Buffalo Chicken Lettuce Wraps

Making shredded buffalo chicken in the slow cooker is super easy, anyone can do this and you can use the chicken for everything from wraps and salads, to pizza toppings, sandwiches and more! I’ve now updated this with instructions for the Instant Pot as well! If you’re a buffalo chicken fan, you may also like Buffalo Chicken Meatballs, Buffalo Chicken Dip or Baked Buffalo Wings.

I don’t believe in omitting carbs from your diet, but some meals I may skip the carbs if I plan on having a carb-heavy dinner or breakfast. That’s when I love making lettuce wraps, they are perfect for holding your favorite sandwich fillings you would normally eat with bread.

How To Make Buffalo Chicken Lettuce Wraps

Lettuce wraps are low-carb, keto, gluten-free and low calorie, and don’t interfere with the flavors of the filling. A few tips when making lettuce wraps:

  • Start by making shredded chicken. I like to do this in the slow cooker, but you can also do this in the Instant Pot. Directions are provided for both methods. You can also use leftover chicken breast from a rotisserie or even canned, in a pinch.
  • Look for lettuce leaves that are large enough to hold the filling. I like to use iceberg lettuce for larger cups. Romaine lettuce and baby romaine are also great.
  • The leaves of butter or boston lettuce are smaller, but also wonderful.

What To Serve With Buffalo Chicken Lettuce Wraps:

  • If you want something crispy, serve with some baked chips on the side.
  • If you prefer, you can turn this into a big chopped salad by simply serving this over a bowl over chopped lettuce.
  • To keep it low carb, serve it with celery sticks or carrot sticks and blue cheese dip.
  • Add more protein by increasing the serving size or have some cottage cheese or yogurt on the side.
  • Serve it with a piece of fruit on the side like an apple or pear.

Ingredients

For the chicken:

  • 24 oz 3 boneless skinless chicken breasts
  • 1 celery stalk, diced
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 16 oz fat free low sodium chicken broth
  • 1/2 cup cayenne pepper sauce, I used Frank’s

For the wraps:

  • 6 large lettuce leaves, Bibb or Iceberg
  • 1 1/2 cups shredded carrots
  • 2 large celery stalks, cut into 2 inch matchsticks

Instructions

Slow cooker method:

  • In a slow cooker, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn’t enough).

  • Cover and cook on high 4 hours.
  • Remove the chicken from pot, reserve 1/2 cup broth and discard the rest.
  • Shred the chicken with two forks, return to the slow cooker with the 1/4 to 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes. Makes 3 cups chicken.
  • To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice. Wrap up and start eating!

Instant Pot method:

  • Combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn’t enough) in the Instant Pot. Cover and cook high pressure 15 minutes. Natural release.
  • Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the pot with the 1/4 to 1/2 cup broth and the hot sauce and saute 2 to 3 minutes. Makes 3 cups chicken.
  • To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice. Wrap up and start eating!

  6. My d.i.l prepared this in slow cooker and I really liked it. I did it in the pressure cooker and liked it. Instead of discarding liquid, I refrigerated it and reused it a week later. No one got sick and everyone loved it. BTW we used boneless skinless thighs and it didn’t get dry.

  7. If doing this in Instant pot its quick and easy. Next time I will remove the chicken from the liquid, shred and toss with buffalo sauce. It was too watery adding it back to some of the liquid. I ended up draining it and adding more buffalo sauce. My family liked it

  11. I cook this recipe all the time and it is one of my husbands favorites! I think my chicken gets a bit overdone in our instant pot, but that’s on me – I need to play with the timing. Regardless it is still a favorite. My question is… could this be made with ground chicken and sauteed up with the Franks sauce? Or could the chicken instructions from your Buffalo Chicken Rice Bowls recipe be used? I don’t always want to get out the instant pot and would love to try new ways to do the chicken with good results.

  12. Excellent and easy dinner! I ended up putting this over romaine lettuce in salad form. Used Frank’s Wing Sauce and it was really delicious! Can’t beat it…high protein, tasty and low calorie/low fat. Winner!

  13. Delicious! Did mine in the Instant Pot, and will make again! Two things, though. One, is please don’t discard the stock. Waste of good food. Keep to use in other cooking, or…drink it. And the hot sauce should be more specific. Regular hot sauce (Frank’s, etc.) isn’t hot enough to stand up to the bland chicken. I used Hot Frank’s Wing sauce, for more flavor.

  15. Made this tonight… the flavor was fine. I added back in the reserved broth and it got kind of soupy. I wish I hadn’t added the broth back to the chicken.

  16. I used a drained 12.5 oz can of chicken (weighed out to 8.5 oz after draining.  I felt like there was too much mayo and hot sauce, so I added more celery, onion and carrots.  I’d make again, but add more chicken or less moisture.

    This is delicious and incredibly easy to make.   A great dinner for Sunday Football when you are trying to be healthy.   I loved the lettuce wrap but my family put it in a tortilla and liked it just as much.   I will certainly make this again.

    The recipe looks good, but I have a question. WHY discard the remainder of broth after cooking the chicken??! It should be saved/frozen for use in soup or another recipe. Don’t throw out good food!

  19. I made this yesterday in the crockpot! Amazing, served on some white flour tortillas. I did not have lettuce leaves only mixed salad. Add that on top and had this with 9 tater tots and some California blend veg. So delicious and filling!!!

    1. I cooked stuff frozen in my crockpot…and it cracked. So…don’t do that . My slow cooker function on my pressure
      Cooker would be ok..metal insert.

  23. I cooked this recipe with a little less than 2 lbs of boneless chicken breast and I came out perfect!! We really liked the chicken with a teaspoon of ranch dressing with blue cheese crumbled on top. Use the Franks wing sauce, it is just a little thicker than regular Franks hot sauce. Try wapping the lettuce wrap with a low carb small size flour tortilla, its like a hot wing taco!!

  26. This probably is a really silly question lol but it says the onion is diced but nothing about the celery and garlic. Those are diced/minced too, right?

  27. These were good. I am not a huge fan of lettuce wraps but I do force my self to have them when I need a low carb option. I think this would also go great in a whole wheat pita.  Next time I will use less of the reserved broth, maybe only 1/4 cup. I think a half cup diluted the heat. I am assuming that this is 0 points because the Skinnytaste Blue Cheese Dressing is not added to the total??

  31. Wow!  Extremely hot…glad I tasted it prior to adding the chicken back in.  Once I thinned down the heat, wasn’t that big of a deal.
    Will have to use a different hot sauce or one made specifically for buffalo chicken

    Every time I make this recipe its a hit.  I try doubling and tripling this recipe for extras but the kids seem to make it disappear faster than I can save it!  

  33. Will the chicken freeze well after cooking? Thinking of freezing in lunch sized portions for a quick meal when I’m in a pinch.

    1. I freeze mine for the on the go for the hubby and I, just make sure when you reheat to bring the temperature up to 165 for 15 seconds

    I LOVE this recipe. I make only the chicken part, and I double it then freeze it in one-cup portions. It’s great to have on hand because it’s a great base for so many recipes. Although it’s already super easy to make, I’m super lazy, so I made it even EASIER! I shred the chicken in my Kitchenaid mixer: Place the cooked chicken in the mixer while it’s still warm. Using the paddle attachment, set speed to level 2, and let the mixer run for about 30 seconds to 1 minute. Keep an eye on it – you don’t want to let it go too long, or it’ll be mushed instead of shredded.. I understand that you can do this with a hand-held mixer as well, but I haven’t tried that yet.

  45. I just made this with frozen chicken breasts (I never remember to defrost anything – story of my life!) and it was delicious! I cooked it for the exact same amount of time (15 mins in the Instant Pot) and the chicken came out fully cooked yet still tender and moist. I am currently doing Whole30 for the month of January and I have a feeling this will be a stable meal for me!

    1. Hi – I know you posted this a year ago, but my sister lives in NY near Buffalo so they eat wings a lot. Her kids also complain that they’re too spicy so they always order the sauce on the side so the kids can dip and get as much/little sauce as they want. You could reserved out some of the chicken plain for them to make wraps and then give them a cup of sauce on the side for dipping if they want?

    1. I usually reserve some of the broth I used in cooking if it’s dry, otherwise you could use chicken thighs which are much juicier.

    1. So I made this in the Instant Pot with the onions, celery stalk, and half a cup each of chicken stock and Frank’s Hot Sauce (I just put it all in there and pressed the poultry button).. It turned out great!! Sooo flavorful. It’s going to be amazing tomorrow for lunch as a lettuce wrap for me and a whole wheat wrap for my boyfriend. Thank you for another great recipe!!!

    This has become a weekly favorite of ours. Now I double the recipe and share it with loved ones! Because I remove all of the fat prior to slow cooking it, we can eat this chicken COLD. It’s absolutely wonderful served with your Zesty Avocado-Cilantro Buttermilk dressing.

  83. Thanks for this recipe! My husband is a big buffalo wing fan but had lap band surgery so he can’t have them anymore. 

    I had this with the low fat bleu cheese dressing (which was delicious). 

    After the four hour cook time on high, I shredded it, added the hot sauce (did 1/2 cup more since we live the flavor) and after the additional 30 minutes, the chicken mixture was a little wet which made for very messy wraps. 

    Did I skip a step or do something wrong?

      1. Maybe I’ll make sure the chicken is really dry before I shred it. 

        Is the 1/2 cup reserved broth necessary if I’m doubling the hot sauce? That might have contributed.

      2. Since you’re adding more hot sauce which is liquid, you don’t need to reserve the broth. Keep in mind hot sauce is high in sodium.

  87. Made this twice now. Soooo good!!! I use a bit of ranch dressing instead of bleu cheese, but it's just a personal preference. The idea of making buffalo wraps with lettuce is great since it is really satisfying while keeping on the healthy side.   91. Forgot to set the crockpot? No worries. Season the chicken with salt and pepper, saute the chicken in a dutch oven with olive oil for about 2-3 minutes a side, add the broth, and then put it into the oven on 250 for an hour.
    Forgot the chicken broth? No worries. Add 2-3 tsp of kosher salt (or seasoned salt) to 1.5 cups of water.

    This came out great!! We used Sweet Baby Ray's Buffalo Wing Sauce.

I used Romaine so they were more like 'tacos' but I cannot believe how FREAKING FANTASTIC these were!! I did not miss the bread one. single. bit. I've been postponing making this b/c I was thinking the lettuce leaves would fall apart, which they did as I was trying to use the iceberg, so I would like to try using maybe Romaine or something else. The flavor of the chicken was great..a little too spicy for my husband but you can always modify that. I love the low carb option and we tend to eat a lot of wraps so this is a good alternative.

    I made this for a housewarming. I made it the night before and stopped after I shredded the chicken (before I added the broth back and the hot sauce), put the broth and chicken in the fridge separate. At the start of the party, I just added the 1/2 cup broth and 1/2 cup Frank's and turned on the crock pot, had some appetizers, and then it was ready. Everyone LOVED it!

    Love this recipe!!! In my house we are only feeding 2 (my husband and I), so I decided to use my leftover buffalo chicken to make a buffalo chicken pizza tonight…SO good, and only 4 pts a slice! I use the greek yogurt & self rising flour crust recipe (easily found on pinterest), and topped it with the chicken, 1/2 cup blue cheese crumbles, and 1 cup mozzarella. My husband and I have used nothing but your recipes for over a month, and it's nice to finally have meals that are weight watchers friendly for me, easy to make, and that he finds delicious as well. Thanks a ton, and keep up the great work!

    LOVE LOVE LOVE this recipe! So easy, and you can do so much with it! We buy the mini buns from trader joes (80 cals a piece) and make buffalo sliders. Sometimes we put it on a sandwich. I have done the lettuce wraps, and have even dressed it up on lettuce as a “buffalo chicken salad.” I always crumble a bit of good blue cheese on it, and everyone goes crazy for it! Thanks Gina!

    I've made this recipe 2 times now and I would definitely make this again. The first time I made it with the lettuce as wraps as in the recipe. The 2nd time I was feeling a little naughtier so had it with gluten free pitta breads. I'm going to try using the chicken as a topping for a gluten free pizza I think.

I made a mistake the first time – I know, how do you mess up such a simple recipe? – and included the Frank's with the chicken broth for the 4 hours cook time. We really like spice in our house and discovered that was perfect. It's just a little spice for the kids, and then I mix up the broth with additional Frank's for the husband and I. I love it in the lettuce, but the rest of the family likes tossing it in tortillas with some cheese. And the leftovers a day later, after it's soaked up more of the sauce … YUM!

  120. I made this last night and loved it! Make sure you follow the directions for the liquid b/c I got a little over-zealous with the Frank's and it was a bit more sloppy than I would like. The measurements are perfect, don't mess with them!

    I highly recommend not deviating from making them lettuce wraps. The spiciness of the Frank's pairs beautiifully with the cool crispness of the lettuce, plus you won't get that terrible bloated feeling afterward from the starchy carbs of a tortilla, bread, or rice. I will make a sandwich with the leftovers but I beg you, try it with the lettuce. You won't be disappointed!

  128. I tried to comment on a conversation way up above, but the reply button would not work. I wanted to caution those who were discussing placing food into crock pot and refrigerating overnight. Do not put crockpot dish itself into frig; the extra time it takes to warm up the dish the next day is extra time your raw meat is sitting at a temp that is not safe. I have read in two sources that this is unsafe to do.

  129. I love buffalo chicken, and have a solution to cutting the sodium.

    I make my own! Sometimes I will use 3/4 my own with 1/4 of franks to cut the sodium. So really you could use any ratio of the two you like.

    I found this Buffalo Sauce recipe in a comments/forum section of myfitnesspal: although I usually halve the chili and red pepper and sometimes double the vinegar because I almost singed my eyebrows off the first time I made it(the sauce that is) for my boyfriend!

    The only real source of sodium in it is the chili powder which does contain salt.

    1/4 C water
    2 T unsalted butter or olive oil
    1/2 T chili powder
    2 T ground red pepper
    1/4 C cider vinegar

    Simmer for 5 minutes. Add more vinegar to taste. The more vinegar you add, the thinner it gets and tastes more and more like bottled sauce. I prefer butter to olive oil b/c it seems to give it a sweeter, smoother taste.

    Keeps well in the fridge for weeks.

We started to get sick of them (how is that even possible?!), so today I took the leftover shredded buffalo chicken (approximately 1.5 c) and mixed it with 1/2 cup Chobani plain yogurt, 1/2 stick of Neufchatel cream cheese (a lighter version of cream cheese), and some blue cheese crumbles. Microwaved for a few minutes, stirred well, and it was AWESOME!

  148. These were great! So easy and yummy. I served them on the lettuce as pictured, fully expecting my husband to get up and stuff it all in a tortilla, but he LOVED them! I found it to be super filling (2 lettuce wraps for me was a little too much).

    The only thing I did differently was add the 1/2 cup Franks in the beginning (ooops). I don't think it would matter much, except that was almost all the Franks I had and the taste wasn't very strong after cooking, so in the last 1/2 hour I added about 1/4 cup Franks and some BBQ sauce and it was very yummy. I almost think 1/2 cup would be too spicy for me, although I'm sure my husband would love it.

    And glad to see I'm not the only one who had sauce dripping everywhere. I'll try to add a little less in the last half hour next time.

  152. Made this as directed 3 times now – and it comes out terrific! I've found that adjusting broth/hot sauce ratio is all that's needed to control "drippiness." Add liquids to shredded chicken slowly until just absorbed. Hubby and 8 year old LOVE this on salad, in lettuce wraps, on sprouted tortillas, etc. Quite a hit with a little sprinkled blue cheese or jalapeno ranch dressing, too.

    1. I've made this several times and didn't always have celery on hand each time, and thought it still came out well without it. I definitely think using the onion and/or garlic gives it a good flavor though.

Oh Gina…I have been on Weight Watchers for a year and have so missed my hot wings, so I made this last night to have for supper tonight…I used the laughing cow cheese wedge (Blue Cheese Flavor) and wrapped it in a high fiber low carb tortilla…omg…I can not tell you how wonderful this is…thank you so much from the bottom of my heart.   196. Here's a 'hack' for you: Hubs and I are doing low carb and makes wings alot; but we usually make jerk wings, not plain hot ones. So we boiled some chicken, shredded it, added some butter to a saute pan, added chicken, added this sauce:

    then wrapped in red leaf lettuce and dipped in blue cheese dressing, as the jerk is a tad hot. Yum! and low carb!

  197. This sounds like a great recipe!! One question though…..why discard the broth? Why not add a few more veggies like carrots and kale or whatever you put in to make a nice stock and then use it to make a delicious soup or strain and use as stock for other recipes? That's my plan :o)

    I took a chicken breast, added bbq sauce, put it in a bag, removed the air and dropped it into water. That was about 2h 45min ago. The Temperatur was between 75°C (167°F)and 80°C (176°F). Do you think it's ready?

My husband had to stop himself at 3 wraps, and my 5 year old son ate his (along with the homemade blue cheese dressing) on a tortilla. Excellent flavor without the added fat.     1. I would just use less Frank's hot sauce. I did that with the buffalo chicken dip recipe. I think I used half of what the recipe called for and it was perfect.

    2. I'm also wimpy when it comes to hot food. I used a 1/4 cup of hot sauce and I thought it came out fine!

    3. I used the full amount and didn't think it was too spicy, the blue cheese dressing helps cool it down. Maybe a mild buffalo wing sauce would work?

    Gina, I love your recipes and have made several of them- can't wait to try this one!! One question though, I have a baby tongue and can't handle spicy foods. Is the hot sauce your recommended really spicy, or are there milder versions of that sauce? What other sauces would you recommend for flavor, but not really for spiciness? Thank you!! 🙂

  209. I have boiled chicken in a large pot and then shredded it. I also use my Kitchen Aid mixer with the paddle attachment to shred chicken. It's so easy and done in seconds.

  213. To make it even a little more nutritious/nutrient dense, use Kale or Rainbow Chard. It alters the flavor a little and doesn't have the crunch that you get from iceburg lettuce but there is so much more goodness in there!

    1. Maybe you could put the shredded Kale in the crockpot for the last half hour, then put all of it in the lettuce? Then you would still get the nutrition and the crunch.

  215. My husband and I are not huge fans of very spicy foods… I wonder if I can substitute the hot sauce for something more mild??? Any suggestions????

    1. BBQ sauce? Just double check the points if you're doing WW. But a 1/2 cup of sauce divided by 6 servings isn't bad.

    2. Try looking for a mild buffalo sauce at the store, not sure how it effects the points though. If you do use BBQ, I would sub ranch for blue cheese, or leave it off all together.

    3. I'm wimpy when it comes to spicy foods, so I cut the hot sauce down to a 1/4 cup and thought it still came out great.

  229. A tip I got from pinterest… If you put the still hot chicken into a Kitchen Aid stand mixer with the paddle attachment, the chicken shreds perfectly in like 10 seconds. Its totally worth washing the extra bowl.

    1. I made mine with frozen breasts and thighs and it was perfect. I just cooked it a little longer than the 4 hours.

    1. Another tip I got from a cooking mag was to put your crock with all the ingredients in the fridge the night before. The extra time it takes to heat up the ceramic crock will buy your chicken some time and help lessen the drying out while you are at work.

    2. I always put frozen chicken in the crock pot, and often leave it in for close to 10 hours and it's always good.
