Egg Tomato and Scallion Sandwich
I often make this egg sandwich for my daughter Karina because she loves it! Plus it’s inexpensive and easy to make. You can make it a day ahead if you want to pack it to eat on the go! Sounds too simple, right? Well try it and you will see why I’m so addicted! More easy lunch ideas with hard boiled eggs, you can make my classic egg salad recipe or these lentil avocado egg bowls!
Before I left my previous job in Manhattan, there was a small cafe that served this simple egg sandwich that I was hooked on. It’s so simple but the flavors just work with the tomatoes and scallions. Now that I work at home, I make it quite often for myself and my daughter as she often requests it.
Helpful Tips:
- Keep hard boiled eggs in your refrigerator for a quick breakfast on the go, to add to sandwiches or even salads. It only takes a few minutes to boil a few eggs, here’s a foolproof way to make perfect hard boiled eggs every time.
- If possible, boil older eggs first. Fresh eggs are harder to peel once hard boiled.
- If you have an Instant Pot, you can make Perfect Instant Pot Hard Boiled Eggs that are also easy to peel.

Egg Tomato and Scallion Sandwich
Ingredients
- 100 calorie sandwich roll, deli thin flats, Martin potato rolls, etc
- 1 tbsp chopped scallions
- 1 large Hard Boiled Egg, sliced
- 1 tbsp light mayonnaise
- 1 thick slice ripe tomato
- salt and fresh cracked pepper to taste
Instructions
- Assemble the sandwich by placing the egg on the bread, then the tomato, then scallion.
- Top with salt and pepper and spread mayonnaise on the top of the bread.

During the time of Covid19 the tomatoes I’ve been getting are pretty pale and tastless. I am , however eternally grateful that I am able to purchase them for our salads. I discovered an even better way to hard cook eggs. Steam them! Put an inch or so of water in a pan, bring to a boil and then add eggs either in the steamer insert or a steamer basket and steam for 15 minutes. Move eggs into a bowl of ice water and crack the shells under the water. They are easy to peel (even new eggs) and perfectly cooked. I will never boil eggs again.
Gina, what would the point difference be if you made two open face sandwiches putting the mayo on the bottom & adding one egg, one tbsp. lite mayo & tomato for the other half?

Loved this! I only found your website last week and have already made and loved all 4 recipes I tried so far. I think this simple sandwich will be a staple in my meal plans. I did not have low fat mayo so i used .5 TBS of what I had and I also added half a mini avocado. I weighed everything and entered into MFP for a total of 289 calories! Awesome!

SO GOOD. I have this a couple of times a week because its such a refreshing sandwich.
I can’t find 100 calorie rolls so I usually make this as an open toast sandwich on a slice of wholemeal or rye bread. It’s SO GREAT !

I just made this as a salad. I wedged some tomatoes, sliced up the hard boiled eggs, (I used your method by the way, perfect,) drizzled a little bit of evoo, seasoned with very little salt and pepper, and topped with scallions, and it just may be one of the most delicious things I have ever tasted.

Great use of scallion's to add flavor and you can also two stalks of scallions or green onion finally chopped and added to potatoes for soup adds extra flavor instead of white or yellow onions.
I made this on an 100 cal. WW english muffin and used laughing cow cheese instead of mayo. Absolutely delicious! It might be my new favorite breakfast 🙂

Hard-boiled eggs tend to stay refrigerated for up to a week. Not sure about the sandwich question, but I wouldn't take the chance for more than a few hours. Maybe if there was a cold drink in there with it?

those were the smaller Martin's potato rolls, I usually use the whole wheat potato rolls when I find them. Bagel thins are also great.

I haven't mastered hard boiled eggs, either. I started buying the bags of hard boiled eggs, already peeled. I'm going to take one more chance with Gina's and if that doesn't work, forget it forever!
I recently started baking my eggs! They turn out so much better, in my opinion. The egg is less rubbery and the yolk is very fluffy, for lack of a better word. 🙂 Plus, they are way easier to peel! Put the eggs in a muffin tin, bake on 325 for 30 minutes, then immediately put into a bowl of ice water to stop them from cooking. They will have brown spots on the shell and maybe one or two on the egg, but they are fine. Easy and good!
I love softboiled eggs but hard boiled even more so. I found the best recipie for soft cooked eggs and make those and leave some extra in the pan for hard boiled. Put about 3/4" water in a pan, cover and bring to a rapid boil. Add eggs with thongs, cover, and cook on med. for soft boiled. I remove the eggs I need, put them in cold water immediately for cooling, and then leave the rest on burner (with water, of course) for hard boiled for a few more minutes. The beauty of this is that eggs usually crack if they are not brought to room temp before cooking. This method makes the most beautiful eggs without having the room temp prep time. Perfect! I usually cook about a dozen eggs a week to keep on hand for snacking and whatever. So much protein for so little cost. Please try this! Regards.
