This easy one-pot skillet dinner is made with chicken sausage, bell peppers, zucchini, baby red potatoes and fresh herbs.

I love a meal that only dirties one pot because although I may love to cook, I really don’t love to clean! You can see all my one-pot recipes here, in fact I even have a one pot cookbook (affil link) dedicated to one pot cooking!

Summer Vegetables with Sausage and Potatoes Skillet

This dish is so simple to make but full of fresh flavor! I love using multi-color peppers so it’s also colorful since we eat with our eyes.

You can use Italian chicken sausage or turkey sausage depending on what is available to you in your area. I’ve tasted several brands and really came to love Al Fresco’s sweet chicken sausage or Premio’s chicken sausage. My local health food store and Italian deli also carry their own homemade sausage which is wonderful.

Variations

  • If rosemary isn’t your thing, use fresh thyme instead.
  • I used multi-color peppers because I love the color, but you can stick with one color to make it easier.
  • Make it vegetarian with Vegetarian sausage.

Ingredients

  • 2 tsp olive oil
  • 1 lb baby red potatoes, cut in half or quartered
  • 1/2 tsp garlic powder
  • 1 tsp kosher salt
  • fresh cracked pepper, to taste
  • 14 oz Italian chicken sausage, sliced 1-inch thick
  • 1 large onion, chopped
  • 4-5 cloves garlic, smashed with the side of the knife
  • 1/2 orange bell pepper, diced 1-inch squares
  • 1/2 yellow bell pepper, diced 1-inch squares
  • 1 red bell pepper, diced 1-inch squares
  • 2 tbsp fresh rosemary, or other fresh herb such as thyme
  • 2 cups zucchini, 1/2 inch thick and quartered

Instructions

  • Place oil and potatoes in a large, deep non-stick skillet with a tight fitting lid on high heat; season with garlic powder, salt and pepper.

  • When the skillet gets hot and starts to sizzle, reduce heat to low and cook with a tight lid on for about 20-25 minutes, shaking the pan occasionally to prevent the potatoes from burning.
  • Remove from heat and let them sit 5 minutes without removing the lid, then set the potatoes aside on a dish.
  • Add the sausage to the skillet and saute on medium-low and cook, stirring occasionally until browned but not quite cooked through, about 10 minutes.
  • Season chopped vegetables with salt and pepper. Add onions, peppers, garlic and rosemary to the skillet and mix.
  • Continue cooking, stirring occasionally, until onions and peppers become slightly browned.
  • Add zucchini and cook an additional 5 minutes, mixing as it cooks until cooked through.

  • Return the potatoes back to the skillet and mix well. Adjust salt and pepper as needed; cover and cook 5 more minutes.

  6. Made this yesterday and it was DE-LICIOUS! I used dried herbs (specifically thyme) in place of the fresh and turkey kielbasa instead of the sausage. I LOVED it. Meal prep this week is all about Skinnytaste; this recipe, the Corn, Tomato, Avocado salad for lunch, and the Lemon Cheesecake Yogurt cups for desserts. Although I have to say those were a bit disappointing. For one thing, has anyone seen the vanilla wafers lately?! The “regular” sized were the size of minis (those are probably as small as a jellybean). Anyway, the yogurt flavor was still really strong, and I’m not a big fan of the plain yogurt. Anyhoo, thanks so much for your recipes! This site is ALWAYS my first place when searching for recipes.

      If you will notice, all packaging is being downsized. They’re also using extra wax paper and other ”fillers” to package the product inside of the box in order to take up more space, same size box, but less product.
      It is the same with our coins. Take a look and see how they are shaving your pennies, dimes, nickels, and quarters. They are much smaller than they are used to be. Lots of things going on.

    This was a really great one pot recipe!! Easy to make and it didn’t take long. Works great when you have to make dinner quickly after work!!!Everyone in my family loved it!!!

  8. This recipe was delicious, loved by my whole family. It’s a keeper! Only thing I did differently was that I replaced the Rosemary/Thyme with dried Italian seasoning.

  9. I’ve made this many times, it’s fantastic! At the end I hit it with a splash or two of balsamic vinegar and let it cook down for a minute or two for some extra flavor!

  11. Hubby & I liked this, I think it will be even better on day 2 after the flavors have melded.

    Next time I will prepare the potatoes while the veggies are cooking down and throw them in at the end. I prefer them crispy and they softened too much for me when cooked in with the veggies at the end.

    This also took much longer to cook down then I expected.

  12. I thought this was delicious- a perfect summer evening meal. The prep was less that I thought it would be, and even though you add things in steps, it was still an easy meal to make.

    Easy one pot meal. I didn’t have any sausage so first cooked 5 strips of center cut bacon and used the fat in place of oil to cook the potatoes. Subbed seasoned chicken breast pieces for the sausage to keep the WW pp to 6 per serving. Also added a few sliced mushrooms with the onions& peppers. So good, will make again!

  15. I have made this recipe several times and have loved it every time! We use thyme instead of rosemary and it’s always a huge hit! I’ve never had a problem with this recipe turning out perfect.

    Delicious but I used regular red potatoes and did not cut them small enough. I had to add some on-hand open vegetable broth and cook with lid on a longer to soften the potatoes. I used dried thyme (1.5 teaspoons). The flavor was terrific and I liked the 1/4 cup of broth addition! I think I would cook the Greenwise Chicken and kale fresh chicken sausage in air fryer first as it was hard to cut the raw chicken and I was worried about making sure it was cooked completely. I will definitely be making this again!!!

  18. I struggle to cook meals that require my attention for more than 10 minutes at a time. Do you have a suggestion for sheetpan version where all could be cooked at the same time? Or maybe throw taters in the oven while everything else is chopped and then add those to the pan for XX time?

    1. Delicious!! My family raved about this! I used smoked Turkey sausage, added yellow squash and a can of petite diced tomatoes (drained) and a 1/4 block of low fat cream cheese. (My family likes a creamy sauce.) But the game changer was quartering the potatoes and cooking them in my air fryer while I did all the rest. I sprayed them with pam and seasoned them before. Great recipe! Will be on rotation at our house 🙂 

  19. My meat-and-potatoes husband thinks this one is a winner! I made this with spinach and feta chicken sausage and Yukon gold potatoes cut into small pieces. Served it with steamed broccoli on the side and some beer mustard. Excellent!

  20. I made this today. I used fresh mild Italian chicken sausage, mini red potatoes and followed the directions exactly.

    My potatoes did not cook and I ended up cooking for another 10 minutes on med-medhigh heat. My sausage never browned and neither did my veggies.

    Even with having to add cooking time and not browning, it still was very good. Might use 1.5 t of oil and higher heat next time.

  21. We used polish sausage instead of chicken or turkey as it’s what we had left in the fridge. Added jalapeno and various veggies from the garden and this was a real hit!

  22. I made this last night. My picky-as-a-four-year-old husband loved it. It will go in the thin file of meals we both really enjoy. I used a larger potato (cheaper than the small potatoes) and dried thyme as my spice. Winner-winner for this recipe!! Thank you. 

  23. Another winner! Thank you! I only had Russet potatoes – cut them into 3/4-inch pieces. Toward the end of their cooking time, I increased the heat to brown them. I did not have fresh herbs, but I love thyme, so I added 1 tsp dried thyme leaves at the same time as I sauteed the vegetables. Recipe serves 4 (unless you have a husband who loves meat and potatoes – in which case it serves 3).

  24. This was sooooo good! I read through the comments and used someone else’s suggestion to make a sauce. I added a little Better Than Bouillon (garlic flavor – maybe 1 Tbsp) and a squirt of dijon mustard, stirred it to coat everything, then added some water (maybe 1/2 cup?). I let it simmer for a bit, but since it wasn’t as thick as I wanted, I added a tiny bit of corn starch slurry and cooked for a few more minutes to thicken. I absolutely loved it that night and probably even more so the next day. I used to roast vegetables and chicken sausage in the oven, but I like this much better because it’s not all dried out.

  25. This was so good! I didn’t have any issues with the skillet needing a bit of moisture. I had washed my potatoes right before throwing them into the pot; that might have made a difference!! It tastes so refreshing and yummy. Thank you for this recipe!

  27. The first time I made this I did it as is. I loved it. My husband, who wants me took cook healthier for him, said it needed sauce and cheese (did I mention he wanted me to cook healthier???) We compromised this time. Before adding the potatoes back, I added chicken broth mixed with some dijon mustard and let it reduce a bit. It was awesome. I am chopping up the leftovers to make a soup for lunch!!!!
    A very versatile recipe that you can cater to your own likings.

    An easy one pot summer dinner. I used Hillshire Farms smoked Turkey sausage and only had one green pepper to use (no red, orange, and yellow) but it was a good weeknight dinner. Even with just one pepper instead of 3 this made a ton of food. The serving size is big and satisfying. Will be making this again for sure. Thank you for the recipe and for helping me stay on track with WW and enjoy cooking and eating real food!

  33. Hmm. This recipe didn’t work out for me. I initially cooked the potatoes for the full 25 minutes, but by the end they were still undercooked. And the dish ended up soupy instead of what I’d want for a sausage, pepper, and potato hash dish. If I make this again I’ll have to majorly adjust based on this experience.

  37. Loved this recipee, but changed a few things.. I actually browned the potatoes. Also, I added a bit of no sodium chicken broth at the very end and simmered for an additional 5 minutes, as my family likes a little gravy.

  41. I was looking for a recipe that would incorporate bell peppers and baby potatoes and I found this one. I had to substitute Italian sausage and broccoli because I did not have any chicken sausage or zucchini. Also, I only salted the potatoes before cooking them and did not add any additional salt later on while cooking. The seasonings were perfect. This is simply delicious. I will definitely make this recipe again.

    This is one of the best camping recipes we have ever made. All 7 of us ate extras so there were no leftovers. It was even good when made at home in my oven

  45. Very good. The family liked it. The potatoes were perfect. I kept the cover on the pan the entire time the potatoes cooked, without lifting to stir. They got nice and soft. I used apple chicken sausage. I had to take out a dish of vegetables and potatoes when they were finished and added shrimp for my vegetarian son.

  46. A favourite summer dish around here. It’s so perfectly, we hardly change a thing. We do roast the potatoes in the oven while cooking the sausage and veggies and throw them in later just to save time, but I know your way saves dishes 😉

  47. Wow. My three very picky eaters liked it and all 3 want me to make it again. I did use ring sausage. I precooked the potatoes separate like a couple of  reviewers suggested. I used thyme because I didn’t have rosemary. I didn’t use the zucchini because of my picky eaters.

I usually stick to basic british meals but throught i’d have a look on here for some ideas.   58. I made this tonight. Very nice!! I made a few changes tho i had pork sausages in the freezer so used them instead of chicken and i added a cup of thickened vege stock to give it a bit of moisture. Served wirh crusty bread, beautiful ????????

  65. I made this tonight and it was AH-MAZING! I used sweet potatoes vs baby reds and they were done in no time (not even 10 mins!). Then I added in some apple chunks! Delish! My husband loved it (low carb! with great flavor) and my 5 y/o daughter LOVED it. She loves “hot dogs” aka sausage and a pepper and sweet potato feen! This will be a new go-to meal at our house.   66. This is soooo good! I’ve made it twice so far and it’s always a hit with the family. I cooked the potatoes separate while I cut up the vegetables and put them in with the sausage in a skillet. I used 2 packages of mild chicken sausage and one packet hot sausage, added green pepper into the veggies and minced the garlic instead of smashing it with the knife. I added some Creole seasoning to give it some kick and dried rosemary instead of fresh because it’s what I had on hand. I added chicken broth to make sure bits wouldn’t burn on the bottom while the whole thing cooked together. Paired it with some rice and voila an amazing, yummy dinner!

  73. I've made this twice now and absolutely love it!! Makes great leftovers (hot or cold). I make the potatoes in a separate pan to cut the time in half. I also use hot Italian chicken sausage links from Sprouts; cook them in links for 10 minutes, remove from heat and slice before adding peppers, etc.

  75. Ran into this recipe lately. It is not summer, but I used what I had on hand and this turned out very well. Since St. Paddy's Day was a couple of days ago, had cooked potatoes, carrots and cabbage left. Used that plus red and green peppers, onions and mushrooms. Added some garlic and thyme and used turkey smoked sausage. Love that this is good with whatever, and helped me clear out my fridge. Thanks for the recipe and all the comments!!

  77. I made this for dinner tonight with some fresh zucchini my grandma gave me. It was delicious! I used turkey sausage & even my "pork sausage is the only thing the counts" girlfriend loved it! Super happy with this, will be putting it into our regular Spring/Summer dish rotation 🙂

I added pasta (rotini) to extend the recipe and it was deeeeeeeelicious!! This was the first time I had ever made this so I don't know how it would have tasted without the pasta.

  79. I'm going through a crazy, fresh vegetable (and fruit) phase and I saw this today and made it for dinner. Outstanding! I made it with andouille sausage and it was fabulous!

  80. This sounds great! But I do have one question. Do you mince the rosemary or just throw the leaves in whole? Rosemary leaves are somewhat thick and rigid. I'm just afraid the texture would make me feel like I'm eating, well, leaves.

  82. Well – I wasn't sure how my boys would like this … but they did. Cut the baby potatoes up finer than prob. you do. I, too did not have them done in even half an hour – so I popped them in the microwave for a few minutes to finish them.
    I think I would really like to try this again with a Kielbasa. I used dried thyme (no fresh) and instead of zucchini (again didn't have any) I used mushrooms.
    I cooked mine in a huge cast iron dutch oven on the stove. I prob. also cooked mine longer …. but I like the crispy bits of onions. I think I'd cut the peppers a little smaller. Smelled great …. definitely will save this one! Very good!

    This was SERIOUSLY AMAZING! I used spicy turkey sausage. A little difficult to cut because it's so soft. Next time, I might put it in the freezer for a bit to make it a little easier to cut. I also added a container of crimini mushooms sliced in half. I kept my heat on medium with my potatoes (I used baby Yukon Golds cut in about 3/4 inch pieces as that's what came in my farm box). About 10 minutes in when they were getting a bit brown and carmelized, I put in about an 1/8 cup of red wine to deglaze while the potatoes were still in there, then popped the lid on for about 3-4 minutes until the wine was gone. This bit of steam got the potatoes done well within the 20 minutes but kept them brown and delicious – and with great flavor! I used an orange and yellow bell pepper and threw in some cayenne for a little heat. The hubby and I both couldn't stop saying YUM as we ate it!

    1. Is that what you should do; deglaze the pan, when the pan starts getting too gunky and the browning going too fast? I've always wanted to know what to do when that happens.

  84. Delicious! I'm making this for our Outer Banks vacation this year. I have to cook for 20 but I'll have help chopping the veggies and how simple to just get 4-5 skillets going at one time! I'm thinking some fresh bread from the oven would be a great addition. I'm thinking our crowd will love this.

    This recipe is incredible. I love how it kind of turned into a stew. So easy and tastes homemade in the best way. It made the house smell amazing and I can't wait to make it again.     This was amazing! My BF says he has dreams about it – he would eat it every day if I would let him. So easy and delicious! Very forgiving recipe – you can add or sub in anything you have in abundance and whatever fresh herbs you have on hand. We were almost fighting over the leftovers.

  88. Does this end up with any kind of liquid/sauce to it, or is it a dry dish? My husband (who thinks gravy goes with everything) would like it to have some kind of wetness to it. Not that it will stop me from making it if it doesn't, I am just curious…

    1. I personally didn't add any salt — but went nuts with the pepper, garlic & rosemary on top. It was great just that way.

  90. I wish I would have read the comments before starting this! My potatoes weren't even close to be done after 40 minutes so I ended up having to roast them in the oven. Then I made the mistake of putting the lid on when the veggies went in, which made them sweat, which means the onion and peppers never got brown. Ugh.   92. This was amazing for dinner last night and I'm just about to attempt the microwave reheating of leftovers. The only thing we did differently was cooked the potatoes separately in their own pan at the same time as the sausage & veggies. Time > Dirty Pans in my house! It cut down the time to about 30 minutes total: 10 minutes to chop everything, 20 to cook it all.

  98. This is a sausage dish my family has made for generations, potatoes, onions and sausage being the constant–other veges as are in season. Good stuff. For a twist, add quarters of fresh tomatoes and serve with crumbled feta on top. Sliced apple or pear also adds a nice dimension.

  101. I pinned this on pinterest and finally made it tonight, it was delicious! I used an enameled cast iron dutch oven to make it, and used an italian dried herb mix instead of rosemary.     Made this last night and it was great! I boiled my potatoes till they were just about done and then drained them and added the oil and potatoes back to the pot to brown them and proceeded on with the rest of the recipe. I used the same pot (my dutch oven) so it was still a one-pot meal! I also added more of the other veggies. Had enough left for hubby and daughter to take to work and some for me this morning for breakfast (scrambled an egg with it.)

    Yummmmmm this came out soo good. I made this tonight an kept the potatoes separate so that my husband could mix pasta with his, and I added the potatoes to my dish without pasta. The vegetables came out perfect and the rosemary was so delicious. Thanks for another great recipe!!!!

  124. I made this on Sunday to have for dinner for the week. Somehow some way I didn't end up having a bit of it until today, and it's sooo good! When I tasted it, I wanted a bit more salt, so I added a few shakes of hot sauce (also cause I'm a bit country, lol). Something about the hot sauce and the rosemary, wow! This is something I'm definitely going to have again before summer vegetable season is out!

    Got excited to see this recipe as i have been doing this for such a long time now. it started as my lazy morning breakfast for my kids when they were little, Only easier version without the potatoes. Just mushroom slices and big rings of onions and 2 tbsp of oyster sauce, if they are lucky i add chicken breast strips. It works all the time.Yours is much healthier with veggies.I'll try it too!happy to know it wasn't a lazy meal after all ;D

But I also got to hand it to you because you do the almost impossable, you make healthy foods so darn yummy! My hubby watches alot of those cheif contests and I'm thinkin, who can't make foods taste good if you over use cream, sugar, fat or salt. That's almost a no brainer/easy.   157. We have a weekly CSA produce box from a local farmer and hadn't used up a bunch of our stuff from last week. This used quite a bit of it and was fantastic! Hubby is a bit picky with veggies and he loved it. We ran out of onion so we omitted it and added a mix of rosemary and thyme from our garden to add a little bit more flavor since the onion went missing.

    I saw this recipe this morning and my future mother-in-law and I decided that we NEEDED to do this tonight. I literally just ate it. It was sooo good. A couple of things I tried/wanted to add:

    * Use FRESH rosemary, not the dried stuff. We used dry, thinking it was a shortcut. It didn't wreck it, but it would have been better had we not tried the dried stuff.

    * I might suggest slicing the onions instead of chopping them. They got lost in all of the thicker-cut stuff. The recipe did not specify which onions to use, so we went with red which was perfect.

    * The timing was just right for everything. Whoever timed this did a great job. Also, the serving sizes were accurate too. We fed 3 people, and we had about 2 cups left over…enough for another person to eat.

    *We just used regular salt and pepper, not Kosher Salt or Cracked Pepper. I don't know if it would have made it better, but it tasted good with the regular stuff.

    Everyone try this RIGHT NOW. I highly recommend it!

    1. My favorite Italian chicken sausage comes from Whole Foods, if you have one where you live. Sunfower Market/Sprouts and Trader Joe's are also prety good.

    2. I get my chicken sausage from Top Tomato, and it is pretty good. If you have one by you, you could try there.
