The perfect summer cocktail, a cross between a tall glass of fresh brewed iced green tea and a mojito! I think this is going to be my signature drink all summer long. It’s icy cool, and has the added bonus of antioxidant rich green tea.

Some of my favorite low calorie alcoholic drinks are Basil Cucumber Gin Coolers, Skinny Girl Margarita and even this boozy Watermelon Lime Granita.

This cocktail recipe is so simple using ingredients you probably have on hand. Specifically, you will need green tea, fresh limes, fresh mint leaves (growing wild in my garden at the moment), baby arugula, and raw sugar (you could use agave or stevia to keep it sugar-free).

Multiply the recipe and make a pitcher for a party, or make them by the glass for a more intimate gathering. I originally saw this on the Kitchn, and tweaked it a bit by adding arugula, an idea I got from a cocktail I had at the Dole Summit.

And for those of you who don’t drink alcohol, leave out the rum for a refreshing mocktail.

Serving Size: 1 mojito

Ingredients

  • 1 tbsp fresh lime juice
  • 4 large spearmint leaves, plus more for garnish
  • 4 baby arugula leaves
  • 2 tsp sugar, I used raw, use your favorite sweetener
  • 1/2 cup brewed green tea, chilled
  • 1 oz white rum

Instructions

  • Muddle the lime juice, mint, arugula, and sugar together in a tall Collins glass until the leaves bruise lightly and the flavors release.
  • Add ice until glass is about 3/4 full and then pour in rum and green tea.
  • Stir well and garnish with mint and lime.

  1. There’s no point of starting taking a supplement if you don’t stick with it. I am about to start with green supplements which many sites had claimed as a great product to get into shape with.

  5. I like the idea for a bridal shower coming up but the problem is most people attending do not drink alcohol. Is there anything that could replace the white rum?

  6. This sounds delicious! Although, it should be noted that agave isn't sugar-free. It has just as much sugar (and calories) as other liquid sweeteners such as honey and maple syrup.

    1. And Agave is fructose – which, from what I understand, is metabolized in your liver. Maybe going with honey is better?

  8. This sounded so yummy that I gathered all the ingredients together to make this mojito when I discovered the Cuban Mojito, why is this one 2 points more than the Cuban and it has less rum?
