Egg Tomato and Scallion Sandwich

I often make this egg sandwich for my daughter Karina because she loves it! Plus it’s inexpensive and easy to make. You can make it a day ahead if you want to pack it to eat on the go! Sounds too simple, right? Well try it and you will see why I’m so addicted! More easy lunch ideas with hard boiled eggs, you can make my classic egg salad recipe or these lentil avocado egg bowls!

Sliced hard boiled eggs, juicy ripe tomatoes, chopped scallions with a touch of mayonnaise, salt and pepper – enjoy this sandwich for breakfast or lunch.

Before I left my previous job in Manhattan, there was a small cafe that served this simple egg sandwich that I was hooked on. It’s so simple but the flavors just work with the tomatoes and scallions. Now that I work at home, I make it quite often for myself and my daughter as she often requests it.

Helpful Tips:

  • Keep hard boiled eggs in your refrigerator for a quick breakfast on the go, to add to sandwiches or even salads. It only takes a few minutes to boil a few eggs, here’s a foolproof way to make perfect hard boiled eggs every time.
  • If possible, boil older eggs first. Fresh eggs are harder to peel once hard boiled.
  • If you have an Instant Pot, you can make Perfect Instant Pot Hard Boiled Eggs that are also easy to peel.
  • For the same number of smart points and 50 more calories, sub my Easy Bagel Recipe (live link) in place of your roll.
  • Swap the potato rolls for my easy homemade bagel recipe for the same Smart Points.
  • Serve it open-faced on a slice of sourdough bread!
  • You can make the sandwiches the night before and wrap them tight with plastic for quick and easy breakfast to go.

  1. Made this today and it was better than I expected 🙂 so good thanks for another easy and delicious recipe!

  2. I’ve been making and enjoying these since last summer, but I recently starting making them on Everything Bagel Thins, which just perfects them.

  3. I don’t understand how this is so simple, yet SO delicious! I was so pleasantly surprised! 👍🏼

  4. This was great!!! I swapped out some whole grain bread I had on hand but man the flavors were great together. Thanks Gina!

  5. So so delicious. I made this open face for less WW points. I don’t usually comment on this sort of thing but this was too good not to say something.

  6. This is so simple & easy to make, which makes it a nice go-to on a busy school morning! It’s flavorful & delicious!

  7. I was hesitant to try this, but so glad I did! It’s so yummy and Refreshing on a hot day like today! I had a bunch of whole wheat wraps left over from last weeks meal plan so I put on one of those!
Paired with a peach like you suggested in your meal plan this week and also had some cucumbers on the side

So delicious! I made these sandwiches and added a slice or two of crisp bacon. Over the top! Thank you!

This is so simple but tasty and flavorful! My new go to egg salad. Much less mayo and fewer eggs but you can taste each ingredient. Two thumbs up

  9. This was so good! I used ST Easy Bagels and was floored by how good it was. I had sandwiches like this in Europe and didn’t realize how much I missed this combination of flavors. It’s so fresh and light! Thank you, Gina!

  10. During the time of Covid19 the tomatoes I’ve been getting are pretty pale and tastless. I am , however eternally grateful that I am able to purchase them for our salads. What I wanted to say is that the tomato in the pictures for this sandwich is the most beautiful tomato I have seen in a long time! My mouth is watering! Hoping some of those red ripe cuties will show up in my garden this summer.
Thank you Gina for all the delicious healthy meals you develop for us. I hope you and your loved ones are safe and healthy in this difficult time.

  11. I was surprised at how much I liked this sandwich.  If I want low carb, I put it in romaine  leaves.  Flavors go great together!

  12. This sandwich sounds underwhelming. I made it and I am addicted to it. I can have it everyday. At least 2-3 times a week! Like Gina I made half a dozen eggs with my Instant Pot. Thanks for this great simple recipe Gina!!

  13. I discovered an even better way to hard cook eggs. Steam them! Put an inch or so of water in a pan, bring to a boil and then add eggs either in the steamer insert or a steamer basket and steam for 15 minutes. Move eggs into a bowl of ice water and crack the shells under the water. They are easy to peel (even new eggs) and perfectly cooked. I will never boil eggs again.

  14. Gina, what would the point difference be if you made two open face sandwiches putting the mayo on the bottom & adding one egg, one tbsp. lite mayo & tomato for the other half?

  15. Loved this! I only found your website last week and have already made and loved all 4 recipes I tried so far.  I think this simple sandwich will be a staple in my meal plans. I did not have low fat mayo so i used .5 TBS of what I had and I also added half a mini avocado. I weighed everything and entered into MFP for a total of 289 calories! Awesome!

I made this as breakfast when it snowed us in today and LOVED IT! I used Tony Cachere spice on it to improve the whole effect! Here’s the best part. My normal frozen breakfast sandwhich is 400 calories and 26 grams of fat. WOW! I’M HOOKED!

  24. SO GOOD. I have this a couple of times a week because its such a refreshing sandwich.

I can’t find 100 calorie rolls so I usually make this as an open toast sandwich on a slice of wholemeal or rye bread. It’s SO GREAT !

  25. I would tweak this with krafts ff mayo or waldens no cal dressing & Sara lee 45cal. bread for lower points value. franniemak@aol.com

  26. My granny used to make this for me during the summer when tomatoes were ripe and juicy. She's been gone 12 years now. Thanks for the wonderful memories you stirred up by posting this recipe.

  27. I just made this as a salad. I wedged some tomatoes, sliced up the hard boiled eggs, (I used your method by the way, perfect,) drizzled a little bit of evoo, seasoned with very little salt and pepper, and topped with scallions, and it just may be one of the most delicious things I have ever tasted.

  28. I just made this today – what a great lunch (especially during lent)! Thanks so much! I feel full on 6 points. Yay!

  29. love this sandwich, I make it all the time, one of the first things I made from all of your recipes when I found it last June!

    1. I just wanted to add that last summer I started to count calories, change my eating habits and cooked mainly from your blog recipes. Since June I have lost 43lbs, so thanks very much!! There is almost always one of your recipe leftovers in my fridge…chicken sausage, escarole pasta is coming up tonight. Many, many thanks for your fabulous recipes.

  30. Did anyone mention cream cheese instead of mayo? Cream cheese and green onions states wonderful together! Add a few chopped red bell peppers and the flavor is awesome! Thanks! New to your recipes and everyone I have seen so far looks amazing!

Delish!! Just made for lunch. Added sliced avocado. So simple but really really scrumptious and satisfying. Great idea!

  32. Never thought about adding hard boiled egg to a sandwich before! Am going to try this Panini style and add some mozzarella; and as someone else suggested substitute mustard for the mayonnaise. YUM! Thank you! 🙂

We have onions growing in the garden right now. This will be a simply delicious sandwich! Pinning it!

  34. I was inspired by your Chicken Panini with arugula and provolone (https://www.skinnytaste.com/2011/12/chicken-panini-with-arugula-provolone.html) which I made a few days ago. I added the same chipotle mayo and arugula to this sandwich and it was delicious!

  35. How many points will it be if you use the 45 calorie Sara lee bread? its 2 points for 2 slices

  36. I have fallen in love with this sandwich. Thanks to this site, I have lost 50 pounds and losing more. Thank you Skinnytaste.com

  37. Made this last night for dinner. It was a huge hit for the hubby and myself! I am definitely looking forward to having this again. Oh, and I used a 120 calorie toasted english muffin. Yum Yum!

  38. Great use of scallion's to add flavor and you can also two stalks of scallions or green onion finally chopped and added to potatoes for soup adds extra flavor instead of white or yellow onions.

  39. I made this on an 100 cal. WW english muffin and used laughing cow cheese instead of mayo. Absolutely delicious! It might be my new favorite breakfast 🙂

  40. This is my new FAVORITE breakfast sandwich! I have had it every day for a week. I substituted light cream cheese for the mayo, I can't stand mayo. It's amazing! Thanks for making my mornings a little brighter 🙂

  41. Made these with a little bit of mustard (I'm not a huge fan of plain mayo) and they were great. Simple and delicious. Thanks for sharing!

  42. This is so simple yet totally delicious! I made it for lunch yesterday and immediately went home from work and made one for today's lunch. Thanks for the new favorite!

  43. Oh my goodness! This one has been in my "must try" file for a bit. Had it today for lunch and I'm already craving one for tomorrow! Your recipes are the best!

  44. I have been making these for breakfast at work this week, and am obsessed! These are so simple but oh so delicious! My co-workers keep asking me to make them one.

  45. I put mine on bagel thins & instead of using mayonnaise, I use a Laughing Cow Light Swiss cheese wedge. It is so yummy!

  46. made this for lunch today. open face with egg & egg white, no mayo. not nearly as pretty as yours but super delish! thanks for sharing!! 🙂

  47. We ate these last week and had zucchini pie for the side item. SUCH A GREAT meal! And SUPER EASY! This will be a regular item on our menu! 🙂

  48. I don't know why I never thought to put these things together! This was great for dinner last night with a garden salad. Quick, easy and delicious.

  49. OH man, I just found the Pepperedge Farm Very Thin sliced whole wheat bread… 2pts for 2 slices! I'm using Dijon instead of mayo… got this down to 4pts… yay! Eggs are cooking right now… can't wait to try it 🙂 Thanks Gina!

  50. I'm no tomato lover, but something about the sandwich intrigued me to make it just the way the recipe called for. And it's now my FAVORITE sandwich! Gina, your site and recipes are fabulous – it has helped me maintain my 40 pound weight loss.

  51. I can't believe how good this is. I always put tomato in my breakfast sandwiches in the summer, but this was amazing! The scallion and mayo add so much flavor. Wow.

  52. This has become my favorite sandwich!
Thank you for teaching me, FINALLY, how to boil decent eggs!!! 🙂

  53. I'm just starting to work from home & need creative lunch options! Completely over Smart Ones… Thank you SO much for your amazing site! I've made so much for my boyfriend & I and I don't even think he's noticed our meals have been "skinny"!

  54. I am glad to see this post! I have tons of tomatoes. These sandwhiches are going to be great, especially since we have had such warm weather, cooking hasn't really been on the top of my list!

  55. I tried this sandwich last night for supper after an exhausting day. It just hit the spot perfectly. I really liked it and loved how easy it was to make. Thanks for sharing!

  56. This doesn't sound like it would be anything special, but it was delicious. Now, I just need to figure out how to keep it from falling apart as I eat it. I ended up with a slice of egg on my space bar this morning.

  57. This is the best run down the arm, juicy, delicious sandwich. Just had it and cannot wait until tomorrow to have it again. Tomatoes just coming in from the garden. I just love you and your recipes. Keep up the great job

  58. Oooo! My gluten free biscuits will make this sandwich good, too! I think I'll use mashed avocado instead of mayo…with some cilantro…..maybe I'll make the CHEESE biscuits this time! Oh dear…..

  59. Looks good for a quick lunch sandwich. But wondering how long it will stay good in a lunch box. Cut tomatoe slices drips of the juices and soak the other ingredients of the s/w. any advice to avoid that?

    Thanks

When I used to buy them, she cut them in half and wrapped in saran wrap. That how they were sold and they were always good.

  60. I just had this for lunch. I used the Laughing Cow Swiss Cheese (light) instead of mayo. Also instead of the scallions, which I did not have, I just sprinkled on some cilantro. Yuuuuummmm! So good.

  65. I've never seen this combo before on a sandwich. I think that I will toast the bread and use mustard instead of mayo (I'm a fan of mustardy things in general). I appreciate the inspiration.

  66. Any chance you could add a "share" button to individual recipes? I wanted to email this to my mom and have to use the firefox method.

  67. I've been making hard boiled eggs lately – this would be great way to get my kids to try them. I might substitute smashed avocado with a little lime juice (like guacamole) for the mayo.

  70. Gina,
These sandwiches are simply delicious. I've done adding lettuce leaves or also with olive tapenade. is very good. have a good week

    1. Cucumbers, green peppers or lettuce would work. My son hates tomatoes but loves cucumbers so I'll try it that way for him.

I don't like tomatoes either (except in august!) so I am making this with roasted red peppers.

  71. Looks good. How long will the eggs keep in the fridge? Also if I made this for a school lunch, would it keep without an ice pack?

    1. Hard-boiled eggs tend to stay refrigerated for up to a week. Not sure about the sandwich question, but I wouldn't take the chance for more than a few hours. Maybe if there was a cold drink in there with it?

  72. I had never heard of this sandwich until I saw it on FB today. The two garden tomatoes I had were calling to me. Delicious! I use a well-cooked "fried" egg and it achieved a similar effect. My husband and I thank you!

  73. loved this, I have celiac so the gluten free bread needs all the help it can get, but this was very tasty!!

  74. Gina, this will be my lunch tomorrow. We made the grilled pesto shrip Saturday and its a winner. I'm having leftovers today with saffron jasmine rice.

  77. MMMM looks so good! I am definitely going to use your way to boil eggs, I still have not mastered that yet 🙂 love your blog!

    1. I haven't mastered hard boiled eggs, either. I started buying the bags of hard boiled eggs, already peeled. I'm going to take one more chance with Gina's and if that doesn't work, forget it forever!

    2. I recently started baking my eggs! They turn out so much better, in my opinion. The egg is less rubbery and the yolk is very fluffy, for lack of a better word. 🙂 Plus, they are way easier to peel! Put the eggs in a muffin tin, bake on 325 for 30 minutes, then immediately put into a bowl of ice water to stop them from cooking. They will have brown spots on the shell and maybe one or two on the egg, but they are fine. Easy and good!

I love softboiled eggs but hard boiled even more so. I found the best recipie for soft cooked eggs and make those and leave some extra in the pan for hard boiled. Put about 3/4" water in a pan, cover and bring to a rapid boil. Add eggs with thongs, cover, and cook on med. for soft boiled. I remove the eggs I need, put them in cold water immediately for cooling, and then leave the rest on burner (with water, of course) for hard boiled for a few more minutes. The beauty of this is that eggs usually crack if they are not brought to room temp before cooking. This method makes the most beautiful eggs without having the room temp prep time. Perfect! I usually cook about a dozen eggs a week to keep on hand for snacking and whatever. So much protein for so little cost. Please try this! Regards.

  78. Yum Gina!! I am obsessed with hard boiled eggs, and now my daughter loves them too so I make them more regularly. I love eating them on a slice of toast with tomato and salt and pepper. Next time I'm taking it to this level, looks so delicious!

I've been craving the protein of eggs, but almost never make them hard boiled. Would love to have them ready and waiting in the fridge to put in sandwiches/salads though, thanks for this recipe!!

  80. I could see doing this with a Laughing Cow cheese wedge instead of mayo. (Not a fan of mayo). What do you think? Looks light and refreshing!
