Quite frankly, when I thought up this idea I didn’t know what to expect. I recently saw a recipe for rice pudding popsicles which sparked this idea. I LOVE chia seed pudding and I love coconut milk, so I figured how bad could they be so I basically recreated my mango coconut chia pudding using raspberries in place of the mango. The results were fabulous! Some of my other chia pudding favorites which can easily be turned into pops are  Superfood Triple Berry Chia Pudding, or Coconut Lime Raspberry Chia Pudding.

Are Chia Seeds Healthy?

Chia seeds are a fantastic addition to popsicles, adding both nutritional value and a fun texture. These tiny seeds are packed with fiber, protein, omega-3 fatty acids, and various micronutrients. When soaked in liquid, they swell and take on a gel-like consistency, which works perfectly in a popsicle.

Ingredients

  • 1 cup of liquid: here I used a mix of 1/2 cup lite coconut milk with 1/2 cup unsweetened almond milk. You can use any milk you wish here.
  • Fruit: I used 3/4 cup raspberries, mango or strawberries would also be great.
  • 2 tablespoons chia seeds
  • 1 tablespoon sweetened shredded coconut
  • Sweetener: To keep this low in sugar I use liquid stevia or monk fruit sweetener. Sugar or honey would also work. Keep in mind when frozen this will taste less sweet, so add enough to make it taste sweet for your palate.

How To Make

  1. Chia Seed Preparation: In a bowl, combine the lite coconut milk and unsweetened almond milk. Stir in the chia seeds, making sure they’re well distributed with no clumps. Add the remaining ingredients and let this mixture sit for about 2 hours in the refrigerator until it thickens into a gel-like consistency.
  2. Sweeten to Taste: Add your choice of sweetener. Start with the suggested amounts, then taste and adjust accordingly. Remember that the flavors will be less intense once frozen, so a little extra sweet can be a good thing!
  3. Fill the Molds: Pour the mixture into your popsicle molds. Remember to leave a little space at the top for the popsicles to expand as they freeze.
  4. Insert Sticks and Freeze: If your molds come with sticks, insert them now. If not, wait until the popsicles are semi-frozen before adding wooden sticks. Place the molds in the freezer and allow the popsicles to freeze completely, which usually takes about 4-6 hours, but leaving them overnight is optimal.
  5. Serve: When ready to serve, run warm water over the molds for a few seconds to release the popsicles. Enjoy these refreshing and healthy Raspberry-Coconut Chia Popsicles!

  • 1/2 cup lite coconut milk
  • 1/2 cup cup unsweetened almond milk
  • 3/4 cup raspberries
  • 2 tbsp chia seeds
  • 1 tbsp sweetened shredded coconut
  • 8 drops Nu-Naturals liquid stevia, or sugar/honey to taste

Instructions

  • Combine all ingredients in a large container.
  • Mix well and close container; refrigerate 2 hours so the chia expands.
  • Pour into 4 popsicle molds and freeze overnight.

  1. I made a double batch. One to freeze and one to eat as the pudding, and I prefer it as the refrigerated pudding rather than the frozen pop, although both are good.

  2. I made these and loved them before I froze them! When they were in popsicle form they lost most of their taste… Any remedies for this?

  3. Hi Gina,

    I am allergic to nuts. I have tried making chia pudding with just coconut milk and it does not expand. do you have any suggestions?

    1. It's not the corn you are intolerant to, but the pesticides it contains, and possibily even the GM corn, which has the poison built right into the plant. Crazy! Seek a source of fully organic products, and detoxify your pantry as much as possible. Highly processed foods will have to go too…which means no skim anything, as the process used is bad for you. Fats are not bad for you, as long as they are natural, unpoisoned and unprocessed, so go ahead and use full cream in anything you want. I know this seems like a huge pain in the arse to do now, but everything you put in your mouth affects your health, for good or bad. Pay the farmer now, or the doctor later, as the saying goes. Good luck with your health journey! (and consider actually signing in with a profile so people can get back to you with info if need be. We're all here to help!)

    I didnt have a Popsicle mold so i used the nest best thing… an ICE TRAY!! Worked perfect plus they are great bite size snacks.

  7. Gina, these look yummy. I have a couple of questions for you (and anyone else that wants to chime in) … A few months ago, I unintentionally thawed a bag of frozen blueberries by leaving the bag on the counter for a couple hours after grocery shopping. So, I poured them in a glass container & put them in the freezer. They froze into a solid brick. UGH! I thawed them in the fridge because I need to use them … alllllll two cups of them! Yes, blueberry crisp or pie would be ideal; but, i don't like them since blueberries have such an overwhelming-strong taste in pies alone.
    (1) Please share your ideas for how to use up two cups of blueberries.
    (2) I'd love to make these popsicles using blueberries instead of raspberries … but, is it safe to refreeze fruit after it's been thawed twice?

    I am loving all types of frozen treats right now!! My kids eat my popsicle frozen treats none. It makes me feel so good since they are all made with fresh fruit and wholesome ingredients and not the artificial colors and sweeteners used in the ones sold by supermarkets!! Loving the chia seeds addition 🙂

I use them in my smoothies, in yogurt, etc. I get them in the organic section of my grocery store; however they have been out of stock for a few weeks now! I'm looking forward to trying this!   21. I was wondering about grinding the chia, too. I thought you don't really get the benefits of seeds like that unless you grind them up (like flaxseed)? Or does that only apply to flaxseed?

    1. That's only flaxseed. One of the pros of the chia is that you don't need to grind them. Your body is capable of digesting whole seeds.

    Can't wait to try this. Every morning I make your Healthy Pumpkin Oatmeal Shake with almond milk and add in either flax or chia seeds. Thank you for all your awesome receipes!!!

    Also, to the person asking about Almond Breeze Almond/Coconut milk. I often make a shake using the same ingredients above but with frozen bananas instead of rasberries and the only milk I use in it is Almond Breeze Almond/Coconut milk so I am sure it would work.

    1. I love my Zoku and have gifted it to many friends. They also enjoy it. I like not having to wait long for the pops to freeze.

  29. Chia seeds can be ordered on-line at amazon or found at your local health food store. They are relativly inexpensive. The Vitamin Shoppe also carries them.

  30. OMG, these look fantastic! I can't wait to make them. Am I crazy thinking that a little bit of cocoa powder would work in these as well? Mmmmmmmm! I buy Nutvia chia seeds from Amazon Grocery becuase they are hard to find in my area, and super expensive when I do.

    1. I found chia seeds (both black and white) in my Countdown supermarket (NZ), in the Natyura section. The brand was the Woolworths Macro Wholefoods Market

      "chia (yes, same chia as a chia pet) is an ancient grain eaten by the Mayans and Incas. It has a lengthy list of essential fatty acids that support heart health, plus fiber which helps support normal functioning of the digestive tract. It also keeps you full for longer periods of time, so it's great to add to cereal, muffins, etc. If you can't find them in your health food store or Trader Joe's you can buy them on amazon."

    2. You can also get them at Whole Foods in the Bulk Section (and Wegmans!). I love them! They seriously make you feel FULL. Like…REALLY, really full. For a long time.

      GREAT nutritional value, too.

  31. I would like to know if anyone tries this with the Almond Breeze Almond/Coconut milk…that is what I use for my "Overnight Oats"…

    I never thought of tempering almond milk with coconut milk since almond milk on its own doesn't freeze very well. Brilliant!
