Skinny Blueberry Cheesecake
Blueberries in every bite of this blueberry-licious cheesecake!
I'm sad that summer is coming to an end but at the same time I'm looking forward to the change of seasons, cooler weather and fall comfort foods.
But until then I plan to make the most of this holiday weekend and soak up some sun, attend plenty of backyard parties and enjoy all the summer fruit while it's still available.

ReplyDeleteI found the recipe eventually but am having a hard time following it. There's a 1/4 c and 1/3 c measure for sugar. Which measure goes with which part?

ReplyDeleteI am hoping as well... tried to figure it out so I could just put it on my own recipe document, but it doesn't specify in the instructions even... how much sugar, vanilla, blueberries etc... would really hate to make this and fail on my first attempt at a cheesecake. I really love the recipes I have made from here and don't want to guess at this one and ruin it.

That Dash website annoyingly groups repeat ingredients together so you can't tell which one goes in the cheesecake and which one goes in the blueberry topping. If you refresh the page, it shows it correctly for about a second before it groups them all together. Ugh!

cooking spray
1/2 cup crushed reduced fat graham cracker crumbs
1 tablespoon light butter, softened
8 oz package reduced fat cream cheese, softened
1/4 cup sugar
1 teaspoon vanilla extract
6 oz fat-free plain Greek yogurt
2 large egg whites
1 tablespoon fresh lemon juice
1 tablespoon all purpose flour
1 cup fresh blueberries
For the blueberry sauce:
1 1/2 cups fresh blueberries
1/2 cup water
1/3 cup sugar
1 tablespoon fresh lemon juice
1 tablespoon cornstarch, mixed with 2 tbsp cold water
1/2 teaspoon vanilla extract
