Summer Potato Salad with Apples

I got the idea for this Baby Red Potato Salad with Apples from my mother-in-law, who always puts apples in her potato salad, which we love. It’s an unexpected happy surprise, and we always add them now when we make potato salad. The sweet and savory combo works so well. Baby Red Potato Salad with Apples

My mother in law puts apples in her potato salad, and it’s an unexpected happy surprise! Every time we make potato salad, we add them because everyone loves her potato salad.

Baby Red Potato Salad Ingredients

  • Potatoes: I use baby red potatoes, but you can swap them for fingerling, Yukon Gold, or new potatoes.
  • Apples: The Gala apple adds sweetness and crunch, but feel free to swap it with a Granny Smith or whatever type of apple you have on hand. The vinegar in the dressing will keep them from turning brown.
  • Celery
  • Onion: You can sub the red onion for a shallot.
  • Chives: If you don’t have chives, use the green tops of scallions, or skip them.
  • Dressing: The creamy potato salad dressing is very light on the mayo. It’s mixed with Dijon, olive oil, red wine vinegar, salt, and pepper. You can switch out the red wine vinegar for apple cider or white wine vinegar and the mayonnaise for Greek yogurt if you prefer.

Do you boil potatoes with skins on or off for potato salad?

If I use baby red or baby Yukon gold potatoes, I like to keep the skins on for potato salad, so I boil the potatoes without peeling them. This speeds up the process, so much faster and easier!

What can you pair with baby red potato salad?

This easy potato and apple salad is the perfect side that goes with anything you’re grilling, like these grilled chicken skewers, turkey burgers, or pulled pork. It’s great to bring to a BBQ or picnic since you can easily double the recipe to serve a larger crowd.

  1. This was so light and delicious – a welcome change from heavy traditional potato salad – loved it! Thank you for this recipe!

  2. Made this Baby Red Potato Salad with Apples 3 days in a row! Once for dinner, then for book club potluck and then for lawn concert picnic. Yes, everyone really liked it! Thank you!

  3. Thank you for specifying the weight for the potatoes. I used baby Yukon Gold and didn’t want to cut them, as you say, that helps keep the skins on. So it ws helpful knowing the weight. Another delicious recipe, thanks!

  4. Easy and delicious! I didn’t have celery, so I subbed out minced fresh red pepper and I didn’t have a gala apple, so I used a red delicious apple. My guests and I all loved it!

Delicious! Quick and easy. I added more celery and onion and cut them a little larger. I will definitely make this again.

  6. This salad is absolutely delicious! My daughter couldn’t stop eating it. A great change from regular salad loaded with mayo!

  7. Gina,

Does the type of apple matter with regards to turning black or does the dressing keep it from darkening?

Hey, wondering if I could use regular peeled  russet potatoes for this? I have a ton that I got for free.

Both my husband and I don't really care for Potato Salad but I thought I would give this recipe a try and it was a huge hit. This is a keeper for sure. 🙂

  12. Just wanted to add that this has become a staple at my family cookouts now! Everyone from my 5 year old niece to my 75 year old grandfather comes looking for it. Thank you!

  13. Made this yesterday to accompany some chicken I barbecued on grill. Really liked it! Proud of myself that I kept to the serving size & looking forward to leftovers.

I made this for a BBQ this weekend! It was wonderful! I'm not a fan of mayo…but there was so little in this dish I didn't mind it at all! I will definetly be making this again through out the summer months!

  15. WOW! Made this for a weekend barbeque with some friends yesterday and it was a major hit! Sadly, no leftovers for me to enjoy today. Thanks, Gina, for my new go-to Potato Salad recipe.

  16. I Just made this for the beach tomorrow and it's delicious! Mine came out a tiny bit dry so I'm going to add a small amount more of dijon mustard, mayo, vinegar and olive oil to prevent a vinegar overdose (I love it but my man doesn't!). Love the apples and used fresh chives from the garden that were dying to be harvested. Thanks!

  17. I made this yesterday for a party we went to and it was a big hit! Don't be afraid of the apple, it adds a nice sweet/sour crunch. I used a Granny Smith (finely diced) and since I didn't have a red onion, I diced 1/2 a sweet onion and a shallot. It came out great! Thanks, Gina!

  18. I have made this for dinner tonight and just licking the spoon was great. I can't wait to have it.
I didn't have a gala, so I subsituted it with an Organic Granny Smith and it is just as great.

I made this for our 4th of July cookout today and everyone loved it! I loved seeing my Grampa (who I thought wouldn't like the apples) go back for seconds. Thank you!

  20. This is a very good potato salad. I added more celery than called for to just extend it and used a granny smith apple. It is savory and juicy. A keeper

  21. Also forgot to add that next time I would cut the potatoes into smaller pieces. Not sure if i bought the wrong ones, but the red potatoes i bought were pretty big for just quarter cuts. I doubled that and even still would cut them smaller next time, just so the salad lasts takes longer to eat and there's more surface area to soak up the seasonings.

  22. I made this today…delish! However, I thought it needed a little more vinegar than the recipe called for. I added in some cider vinegar to stay in the apple theme. I also added a little extra grainy dijon mustard for flavor and texture, and some garlic salt. I would definitely make this again with those few tweaks. Thanks!!!

  23. What a delicious recipe! I made this today for my family and they all loved it! I didn't have red wine vinegar so I used champagne wine vinegar!! Definitely a keeper in my recipe stash!! 🙂 Thanks Gina!!!

  24. Making this today for the 4th of July BBQ at home! I depend on you so much, Gina & you always come through! Thanks for making my life healthier & easier

  25. Hi, did you cut the potatoes into quarters before or after you boiled them? Seems they would fall apart if cut before, but thought I'd better ask! Thank you!

  26. This looks SO GOOD!!!!

I cant wait to try it!!! Thanks Gina!!!

  28. love love this potato salad! I've been hunting around all morning too for a potato salad recipe for tomorrow's bbq, and don't want a heavy mayonnaise-y one, this looks so perfect! The apples sound so good in it!

  29. This potato salad looks so good. I am wondering, being a not so big fan of mayo, do you think yogurt (or Greek yogurt) would be an okay alternative? Thank you 🙂

  30. Thank you so much for adding the sodium content to your recipes! My brother has Congestive Heart Failure and it can be hard finding recipes with the sodium content listed. Thanks again:)

Similar base but different flavors and ingredients, the other has bell peppers, this doesn't. This has apples, celery and chives.

  31. This is a great alternative to the normal potato salad! I love the addition of apple. I bet this has a ton of amazing flavor! Adding to my 4th of July menu!

  32. This looks SO delicious! {Super glad I'm whitening my teeth right now or I would be eating some – or all – of this…}

    Ann On and On...

Potato Salad, the taste of summer. My mom brought over some potato salad this weekend. Sadly, it's gone. I love the idea of a "skinny" salad. Thanks.

  34. I have been looking to skinny up a potato salad. I have always included apples (red and green) in my potato salads. Can't wait to try this one out 🙂

  35. I don't know if I am brave enough to add apples for the crowd I have coming. Might do this with cucumbers and try it with apples later. Perfect though – looking for good cool recipes now that it will be too hot to have everyone be outdoors…

  39. What a great alternative to those super mayonnaise-y potato salads that show up at BBQs, I'm excited to try it out with the apples!

    1. I grew up eating potato & macaroni salads slathered in mayo. As of today your recipe is now our family favorite! So much great flavor in this potato salad. Thank you from my family & me.
