This is a fun way to turn boring turkey burgers into something with a little more exciting. If you’re a buffalo wing fan, you’ll love the flavors in this turkey burger topped with a broccoli slaw tossed with my very own homemade blue cheese dressing. If you prefer milder flavors, try these Zucchini Turkey Burgers, Stuffed Turkey Cheeseburgers or these Greek Turkey Burgers.

Buffalo Turkey Cheeseburger

These These Buffalo Turkey Cheeseburger with Blue Cheese Broccoli Slaw are modified from my zucchini turkey burger recipe and slathered in hot sauce after. They are mildly spicy and loaded with flavor. I love adding veggies to my burgers, they add bulk and also make them more tender. Here I added carrots, but I promise, you can’t even tell. Perfect way to get those picky kids to eat their veggies.

Buffalo Turkey Burger Variations and Tips

  • To make these burgers gluten-free, sub the breadcrumbs for gluten-free oats.
  • To freeze raw, place them on a baking sheet with wax paper in between, when frozen transfer to ziplock bags.
  • To freeze cooked, you can fully cook them, then freeze in ziplock bags for quick meals; to re-heat you can microwave or thaw first then place on a skillet.

Ingredients

  • 1 1/2 cups broccoli slaw
  • 1/4 cup skinny blue cheese dressing
  • 1.25 lbs 93% lean ground turkey
  • 2/3 cup grated carrots, grate in food processor
  • 1/4 cup seasoned whole wheat breadcrumbs
  • 1 clove garlic, grated
  • 1 tbsp red onion, grated
  • 1/4 cup Franks Hot Sauce
  • salt and fresh pepper
  • oil spray
  • 5 slices reduced fat cheddar
  • 5 whole wheat burger buns, I used Martin's 100 calorie Potato Whole Wheat Buns

Instructions

  • In a medium bowl combine broccoli slaw and skinny blue cheese dressing. Set aside.
  • In a large bowl, combine ground turkey, carrots, breadcrumbs, garlic, onion, hot sauce, salt and pepper. Makes 5 equal patties, 5.5 oz each.
  • Heat a large skillet on high heat. When hot, lightly spray the oil. Add burgers to the pan and reduce the heat to medium-low.
  • Cook on one side until browned 4-5 minutes, then flip.
  • Cook another 4 minutes or until burgers are cooked all the way through (keep heat medium-low to prevent burning); top with cheese and place on a toasted burger buns topped with broccoli slaw.

  • If grilling, clean grill well before cooking and spray with oil spray to prevent sticking.

    1. Not sure if Gina realized what you were asking because it’s not a recipe. You purchase broccoli slaw at the store. It comes in a bag and is located where the bagged salads are.

  5. I am a huge blue cheese fan and the dressing is AMAZEBALLS. Let it sit in the fridge for a bit. The recipe itself is an awesome alternative to beef and the broccoli slaw is a nice touch. It needed a little more hot sauce IMO and I just added a bit to the top of the burger.

  7. These were absolutely DE-LICIOUS!! I’ve made turkey burgers before but I will definitely make these in the future. I omitted the carrots but followed the rest of the recipe (making a substitution for the whole wheat breadcrumbs and just used regular seasoned breadcrumbs and adjusted the points). I still have some broccoli slaw left, I’m a huge fan of blue cheese. Thanks so much…looking forward to dinner again tonight, lol!

  9. These sound delicious! My hi husband is not a fan of carrots. Any suggestions for an alternative, or has anyone omitted them with success? We love the zucchini turkey burgers, so I was thinking of using that instead.

This recipe caught my eye a while ago, so this is how I made them to suit my family:   First of all, I want to say that the Blue Cheese Dressing recipe is amazing!  I always make my own WW Breadcrumbs by using leftover WW bread which I dry, then pulse in the food processor & add dried herbs.  I’m NOT a fan of Frank’s hot sauce, b/c it’s incredibly high in sodium, so I then left out the added salt which was in this recipe.  We grilled the insides of the buns, to give the buns a bit more flavor & texture (since buns tend to ‘wilt’ when hot burgers are placed on them).  I’m not criticizing Gina’s recipe, just offering a few suggestions.

  11. Where do you buy whole wheat bread crumbs?? The only ones I see are Panko whole wheat Japanese bread crumbs but they are not seasoned.

  13. One of my favorite meals. I’ve been making this for years but never left a review. This is a filling meal for me. I usually can’t finish the burger. The combo is perfect! I use a gluten free bun and gluten free breadcrumbs. Works out great!

    These were delicious! We grilled the burgers and topped them with shredded lettuce and Bolthouse Blue Cheese dressing because it is what I had on hand. I would definitely do these again!

    We loved this recipe! Always looking for another good turkey burger. I accidentally used schiracha sauce instead of Franks hot sauce and they were delicious! Not too spicy, just right! I had a coleslaw mix so used it instead of broccoli slaw and a bottled blue cheese yogurt dressing found in the refrigerated section of our local supermarket.

I also thought this could be a bust with my kids (aged 10 & 13) because of their level of pickiness. However, I’m SUPER happy to say that this recipe was a hit! (Every recipe of yours that I have tried has been a hit.) Even my non-poultry-loving spouse loved this burger. Everyone loved this burger & I loved the slaw & homemade blue cheese dressing with it.

  21. I don’t think I’ve ever left a comment about a recipe before, but these were really great. We didn’t even end up using cheese! I actually found a greek yogurt based blue cheese dressing at Mariano’s (grocery store) for $3.99 which was cheaper than gathering all the ingredients separately to make my own. It was just 60 calories a serving and tasted great. I’ll definitely be making these again.

After making them for the third time in as many months, I thought I should come here and let you know. 🙂 The first couple times I made them, I grilled them on the BBQ, and they were good but maybe a tad dry. I made them last night in a skillet and I think it made a huge difference – they retained much more juiciness that way. I am obsessed with Frank’s Red Hot sauce, so I kept the bottle nearby and shook a couple drops onto each bite as I ate it. 🙂 My grocery store had pre-made, bagged broccoli slaw so that was easy – just mixed with light blue cheese dressing. I’m looking forward to leftovers tonight!

  25. Wow! Absolutely delicious! I have to be honest – my expectations for this recipe were pretty low. I thought, “It’s too easy!!!! Turkey, hot sauce, breadcrumbs?… psh!!!”
    But holy cow was I wrong! The burger was so juicy and flavorful, I kept saying, “OMG this is amazing” after every bite.
    First: I think I’ll be adding shredded carrots to every burger recipe from here to eternity.
    Second: The 1/4 cup of hot sauce was spot on. I like a little more heat to my food, so I added a wee bit more to the bun and was over the moon. My hubs on the other hand didn’t add any to his and was still happy with the flavor.
    Third: I used Boathouse blue cheese dressing and it was absolutely perfect.
    This baby is going in the rotation for sure. Trust me, you wanna make this one.

  26. I made these last night! WOW, and I am NOT usually a fan of turkey. I was pleasantly surprised. But the best part was the blue cheese dressing! OMG TO DIE FOR!

    I did tweak it a bit; my store was out of broccoli slaw, so I skipped that, left the cheddar off, and just topped the burger with the dressing. And I’m thrilled to also have found buns that taste good, but aren’t that “pointy”

    I made these for dinner last night, substituted cabbage from our garden for the broccoli slaw, aside from that followed the recipe exactly. Wonderful, filling dinner! Definitely doing this again! But I used 11 weight watcher plus points.. Not the 6 the recipe suggests. I arrived at 11 by adding all the individual ingredients (blue cheese crumbles, yogurt, etc)

  43. Amazing. Just made the patties–used 2 tbsp sriacha and only 1/4 cup crumbs. Did them on BBQ on a layer of tinfoil. Delicious. Made 5 patties and they were 123 calories each, without the toppings…amazingly low for burgers, and delicious. The carrot kept them moist. My daughter added them to her top 10 list! Thank you!

  44. Made these last week, they were amazing; used OPA brand blue cheese dressing, which is a greek yogurt-based, low fat dressing. Followed the recipe exactly and it made 6 HUGE burgers, (not complaining!). My teenage son ate one cold for breakfast the next morning!! Thanks for a great recipe.

  46. Made these last night. The burgers were really good. We only used about half of the hot sauce it called for. Too much for us! I will say that the burgers took longer than 4 minutes per side to cook all the way through. I ended up tenting them with tin foil to get them to cook through. The broccoli slaw we were not a big fam of. Too tart and tasted too much of the blue cheese. Would need to fina substitue. Overall I would make these burgers again minus the slaw.

    Hello skinnytaste! writing all the way from australia!! I must say – i have been using your site for a few months now for healthy dinner options and i am absolutely loving everything i have tried thus far! no disappointments!! i made these burgers last night (without the slaw because i think turkey burgers was enough of a shocker for the men in my life to make them eat broccoli coleslaw as well!!). i doubled the recipe (10 burgers…hungry boys) and fed them to my partner and his best mate, both of which swore up and down that they would never eat a non-beef burger. My partner came back for seconds and made sure i packed the leftovers for his lunch, and his best mate went back for thirds. amazing burgers! thanks so much for this recipe…im sure it will be on our summer nights list many many many times over!!

  57. This is the best turkey burger recipe I have ever made! I live alone so I made 2 (one for today, one for tomorrow) and froze 3! I doubled the onion and garlic, and used low fat blue cheese yogurt dressing for the slaw to save some money and skip steps. Worked out well!

    These are INCREDIBLE! One of our absolute faves. However, no matter what I do, the burgers crumble and fall apart. I put them in the fridge last night for an hour after mixing – it helped some, but a few still crumbled. Anyone have any ideas? Does this happen to you?

  59. This isn't only the best turkey burger I've had, it's one of THE BEST BURGERS I have had! If you're afraid of it being too spicy, don't be! I do not do spicy at all and this wasn't very spicy. It is SO moist and juicy…we absolutely loved it.

    First off- how ingenious to hide carrots in the burgers?! Second- my husband said these were the best burgers he has ever had. I used what I had on hand and so I made a couple of changes. Did 1/2 lean ground beef and 1/2 turkey, used BBQ sauce instead of hot sauce, and added sauteed onions to the burger. Absolutely delish.

    These are our go-to meal pretty much every time we feel like firing up the grill. My hubby loves wings and this gets him his fix without all the fried fatty-ness. And I LOVE how many veggies are used in it. So so good!

  76. I typically try to follow recipes step-by-step the first time I make them, then I'll make adjustments the next few times. This is the third recipe I've tried from Gina, and I wouldn't change a single thing on all three of them. These burgers were delicious! Great flavor from the hot sauce and the onions and carrots kept the meat moist (which can be difficult with ground turkey). The broccoli slaw gave a really great crunch and added a nice texture. I'd make these over and over!

  79. When you freeze your extra patties uncooked, do you thaw them before cooking? My kids LOVE these burgers….I've made this recipe several times and portion out a few patties before I add the hot sauce in. 😉

    OH MAN!!! SO GOOD! I made these last night. Omitted the carrots simply because I didn't have any, and upped the onion and garlic a bit, using egg whites to bind it all together. It was soooo tasty! My mother in-law loved the slaw and asked for the entire recipe! TY Gina! This is a winner.

    I really enjoy your recipes. I made this yesterday and both my 4 year old son and I enjoyed it! The flavors were great. I added a small amount of Frank's hot sauce since I didn't want it spicy for my son. Next time I will make 2 batches because I do like a little kick in my food. Also I was not able to find brocolli slaw anywhere so I just used regular cole slaw and it was delicious!

  114. I made these for supper tonight – wonderful!! My only piece of advice, invest in good quality blue cheese for the blue cheese dressing. I went for the down low, on sale blue cheese and the flavor was not strong. My husband and I both loved this recipe! thanks!

    1. think about that question… they are bread crumbs aren't they? They should work. Also, assuming you can't eat gluten, you've most likely substituted gluten bread crumbs in other recipes.

    2. It never hurts to ask – often the ratio isn't the same because due to whatever the crumbs are made of absorbency can differ.

  116. Generally I'm not a fan of turkey burgers, but I gave them a go last night and the flavor was excellent! I was also a bit skeptical about carrots in a burger, but I didn't even notice they were there. This is sure to become part of my regular rotation.

    In NYC broccoli slaw isn't always readily available and the market I popped into had only regular coleslaw mix, so I purchased that instead. I was also lazy and bought reduced fat blue cheese dressing. The flavor did not suffer. Next time Greek yogurt and blue cheese is on sale, I'm giving your recipe a try.

Very similar to what you have here but celery is the veggie to mix it. Also it has grill seasoning and poultry seasoning in the patty as well.       Broccoli slaw can be bought in a bag in the produce section. It's normally where the shredded cabbage is for regular coleslaw and the lettuces. It's really good! (It also goes great to add a little crunch to fish tacos!)

    I love your turkey burger recipes. Ever since I started making recipes from your website, I've never used ground beef. And I've been getting creative about what vegetables to put into a turkey burger to make it more nutritious. Will definitely have to give this a try, but minus the 'slaw, but a huge fan of it.
