Better than a meal mallet!

  234. I made these last night for dinner as well! Excellent! I followed the recipe as written EXCEPT for on three of the rolls I used the cheese mixture before I put the jalapenos in (DD & I are not big jalapeno fans) and then for the rest of them I added in the peppers. My daughters boyfriend loved them and and 4 roll-ups (I made 10 total). Hubby liked them quite a bit but said he thought they needed more filling, and they probably did as I didn't up the amount of filling I just made it stretch for the extra two rolls. I also think next time I may try cutting the pockets into the chicken breasts and filling them that way rather than making rolls out of them, just to see the different.

    Either way, this recipe will be a repeat in our house and will be added to the cookbooks that I'm putting together for my kiddos. Thanks for a great one!

I paired it with a great brown rice side salad. 2 cups cooked brown rice, 1 jar Trader Joe's corn salsa, 1 yellow pepper (seeded and diced), 2 jalapeno peppers (seeded and diced), 1/2 diced red onion, juice from 2 limes, 1/4 cup cilantro (chopped), 1 can black beans, 1 can kidney beans (both 15 oz size, drained and rinsed), 1 teaspoon chopped garlic, 1 1/2 teaspoons cumin, and a little salt and pepper. I wonder what the points are on this side dish. Everything is healthy…….Gina??

  237. This was delicious! I had it last night for dinner. I didn't like how the thin sliced chicken breasts looked at the store, so I just bought regular boneless, skinless chicken breasts. Then I cut them in half length wise and put them between two pieces of plastic wrap and pounded them thin with a rolling pin. Worked great!

  251. I've had a bit of trouble with some of the stuffed chicken in the past – the filling ends up oozing out for me. What do you think about using one thicker cutlet, then slicing a pocket into it, and stuffing it that way (double the filling)? One 6oz cutlet would then be 1 serving for 9 points.
